Green Beans Stir Fry Rice Recipe | Granny's Kitchen Recipes
Fresh, healthy and delicious vegetarian green beans stir fried rice. It's really easy and quick to make and you will love it!
GREEN BEANS STIR FRY RICE RECIPE:
INGREDIENTS:
200g rice
2 stock cubes
1 onion
1 garlic head
Half of red bell pepper
200g cherry tomatoes
1 jar of roasted red pepper
200g green beans
8 cardamom pods
1 tin of petit pois&baby carrots
Salt
Ground black pepper
1 tsp All purpose seasoning
DIRECTIONS:
Boil the rice separately. In a deep pan add water, oil, 1 stock cube and the rice.
Boil for around 30 minutes or until the rice is soft. After the rice is boiled,
drain any excess water and set aside.
Peel and dice the onion and the garlic. Slice the bell pepper, tomatoes and roasted red peppers.
I used home grown green beans, so I had to cut off the ends and remove the strings. If you're using store bought green beans then you need to skip this step. You can either leave the green beans whole or split them in half.
In a wok over medium heat, heat up oil, add the onions and the cardamom pods. Allow the onion to brown, then add in the red sliced bell pepper and fry for 5 more minutes, then add the garlic. Add salt and ground black pepper to taste, give it a mix and fry for 5 minutes longer
before adding the sliced roasted red pepper. Make sure you don't throw away the juice from the jar of roasted peppers. Add the juice in the wok. Add the cherry tomatoes in and the green beans.
In a separate bowl, add the remaining stock cube and all purpose seasoning and pour over 400 ml hot water, mixing to make sure the cube dissolves.
Allow the vegetables to fry for 10 minutes on low heat and then you can add the water mix.
Allow to boil, covered, for around 10-15 minutes or until the beans have cooked, mixing occasionally.
When the mix has thickened, you can add in the boiled rice. Mix well and give it 5 more minutes to cook and then it's ready.

Homemade Chocolate Sponge Cake Recipe:
INGREDIENTS:
For the sponge:
8 eggs
Pinch of salt
150g sugar
100ml oil
200g flour
2tbsp cocoa powder
1tsp baking powder
For the syrup:
500ml water
200g sugar
4tbsp rum flavouring
For the cream/filling:
4 eggs
200g icing sugar
200g dark chocolate
300g butter
DIRECTIONS:
For the sponge:
Separate the whites from the yolks. Mix the egg whites with a pinch of salt until they become
firm. Add the sugar and mix until you get a meringue.Fold the yolks with the oil and add them
on top of the whites. Incorporate them by gently folding from bottom to top. Add the flour,
cocoa and baking powder and incorporate them, using the same technique. Pour the mixture into
a baking dish, lined with baking paper. Bake in the preheated oven, at 180C degrees, for
around 30 minutes. When the sponge is ready, put it aside to cool. You can check if it's
ready with the toothpick test. If the toothpick comes out clean from the sponge, then it's
ready.
For the syrup:
Caramelize the sugar, but be careful not to burn it, because it will become bitter.
Add the water and boil until all the sugar is completely melted, set aside
and add the rum. Let it cool down. When you use this syrup for a cake, after pouring
the syrup over the sponge of the cake, make sure you keep it in the fridge overnight,
as the sponge will soak the syrup and become moist. I used this syrup for my homemade
basic chocolate sponge recipe, for a Romanian cake recipe and also for a car cake we made.
You can make variations of this with any flavouring you want, for any future recipes.
For the cream/filling:
Mix the eggs and icing sugar until the composition becomes creamy and begins to whiten.
Place the filling in a deep pot, on low heat and stir continuously until it starts to thicken.
If the filling leaves a trace on the bottom of the pot, then it is ready and you need to set
it aside.
Melt the chocolate in the microwave and add it to the filling. Mix and set aside to cool.
When it's cooled, add the butter, kept at room temperature.
Mix well to incorporate the butter and get a smooth consistency.
You can also use this as filling for any cake of your choice or you can use this for
frosting and piping! If you use it as filling, after you filled the cake, place it overnight
in the fridge. It will harden, thanks to the butter.
If you use it for cake decorating, as a frosting, then you need to cover your cake with it
and set in the fridge overnight before you decorate any further. The butter will harden in
the fridge and it will make it easier to handle.
Assemble the cake:
Divide the sponge into 2 layers and on the bottom layer spread the filling, adding the other
layer on top and spread filling on the top. Keep around 1 glass of filling for the piping.
After you finished with the sponge and filling, syrup the cake and chill overnight in the
fridge.
Pipe swirls on each square and it's ready!

