Deep Pan Homemade Pizza Base Recipe:
INGREDIENTS:
300g flour
7g yeast
8g salt
15g sugar
220 ml milk
1tbsp oil
1tsp water

DIRECTIONS:
Add the flour in a deep bowl. Add the sugar and salt in and mix well.
Warm the milk, dissolve the yeast in the milk and allow to sit for 10
minutes. Add the milk on the flour and mix well. Transfer the dough on
a floured work surface and start kneading. The dough needs to be elastic,
similar to playdough and a bit sticky. Knead for a total of 10 minutes.
In another deep bowl, brush the bowl with oil and transfer the dough in.
Sprinkle water on the dough, then cover with clingfilm which is brushed
with oil. Leave to rise in a warm place for 1 hour or until the dough
doubles in volume.
Before transferring to the oven, spread the pizza sauce over the base and
add your favourite toppings and bake in the oven.

This traditional Romanian meatball soup is absolutely delicious and very easy to make. It's warm and healthy and scrumptious!

Romanian Tradition Meatball Soup Recipe:
INGREDIENTS:
For the soup:
200g frozen mixed vegetables
1 onion
100g spinach
2 celery stalks
Half bunch parsley
Half bunch dill
Tin of chopped tomatoes
Chicken/vegetable stock (optional)
3 Roasted red peppers or 1 fresh red bell pepper
1 chicken/vegetable stock cube
Ground black pepper to taste
Salt to taste
1tbsp lovage
2 Bay leaves
Dry thyme
2tbsp oil
For the meatballs:
500g pork mince or any mince you prefer
50g rice
1 onion
2 tbsp oil
Salt to taste
Ground black pepper to taste
Half Bunch of parsley and dill
1 tsp dry thyme
1 tbsp lovage
1 egg
1 tbsp Ketchup
1 tsp Chicken seasoning
1tbsp Paprika
1 tsp all purpose seasoning
DIRECTIONS
Meatballs: Add the mince in a bowl, rice, egg, ketchup, chicken seasoning, paprika, salt,
ground black pepper, lovage, all purpose seasoning. Dice the onion and add it in. If you use whole dried thyme, then you need to chop it, otherwise add it in as it is. Chop the parsley and add it in. Do the same with the dill. Mix everything really well, add the oil and remix.
Taste to see if it needs any extra seasoning. Now you can shape the meatballs.
Soup: Slice the pepper, the celery stalks and chop the parsley and dill. Place oil in a deep pot on medium heat and warm up. Add in the sliced onion and fry until golden brown. Add bay leaves and after 2 min, add the
frozen vegetables. Fry for 2 minutes longer, then add the pepper and celery. After 5 minutes, add chicken stock. You can use as much as you have or as little as you have, however if you don't have any, it's optional. Add the chopped tomatoes and fill the pot with water, almost full,
but keep in mind you will need to add the meatballs later on in the soup, so don't fill it to the top, otherwise it will spill over. Add thyme in, chopped spinach, mix well and bring to boil.
Add salt to taste, ground pepper and all purpose seasoning.
Boil for 20 minutes, turn the heat low and add in the meatballs, one by one. If you feel there are too many and they wont' fit, you can freeze the rest of the meatballs. They will keep good for a few months. Allow to boil, adding the chopped parsley, chopped dill and lovage.
The soup is done when the rice in the meatballs is fully cooked. You can also use fresh vegetables, it might take longer for these to boil, however the soup is ready when, of course, everything is cooked.
You can serve it as it is, or with a dollop of sour cream, a sprinkle of lovage and parsley.

INGREDIENTS:
10 asparagus tips
Salt
Ground black pepper

DIRECTIONS:
Cut the ends of the asparagus tips.
Bring water to boil on medium heat, add salt and add in the asparagus tips. Let them boil for 5 min then drain them.
Line a baking tray with baking paper and place the asparagus tips in. Sprinkle salt and ground black pepper and place in the oven. Cook in the oven for approx. 10 minutes.

