Sheep's Cheese Polenta : The Comfort Food You Never Knew You Needed !

Welcome to our latest video, where we'll be showing you how to make the ultimate comfort food - Sheep Cheese Polenta! This dish is perfect for those cold winter nights when you need something warm and comforting to soothe your soul. The combination of creamy polenta and rich sheep cheese is a match made in heaven and will leave you wanting more.
We'll start by showing you how to make the polenta base, which is a simple mixture of cornmeal, water and salt.
This dish is perfect as a main course or as a side dish, and can be served with a variety of meats or vegetables. It's also a great option for vegetarians, as the sheep cheese adds a nice depth of flavour.
So, whether you're a seasoned cook or just starting out, this recipe is easy to follow and the results are sure to impress. So, grab your apron and let's get cooking!
Ingredients:
300 g coarsely ground cornmeal
1 litre water
Approx 1 tsp salt
200 g sheep’s cheese
Preparation:
Add water in a pan and sprinkle salt.
On low heat, mix the salt and water, but don’t allow the water to heat before adding the polenta.
If the water is not boiling or hot, it will avoid the polenta from forming lumps.
Take a whisk, and at the same time as you pour polenta in the water, whisk vigorously.
Keep whisking and adding polenta until all of it is in there.
Whisk continuously until it thickens to the desired consistency, for around 5-10 minutes. It should feel soft to taste and have the consistency of mashed potatoes. If you use gritty polenta, it will take a bit longer to cook, fine polenta is the quickest.
Add one layer of polenta on a plate, cover with half of the sheep’s cheese, add another layer of polenta and cover with more of the sheep’s cheese.

Noodles and Cod: A Match Made in Protein Heaven
Ready for some extra protein in your meal without compromising on taste? These noodles and cod are a God send and so delicious!

High protein noodles and cod fillet recipe:
Ingredients:
2 cod fillets
2 carrots
1 yellow bell pepper
6 green beans
200 g garden peas
1 onion
300 g fresh high protein egg noodles
50 g spinach
100 g tomato passata
100 ml oil
1 tbsp lovage
Salt
Ground black pepper
1 stock cube
Preparation:
Start by cooking the fish. In an oven dish, add half of the oil and place the fish in.
Sprinkle salt on the fish, half of the lovage, ground black pepper and rub the ingredients on the fish. Repeat on the other side with the ingredients.
Bake the fish in the oven at 180℃ for 30 minutes, or until the fish is cooked.
Whilst the fish is cooking, we can prepare the noodles.
Cook the noodles according to pack instructions, if they need cooking. Put them aside.
Dice the onion, slice the carrots, the green beans, the bell pepper and the spinach.
Over medium heat, heat up the remaining oil in a wok. Add the onion in and fry until golden brown.
Add carrots and cook for further 5 minutes, then add the p epper and the stock cube, and cook for 5 more minutes, before adding the green beans.
Add salt, ground black pepper, the remaining lovage, the spinach, mix well and cook for further 5 minutes.
Add the passata and a bit of water and incorporate.
Cook covered for 10 minutes, on low heat.
Add the garden peas and cook covered for further 2-3 minutes, before adding the noodles and a sprinkle of lovage.
Mix really well, to get the noodles covered in the sauce and cook for 2 minutes.
Before turning the heat off, just make sure that the carrots are cooked thoroughly.
Serve with the cod fillet!
Tips
You can use any type of noodles you like, but for an extra kick of protein, it’s best to use high protein noodles.

