Homemade Clementine Jam: A Sweet and Tangy Treat

Ingredients:
760 g clementines
300-400 g sugar
1 tsp vanilla extract
1 tsp ground cinnamon
Preparation:
Peel the clementines and clean out the white skin.
Pull them all apart.
In a deep pan, cover the fruits with sugar and soak for at least 2 hours or overnight.
Boil on low heat until a syrup is formed, mixing at times.
As they boil, keep clearing the white foam if you get any.
Before switching the heat off, add the vanilla extract and cinnamon and boil for a few more minutes and the jam is ready.
Place the clementines in sterilised jars, topping with the syrup from the pan.
Tips:
The more sugar you add on the clementines, the more syrup you will get.
It’s very important to peel off white skin, otherwise the jam will be really bitter.
You can add even more flavourings to the jam as you make it.

Ingredients for 12 :
Muffins/cupcakes:
Approx. 300 g white flour
200 ml oil
160 g vanilla icing sugar
200 g yoghurt
1 egg
½ tsp Moroccan almond extract
1 tsp baking powder
Filling:
12 tsp lemon curd
Preparation:
Add yoghurt, sugar, oil, egg and mix all together.
Gradually add the flour, mixing each time.
Add the baking powder and mix. The batter should have the consistency of sour cream.
Fill the muffin/cupcake cases 3 quarter full.
Bake at 180℃ for 30 minutes or until the muffins are golden brown in colour.
Cool down.
Make a hole in the centre of each muffin and fill with 1 tsp of lemon curd each.
You can use a syringe, a piping bag or a teaspoon.
Tips:

Ingredients:
300 g boiled rice
1 onion
2 snack peppers
200 g mixed vegetables
100 g cherry tomatoes
4 garlic cloves
2 tsp turmeric powder
1 tsp cumin seeds
Salt
Ground black pepper
Vegetable seasoning
1 cup of water
Preparation:
Dice onions.
In a wok, heat up oil on medium heat.
Add onion and fry for 2 minutes, then add the cumin seeds. Fry for 5 minutes.
Add the sliced peppers and fry until golden brown. Add the sliced garlic and fry for 2 minutes.
Add the mixed vegetables and cook for 5 minutes, mixing occasionally.
Add the cherry tomatoes and keep cooking for 5 minutes longer.
Add salt to taste, vegetable seasoning and ground black pepper. Mix well and cook for 5 minutes.
Add water and cook covered until the vegetables are cooked through.
Add the boiled rice and turmeric.
Mix well and cook covered for 5 more minutes.
Tips:
If you use frozen vegetables, the cooking time will be shorter than using fresh vegetables.

Ingredients:
6 pork chops
300 ml homemade pickled green tomatoes + juice + herbs
8 gherkins
Garlic Italian seasoning
Ground black pepper
Salt
Preparation:
Place the pork chops in an oven dish.
Sprinkle garlic Italian seasoning, ground black pepper and salt.
Rub the pork chops to make sure the spices cover the meat.
Add the herbs from the pickles and the sliced green tomatoes.
Pour the pickles juice over.
Add the sliced gherkins.
Bake in the oven at 180℃ for 30 minutes.
Remove from the oven and turn the pork chops over and place back in the oven for 30 minutes longer or until golden brown.
Tips:
You can serve the pork chops on their own or with mashed potatoes and use the juice as gravy.

11-12 chilli peppers
3 tbsp non iodized salt for 11 peppers
Preparation:
Wash the chilli peppers.
Slice them, with seeds on.
In a lidded jar or container, add 1 tbsp of salt, then 1 layers of chilli pepper slices.
Sprinkle salt over, to cover the slices.
Repeat with 1 layer of chilli pepper slices and 1 layer of salt until all the peppers are in the jar.
Make sure the top layer is salt.
Seal with a lid and keep in the fridge.
Use when needed.
Tips:
With this method, my chilli peppers lasted in the fridge for 4 months.

