A very versatile recipe for dumplings, made with semolina. You can add your own flavouring to them, your own spices, you can serve them with anything you like, in soup, as a side to meat dishes, or even as a meal on it's own.
How to make simple Romanian semolina dumplings?
INGREDIENTS:
2 eggs
6 tbsp (120 g) semolina
Sprinkle of salt
DIRECTIONS:
Separate egg yolks from egg whites. Whisk the egg whites with salt until light and fluffy.
Keep aside 2 tbsp of semolina. Fold in the rest of the semolina into the egg white, bit by bit and mix well. Leave the mix aside for a few minutes.
Add the egg yolks into the mixture and fold to incorporate everything. Add the remaining 2 tbsp of semolina, incorporate everything well and set aside.
Bring water to boil. I like to add a sprinkle of all purpose seasoning in the water.
Using a tablespoon, take half tablespoon of semolina and shape it, then drop the mix in the boiling water. Repeat with the rest of the mix and boil the dumplings for 10 minutes, or until the semolina is boiled.
The dumplings should be fluffy and light when they are ready.
You can serve them on their own, or add them into soup, or serve them as a side to meat.

Super Fresh Golden Kiwi Salad:
INGREDIENTS:
9 kiwis
1/2 lemon
1 tbsp granulated sugar
1 tbsp vanilla icing sugar
DIRECTIONS:
Peel and slice the kiwi fruits. Add them in a wide bowl and squeeze the juice of the lemon, sprinkle over the sugar and the icing sugar. Mix together, but gently, so you don't break the kiwi slices. Make sure the fruits are evenly covered.

Homemade Deep Pan Meat Feast Pizza With Stuffed Crust

300 g cheddar cheese
5 g Thai basil
2 garlic cloves

50 g roasted red peppers
50 g pickled red tomatoes
50 g green olives
50 g mushrooms
150 g salami varieties : chorizo, pepperoni, German salami..
50 g sweetcorn
40 g jalapeno slices
Sprinkle of salt
DIRECTIONS:
After you've prepared the pizza base and sauce, before baking, prepare the toppings and crust.
Cut half of the cheese into strips, to use for the stuffed crust. After you've placed the pizza base on a baking tray, add the cheese strips to the edges. Stretch the edges over the tray, then add the cheese strips along the edge. Grab the strips one by one and place a bit of basil before adding the strips on the edge. Fold over the cheese, the stretched part of the base,
as tight as you can. Take the room temperature butter and mix it with the minced garlic and brush over the sealed crust.
Add on the pizza sauce a sprinkle of salt and some of the grated cheese.
Top the pizza with all the toppings: peppers, pickled tomatoes, olives, mushrooms, salami, sweetcorn, jalapeno slices and the remaining grated cheese.
The world is your oyster on tis one, so you can use absolutely any toppings you want.
Bake at 180 degrees C for 20 minutes or until the pizza base has a golden brown colour.

Homemade simple garlic dip
INGREDIENTS:
1 garlic head
2 tbsp oil
Salt (optional)
1 tbsp water (optional)
DIRECTIONS:
Finely slice the garlic or you can mince it if you prefer. Add 2 tablespoons of oil and salt if you need it. Mix well. If you think it's too oily for your taste, add 1 tablespoon of water.
TIP: You can serve with pork, as snack dip, salad dip, for French fries or even in a sandwich!

How To Make Butter With 1 INGREDIENT | NO Churning
Did you ever imagine you could make butter with only 1 ingredient and no special tools? It looks like butter, smells like butter, tastes like butter, it is BUTTER!

Ingredients:
300 ml double cream
Salt (optional)
DIRECTIONS:
Have ice cold water at hand. Add the double cream into a food processor, with the whisk attachment. Whisk at full speed until you see the double cream transforming into a lump and releases liquid. Once you have the hardness and consistency of butter, remove from the bowl
and wash in cold water. Mine took approx. 10 minutes of whisking.
If you want your butter to be salted, add salt in the double cream, otherwise don't add anything.
Place butter in a container and store in the fridge. It keeps for weeks.
Out of 300 ml of double cream you will make approx. 200 g of butter.
TIP: Don't throw away the liquid. This is actually buttermilk and you can use it for pancakes!

