Chunky Beef Soup Recipe with Vegetables and Rice
This hearty and flavourful soup is perfect for a cold day. It's made with chunks of beef, vegetables, and rice, all simmered in a flavourful broth. The soup is easy to make and can be customised to your liking. Add more or less vegetables, or use different types of rice. You can also add other ingredients, such as beans or corn .
Ingredients:
300 g beef pieces
200 g vegetable medley
1 carrot
1 parsnip
1 potato
1 onion
3 garlic cloves
100 g celeriac
50 g rice
400 g chopped tomatoes in juice tin
Sage
Rosemary
Thyme
Parsley
Salt
Ground black pepper
Preparation :
Dice the beef and the onion.
Slice the garlic, carrot and parsnip.
Dice the celeriac and the peeled potato.
In a deep pan, on medium heat, warm up a splash of oil. ( I used flavoured pork fat instead )
Add the onion and fry for 5 minutes.
Add the beef, garlic, sage, rosemary and thyme and fry for a few minutes.
Add the carrot, parsnip, celeriac and the vegetable medley and cook for 5 minutes.
Add the rice and cook for 2 minutes.
Add the chopped tomatoes tin, salt, pepper and water to cover the vegetables.
Boil for 30 minutes, then add the potato.
Boil until everything is cooked.
Taste for salt.
Garnish with parsley and serve!
Tips:
You can add even more vegetables, whatever your favourites are. I used frozen vegetable medley, but you can also use mixed vegetables instead.

Ingredients:
2 slices ancient grains loaf
2 slices Gouda cheese
1 tbsp butter
Oregano
Preparation:
Butter the bread slices (leave a bit of butter aside)
Add the Gouda slices.
Sprinkle oregano on the cheese and bottom slice.
Add the top slice over and sandwich them.
On low heat, warm up a dry frying pan. Don’t use any oil!
Butter the bread slices on the outside as well and add the sandwich in the pan.
Fry on both sides, allowing the cheese to melt.
They are done when they are golden in colour.
Tips:
You can add any filling you like and any cheese you like!

Preparation:
Start by layering the sandwich.
Add the gouda slice on the bottom of one slice, add salad, chicken filling, repeat with more salad, then more chicken.
Add the top slice on.
Tips:
You can add as many ingredients as you like in the sandwich.

2 chicken breasts
400 g Italian chopped tomatoes tin
1 tbsp tomato puree
1 onion
3 roasted red peppers
1 tsp chipotle powder
1 tsp oregano
1 tsp dry parsley
Salt
Ground black pepper
Preparation:
In a wok, heat up oil over medium heat, fry the sliced onion for 5 minutes.
Add the sliced chicken breast and the sliced roasted pepper.
Fry for 10 minutes, or until the chicken is golden in colour.
Add the chopped tomatoes tin, chipotle powder, oregano, salt, pepper and cook on low heat, covered, for 10 minutes.
Add the tomato puree, cook for 5 minutes.
Sprinkle parsley on top and turn the heat off.
Tips:
You can add any part of the chicken, if you don’t have chicken breasts.

Ingredients:
1 kg spinach
1 garlic head
300 ml single cream
2 tbsp butter
1 tbsp flour
1 tsp paprika
1 tsp oil
1 tsp crushed chilli
Salt
Ground black pepper
Preparation:
Keep 3 cloves of garlic aside, the paprika, oil and chilli.
Boil the spinach in water and salt for around 10 min, drain it and finely chop it.
In a wide pan, over low heat, melt the butter and add the finely diced garlic.
Fry for 1 min. And whilst mixing, add the flour and mix rigorously, to ensure it doesn’t burn or form any lumps.
Add the single cream, mix and add the spinach.
Add salt and pepper to taste and cook for 10 min.
In a small pan, heat the oil, fry the leftover garlic slices for a few seconds, add the paprika and chilli, fry for a few seconds and sprinkle on top of the spinach.
Tips:
You can also fry chorizo slices with the paprika, it’s even more tastier.

