4 egg yolks
2 tablespoons sugar
1 teaspoon vanilla extract
1 pint single cream
2 tablespoons light brown brown sugar
INSTRUCTIONS :
.in mixing bowl add 4 egg yolks, 2 tablespoons sugar
.add 1 teaspoon vanilla extract and whisk until creamy
.in a pot on medium heat add 1 pint single cream, heat until starts to boil on edges
.slowly stir cream into egg mixture
.transfer to a jug
.pour into buttered baking dishes inside a large roasting tray
.pour boiling water into the roasting tray until water reaches half the baking dishes
.cook in the preheated oven 162 c / 325 f until firm ( times may vary )
.once ready leave to chill and set for 2 to 3 hours in fridge
.once set sprinkle 2 tablespoons light brown brown sugar on top
.place in a broiler / grill on high heat until sugar caramelizes

INGREDIENTS :
1 cup all purpose flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1 large egg
2 tablespoons melted butter
1 cup milk
sliced strawberries
Whipped cream
100 grams melted chocolate
1 1/2 tablespoons cocoa powder
INSTRUCTIONS :
.in mixing bowl add 1 cup all purpose flour
.add 2 tablespoons sugar, 1/2 teaspoon baking powder
.add 1/4 teaspoon salt and mix together
.in glass add 1 large egg, 1 cup milk
.add 2 tablespoons melted butter and mix together
.add the wet ingredients with the dry ingredients and mix together
.let the batter rest for approximately 5 minutes
.pour half of batter into tub
.add 1 1/2 tablespoons cocoa powder and mix together
.spray frying pan with canola oil
.pour enough batter for pancake and cook on low to medium heat
.cook until bubbles, flip over and cook for another 2 minutes
.repeat this process until all pancakes are made
.stack pancakes on a plate, add sliced Strawberries
.add whipped cream and drizzle melted chocolate sauce

120 ML Chicken Stock
750 Grams Baby Potatoes
50 Grams Butter

100 ML Cider Vinegar
INSTRUCTIONS :
.Boil 750 Grams Baby Potatoes and simmer for 20 minutes
.Cut Baby Potatoes in quarters, drizzle with 1 tablespoon olive oil and season with pepper
.Cook in preheated oven 180 c / 356 f for 30 minutes until Golden brown.
.In A frying pan on medium to high heat add 2 Tablespoons Olive Oil
.Rub Pork with Salt & Pepper and place in the pan
.Cook occasionally turning until meat is cooked ( juice will run clear )
.In frying pan on medium add 50 grams butter
.Add 2 Tablespoons Dijon Mustard and stir
.Add 120 ML Chicken Stock and stir
.Add 2 chopped Apples
.Add 1 large chopped Onion
.Add 100 ML Cider Vinegar and cook until it reduces by half, occasionally stir

180 grams king shrimp
1 puff pastry sheet
150 ml heavy cream
1/2 teaspoon ground black pepper
1/8 teaspoon salt
1/2 tablespoon dill
150 ml champagne
zest of 1 lemon
Juice of 1/2 lemon
1 egg
INSTRUCTIONS :
.roll out a puff pastry sheet and cut circles with pastry cutter
.with smaller cutter, cut smaller circles in half of the large circles
.lightly whisk 1 egg
.once whisked brush egg onto puff pastry & remove excess pastry
.place top layer pastry onto bottom layer pastry
.place pastry onto baking tray with parchment paper
.Bake in preheated oven 180 c / 356 f for until golden brown and fluffy ( approx 10 min )
.in pan add Juice of 1/2 lemon on medium heat
.add 180 grams king shrimp, cook for 3 to 4 minute
.once cooked remove shrimp and cut into small pieces
.in same pan add 150 ml champagne and cook on medium heat until reduced ( about 10 minutes )
.add 150 ml heavy cream and stir well
.add 1/8 teaspoon salt, 1/2 teaspoon ground black pepper
.add 1/2 tablespoon dill, zest of 1 lemon
.cook for 3 to 5 minutes until thick, occasionally stirring
.add shrimp pieces and continue to cook for 2 minutes
.with knife gently cut out circle from pastry and fill with mixture

.cut butternut squash in half and remove the seed
.place on a baking tray with parchment paper