Creamy Fresh Lettuce Salad
INGREDIENTS:
2 lettuces
200 g greek style yoghurt
2 tbsp mayonnaise
Salt
1 tsp all purpose seasoning
Ground black pepper
DIRECTIONS:
Wash the lettuce and remove the leaves. Chop it as finely as you like, but not too fine, as it will turn to mush.
In a deep bowl, add the lettuce, the yoghurt, mayonnaise, all purpose seasoning, salt and ground black pepper and mix well to make sure you incorporate the yoghurt. Taste if it needs any salt or pepper and refrigerate.
TIP: Best served cold from the fridge!

It's the first time I've done a carrot cake in my life and it couldn't have been more delicious. I was worried that it will have a deep carrot taste, but it's far from it. The flavour is well balanced, it's a moist and absolutely delicious cake, not too sweet and the cream cheese frosting is just perfect for the balance.

Homemade Moist Carrot Cake
INGREDIENTS:
300 g dark brown soft sugar
4 medium eggs
300 ml oil
2 tsp vanilla extract
300 g self-raising flour
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 large orange zest
200 g carrots
125 g walnuts
Cream cheese frosting:
150 g butter
150 g full fat cream cheese ( use cold, straight from fridge )
300g icing sugar
DIRECTIONS:
Preheat your oven to 170 degrees C.
Lightly grease 2 round cake tins with butter and line the base with greaseproof paper.
In a large mixing bowl, beat the wet ingredients together: sugar, eggs, oil and vanilla extract. Set the bowl aside.
In a separate bowl, stir the dry ingredients together: flour, cinnamon, nutmeg and orange zest.
Pour the mixed wet ingredients into the dry ingredients and mix together until well combined.
Add the grated carrot and chopped walnuts ( I used mixed nuts: walnuts, almonds and hazelnuts ) and fold into the mixture.
Divide the mixture evenly between the 2 cake tins and bake for 30-35 minutes, until risen, golden on top and a toothpick inserted in the middle of the cake comes out clean. I had to keep mine for around 50 minutes in the oven, but it largely depends on your oven.
Leave to cool for 20 minutes in the baking tins, then transfer onto a wire rack and leave to cool completely.
Cream cheese frosting:
Beat the butter until is really soft, fluffy and pale in colour.
Add in half of the icing sugar ( I used icing sugar mixed with vanilla icing sugar ) and beat until smooth.
Add in the rest of the icing sugar and beat again until smooth and creamy.
Take the cream cheese out of the fridge and add it in. Fold the cream cheese into the frosting until smooth and well combined. Make sure you don't overdo it, as it can become runny quite quickly.
Start assembling the cake. If the cake is doomed on top and you don't want it like that, you can cut the extra sponge, to level it. On the first layer of the cake, spread half of the cream cheese frosting, then add the 2nd layer on. Press down gently and on the 2nd layer add the remaining cream cheese frosting.
You can decorate with either walnuts or lemon slices or both, as I did.
Store the cake in a covered container, to make sure it doesn't dry up, it keeps for around 3 days in the fridge.
TIP: It works really well if you squeeze lemon juice on the cake as you are eating it. It gives it a bit of a zing and kick.

