INGREDIENTS :

500 grams cubed pumpkin pieces ( 17.6 oz )
350 grams penne pasta ( 12.3 oz )
40 grams grated grana padano ( 1.4 oz )
1 chopped medium onion
2 minced garlic cloves
100 ml milk ( 3.4 fl oz )
2 tablespoons tomato puree ( 28.1 grams )
2 tablespoons mascarpone ( 28 grams )
2 tablespoons olive oil ( 26.6 grams )
50 ml pasta water ( 1.7 fl oz )
1/4 teaspoon salt ( 5.7 grams )
1/4 teaspoon ground black pepper ( 5.8 grams )
1/8 teaspoon cayenne ( 0.22 grams )

INSTRUCTIONS :

.add 500 grams cubed pumpkin pieces to a pot of boiling salted water, cook for 15 minutes until soft
.cook 350 grams penne pasta in a pot of boiling water until soft
..once soft drain water & keep 50 ml pasta water
.in a large pan on medium heat add 2 tablespoons olive oil
.once heated add 1 medium chopped onion, cook for 5 to 8 minutes
.add 2 minced garlic cloves, cook for 1 to 2 minutes & set aside
.drain water from pumpkin , add 100 ml milk & onion
.blitz with hand blender until smooth & thick
.place sauce into pan, add 1/4 teaspoon salt
.add 1/4 teaspoon ground black pepper, 1/8 teaspoon cayenne
.add 2 tablespoons tomato puree, 2 tablespoons mascarpone & mix well
.simmer on low heat for 2 to 3 minutes
.in a large mixing bowl add pasta, pumpkin sauce
.add 50 ml pasta water, 40 grams grated grana padano & mix well