Crispy Fried Eggplant / Aubergine With Cornflake Breadcrumbs Recipe | Granny's Kitchen Recipes
If you have a leftover eggplant/aubergine and you don't know what to do with it, then try this recipe of cornflakes crispy fried eggplant.
Crispy Fried Eggplant - aubergines with cornflake breadcrumbs recipe:
INGREDIENTS:
1 eggplant/aubergine
2 eggs
100g flour more or less
100g of my homemade cornflakes breadcrumbs
Salt
Ground black pepper
DIRECTIONS:
Peel the skin off the eggplant and slice it in round slices.
Over a deep pot, add a strainer and put the eggplant slices in the strainer.
Sprinkle salt over the slices and leave to soak for around 15 minutes. This will take out the extra moisture/water from the eggplant. Remove the slices after 15 minutes and dry them on a kitchen paper towel.
In a deep bowl, crack the eggs, sprinkle salt and ground black pepper and whisk.
Over medium heat, add oil in a frying pan and heat.
Take the bowl of egg, flour and breadcrumbs and cover the eggplant slices in the following order: dip first in egg, making sure the slice is covered, then in flour, making sure the slice is covered evenly in flour on both sides, then again in egg and lastly in the cornflakes breadcrumbs. Add in the frying pan and fry until golden on both sides. Repeat the same process
with the rest of the slices.

Homemade Tomato Pizza Sauce :
INGREDIENTS:
150g tomato passata
5g rosemary
5g thyme
DIRECTIONS:
In a food processor, add the rosemary and thyme and chop them, to blend them into spice.
If needed, remove any stalks from the herbs. Add the mix into the tomato passata and mix well. Using a stick blender, smoothen the mix up. Remove any stalks left over.
Use this as a base for homemade pizza.
You can add more spices if you wish so.

Here I am with another unbelievably easy pasta recipe. This tuna mayo pasta can be served for lunch or dinner and it's a quick way to get a family meal ready.

Tuna Mayo Penne Pasta Recipe:
INGREDIENTS:
500g penne pasta
300g tuna chunks in oil
2-3 tbsp mayonnaise
Salt to taste
Ground black pepper to taste
1tsp Oil
DIRECTIONS:
In hot water, add the oil and on medium heat bring to boil. When the water is boiling, add the penne pasta in and sprinkle salt. Cook pasta according to package instructions.
When the pasta is boiled, drain and add in a bowl. If you want the pasta to cool quicker, when you drain the pasta, rinse it with cold water.
Add the tuna in, salt to taste, ground black pepper to taste, mayonnaise and salt. Depending on how you like it, add more or less mayonnaise.
Mix well to incorporate the mayonnaise and make sure the pasta is evenly covered. Taste to see if it needs salt, and add it in if needed.
The pasta is best served cold, so I suggest, before serving, place in the fridge to cool down.

How to make Monte Cristo Sandwich | Granny's Kitchen Recipes
A Monte Cristo sandwich is an egg-dipped or batter-dipped ham and cheese sandwich that is pan or deep fried. It's a variation of the French croque monsieur. This sandwich is EXTREMELY easy to make. Follow my recipe for a quick breakfast sandwich recipe.
How to make Monte Cristo Sandwich:
INGREDIENTS:
2 slices of bread
1 egg
2 slices of cheese
2 slices chorizo
2 slices pepperoni
2 slices German salami
2 slices ham
Butter
Salt
DIRECTIONS:
Crack the egg, whisk it, add a sprinkle of salt and set aside. Spread butter on the 2 slices of bread.
On one slice of the bread, add 1 slice of cheese, 2 slices of pepperoni, 2
slices of German salami, 2 slices of ham, the chorizo slices and finally
the last cheese slice. Add the 2nd slice of bread on top. You can now cut the sandwich in 2 triangles.
Take 1 triangle of the sandwich and dip in the whisked egg, making sure the sandwich is fully covered in egg. Repeat with the 2nd triangle.
In a frying pan on medium heat, warm up the oil and add the sandwich covered in egg.
Fry on each side until golden brown. Transfer to a plate lined with kitchen towel, to soak the excess oil.
TIP: You can use any kind of filling/salami you like in the sandwich.