Have you ever tried stuffed peppers? Why not give this Romanian recipe a go for meat and rice stuffed peppers? It's a delicious and filling food, which you can serve over the holidays.
Romanian meat & rice stuffed peppers recipe:
INGREDIENTS:
10-12 bell peppers
800 g minced meat
3 medium onions
100 g of long grain rice
50 ml oil
9 tomatoes
2 tins chopped tomatoes
1 tbsp tomato paste
200 g passata
3 bay leaves
1 tsp salt + extra for sprinkling
1 tsp ground black pepper + extra for sprinkling
2 tsp paprika
1 tsp all purpose seasoning
1 sprig dry thyme
2 bunches of dill
2 bunches of parsley
1 tsp dry lovage
DIRECTIONS:
Finely dice the onions. Add half the oil in a pan, on medium heat and fry it until golden brown. Add the rice and mix well. Fry for 5 minutes and remove from heat.
In a large bowl, add the minced meat, the remaining oil, salt, lovage , ground black pepper, paprika, all purpose seasoning,1 bunch chopped dill,1 bunch chopped parsley, tomato paste, the rice and onion
mix and combine everything together. Taste to see if it needs anymore salt, if it's fine, set aside.
Add oil in the pot you will use for the peppers, you need to make sure it's deep enough to fit over the height of the peppers, as you will add them whole. Add the bay leaves and fry for 1 minute.
Remove from heat and Add the chopped tomatoes and the thyme.
You now need to clean the bell peppers. Cut the tops of the peppers off, something like a hat and remove the seeds inside.
Fill each bell pepper with the mince mix, to the top and place each pepper in the pot.
Slice the tomatoes in half and add half a tomato on each pepper on top of the mince. Press gently in the mince, kind of like a cover. If you have leftover tomatoes, you can slice them and add them in the pot.
Fill the pot half way with tomato passata and water, or chopped tomatoes tin wash.
Sprinkle the remaining bunch of dill, the remaining parsley, sprinkle salt on top, ground black pepper and cook on medium heat for 1 hour or until the rice is cooked.
TIP: You can serve the stuffed peppers with sour cream and bread, or just bread, or simply on their own.

Festive Hot Chocolate Cinnamon Bombs | Granny's Kitchen Recipes | Bombe de ciocolată
Spice up your hot chocolate drink this winter with these easy to make dark chocolate and cinnamon bombs. They are delicious!

Hot chocolate cinnamon bombs recipe:
INGREDIENTS:
200 g dark chocolate
2 tsp ground cinnamon
2 tsp vanilla icing sugar
50 g mini marshmallows
Milk to serve
Peppermint candy spoons (optional)
DIRECTIONS:
For my chocolate bombs, I used cake pops silicone mould, the sphere and star shapes. If you use something similar in size to mine, you will need 2 bombs per serving. You can use any mould you like, but keep in mind that you need doubles, as they will have to be sealed together to create the bomb.
Melt the chocolate on bain-marie. Using a pastry brush, brush a layer of melted chocolate in the moulds, making sure you cover the whole surface, but it doesn't need to be perfect.
Set in the fridge for 10 minutes.
Brush a second layer of melted chocolate on the first layer. Chill in the fridge for at least 1 hour or overnight.
Remove from the moulds, however make sure you work with one pair at a time. Place the rest back in the fridge until you finished with the first one. Take 1 of the pair and fill with cinnamon, add mini marshmallows, then add vanilla sugar. Don't overfill, as you will not be able to seal them together.
To seal them together, you can use one of the 3 methods below:
1. Over a hot pan, take the empty piece of the bomb and hold it for 1 second. Then stick in on the other half, to keep the pair together.
2. On open gas flame, take a tablespoon and heat the back of the tablespoon, then place it on each half of the bomb for 1 second, then seal them together.
3. Use melted chocolate and brush the halves, then seal them. I found this to be the easiest method.
Repeat until you finish with the rest.
Heat up the milk. In a mug, add 2 chocolate bombs ( or 1 if you use a large mould ) and pour the milk over. You will see how the hot chocolate bomb will melt and the surprise will get out.
TIP: If you only have giant marshmallows, you can cut them in small pieces with scissors.

Romanian Aubergine Spread Recipe:
INGREDIENTS:
3 large aubergines / eggplants
2 onions
200ml mayonnaise
Salt
Ground black pepper
DIRECTIONS:
Bake the aubergines with skin on, in the oven at 180 degrees Celsius for around 1 hour, or until the skin is hard and crisp.
Whilst the aubergines are baking, finely dice the onion and leave in a deep bowl.
Remove the aubergines from the oven into a colander and peel the skin, then leave them for 30 minutes, to drain the water. You can press them with a potato masher whilst they are still warm. After the
water drains, transfer them onto a chopping board and finely dice them. They will be soft, so very easy to cut, you essentially want to have them as mushy as possible. Transfer the aubergines in the bowl with the onion, add mayonnaise, salt and pepper and mix well to incorporate
everything. Check if it needs more salt or pepper and if not, allow the spread to chill in the fridge for min. 1 hour.
They are best served cold on a slice of bread with tomatoes.

