INGREDIENTS ( makes 10 ) :

10 portobello mushrooms
450 grams sausage meat ( 15.8 oz )
120 grams breadcrumbs ( 4.2 oz )
250 grams mascarpone ( 8.8 oz )
6 finely chopped scallions
3 tablespoons marsala wine ( 45 ml )
60 grams parmesan ( 2.1 oz )
3 minced garlic cloves
10 grams chopped parsley ( 0.3 oz )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
5 tablespoons olive oil ( 75 ml )

INSTRUCTIONS :

.in a bowl mix 3 tablespoons marsala wine & 4 tablespoons olive oil
.remove stems from mushrooms, coat with wine mixture & place on large baking dish
.in a pan on medium heat add 1 tablespoon olive oil
.add 450 grams sausage meat & cook for 7 to 10 minutes
.add 6 finely chopped scallions, 3 minced garlic cloves & cook for 3 minutes
.add 120 grams breadcrumbs & mix well
.add 250 grams mascarpone & mix well
.turn off heat & add 60 grams parmesan, 10 grams chopped parsley
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper & mix well
.fill mushrooms with sausage mix
.Place in preheated oven 180 c / 356 f for 30 to 40 minutes