Ingredients:
350 g ready to eat mussels
300 g crisp stringless beans
2 garlic heads + 1 green garlic sprig
1 onion
Oil
Salt
Ground black pepper
Water
Italian garlic seasoning
Oregano
Crispy chicken Polish seasoning
All purpose seasoning
Paprika
Preparation:
De-string the beans if needed.
In a pot over medium heat, add salt and parboil the sliced beans.
Drain the beans and set aside.
In a frying pan, heat up oil and add the beans, fry for 5 minutes.
Add ½ chopped garlic head.
Add salt, pepper, all purpose seasoning and oregano.
Fry covered for 5 minutes, or until the beans are cooked.
Add a bit of warm water, if needed.
Add the other half of the garlic head after you turned the heat off.
In a frying pan, heat up oil and fry the mussels. Remove the mussels from the pan and set aside.
In the same pan, add the diced onion, half of the 2nd sliced garlic head and fry until golden brown.
Add the mussels back in, add paprika, salt, pepper, Italian garlic seasoning, chicken seasoning, oregano and all purpose seasoning.
Turn the heat off and add the remaining garlic.
Serve with the beans.
Tips:
You can add any spices of your liking. The important thing is to fry the mussels so they are crisp, not mushy!

Ingredients:
450 g chopped walnuts/mixed nuts
1 tsp ground cinnamon
450 g filo pastry
1 cup melted butter
1 cup white sugar
1 cup water
½ cup honey
1 tsp vanilla extract
1 tsp lemon zest
Preparation:
Preheat oven to 175℃.
Butter a baking dish.
Keep 6 sheets of filo pastry aside.
Mix walnuts and cinnamon together.
Unroll the filo pastry and cut the stack in half, to fit the oven dish, if needed.
Cover the pastry with a damp cloth while assembling the baklava, to keep it from drying out.
Place 2 sheets of pastry on the bottom of the dish.
Brush some of the melted butter on the pastry.
Add 2-3 tbsp of nut mix on the pastry layer.
Repeat the layers until all the ingredients are used, ending with the 6 sheets of pastry you kept aside.
Cut the baklava in 4 long rows, then diagonally 9 times, to get diamond shapes.
Bake in the oven until the baklava is golden brown and crisp, around 50 minutes.
In the meantime, combine the sugar and water in a saucepan, over medium heat and bring to boil.
Stir in honey, vanilla and lemon zest.
Reduce the heat and simmer for 20 minutes.
Remove the baklava from the oven and immediately spoon the syrup over it.
Tips:
The baklava needs to be stored uncovered, if you cover it, it will turn soggy and it needs to stay crisp.
Don’t store it in the fridge, it will go soggy from the humidity.

Ingredients:
200 g cauliflower
1 egg
Approx. 70 g breadcrumbs
Approx. 100 g flour
All purpose seasoning
Approx. 1 tsp salt
Ground black pepper
Preparation:
Cut the cauliflower florets in small pieces.
Heat up oil in a pan.
Divide spices to use half for the egg and the other half for the cauliflower.
Coat the cauliflower with the spices.
Whisk egg and add the remaining spices ( salt, pepper, all purpose seasoning ) .
Add flour on a plate and breadcrumbs on an other plate.
Dip cauliflower in egg, roll in flour, in the egg again, then cover with breadcrumbs.
Add to the hot oil in the pan.
Fry on low heat, until the cauliflower is golden brown on both sides.
Repeat with the rest.
Tips:
You can serve the cauliflower on its own or as a side dish.

Ingredients for 700 g breadcrumbs:
750 g white bread
Preparation:
Dry the slices of bread in a warm and dry place.
In a food processor, blitz the broken apart bread, as fine as you’d like your breadcrumbs to be.
Spread the processed breadcrumbs on a dry surface or in a tray and dry them for a few days, in a warm and dry place.
Once dry, if you need them finer, you can blitz them again.
Store in a sealed container, in a dry and warm place.
Tips:
You can follow the same instructions for any type of bread. You can also season the breadcrumbs before storing them. They will last for months!

