Vegan Garlic Noodles | Easy Vegan Dinner Idea
Ready in under 30 minutes, this vegan garlic noodle recipe is a simple and satisfying dinner idea.
Ingredients
6 oz of ramen noodles
Sunflower Oil
3 cloves of garlic
2 shallots
1/4 cup of reduced sodium soy sauce
1 tbsp of rice wine vinegar
Sriracha to taste
1 tsp of garlic powder
1 tsp of onion powder
Sesame seeds for garnish
Scallions for garnish
Directions
1. Bring a large pot of water to a boil and add in 6 oz of ramen noodles. Reduce to medium high heat and let cook for approximately 10 minutes, or until noodles are done to your liking.
2. Slice shallots and mince garlic. Add to a frying pan and drizzle with sunflower oil. Saute on medium heat for 10 minutes.
3. Add soy sauce, rice wine vinegar and sriracha to taste to a small bowl. Mix well and set aside.
4. Strain ramen noodles and add to frying pan with shallots. Pour in sauce and sprinkle with garlic powder and onion powder. Mix well.
5. Remove from heat and let cool. Garnish with scallions and sesame seeds. Serve and enjoy!

Directions

Vegan Cauliflower Pizza Crust
Made with 6 simple ingredients, this crispy crunchy vegan cauliflower pizza crust is an easy way to change up a classic recipe.
Ingredients
1 head of cauliflower
1 cup of flax seed meal
2 tsps of xanthan gum
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of dried parsley
Optional Toppings:
1 beefsteak tomato
1 tsp of black pepper
Arugula for garnish
Directions
1. Preheat oven to 400 F.
2. Add 1 head of cauliflower to a steamer and steam for approximately 10 minutes, or until cauliflower is fully softened. Remove from steamer and let cool.
3. Once cooled, puree cauliflower.
4. Add cauliflower, flax seed meal, xanthan gum, garlic powder, onion powder and dried parsley to a bowl. Knead dough until all ingredients are well mixed.
5. Layer a baking sheet or pizza stone with parchment paper and add cauliflower dough. Using your hands, shape dough to desired proportions. Note: I found the best result was keeping the dough roughly 1/2” thick.
6. Bake for 40 minutes, or until cauliflower pizza crust has browned.
7. Optional: Remove from oven and add 1 sliced beef steak tomato and black pepper. Bake for an additional 10 minutes. Remove from oven and let cool. Garnish with arugula to taste. Serve and enjoy!

1/4 cup of sunflower oil
1 plantain
Sea salt to taste

Directions
1. Peel and slice plantain into 1” thick pieces.
2. Coat a large frying pan with approximately 1/4 cup of sunflower oil and add in plantain pieces. Heat to medium heat and fry for approximately 5 minutes per side, or until each side is lightly browned.
3. Remove plantains from pan and let cool completely. Once cooled, flatten plantain pieces using a small flat surface (I use a mason jar).
4. Add plantains back into frying pan and fry again for 5 minutes per side on medium heat, or until each side has browned.
5. Remove from pan and let cool. Sprinkle with sea salt and onion powder to taste.
6. Serve and enjoy!

1/2 cup of fresh pineapple
10 oz of jackfruit
1/4 cup + 2 tbsps of reduced sodium soy sauce
2 tsps of garlic powder
2 tsps of onion powder
1 tbsp of nutritional yeast
Directions
1. In a small pot, add rice and cover with water. Bring to a boil and cook for approximately 20 minutes, or until all excess water has evaporated. Set aside.
2. Minced garlic and slice shallots. Add to a large frying pan and add in green peas and fresh pineapple. Saute for 10 minutes on medium heat. Set aside.
3. Shred jackfruit and add to a small pan. Add in 2 tbsps of soy sauce, 1 tsp of garlic powder and 1 tsp of onion powder. Saute for 15 minutes on medium heat, or until jackfruit has browned. Set aside.
4. Once jackfruit and rice is ready, add to pan with veggies. Heat to medium heat and add in 1/4 cup of reduced sodium soy sauce, 1 tsp of garlic powder, 1 tsp of onion powder, and 1 tbsp of nutritional yeast. Mix well and cook for an additional 5 minutes.
5. Remove from heat and let cool. Serve and enjoy!