Delicious dessert with no baking needed and very few ingredients. Try this Romanian chocolate biscuit salami.

Romanian Biscuit Salami Recipe:
INGREDIENTS:
500g unflavoured tough biscuits
200ml milk
150g butter
100g raisins
100g sugar
2-3 tbsp desiccated coconut
2 tbsp cocoa powder
25 ml rum essence
DIRECTIONS:
Break all the biscuits and place them in a deep bowl.
On medium heat, warm the milk, add the cubed butter and leave on low heat until the butter melts, add the sugar and melt. Add the cocoa powder and mix well. When it starts boiling, remove from heat. Add the raisins, mix and add the rum essence. Leave to cool down for around 5-10 minutes, but it still needs to be warm.
Pour the liquid over the biscuits and mix well, making sure the biscuits are evenly covered.
Leave aside for around 10 minutes, so they can suck the liquid.
Now, we are ready to roll.
Take a long piece of clingfilm and sprinkle desiccated coconut on it, on the length of the clingfilm.
Add half of the biscuit mix on the length of the clingfilm, where you added the desiccated coconut. Shape with your hands like a salami roll, sprinkle more coconuts on top, then seal the clingfilm and if it needs more rolling to get an even shape, you can roll it until you get the desired shape. Repeat with the other half of the biscuit mix left, for the second roll.
Place in the fridge for at least 3 hours, but it's best left overnight.
Remove the next day from the fridge, remove the clingfilm and slice, serve as needed.

Are you looking for a quick and easy party food recipe for this Christmas and New Year? Look no further, because this party food takes no time at all and is delicious.
Tomato and Cheese Puff Pastry Party Food Recipe:
INGREDIENTS:
1 block of puff pastry (500g)
15 tomatoes
300g cheddar cheese
1 egg
10g dried Thai basil
Salt
DIRECTIONS:
Grate the cheese, slice the tomatoes. Dust a work surface with flour and roll the puff pastry as square as you can. Cut the rolled pastry into squares/rectangles or any shape you want.
Whisk the egg and after you transferred the pastry onto a baking tray, wash the pastry with the whisked egg. Add 1 slice of tomato on each piece and sprinkle salt. Add basil on the tomatoes and on top of the tomatoes, add a dollop of grated cheese.
Bake in the oven at 180 degrees Celsius for around 15 minutes, or until the pastry is golden brown in colour.

Festive Lemon Curd Christmas Tree Muffins & Cupcakes Recipe | Granny's Kitchen Recipes | Brioșe
The festive season is here. Try this lemon curd muffins recipe with Christmas tree decorations from lemon curd buttercream for that extra special holiday treat. These are not too sweet, really moist and melting in the mouth, the buttercream is the perfect balance in taste and very easy to pipe for those Christmas decorations, but not only.
Lemon Curd Christmas Tree Muffins Recipe:
INGREDIENTS FOR 12 CUPCAKES/MUFFINS :
Muffins:
200 ml oil
160g vanilla icing sugar
200g plain yoghurt
Approx. 300g flour
1 egg
1/2 tsp Morrocan almond extract
1 tsp baking powder
Filling:
12 tsp lemon curd
Buttercream + Decor:
200g butter
200g lemon curd(take away the 12 tsp for the filling)
80g icing sugar
Green food colouring
Christmas decorations
DIRECTIONS:
For the muffins: Add yoghurt, sugar, oil, egg and mix . Add the flour bit by bit and the baking powder and mix well, to incorporate everything. This should have a consistency of sour cream (thick). Fill the muffin cases/cupcake cases 3 quarter full. Bake at 180 degrees Celsius for 30 minutes. Cool down, then make a hole in each muffin and add 1 teaspoon of lemon curd per muffin.
For the buttercream: Mix soft butter with the icing sugar until is soft and fluffy. Add the remaining lemon curd. Mix well and chill for a few minutes. Separate the buttercream in different bowls if you want to use different colours and colour each buttercream.
For décor : Once the muffins are cooled down, filled with lemon curd, you can start piping the buttercream and place any other Christmas decorations you'd like.
