INGREDIENTS :

4 Pork Loins
120 ML Chicken Stock
750 Grams Baby Potatoes
50 Grams Butter
2 chopped Apples
3 Tablespoons Olive Oil
1 Large chopped Onion
2 Tablespoons Dijon Mustard
1/2 Teaspoon Sea Salt
1/2 Teaspoon Ground Black Pepper
100 ML Cider Vinegar

INSTRUCTIONS :

.Boil 750 Grams Baby Potatoes and simmer for 20 minutes
.Cut Baby Potatoes in quarters, drizzle with 1 tablespoon olive oil and season with pepper
.Cook in preheated oven 180 c / 356 f for 30 minutes until Golden brown.
.In A frying pan on medium to high heat add 2 Tablespoons Olive Oil
.Rub Pork with Salt & Pepper and place in the pan
.Cook occasionally turning until meat is cooked ( juice will run clear )
.In frying pan on medium add 50 grams butter
.Add 2 Tablespoons Dijon Mustard and stir
.Add 120 ML Chicken Stock and stir
.Add 2 chopped Apples
.Add 1 large chopped Onion
.Add 100 ML Cider Vinegar and cook until it reduces by half, occasionally stir
