Chicken and sweetcorn sandwich filler
Homemade chicken and sweetcorn sandwich filler
Ingredients:
2-3 chicken breasts
3 tbsp sweetcorn
2 onions
4 tbsp mayonnaise
2 tbsp yoghurt
1 tbsp mixed cumin and rosemary seeds
1 tbsp chicken seasoning
Salt to taste
Ground black pepper to taste
Preparation:
Dice the chicken and slice the onions.
Warm the oil and fry the cumin and rosemary seeds for 1 minute
Add the sliced onion and salt, fry for 5 minutes, covered
Add the chicken
Add the seasoning and pepper
Cook covered until the chicken is cooked through
Cool down
Transfer in a container, add sweetcorn, mayonnaise and yoghurt
Mix well
Serve chilled
Tips
You can use various spices if you are looking for a particular taste.

Serves 10 people

Ingredients:
SPONGE:
5 eggs
120 grams sugar
150 grams flour
30 grams oil
1 tsp vanilla extract
Lemon zest
pinch of salt and a sprinkle of salt
FILLING:
400 g jam / conserve ( I used homemade conserve )
ICING:
30 ml lemon juice
150 grams vanilla icing sugar
Preparation:
Preheat oven at 170℃
Separate the eggs
Beat egg whites with the pinch of salt
When the egg whites are stiff add sugar
Keep whisking until you have stiff peaks
Gradually at the yolks, vanilla extract, the sprinkle of salt and lemon zest
Mix a bit, then add the oil
Mix for a few more seconds
Add the flour all at once and gently fold
Pour into a baking dish and bake for 15-20 minutes
Cool down
Slice the cake into 3 layers
Keep two tablespoons of jam aside
Spread half of the jam on the bottom layer
Add the middle layer on top
Spread the rest of the jam on it
Add the top layer and spread the two tablespoons of the jam you set aside
Leave the cake to rest for 1-2 hours
Add the vanilla sugar in a bowl and gradually add the lemon juice
Mix well and you should get the consistency like sour cream
Pour the mix over the top layer of the cake
Allow to dry for 1-2 hours, so the icing sugar forms a crust as it dries
Tips:
If you feel the cake is too thin to be sliced in 3 layers, you can slice it in 2 layers, but then you would add the jam on the bottom layer and the quantity set aside on the top layer.

Ingredients
500 g chopped tomatoes in juice
100 g tomato passata
1 onion
1 garlic head
400 g pork steaks
Salt to taste
Ground black pepper to taste
1 tbsp all purpose seasoning
2 chicken stock cubes
1 tbsp Polish crispy chicken seasoning
3 tsp dry lovage
10 g basil
70 ml oil
500 ml warm water
50 g rice
80 g celeriac
Preparation
Heat oil in a large pot, over low heat
Add the diced onion and fry for 5 min
Add the diced pork and fry until browned
Add the diced garlic and fry for 5 min
Add the cubed celeriac and fry for another 5 min
Add the basil, chopped tomatoes, passata
Give it a mix, then add the stock cubes dissolved in the warm water
Add the rice in, the fill the pot with water
Add the salt, all purpose seasoning, pepper, chicken seasoning and dry lovage
Boil until the rice and celeriac are cooked.
Tips
You can garnish with fresh chopped basil. If you don’t like cold soups, you can serve it warm instead.

For the glaze:
¼ cup fresh lemon juice from 4 lemons
75 g icing sugar
Preparation:
Preheat oven to 175℃
Spray an 8 inch cake pan with spring and brush to cover with oil
Line the bottom with baking paper and lightly spray the paper
Mix yoghurt, sugar, eggs and blend well
Add the flour, baking powder, salt and lemon zest, mixing just to combine
Add oil and stir well, until smooth
Pour the batter in the baking pan
Bake for 40 minutes
Cool the cake for 10 minutes, in the pan, then turn it over
For the glaze, combine lemon juice and icing sugar in a bowl and stir until smooth
With a pastry brush, pat the glaze all over the cake
Allow the cake to cool completely
Sprinkle with icing sugar if you want

Ingredients:
700 g flour
30g fresh yeast/15 g dry yeast
300 ml warm milk
2 eggs+2 egg yolks
3 tbsp sugar
80 g melted butter
Vanilla extract
Pinch of salt
For decor:
Sugar
Mixed roasted nuts
Cinnamon sugar
Desiccated coconut
Preparation
In a bowl, add 2 tbsp sugar, add yeast, 100 ml warm milk, 5 tablespoons flour and mix
Cover for 10 minutes
In a bigger bowl, add remaining flour
In the middle, make a hole and add the yeast mix
Mix a little, then add the whisked eggs plus the two yolks, the remaining milk, sugar, vanilla and salt
Gradually add the butter, continuing to mix
The dough needs not to be sticky, and it needs to be elastic
Place in an oiled bowl and rise until doubles in olume
Transfer on floured surface and roll to 1 cm thickness
Cut in 3 cm wide strips
Swirl around heatproof tubes, covered in aluminum foil and butter
Brush the dough with water
Run each individually, through sugar, nuts , coconut
Place them in an oven tray and bake at 180 degrees Celsius for 25 minutes
Take them from the tubes after they have cooled down
Enjoy hot or cold
Tips
You can use any topping you like. You can use cinnamon for one, sugar for another, roasted nuts for another, or you can use all of the three toppings on one. It really depends on your taste.
For my tubes, I made them myself using Pringles tubes covered in aluminum foil, brushed with butter.