Traditional Romanian Recipe: How to Make Jellied Chicken (Piftie de Pui)
Looking to explore the flavours of Romania? In this video, we'll show you how to make a classic Romanian dish: Jellied Chicken, or Piftie de Pui in Romanian. This dish is traditionally served cold, and it's a perfect appetiser or snack for any occasion.
In this step-by-step tutorial, we'll walk you through the process of making Jellied Chicken from scratch. You'll learn how to prepare the chicken, create a rich and flavourful broth, and assemble the dish with the perfect consistency.
Whether you're an experienced cook or a beginner, this recipe is easy to follow and the result is delicious. With a few simple ingredients, you can create a dish that will impress your friends and family with its unique texture and taste.
So, join us in the kitchen and let's cook up some Jellied Chicken the traditional Romanian way!
Ingredients:
4 chicken pieces
30 g gelatin
2 onions
3 carrots
5 garlic cloves
1 chilli pepper
150 ml water
Lovage/parsley (optional)
½ tsp all purpose seasoning
Salt
Ground black pepper
Preparation:
On medium heat, bring water with a sprinkle of salt to boil.
Add the chicken pieces, the carrots and onions.
Boil on low heat and once they’re ready, turn the heat off and remove them from the liquid.
Allow them to cool down.
Follow the instructions on the pack for the gelatine. If you use a different brand than me, skip the next step! I used Dr. Oetker.
Dissolve the gelatine in 150 ml of water, in a pot and bring to boil. Once the gelatine is dissolved, remove from heat.
Add the gelatine in the liquid you boiled the meat in.
Season with salt and sliced garlic, add in the sliced chillies, all purpose seasoning and keep mixing the liquid until it starts cooling down.
Remove the meat from the bones, ,remove the skin and pull the meat apart, then divide the meat in 4 containers.
Divide the sliced carrots as well and add on top of the meat.
Divide the liquid as well and pour over the meat and the carrots.
Cool down, until is jellied.
Place in the fridge for approx. 1 hour, or until fully set and serve cold.
Tips:
If you are into presentable and decorated dishes, you can use instead of plain containers, jelly moulds or cake moulds, to get any desired shape and you can garnish with parsley/lovage!
It’s delicious served with sprinkled smoked paprika!

Ingredients for 2 servings:
1 tbsp minced ginger
Juice from 3 lemons
1 cup Coconut water
A pinch of ground black pepper
Preparation:
Add all the ingredients in a food blender.
Blend until smooth.
Run the liquid true a sieve, to get rid of larger bits.
Serve straight away or cool it in the fridge before serving.
Tips:
Instead of black pepper, you can use cayenne pepper, but it will be spicier!

From selecting the perfect mushrooms to preparing the marinade, we'll cover all the tips and tricks you need to create a truly unforgettable dish. Ingredients:
500 g mushrooms
60 g lemon juice
Water enough to cover mushrooms
170 ml white wine vinegar - 5% acidity
0.5 cup olive oil
5 garlic cloves
1 tsp salt
1 tsp oregano
1 tsp basil
1 tsp chilli flakes
Preparation:
Add water and lemon juice in a pot and bring to boil.
Clean and wash the mushrooms and trim the stems off. If the mushrooms are larger, cut them in half.
When the water is boiling, add the mushrooms in and boil for 5 minutes.
In another pot add oil, vinegar, garlic, salt, oregano, basil and the crushed chilli flakes. Boil for around 3 minutes, remove the garlic from the marinade, then remove the marinade from heat.
Drain the mushrooms.
In a sterile jar, fill with mushrooms, enough to leave around 1-2 cm headspace at the top. Add 1 garlic clove to each jar.
Stir the marinade and pour over the mushrooms, still leaving headspace.
Seal with the lid and store in the fridge.
Tips:
They will last in the fridge for a few weeks.

