INGREDIENTS :

2 chopped medium onions
3 peeled & chopped green apples
450 grams chopped potatoes ( 15.9 oz )
220 grams grated cheddar ( 7.8 oz )
500 ml vegetable stock ( 17.6 fl oz )
350 grams plain flour ( 12.3 oz )
150 grams cold cubed butter ( 5.3 oz )
30 grams butter ( 1.01 oz )
1 beaten eggs
5 tablespoons cold water ( 74 ml )
1 tablespoon vegetable oil ( 13 grams )
1 tablespoon mustard ( 14.9 grams )
1 tablespoon white wine Vinegar ( 14.4 grams )
1 tablespoon dried thyme ( 2.74 grams )
1/8 teaspoon salt ( 0.75 grams )

INSTRUCTIONS :

.in a mixing bowl add 300 grams plain flour, 1/8 teaspoon salt & mix together
.add 70 grams grated cheddar & mix together
.add 150 grams cold cubed butter & rub together until crumb consistency
.add 5 tablespoons cold water & mix together
.Once mixed use hands to form mixture into dough
.cover dough in cling film and place in fridge to chill for 30 minutes
.in a pan on medium heat add 30 grams butter
.Once melted add 1 tablespoon vegetable oil
.add 2 chopped medium onions & cook for 10 minutes
.add 1 tablespoon dried thyme & cook for 1 minutes
.reduce to low, add 30 grams plain flour & mix together
.add 500 ml vegetable stock, mix well & simmer for 10 minutes
.add 1 tablespoon mustard, 1 tablespoon white wine Vinegar, mix well & cook for 1 to 2 minutes
.Place 450 grams chopped potatoes in water, bring to boil & cook for 4 to 5 minutes
.add 3 peeled & chopped green apples to sauce
.add drained potatoes, 150 grams grated cheddar & mix well
.pour mixture into baking dish
.sprinkle flour onto parchment paper & place dough onto it
.sprinkle flour on dough & roll until even
.Place dough onto baking dish
.with a knife remove the edges
.with a knife make slits in the dough
.brush beaten egg onto dough
.Place in a preheated oven 180 c / 356 f for 35 to 40 minutes