Ingredients:
3 tins of baked beans (1.3 kg)
Salt
Ground black pepper
5 garlic cloves
4 onions
4 tbsp oil
3 tsp paprika
Bacon slices
Preparation:
Boil the beans for 5 minutes.
Place them in a food processor and make a paste.
Add chopped/minced garlic, salt and pepper to taste and mix.
Fry the bacon, remove it from the pan and keep the fat
Slice the onion and saute in the bacon fat, with a pinch of salt.
When the onion is almost done, add paprika and fry for 1 minute or so.
Serve the beans with onion and bacon on top.
Tips:
Don’t overfry the paprika, as it will go bitter.
You can also use the beans as spread, on bread. If you use raw beans, you will need to soak them in cold water overnight and boil them fully, before placing them in the food processor.

Ingredients:
2 tbsp extra virgin organic raw coconut oil
1 tbsp cold pressed castor oil
Preparation:
Add the castor oil in a glass
Add the coconut oil
Mix them together
Apply to your scalp and the length of your hair
Leave for a few hours
Wash with shampoo, twice.
Tips:
You can add essential oils for extra fragrance. If the coconut oil is too solid to apply to your hair, microwave it for a few seconds.

Ingredients:
8 litres whole milk / full fat
4 tbsp full fat yoghurt
6 drops animal rennet
Salt
Preparation:
Prepare the rennet according to instructions.
Heat milk to 30℃, stirring well and heating slowly.
Once the milk reaches that temperature, you can add the yoghurt.
Stir
Keep the milk to the same temperature for 90 minutes
Add the rennet
Allow the milk to sit quiet for 45 minutes. Do not heat it!
When the milk is curdled, you will be able to test and see a simple, clean break
Cut the curd into squares and rest for 5 minutes
Stir slowly for 10-15 minutes, then bring it back to 30℃, if the curds have cooled
Increase the heat slowly to 38℃
Total cooking time should be 30 minutes
Stir for another 30-60 minutes, until the curd is firm
The final curds should be firm, with moderate resistance when pressed
When the curds are dry, settle them under the whey for a few minutes
Begin to remove the whey down to 3 cm above the mass
Transfer curds into a colander lined with cheese cloth
The curds should be completely covered with whey
Stir for 10-15 minutes, then fold over the cloth and tighten around the curd, allowing all the whey to drain.
Leave it for 1-2 days, then it’s ready!
Tips:
If you don’t have a thermometer, 30℃ should feel warm when you dip your finger in the milk.

½ turmeric root
Juice from 1 lemon
2 cups of water
1 tbsp honey or to taste

Bring to boil over medium heat
Turn heat off

Stir well to mix, taste and add more honey or lemon juice if needed
Add the chopped mint leaves, ice cubes and stir.
Serve chilled

250 g spaghetti
2 tins of hotdogs - 800 g
A few drops pink food colouring
Salt to taste
Oil - for boiling
Grated cheese - optional
Preparation:
Slice the hotdogs in chunks
Take one or more raw spaghetti and pierce through the hotdog chunks, like a kebab
Repeat with the rest
In the meantime, bring water to boil, with a pinch of salt and a drizzle of oil
When the water is boiling, place the spaghetti in
Add the food colouring in the same water
Boil until spaghetti are cooked, according to pack instructions
Drain and serve with grated cheese.
Tips:
If the spaghetti don’t turn pink whilst boiling, add a few drops of white vinegar - it won’t change the taste of the spaghetti, but it will help with the colouring.
You can also add mixed herbs or any seasoning you like in the spaghetti, whilst they are boiling.

Soothing Pink Iced Tea | Chamomile & Honey Iced Tea Recipe

Ingredients:
1 chamomile tea bag / 1 tbsp dry flowers
Honey to taste
Pink food colouring
Ice
Preparation:
Prepare the tea as per directions on the package.
If using home dried chamomile flowers, then you can add the flowers in water and boil for a few minutes, then allow the flowers to sit for 10 minutes in the water, then strain.
Pour the tea in a glass jar, add honey to taste.
Add a few drops of food colouring.
Add ice cubes
Mix well and enjoy!
Tips:
I used pre-filled ice cubes and I would recommend you use the same, as they don’t melt and so it won’t dilute the tea, however it will definitely cool it down!
