Irresistible Homemade Cheddar Cheese: The Ultimate Recipe

Ingredients for 3 pounds/1.3 kg of cheese:
13 liters full fat milk
Mesophilic culture
3 ml single strength liquid rennet
For pasteurized milk - use ½ tsp Calcium Chloride
Non-iodized salt
Preparation:
Heat milk to 30℃, stirring well and heating slowly.
Once the milk is at 30℃, add the culture. However, if you are using pasteurized milk, add the Calcium Chloride before the culture.
Add the culture by sprinkling over the milk. Wait for 2 minutes, before stirring.
Keep the milk to the same temperature for 90 minutes.
Add the rennet. The milk needs to sit quiet for 45 minutes, to curd solid.
Do not heat the milk during this time! It needs to be undisturbed.
When the milk is curdled, you will be able to test and see a simple clean break.
Cut the curd into squares.
Rest for 5 minutes.
Stir slowly for 10-15 minutes, then bring it back to 30℃, if the curds have cooled.
Increase the heat slowly to 38℃.
The total cooking time should be 30 minutes.
Stir for another 30-60 minutes, until the curd is firm.
The final curds should be firm, with moderate resistance when pressed.
When the curds are dry enough, settle them under the whey for a few minutes.
Begin to remove the whey down to 3 cm above the mass.
Place a cheese cloth in a colander, the colander in a larger pan.
Transfer curds into the colander. The curds should be completely covered with whey.
Stir for 10-15 minutes.
Fold over the cloth and tighten around the curd, allowing all the whey to drain.
The curd will need to be kept at 30℃ and turned at 15-30 minutes intervals, for the next 2-3 hours.
After 1 hour, cut the curd in half and stack the halves with cheese cloth, separating them.
Add a wooden board on top of the curds, to add weight.
The final curds need now to be broken into small pieces, and you can now add salt at the rate of 2% of salt to the weight of the cheese curds.
If the curd weighs 1.3 kg, 2% salt would be 39 g.
Add the salt in 3 stages, over 15-20 minutes.
Once the curds have been salted, line the final container or mold with cheese cloth and pack the curds firmly.
Begin pressing slowly and lightly.
For 1 hour - press with 9 kg weight.
Turn the cheese over, then press again with 9 kg weight for 1 hour.
Turn the cheese over and press with 18 kg weight for 4 hours.
22 kg weight for 24 hours.
Age the cheese in a cheese cloth.
Bind the cloth to the cheese, using lard.
Turn the cheese every week.
Age for 3-9 months.
Tips:
If you don’t have a thermometer, you can use your finger to dip into the milk and when you feel the milk is warm, then it reached 30℃.
For weights, you can use anything you have at hand, but make sure that the weights press on the cheese evenly, otherwise, even if the cheese dries, it will crumble.
Prepare mesophilic culture and rennet, according to manufacturer’s instructions.
My advice is to use animal rennet, such a cow, the others might give a bitter taste to the cheese.