EASY DIY Birthday Car Cake From Scratch with NO TOOLS | Granny's Kitchen Recipes

Homemade Birthday Car Cake Recipe:
INGREDIENTS:

White chocolate
Milk chocolate
Red writing icing
Green writing icing
Blue lustre powder
White lustre powder
DIRECTIONS:
Assemble the syruped cake in 3 layers, adding filling on each, apart from the top one. Using either a template or your imagination, carve the cake layers to shape a car. When you got the desired shape, cover the cake in the same chocolate filling/frosting you used to fill the cake. Chill overnight in the fridge.
Remove from fridge and smoothen and level the cake wherever needed.
Shape the car wheels from milk chocolate. You can use a round cookie cutter/plunger for this or shape with a knife. Add the wheels on the car.
Shape windows from white chocolate. Add them on the car. My advice is to carve in the cake, the shape of the windows before adding the white chocolate, so they hold for longer.
Shape the mirrors and the front lights from white chocolate. Use red writing icing for the back lights. To get the windshield effect at the front, use white lustre powder.
If you want to get the same design of splatter as in the video, sprinkle blue lustre powder over the car.
If you make the cake days in advance, you need to make sure you keep it in the fridge in the
meantime. If you need to transport the cake somewhere, add an ice block in the cake box, to
make sure the frosting doesn't melt before you get there. The frosting has butter, so if it's
exposed to heat for too long, it will start melting and the frosting will get too soft.

Homemade Chocolate Filling or Frosting Recipe for Cakes and Cake Decorating

To get the moist sponge/base for your cake, you need to pour the syrup on the sponge and my advice is to leave it in the fridge overnight, the sponge will soak all the syrup, but it will be firm to work with.

INGREDIENTS:
6 small apples ( any type you have )
1 tbsp vanilla extract
1 tbsp rum flavouring
50g Sugar
3 tbsp cinnamon
1 lemon
DIRECTIONS:
Peel all the apples and slice them in cubes or however you like having them. Add the apples
in a deep pot, add in the sugar, vanilla essence, rum essence, cinnamon, the sliced lemon and
water to cover the apples. Bring to boil on medium heat and boil for 10 minutes or until the
apples turn soft. Whilst boiling, have a taste to see if it needs anymore sugar. If not, then
remove from heat and enjoy. You can have this hot or cold!

Halloween Hot Dog Mummies Recipe:
INGREDIENTS:
8 hot dogs
160g Puff Pastry
Ketchup
Mayonnaise
Ground Pepper
Shaping tools
DIRECTIONS:
Roll the puff pastry and cut into slim strips. Take 1 hot dog and 1 strip of puff pastry and wrap around the hot dog, criss crossed, to give the appearance of a mummy. Make sure you leave space where you can add the eyes. Repeat the same with the rest of the hot dogs.
On a baking sheet, add the hot dogs wrapped in pastry and bake in the oven at 180°C for around 10 minutes, or until the puff pastry turns golden in colour. Remove from the oven and allow to cool.
Decorate your hot dog mummies with mayonnaise and ketchup. I used mayonnaise to shape the eyes, I added a dot of ketchup in the centre of each eye, I then added ground pepper in the middle of the mayonnaise, to give the impression of the iris.
If you are looking to make these in advance, before being eaten, keep them in the fridge, but only add the mayonnaise eyes before serving.
Serve with ketchup or mustard!