How to make French fries?
INGREDIENTS:
1 very large potato or 2 medium
Oil for frying
Chicken seasoning to taste ( or any other seasoning you prefer)
Salt to taste
DIRECTIONS:
Peel the potato and wash it. Cut it in slices, then in thin strips, to get the fries shape.
In a pan over medium heat, warm the oil up and add the fries. Fry for 5 minutes or until they are golden brown. After you remove the fries from the pan sprinkle salt and seasoning to taste.

This is my grandma's Romanian sweet cheese pies recipe. I love this sweet, delicious and easy to make recipe.

Granny's Romanian Sweet Cheese Pies Recipe:
INGREDIENTS:
Dough:
500g flour
300ml milk
10g dry yeast
1 egg
3 tbsp oil + extra for frying
Pinch of salt
Filling:
500g soft cheese
1tbsp semolina
65g dry mixed fruits
1 lemon zest
100g sugar
2tsp vanilla essence
1tsp rum essence
DIRECTIONS:
Prepare the dough. Add the flour in a deep and large bowl and make a hole in the middle.
Warm the milk, but make sure it's warm and not hot, otherwise it will kill the yeast and it won't rise. In the warm milk add the yeast and incorporate. Add the milk and yeast in the hole you made in the flour, then add the egg and mix well. Add the oil and salt and mix again. Make sure everything is incorporated. Dust a work surface with flour, take the dough out of the
bowl and start kneading on the work surface for around 10 minutes, until the dough is not sticky anymore. If needed, you can sprinkle flour on the dough as you go. The consistency when it's ready should be that of playdough.
Transfer the dough in a large and deep bowl which is oiled. Take a piece of Clingfilm, large enough to cover the bowl, oil it and turn it over, the oiled side needs to be on the inside of the bowl. This will prevent the dough from sticking to the Clingfilm once it's risen.
Leave the dough to rise for around 40 minutes, or until it's doubled in size. Make sure you keep it in a warm area, if needed, covered with a blanket or something warm. You can check when the dough is ready by poking your finger in it. If the dough deflates, it's ready, if it springs back, in needs more rising.
Once your dough is ready, prepare your filling. In a large bowl, add the soft cheese and sugar and mix well, then add the egg, mixed fruits, lemon zest, vanilla and rum essence. Incorporate all very well. Taste, and if it's not sweet enough, you can add more sugar.
Oil work surface and Take the dough out of the bowl, and for each pie, you should have a tennis ball sized dough portion. Take the dough portion and on a dusted work surface, roll the dough out in a round shape, around 2 cm thickness. Add approx. 1tbsp of cheese filling and spread over the surface.
Fold the filled dough as an envelope, to make sure the cheese is covered with the dough. Roll again to get the round shape. Repeat the same process with the rest of the dough.
Depending on the size of each of your individual pies, you will need either 1tbsp of filling or 2 tbsp.
In a frying pan, heat oil on medium heat. Add the pies one by one and fry on medium heat, on both sides. The pie needs to be golden brown on each side before it's ready.
Before serving, sprinkle vanilla sugar.

CLEAR CHICKEN NOODLE SOUP RECIPE:
INGREDIENTS:
1 medium onion or half large onion
2 carrots
100g chicken breast
1 pack of chicken noodles
Salt
Vegetable seasoning
Drizzle of oil
Parsley
DIRECTIONS:
If you are using medium onion, cut in half. Slice the carrots and cube the chicken breast.
Add hot water to a deep pot on medium heat and add in the onion, carrots, chicken breast, oil and bring to boil. It takes around 30 minutes, or when the carrots and chicken are cooked.
Season with salt and vegetable seasoning to taste. Cook the noodles as per pack instructions. Add soup on noodles and garnish with parsley.

