INGREDIENTS :

800 grams canned butter beans ( 2 cans )
2 sliced leeks
225 grams chopped chorizo ( 7.9 oz )
800 ml chicken stock ( 27 fl oz )
4 tablespoons creme fraiche ( 60 grams )
1 minced garlic clove
30 grams butter ( 1.05 oz )
1 tablespoon dried rosemary ( 3.35 grams )
2 tablespoons olive oil ( 26.6 grams )

INSTRUCTIONS :

.in a pan on medium heat add 1 tablespoon olive oil
.once heated add 225 grams chopped chorizo, 1 tablespoon dried rosemary
.cook for 3 to 5 minutes & set aside
.in a large wok / pot on medium heat add 1 tablespoon olive oil, 30 grams butter
.once heated add 2 sliced leeks & cook for 10 to 15 minutes on low to medium heat
.add 1 minced garlic clove & cook for 1 minute
.add 800 grams butter beans, 800 ml chicken stock
.cook for 10 minutes on low to medium heat
.blitz with a hand blender until smooth consistency
.add 4 tablespoons creme fraiche & mix well
.serve with fried chorizo