Ingredients:
6 slices smoked bacon rashers
200 g shredded cheese
3 large potatoes
5 tbsp sour cream
Ground black pepper
Salt
Parsley
Preparation:
Cut bacon rashers into small squares / pieces. Fry them until they are crispy. Set aside.
Peel and slice the potatoes.
In the same oil you fried the bacon in, fry the potato slices until they are golden brown on both sides. Remove and dry them on a kitchen paper towel, to drain the excess oil.
Butter an oven dish and add the first layer of fried potatoes.
Sprinkle salt to taste and ground black pepper to taste, then add the second layer of potatoes.
Add ground black pepper to taste over the second layer.
Keep 2 tbsp of cheese aside and Mix the rest of the cheese with the fried bacon and the sour cream.
Spread over the top layer of the potatoes , making sure everything is covered.
Add the remaining cheese on top.
Bake in the oven at 180 degrees C for 1 hour or until the colour is golden brown. Garnish with parsley before serving.
Tips:
For this recipe, I used cheddar cheese, but if you want a cheese that really melts, to get the strings, you can use Gouda, Provolone, Mozzarella, Gruyere or Emmental.

INGREDIENTS:
1 kg chicken wings
35 g scoth bonnet wing roulette seasoning
DIRECTIONS:
Sprinkle the scotch bonnet seasoning over the chicken wings and mix properly to make sure they are evenly covered. Marinate for minimum 1 hour. Add them in an oiled oven dish and bake at 180 degrees C for a total of 1 hour, or until the wings are golden brown.
Half way through, flip them on the other side and place them back in the oven until they are fully cooked.

INGREDIENTS for 1 kg cheese:
6 litres full fat cow's milk
1 1/2 cup lemon juice
1 cup vinegar
3 tsp bicarbonate of soda
150 g salted butter
240 ml boiled full fat cow's milk
6 g salt
DIRECTIONS:
Add the 6 litres of milk in a deep pot and heat on low heat, stirring continuously. The milk
needs to reach 45-50 degrees C temperature. If you don't have a thermometer, you can dip your
finger tip in the milk and it should be luke warm. When it reaches the desired temperature,
turn the heat off.
Add vinegar gradually and mix each time. Keep mixing and adding vinegar until the milk starts
to curdle. When the milk is curdled, cover with a lid a allow it to sit for 1-2 hours.
Strain the cheese, to make sure all the liquid(whey) is drained.
DON'T THROW THE LIQUID/WHEY AWAY, YOU CAN USE IT TO MAKE BREAD!
In a separate bowl, add the lemon juice, bicarbonate of soda and leave it to react and then
settle.
DON'T DO WHAT I DID! PLEASE USE A LARGE AND DEEP BOWL, NOT A SMALL ONE, as the reaction will
rise a lot!!!
In a food processor add half the cheese, half the lemon juice solution, half the butter, half
the boiled milk, half the salt and mix.
DON'T DO AS I DID! MAKE THE CHEESE IN 2 BATCHES, RATHER THAN ONE, BECAUSE THE MIXTURE WILL RISE
AND IN MY CASE, IT POURED OVER THE FOOD PROCESSOR!
The consistency should be that of an emulsion, just like the consistency of store bought
spreadable cheese.
Add the mixture in a large bowl and in the meantime, prepare a pot with water, on the hob,
on low heat, for bain-marie. When the water gets hot, add the cheese over the steaming pot.
Cook for 5-8 minutes.
Grease a storage container with butter and transfer the cheese. Cover the cheese with
clingfilm, so it doesn't dry on the top. Cool at room temperature then refrigerate for
minimum 5-6 hours before eating.
I flavoured half of the cheese with garlic Italian seasoning.
Store the whey in a jar/bottle until you're ready to use for bread making or baking!