Ingrediente:
Pentru aluat:
650 g făină
400 ml lapte
5 g drojdie uscată
10 g zahăr
2 ouă
15 g sare
Pentru umplutură:
150 g jumere
100 g untură
50 g măsline
1 linguriță piper negru măcinat
Pentru decor:
1 ou
Semințe de chimen
Preparare:
Amestecați drojdia cu laptele cald și zahărul.
Adăugați ouăle și sarea.
Adăugați treptat făina și frământați aluatul timp de 5 minute cu ajutorul unui mixer de bucătărie sau de 10 minute cu mâna.
Acoperiți aluatul cu folie alimentară și lăsați-l să crească într-un loc călduros până își dublează volumul.
Pregătiți umplutura: într-un procesor de alimente, mărunțiți jumerele si maslinele. Adăugați untura, un praf de sare și piperul negru. Amestecați bine.
După ce aluatul a crescut, întindeți-l într-un dreptunghi pe o suprafață presărată cu făină.
Adăugați jumătate din pasta de jumere și jumătate din măslinele tocate mărunt și întindeți-le uniform pe aluat.
Îndoiați aluatul în felul următor: luați partea stângă și îndoiți-o, apoi partea dreaptă și îndoiți-o, acum îndoiți partea superioară și apoi partea inferioară.
Acoperiți cu folie alimentară și lăsați aluatul să se odihnească timp de 15 minute.
Rulați din nou aluatul într-un dreptunghi și întindeți restul de umplutură și măsline.
Îndoiți aluatul din nou și lăsați-l să se odihnească încă 15 minute.
La final, rulați aluatul cu o grosime de 1 cm.
Spălați-l cu ou și înțepați-l cu un cuțit pe suprafața, fără sa îl tăiați cu totul.
Tăiați în forme rotunde cu ajutorul unui pahar tumbler.
Transferați pe o tavă de copt.
Presărați semințele de chimen peste formele de aluat.
Acoperiți cu folie alimentară și lăsați-l să se odihnească timp de 20 de minute.
Coaceți în cuptor, la 180℃, până când devin aurii.
Serviți reci.
Sfaturi:
Puteți pregăti rețeta și fără măsline. De asemenea, puteți adăuga și alte ingrediente precum brânză sau ardei iuți.

Mini Tarte cu Lămâie și Fructe

Mod de preparare:
Taiați fructele în cuburi.
Adăugați zahărul și amestecați bine.
Rulați aluatul fraged și așezați-l în forme de copt.

Coaceți timp de 10 minute.

Ingredients :
For the dough
650 g flour
400 ml milk
5 g dry yeast
10 g sugar
2 eggs
15 g salt
- For the filling
150 g pork cracklings
100 g lard
50 g olives
1 tsp ground black pepper
- For decoration
1 egg
Cumin seeds
Preparation:
Mix yeast with warm milk and sugar.
Add eggs in and salt.
Gradually add the flour.
Knead the dough for 5 minutes with a kitchen mixer, or 10 minutes by hand.
Cover the dough with clingfilm and keep in a warm place to rise, until double in size.
Prepare the filling.
In a food processor, mince the pork scratchings, then add olives.
Add lard, a pinch of salt and black pepper.
Mix everything together.
After the dough has risen, roll it into a rectangle, on a floured surface.
Add half of the pork scratchings paste and spread over the dough.
Fold the dough as follows: take the left side and fold it, then the right side and fold, now fold the top one and then the bottom one.
Cover with clingfilm and rest the dough for 15 minutes.
Roll it again in a rectangle and then spread the remaining filling .
Fold the dough again.
Rest for another 15 minutes.
Lastly, roll the dough 1 cm thick.
Wash with egg and pierce the dough with a knife. DON’T CUT INTO STRIPS. Only pierce the surface.
Cut into round shapes.
Transfer onto an oven dish.
Sprinkle cumin seeds over the shapes.
Cover with clingfilm and rest it for 20 minutes.
Bake in the oven, at 180℃ until golden brown.
Serve cold.
Tips:
You can make the recipe without olives. You can also add some other ingredients like cheese, or chilli peppers .

Preparation:
Dice the fruits.
Add sugar and mix.
Roll shortcrust pastry and place in greased baking dishes.
Take greaseproof paper and place inside each pastry. Add rice or baking beans on it.
Bake for 10 minutes at 180℃
Remove the rice and bake for 10 minutes longer.
Remove from the oven.
Allow to cool for a bit, then add filling and fruits in each pastry.
Return to oven and bake until the pastry is done, it needs to be golden brown.
Garnish with fresh fruits.
Tips:
You can use any fruits you like. You can also fully bake the pastry cups and fill after they have cooled down.

Add the rice and mix well.
Add a bit of water if too dry.
Cook covered for 10 minutes, on low, until everything is cooked.
Tips :
Add all purpose seasoning, salt and ground black pepper to your taste. If you don’t have all purpose seasoning, you can add crushed stock cube instead.