Avocado and garlic spread recipe:
INGREDIENTS:
4 avocadoes
1/2 lemon
1 garlic head
3 tbsp soft cheese
salt
pepper
DIRECTIONS:
Peel and de-seed the avocadoes. In a bowl, mash the avocadoes with a fork or potato masher.
Chop or mince the garlic and add on the avocado. Add the soft cheese, the juice from 1
lemon (this will prevent the avocado paste from going brown), salt and pepper to taste and
mix well to incorporate all the ingredients.
Serve as spread!

How to make Halloween Ghost Chocolate Muffin | Granny's Kitchen Recipes
Are you looking for a quick and easy Halloween dessert recipe? This Halloween muffin is extremely easy to make and very quick.
Halloween Ghost Chocolate Muffin recipe:
100g dark chocolate
3 tsp milk
1 muffin
70 g white chocolate
white food colouring paste
1 ghost cookie cutter
Black writing icing
Halloween muffin wrapper
DIRECTIONS:
Add boiling water in a pan on medium heat and then add a bowl over the pan. This method is called bain-marie. We use it for melting the chocolate. Add the bar of chocolate in the bowl, in small squares. Allow to melt over the steam. Once the chocolate is melted, add 1 tsp of milk and incorporate well, until there are no lumps and the chocolate has a smooth
consistency. Remove from heat.
Get your muffin on a plate or tray and cover it with the melted chocolate. Clean up the plate of all the extra chocolate around the muffin and allow the chocolate to harden on the muffin. You can either keep it in the fridge for at least 30 minutes, or leave it outside overnight.
The HALLOWEEN GHOST:
Using a ghost cookie cutter, add the cookie cutter on a flat surface, such as a plate or a small bowl. Using the same method as with the black chocolate, melt the white chocolate.
Add 1 tsp of milk and incorporate well until is smooth. Remove from heat and add white food colouring, until you get a white colour. Add the white chocolate in the cookie cutter and spread it around, to make sure you cover all of the edges and spaces. That's how we are getting the ghost shape.
You can either keep the chocolate ghost in the freezer for around 15 minutes, or leave it outside overnight. Once you're ready to work with the chocolate ghost, before removing it from the cookie cutter, flatten the surface and then carefully remove the ghost from the shape.
To draw the eyes for the ghost, use the black writing icing. You can also use other edible decorations for the eyes, depending on what you fancy.
I also used red writing icing for the mouth, but this is optional. Once you're done decorating the ghost, add it on top of the chocolate layered muffin.
And you now have a delicious and cute white chocolate ghost and dark chocolate muffin, Halloween edition.
If you want to decorate the muffin further, you can do so.

GRILLED LARGE FLAT MUSHROOMS WITH SOFT CHEESE AND DILL FILLING RECIPE:
INGREDIENTS:
4 large flat mushrooms
1 bunch of dill
200g soft cheese
1 tbsp of oil
pinch of salt
All purpose seasoning
DIRECTIONS:
Make sure your mushrooms are washed. Peel the mushrooms and remove the stem.
Use a grilling pan to cook the mushrooms. Drizzle the oil on the grill and heat up on medium heat. Add the mushrooms in and sprinkle salt. You can add in the left over stems as well in the pan. Whilst the mushrooms are grilling, get started on preparing your filling.
Add the soft cheese into a bowl and set aside. Chop the dill and add it into the bowl.
Mix well to incorporate the dill into the soft cheese. Add salt and all purpose seasoning. Incorporate everything well. The filling is ready.
Flip the mushrooms in the pan on the other side and carry on grilling. The mushrooms should be kept for 10 min on each side, to ensure they are cooked, but not burnt. So, depending on your stove, the mushrooms are ready when they have a golden colour on the top side.
Remove from heat and add the soft cheese filling. Around 1 tbsp on each mushroom, but you can add more if you like it extra cheesy.