Ham it Up with this Easy and Delicious Spaghetti Salad

This easy and delicious spaghetti salad is loaded with savoury, smoky ham and tossed with a tangy dressing that will have you coming back for seconds. Whether you're a vegetarian looking
to add a little meat to your diet or just a ham fanatic, this recipe is sure to please.
So don't be shy, let's ham it up and give this spaghetti salad a try! You won't be disappointed.
INGREDIENTS:
200 g spaghetti
170 g cooked smoked ham
50 g rucola/wild rocket
3 tomatoes
8 small radishes
100 g cucumber
2 chillies
8 garlic cloves
50 g sweetcorn
Approx. 90 g oil + 1 tbsp oil
Garlic Italian seasoning
Salt
Ground black pepper
DIRECTIONS:
In a deep pan boil spaghetti according to pack instructions. Add 1 tbsp of oil in the water, to prevent the spaghetti from sticking to each other whilst boiling. After the spaghetti have boiled, drain and cool them down.
In a deep and large bowl, add the sliced tomatoes in, the diced cucumber, the sliced radishes, the diced ham, the sliced chillies and sweetcorn.
Slice, dice or mince garlic and add it in a separate bowl, add over it 2 tbsp of oil from the 90 g, then mix well.
Set aside.
In the salad bowl, add in the cooled down spaghetti, salt to taste, pepper to taste, garlic Italian seasoning to taste and the remaining oil. Carry on by adding the wild rocket and the garlic dressing/dip.
Mix everything really well.
Chill in the fridge and serve cold!

Lemon Obsessed? Here's How to Preserve for Non-Stop Flavour
INGREDIENTS:
7 lemons
12 tbsp white granulated sugar
Jar with lid or container
DIRECTIONS:
Slice all the lemons. In the jar/container add to the bottom, 2 tbsp of granulated sugar, then add enough lemon slices to cover the sugar, repeat by adding 2 more tbsp of sugar, then another layer of lemon slices, other 2 tbsp of sugar, and repeat with lemon slices and sugar, until you filled the container. Make sure the top layer is sugar covering the lemons.
Seal the jar/container and store in the fridge.
If you use a wide container, but not tall, you can divide the sugar in such a way to cover the layers of the lemon slices, but making sure the bottom and top layer is sugar.
It will keep the lemons fresh for at least a few weeks.

INGREDIENTS:
250 g curd cheese
1 free range egg (optional)
70 g raisins
Lemon zest
4 tbsp white sugar
1 tbsp Vanilla extract
1 tbsp rum essence
DIRECTIONS:
Add some sweet and tangy flavour to your cakes, pancakes, and even swirls with this easy cheese and raisin filling!
All you need is a bowl, a fork, cheese, sugar, an egg, vanilla extract, rum essence, raisins, and lemon zest.
Simply press down the cheese with a fork to break it apart, add the sugar and mix, then add the rest of the ingredients and mix until well incorporated. If you're not baking it, you can use an organic free range egg or skip the egg altogether. This filling is ready to use right after making it or within 30 minutes, otherwise it may become watery. Homemade Garlic Butter | Delicious for Meat | Granny's Kitchen Recipes
If you have some extra butter laying around, that you seem not to use for anything, why not make this garlic butter instead? You can use it for meat, fries, toast, on anything you fancy garlic with.

Homemade garlic butter
INGREDIENTS:
200 g my homemade butter - recipe here: https://youtu.be/JSoKHJ5JJWg
1 garlic head
DIRECTIONS:
Keep the butter at room temperature. Peel and mince the garlic. Add over the butter and mix well to incorporate in the butter. Check if it needs any salt, if it does, add salt, if it doesn't, store it covered in the fridge and take out when ready to use.
TIP: You can use this butter to spread over meat, French fries or simply as spread on toasted bread.

Homemade Hamburger Better than McDonald's
INGREDIENTS for 1:
1 Aberdeen Angus beef burger
1 brioche burger bun
2 full frame onion rings
2 tomato slices
3 Lettuce leaves
12 slices of gherkins
2 slices sheep's cheese
Chilli & garlic sauce
7 Pickled jalapeno pepper slices
Salt
DIRECTIONS:
Bake the burger according to package instructions.
Slice the bun and on the bottom slice, start layering the hamburger. Add sheep's cheese, lettuce, jalapeno, the burger, onion, tomato, sprinkle salt, then add gherkin and on the top bun add chilli & garlic sauce. Add onto the top layer. All done!