You can store the buttercream in the fridge for a few days, but you will need to bring it back to room temperature before piping, as the butter will make the buttercream hard. 300 g penne pasta
1 onion
Cream of chicken soup tin
Cream of tomato soup tin
1 tbsp crispy chicken Polish seasoning
Salt
Ground black pepper
Preparation:
Slice the onion.
On medium heat, add boiling water in a pot. Add salt and bring to boil.
Once boiling, add the pasta in.
Whilst pasta is boiling, in a pan, heat up oil and fry the onion until golden brown.
Transfer the onion in an oven dish.
Drain the boiled pasta and transfer in the oven dish.
Pour tomato soup and chicken cream soup.
Mix everything well.
Add ground black pepper, chicken seasoning and mix.
Bake in the oven for 15 minutes.
Tips:
You can use any other soup you like!

Preparation:
Oil and oven dish and add the drumsticks inside.
Sprinkle ghost chilli seasoning according to instructions or according to your heat buds :)
Rub the seasoning and oil on the drumsticks.
Make sure they are evenly covered.
Marinate for min 30 minutes
Cook in the oven for 30 minutes, or until the drumsticks are fully cooked.
Tips:
The more seasoning, the spicier they are and the more they marinate YES the spicier they get!

Ingredients:
Approx. 500 ml freshly squeezed lemonade
1 tbsp honey
Blue edible lustre
Sprinkles
Pastel pink edible rainbow dust
Preparation:
Mix the lemonade with honey. Add the lustre and mix. Add the rainbow dust and mix.
Pour into moulds.
Add sprinkles.
Freeze until they turn solid, then remove from the moulds and add some more sprinkles on the outside.
Re-freeze until ready.
Enjoy!
Tips:
If the popsicle sticks to the mould, the easiest way to remove it is by holding it in your hand for a few seconds.

Ingredients:
2 gutted mackerels
300 g frozen mixed vegetables
1 onion
1 garlic head
1 lemon
1 tbsp butter
Salt
All purpose seasoning
Ground black pepper
Dry lovage
Crispy chicken polish seasoning
Dry thyme
½ bunch dill
Preparation:
Spread the butter in an oven dish.
Add the fish in and butter it up.
Add the sliced onion and half of the garlic cloves inside each fish.
Add lemon slices on the fish, as well as thyme.
Sprinkle salt, ground black pepper, all purpose seasoning, lovage, dill, crispy chicken seasoning and rub all of them on the fish.
Cook in the oven at 180℃ for 30 minutes or until the fish is cooked.
Whilst the fish is cooking, let’s cook the vegetables.
In a wok, on low heat, heat up oil, add the remaining garlic in, sliced, and fry for 1-2 minutes.
Add the mixed vegetables in and mix.
Add ground black pepper, all purpose seasoning, salt, lovage and mix well.
Add chicken seasoning and cook covered for 10 minutes or until the vegetables are cooked.
Halfway through cooking in the oven, take the fish out and brush liquid from the dish onto the fish and place back in the oven.
Cook for 10 minutes longer.
Server the fish with side of vegetables.
Tips:
This recipe works with any kind of fish you prefer.
By using frozen vegetables , you save yourself a lot of time.
If you do use fresh vegetables instead of frozen, you’ll need to add some liquid in the wok, so they can properly cook through, such as chicken/vegetable stock. But it will take much longer, especially carrots.

Ingredients:
300 g sliced button mushrooms
8 garlic cloves
1 onion
300 ml double cream
1 bunch parsley
1 bunch dill
Salt
Ground black pepper
Preparation:
Slice the onion and the garlic.
Add oil in a pot and heat over medium heat.
Sauté the onion, then add the garlic in.
Cook for 5 minutes longer, then add the mushrooms.
Cook the mushrooms for 10 minutes whilst covered.
Add ground black pepper to taste.
Pour in the double cream and give it a good stir.
Add salt if needed.
Add in the chopped parsley and dill and cook covered for approx. 10 minutes or until it thickens.
If you think it’s still too runny after 10 minutes, you can add 1 tsp of cornstarch.
Tips:
Add salt 5 minutes before it’s ready, after tasting.
Garnish with chopped parsley and dill when serving for more flavour!
