INGREDIENTS :

1 puff pastry sheet
100 grams smoked salmon slices ( 3.5 oz )
200 grams cream cheese ( 8 oz )
1 egg
1/4 teaspoon lemon juice ( 1.2 grams )
1/8 teaspoon salt ( 0.75 grams )
1/8 teaspoon ground black pepper ( 0.28 grams )
1/8 teaspoon cayenne ( 0.22grams )
1/8 teaspoon mustard ( 0.12 grams )
chopped scallions ( garnish )

INSTRUCTIONS :

.place 1 puff pastry sheet on parchment paper & make circles with a cookie cutter
.with a smaller cookie cutter make smaller circles in half of the larger circles
.place bottom flat circles on a baking tray
.whisk 1 egg and brush onto circles
.place rings on top of circles
.once more brush on whisked egg
.place in preheated oven 180 c / 356 f for 10 to 15 minutes
.once done leave to cool
.cut around edge of salmon & set aside for garnish
.place remaining salmon slice in a blender
.add 200 grams cream cheese, 1/8 teaspoon mustard
.add 1/8 teaspoon cayenne, 1/8 teaspoon ground black pepper
.add 1/8 teaspoon salt, 1/4 teaspoon lemon juice
.blend until smooth consistency
.spoon salmon filling into vol au vents
.top each vol au vent with a piece of the leftover salmon
.garnish with chopped scallions