HOW TO MAKE GRILLED ASPARAGUS TIPS with Garlic Dip and EGGS
INGREDIENTS:
300g asparagus tips
6 garlic cloves
3 eggs
Pinch of salt
All purpose seasoning
Oil
DIRECTIONS:
Prepare the asparagus tips by washing them and cutting the ends off.
Add water into a deep pan and sprinkle salt. When the water is boiling, add the asparagus tips in and parboil it for around 5 min.
Get your garlic dip ready by peeling the garlic cloves, then proceed to mince the garlic. Add 1 tsp of oil, 3 tbsp water, pinch of salt and 1 tsp of all purpose seasoning. Mix well to incorporate all the ingredients.
In a grill pan, drizzle a very tiny amount of oil, add to medium heat and place the asparagus tips in the pan. Sprinkle all purpose seasoning on the asparagus and grill for 2 minutes on one side, then flip the asparagus over and grill for 2 more minutes.
In a frying pan, heat oil and fry an egg.
On a serving plate, add asparagus, the fried egg and add garlic dip on the asparagus tips.

BAKED SALMON IN THE OVEN WITH RAVIOLI RECIPE
INGREDIENTS:
500g salmon side
1 yellow bell pepper
1 sliced lemon
250 g funghi ravioli
Salt
All purpose seasoning
1 tbsp oil
DIRECTIONS:
For the ravioli, follow the directions on the package.
For the salmon:
Prepare an oven dish and add the oil in the dish. Add the sliced salmon side in the dish. Sprinkle salt on the salmon slices and all purpose seasoning. Rub the slices to make sure the seasoning is evenly spread on the slices. Add in the sliced bell pepper, spread all over the salmon slices. Add the lemon slices. Add the salmon in the oven for around 30 minutes, at
Gas mark 7, or until the salmon is cooked. Serve with ravioli!

How to make pork schnitzel recipe:
INGREDIENTS:
7 slices cooking Smoked bacon
3 eggs
1 cup oil
1/2 cup flour
DIRECTIONS:
Heat up oil in a frying pan.
Start making the batter. Crack the eggs in a deep bowl and whisk them. Add the flour in and mix well. Considering the bacon is smoked, you won't need any extra spices or ingredients in the batter or on the bacon slices. Take a bacon slice and run it through the batter and flip, making sure both sides are covered in batter. Repeat the same process with the rest of the
slices. Add in the frying pan, on medium heat, and fry on both sides until they are golden brown on each side.
If you think the batter is too thick, you could add 1 tbsp of sparkling water in the batter.
The sparkling water will also help in making the schnitzels puffier.

How to Make Spinach and Eggs | Granny's Kitchen Recipes
This is a very quick and easy recipe to make for breakfast, lunch or dinner. Delicious spinach and eggs.
Spinach and Eggs Recipe:
INGREDIENTS:
1kg spinach
9 garlic cloves
5 tbsp sour cream
3 tbsp flour
2 tbsp water
4 tbsp milk + 1 cup milk
1 egg
1 tsp salt
1 tsp all purpose seasoning
2tbsp oil
DIRECTIONS:
Add boiling water to the spinach, in a pot, making sure it covers it. Boil the spinach on
medium heat and add a pinch of salt. Boil for 10 minutes. After 10 minutes, drain the
spinach and allow to cool down. Peel and mince the garlic and set aside.
Chop the spinach in very small pieces, like shown in the video. In a deep pan, add oil,
bring to heat, then add the minced garlic in, fry for 1-2 minutes, add 3 tbsp flour in, mixing
well to make sure there are no lumps, add in the sour cream, mixing well again, then add
in the water, again mixing well to avoid forming lumps. Add the spinach in and mix well.Add
the milk and incorporate. Boil for 10 minutes and in the meantime,in a bowl, mix the
remaining flour with 1 cup of milk and 1 tbsp of sour cream. Mix well to
ensure there are no lumps. Add the mix in the spinach and mix well. Add the salt and all
purpose seasoning and mix. Taste to make sure you don't need any extra seasoning or extra
sour cream. The consistency should be a puree like consistency. If you think it's too thick,
you can add extra milk and remix.
It should take 20 minutes overall, to finish the spinach dish.
Serve on it's own or with eggs or meat.