Acest fel de mâncare este ATÂT DE DELICIOS, încât veți fi impresionat! Falafel-ul este crocant la exterior și pufos în interior, pakoras-ul este ușor și plin de aromă, iar tocănița de spanac cu carne este sățioasă și satisfăcătoare. Acest fel de mâncare este perfect pentru o cină în timpul săptămânii sau o întâlnire în weekend.
Gata în 40 de minute
Pentru 6 persoane
600 de calorii
Ingrediente :
280 g piept de pui
170 g spanac
1 căpățână de usturoi
300 ml lapte
100 ml apă
150 g iaurt grecesc
280 g falafel și pakoras pregătite
150 g carne mixtă gătită
1 ½ lingură de făină 1 linguriță de chimion și rozmarin
1 lingură de condiment pentru pui
1 linguriță de condimente pentru toate scopurile
1 linguriță de pudră de chipotle
50 ml ulei
Piper măcinat
Sare
Preparare :
Tăiați fin spanacul. Tăiați fin usturoiul. Tăiați cuburi pieptul de pui și carnea gătită. Încălziți uleiul într-o tigaie și prăjiți usturoiul. Adăugați pieptul de pui și chimionul+rozmarinul. Prăjiți până când pieptul de pui capătă o culoare aurie. Adăugați făina și amestecați repede, având grijă să evitați formarea de cocoloașe. Adăugați laptele și iaurtul și gătiți timp de 10 minute. Adăugați 100 ml apă și amestecați bine. Gătiți acoperit timp de 5 minute. Adăugați carnea mixtă gătită. Adăugați spanacul și restul de condimente. Gătiți acoperit până când pieptul de pui este fraged. Adăugați falafel și pakoras și gătiți încă 5 minute.
Sfaturi: Adăugați piper și sare după gust. În loc de iaurt grecesc, puteți folosi smântână .

Ingrediente:
2 grame cozi de cireșe uscate
200 ml apă
Zahăr cu scorțișoară
½ lămâie
Preparare:
Adăugați cozile și apa într-un vas și lăsați-le să fiarbă timp de 10 minute.
Strecurați cojile și turnați lichidul într-o ceașcă.
Stoarceți sucul de lămâie în lichid.
Adăugați zahăr cu scorțișoară dacă preferați ceaiul dulce.
Sfaturi:

Ingredients:
1 coconut :
Preparation
Remove liquid from coconut.
Crack the coconut and clean it up.
You only need the flesh.
Wash the flesh.
For the flakes, peel as much as you want from the flesh.
Transfer the flakes onto a kitchen paper towel and cover with a top sheet of paper.
Dry for a few days in a warm and dry place.
For the desiccated coconut, cut the flesh in pieces.
Blend in a blender until you reach the desired size for the final desiccated coconut.
Transfer on a paper towel, spread over the paper and cover with more paper.
Dry for a few days in a warm and dry place.
Store the dry coconut in a glass jar with lid, in a dry place.
Tips:
Use a potato peeler to shred the flakes from the flesh.

These School Days Sprinkle Peanut Butter Cereal Bars are a delicious and nostalgic treat that is perfect for kids and adults alike. They're made with a simple mixture of peanut butter, cereal, and chocolate chips, and they're topped with a colourful sprinkle mix that will remind you of your childhood.
Ingredients:
3 cups cornflakes
1 cup crunchy peanut butter
½ cup granulated sugar
½ cup maple syrup
1 ½ cup semi sweet chocolate
2 tbsp butter
½ cup marshmallows
Sprinkles
Preparation:
Crush the cornflakes.
Line a square tin with aluminum foil and spray it with oil.
Over medium heat, in a pot, add peanut butter, sugar, maple syrup and marshmallows.
Mix all the ingredients together and stir continuously until the mixture starts to bubble.
Remove from the heat and add the cornflakes in.
Stir well.
Spread the mixture in the tin and press it out evenly.
Add chocolate in a microwaveable bowl and the butter.
Microwave for 45 seconds or until melted.
Stir well and spread the mixture over the cornflakes.
Add sprinkles and set for minimum 3 hours in the fridge, before cutting.
Tips:
This recipe is very versatile. You can add even more ingredients/sweets to it.
