1 cubed butternut squash
2 chopped carrots
1 chopped onion
1 1/2 litre chicken stock ( 6 1/2 cups )
3 minced garlic cloves
2 tablespoons butter ( 28.4 grams )
1/4 teaspoon nutmeg ( 0.55 grams )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
1/2 teaspoon dried sage ( 0.7 grams )
1/8 teaspoon cayenne ( 0.2 grams )
INSTRUCTIONS :
.in a large pot / wok on medium heat add 2 tablespoons butter
.once melted add 1 chopped onion, 3 minced garlic cloves
.cook for 5 minutes or until onions are tender
.add 1 cubed butternut squash, 2 chopped carrots
.add 1 1/2 litres chicken stock, 1/4 teaspoon nutmeg
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.add 1/2 teaspoon dried sage, 1/8 teaspoon cayenne
.stir well & bring to boil
.reduce to simmer, cover with lid & cook until vegetables are soft ( approximately 40 to 50 minutes )
.blitz with a hand blender until smooth consistency
.serve with double cream & a pinch of ground black pepper
