INGREDIENTS :

350 grams basmati rice ( 2 cups )
1 chopped medium red bell pepper
1 chopped medium green bell pepper
1 chopped medium onion
220 grams canned & drained garden peas ( 1 1/2 cups )
10 grams chopped fresh basil leaves ( 1/2 cup )
60 grams grated grana padano ( 1/2 cup )
1.2 ltr vegetable stock ( 5 cups )
100 ml creme fraiche ( 2/5 cup )
1 tablespoon olive oil ( 15 ml )
3 minced garlic cloves
1/8 teaspoon ground black pepper ( 0.28 grams )
1/8 teaspoon salt ( 0.75 grams )

INSTRUCTIONS :

.add 1 tablespoon olive oil into frying pan on medium heat
.once heated add 1 chopped medium red bell pepper, 1 chopped medium green bell pepper
.add 1 chopped medium onion & cook for approximately 5 minutes
.add 3 minced garlic cloves, 350 grams basmati rice
.stir well & cook for 1 minute
.add 220 grams canned & drained garden peas, 950 ml vegetable stock
.stir well & bring to the boil
.add 1/8 teaspoon ground black pepper, 1/8 teaspoon salt & stir well
.cover with lid & cook for 10 minutes on simmer
.add 60 grams grated grana padano, 100 ml creme fraiche
.add 250 ml vegetable stock, 10 grams chopped fresh basil leaves
.lightly fold in, turn off heat, cover with lid & leave to rest for 2 minutes