Vegan California Roll
Packed with creamy savory flavor, this vegan California roll is a vegan friendly version of a classic recipe
Ingredients
1/2 cup of short grain rice
1/2 cup of water
1 tsp of rice wine vinegar
3/4 cup of artichoke hearts
1/2 tsp of old bay
1 tbsp of vegan chipolte mayo
1 nori sheet
1/4 of an English cucumber
1/2 of an avocado
Directions
1. In a small sauce pan, add rinsed short grain rice and water. Boil for approximately 10 minutes or until all excess water is gone. Remove from heat and add rice wine vinegar. Mix well. Set aside and let cool.
2. Slice artichokes into thin strips and add to a large bowl. Add in old bay and vegan mayo. Mix well and set aside.
3. Slice cucumber into 10 thin slices. Slice avocado into small pieces. Set aside.
4. Once rice is completely cooled, place a nori sheet on a bamboo mat. Spread rice evenly over sheet, leaving about 1/2”-1” space on each side. Top with artichokes, cucumber and avocado.
5. Carefully roll the nori sheet from the bottom up to create sushi roll. Place the bottom edge of the bamboo mat on the top of the sushi roll and hold firmly with your hand. Pull the top side of the bamboo mat to firmly seal and form sushi roll.
6. Remove sushi roll from bamboo mat and cut into 8 pieces. Serve and enjoy!

2. Form 2 chickpea patties and add to a frying pan. Fry on medium high heat for 5 minutes per side, or until each side is browned. Optional: If you’re adding vegan cheese, add slices to each patty after flipping once. This will help the vegan cheese melt.
3. Once cooled, add chickpea patties to toasted hamburger buns and top with lettuce, red onion and bbq sauce.

1/2 tsp of oregano
Directions
1. Preheat oven to 350 F.
2. Slice red potatoes into thin slices. Add to a baking sheet.
3. Drizzle with olive oil and sprinkle with onion powder, garlic powder, paprika and oregano. Mix well.
4. Bake for 1 hour, flipping after 30 minutes.
5. Remove from oven , let cool and enjoy!

Ingredients
1 fresh banana
1 cup of frozen pineapple
1 cup of loosely packed baby spinach
1/2 cup of almond milk
1/2 cup of rolled oats
1 kiwi
1/2 cup of fresh raspberries
1/4 cup of vegan granola
Directions
1. In a blender, combine banana, pineapple, baby spinach and almond milk. Blend until smooth.
2. Add rolled oats to a bowl and pour in smoothie.
3. Top with kiwi slices, raspberries and granola.
4. Serve and enjoy!

Vegan California Roll Recipe
Paced with creamy savory flavor, this vegan California roll is a vegan friendly version of a classic recipe.
Ingredients
1/2 cup of short grain rice
1/2 cup of water
1 tsp of rice wine vinegar
3/4 cup of artichoke hearts
1/2 tsp of old bay
1 tbsp of vegan chipolte mayo
1 nori sheet
1/4 of an English cucumber
1/2 of an avocado
Directions
1. In a small sauce pan, add rinsed short grain rice and water. Boil for approximately 10 minutes or until all excess water is gone. Remove from heat and add rice wine vinegar. Mix well. Set aside and let cool.
2. Slice artichokes into thin strips and add to a large bowl. Add in old bay and vegan mayo. Mix well and set aside.
3. Slice cucumber into 10 thin slices. Slice avocado into small pieces. Set aside.
4. Once rice is completely cooled, place a nori sheet on a bamboo mat. Spread rice evenly over sheet, leaving about 1/2”-1” space on each side. Top with artichokes, cucumber and avocado.
5. Carefully roll the nori sheet from the bottom up to create sushi roll. Place the bottom edge of the bamboo mat on the top of the sushi roll and hold firmly with your hand. Pull the top side of the bamboo mat to firmly seal and form sushi roll.
6. Remove sushi roll from bamboo mat and cut into 8 pieces. Serve and enjoy!
Note: This recipe makes a larger sushi roll. If you prefer smaller rolls, portion recipe over 2 nori sheets.