250 g mange-tout beans
146 g carrots
1 onion
8 garlic cloves
6 small tomatoes
Salt
Ground black pepper
Preparation:
Heat up oil in a wok/ stir-fry pan, on medium heat.
Add the chopped onion and allow to fry for 2 minutes.
Add the finely sliced carrots and fry for further 5 minutes.
Add mange-tout and sliced garlic and fry for 2 minutes.
Add the chopped tomatoes, salt and pepper and cook covered for 5 minutes, or until the carrots are fully cooked.
Tips:
You might need to remove the strings from the beans. Just make sure you check, before cooking them.

Romanian Melt in the Mouth Strawberry Gem Horn Shaped Cookies
Welcome to our channel, where we explore the flavours of traditional Romanian cuisine. In today's video, we'll show you how to make melt-in-your-mouth Strawberry Gem Horn Cookies. These sweet treats are a favourite in Romania and are perfect for any occasion.
Our recipe is easy to follow and requires only a few simple ingredients. We'll guide you through each step of the process, from preparing the dough to shaping and baking the cookies. You'll love the aroma of strawberries and the delicate texture of these delicious cookies.

Ingredients - makes: 50 horn-shaped cookies
500 g lard
10 tbsp water
3 tbsp granulated sugar
5-6 tbsp vinegar
Approx. 1 kg flour
450 g strawberry jam
Vanilla essence
3-4 tbsp vanilla icing sugar
Preparation:
Combine the lard with the water, granulated sugar, vinegar and vanilla essence.
Add the flour gradually and knead until you get a firm dough, similar to play-doh.
Cover the dough with clingfilm and place it in the freezer for around 2 hours. Don’t allow it to freeze!
Divide the dough in 4 and shape each of them round.
Roll the dough in a round shape and cut in triangles.
At the base, add approx. 1 tsp of jam and roll.
Add the resulting cookies on a baking tray, lined with baking paper.
Bake in the oven at 180℃ for 20 minutes, or until they become slightly golden.
Cool down the cookies, then roll them in vanilla icing sugar.
Tips:
If you don’t have lard, you can use butter instead. The lard will ensure that the cookies are indeed melting in your mouth. You can also try with any other type of filling!

Ingredients:
500 g Ricotta cheese
150 g icing sugar
3 eggs
1 tbsp lemon zest
50 g raspberries
50 g white seedless grapes
Preparation:
Drain the ricotta cheese for a few hours, in a sieve.
In a mixer, whisk the cheese on medium-low speed, until smooth and lump-free, for around 2 minutes.
Add the sifted icing sugar and whisk until smooth.
Whisk the eggs in, one at a time, until fully combined and you have a creamy lump-free batter. Don’t over mix it!
Fold in the raspberries, lemon zest and the sliced grapes.
Line a baking pan with paper or grease with butter and pour the mix in.
Bake at 180℃ for 50-60 min.
The cheesecake is ready when the edges are set, but the centre is still jiggly.
Allow the cheesecake to cool completely before removing it from the pan.
Cover with clingfilm and cool in the fridge for a few hours before serving.
Tips:
You can add various different fruits in the batter, before baking it!

Ingredients:
280g gluten-free puff pastry
3-4 apples
1 tsp cinnamon
4 tbsp white sugar
2 tbsp white flour
100 g raisins
3 tbsp dark brown soft sugar
2 tbsp breadcrumbs
1 egg + 1 tsp water
Icing sugar for dusting
Preparation:
Pre-heat the oven to 190℃.
Peel, core and cut the apples.
In a bowl, add the apples, 2 tbsp white sugar, cinnamon, 1 tbsp brown sugar and the flour.
Mix well and leave aside for 20 minutes.
In another bowl, mix 2 tbsp of brown sugar with the other 2 tbsp of white sugar, the breadcrumbs and raisins.
On a floured surface, roll the puff pastry in a rectangle.
Spread the apple mix layer.
Add on top, the sugar and raisins layer.
Roll the pastry tight.
Add to the baking tray, wash with egg mixed with water and slice the top.
Bake for 40-45 minutes, until the strudel turns golden brown.
When the strudel is ready, dust icing sugar on top.
Tips:
For extra deliciousness, you can add crushed nuts as well and if you are looking for a gluten-free option, replace white flour with almond flour.