DIRECTIONS:
Pre-heat oven to 200degrees C.
Flour the work surface. Split the puff pastry in 2 equal pieces and roll out one sheet of the puff pastry. Set aside and roll the 2nd sheet, equal in size with the first, as you will need later on to stack them on top of each other. After you finished, set this sheet aside and on the first sheet you rolled, spread half the quantity of the red pesto. Then add the grated cheese over the pesto and spread evenly. Now take the 2nd sheet and add on top of the cheese, adjusting as you go to ensure both are equal. Slice the puff pastry in strips, and then in half.
Get your baking tray ready, lined with baking paper.
Grab a strip of puff pastry and start twisting, starting from the ends. Twist so you can get the effect of store bought cheese twists. After you finished twisting the pastry, place on the baking tray and repeat until all of the strips are twisted.
Get your egg wash ready. Crack the egg and whisk, then, with a pastry brush, brush on each puff pastry twist.
Place in the oven for around 10 minutes or until the cheese twists are golden brown.

One Skillet Chicken Pot Pie Recipe:
INGREDIENTS:
400g chicken breast
1 red pepper
2 medium sized carrots
200g frozen/tinned garden peas
100g sweetcorn
1 onion
1/2 cup flour
3 medium sized potatoes
500g puff pastry
Sprinkle of salt
700ml Chicken broth
4 garlic cloves
3tbsp Oil
Pepper TO TASTE
4tbsp butter or spread
1 egg
DIRECTIONS:
Add a skillet on the hob, on medium heat. Add the oil in and heat. Add the chicken breast in
and add salt, pepper, mix well and allow the chicken to brown (around 10 minutes).
Once the chicken browned, remove from the skillet. Don't clean the skillet, leave it on the hob
and add the diced onion and sliced garlic and brown for a few minutes. You can add now the
diced red pepper and cook for a further 2 minutes. Then add the diced potatoes in and cook
for 5 more minutes. Make sure you stir, so they don't stick to the bottom. Add the carrots in,
the sweetcorn and the peas and mix well. Cook for further 10 minutes and then add butter and
incorporate well so it melts. After the butter is melted, add the flour, making sure you
mix really well, so it doesn't form lumps and quickly add the chicken broth. Mix well to
incorporate everything and bring to boil. As it boils, add the chicken breast back in the mix and
cook for 5 more minutes.
Dust surface with flour and roll the puff pastry in a shape to fit over the skillet. Cover the
mix in the skillet with the puff pastry and make a cross in the middle, to allow the air to
circulate. Spread the egg wash on the pastry. Place in the oven at 180degrees C for 30 minutes
or until the pastry is golden brown.

Delicious and very easy to make is this fresh tomato egg noodles with a kick of chipotle for a bit of spiciness.

FRESH TOMATOES EGG NOODLES RECIPE:
INGREDIENTS:
100g fresh egg noodles
1 yellow bell pepper
6 medium tomatoes
1 medium onion
1 garlic head
1 teaspoon chipotle powder
Black ground pepper
Salt
All purpose seasoning
1 tablespoon Dark soy sauce
3 Bay Leaves
Thai basil
DIRECTIONS:
Depending on the noodles you use, follow the directions on the package to cook them.
Mine are ready to be cooked, others might need boiling on their own before cooking with
them.
Slice the onion. Peel and slice the garlic. Slice the pepper. Slice the tomatoes.
In a wok on medium heat, add oil and allow to get hot. Add the bay leaves and cool
for 1 minute. Add the onion and the bell pepper in and sauté for a few minutes, then add
the garlic and cook until golden in colour, mixing occasionally. Add in the tomatoes and
cook for a few more minutes, to allow the juice of the tomatoes to come out.
Add salt to taste, ground pepper to taste and the teaspoon of chipotle powder for a nice
kick. Mix well and cook for 5 minutes longer, then add the egg noodles and cook for a further
5 minutes, mixing well to incorporate the noodles in the sauce. Towards the end, add in the
Thai basil.
