INGREDIENTS :

225 grams pumpkin puree ( 1 cup )
100 grams grated pumpkin ( 3.5 oz )
360 grams basmati rice ( 2 cups )
350 ml hot water ( 1.5 cups )
400 ml coconut milk ( 1.7 cups )
3 minced garlic cloves
1 chopped small onion
1 chopped & deseeded red chili
1/4 teaspoon Salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
1 tablespoon vegetable bouillon powder ( 6 grams )
1 1/2 tablespoon coconut oil ( 21 grams )

INSTRUCTIONS :

.add 1 1/2 tablespoon coconut oil to a pot on medium to low heat
.once melted add 3 minced garlic cloves & cook for 1 minute
.add 1 chopped small onion & cook for 3 to 4 minutes
.raise to medium heat, add 400 ml coconut milk, 350 ml hot water
.add 1 tablespoon vegetable bouillon powder, 1/4 teaspoon Salt
.add 1/4 teaspoon ground black pepper & stir well
.add 225 grams pumpkin puree, 100 grams grated pumpkin & mix well
.add 1 chopped & deseeded red chili & mix well
.bring to the boil, add 360 grams basmati rice & mix well
.reduce to low heat, cover with lid & simmer for 30 minutes
.fluff rice with a spoon
.cover with lid, continue to simmer for 20 minutes
