Vegan Poke Bowl | Easy Vegan Dinner Recipe
Made with 7 simple ingredients, this vegan poke bowl is an easy lunch recipe packed with flavor.
Ingredients
1/2 cup of wild rice
3 small beets
1 cup of sprouts
4 radishes
2 avocados
1 lime
1 tbsp of sunflower oil
Directions
1. In a small pot, add wild rice and cover with water. Bring to a boil and cook for approximately 20 minutes, or until all excess water has evaporated.
2. Skin and slice 2 small beets. Cut into long strips and add to a steamer. Steam for approximately 20 minutes or until beets are fully softened.
3. To make avocado lime sauce, add 1 avocado to a bowl. Drizzle in juice of one lime and sunflower oil. Mash until creamy. Set aside.
4. When ready to serve, portion rice into bowl. Top with 1/2 cup of sprouts, 2 thinly sliced radishes, sliced avocado and steamed beets. Drizzle with sauce.
5. Serve and enjoy!

Ingredients
2 cups of all purpose flour
1/2 cup of stevia
1 cup of finely shredded carrots
1 tsp of baking soda
1 tsp of baking powder
1 tsp of cinnamon
1/2 tsp of vanilla extract
2 cups of almond milk
Cream Cheese Frosting
1 and 1/2 cups of vegan cream cheese
1 tbsp of maple syrup
1 tsp of lemon juice
1/2 tsp of vanilla extract
Directions
1. Preheat oven to 350 F.
2. In a large bowl, combine all purpose flour, stevia, shredded carrots, baking soda, baking powder, cinnamon, vanilla extract, and almond milk. Mix well.
3. Add batter to a square baking dish. Bake for 30 minutes, or until carrot cake is fully cooked through.
4. While carrot cake is baking, combine cream cheese, maple syrup, lemon juice and vanilla extract. Using a mixer, whip until smooth and creamy, approximately 2-3 minutes.
5. Remove carrot cake from oven and let cool completely. Once cooled, frost carrot cake. Note: You want to make sure that carrot cake is completely cool when you add the frosting. If the cake is still warm, it may cause the frosting to melt.
6. Serve and enjoy!

Vegan BLT Sandwich Recipe
Ready in less than 30 minutes, this easy vegan blt recipe uses homemade smokey maple carrot bacon for a simple savory treat.
Ingredients
1 tbsps of reduced sodium soy sauce
1/2 tsp of liquid smoke
1 tbsp of maple syrup
1 large carrot
4 slices of vegan whole wheat bread
2 tbsps of vegan mayo
4 leaves of lettuce
4 slices of tomato
Directions
1. Add soy sauce, liquid smoke and maple syrup to a large shallow bowl. Mix well.
2. Slice 1 large carrot into thin strips. Add to bowl and mix well. Let sit for 5 minutes.
3. Heat a large frying pan to medium heat and drizzle with a small amount of oil. Add slices of carrot bacon to pan and fry for approximately 5 minutes per side, or until bacon has browned on each side.
4. To make one sandwich, add 1 tbsp of vegan mayo to one slice of bread. Top with 2 leaves of lettuce, 2 slices of tomato and carrot bacon.
5. Serve and enjoy!

Made from 7 simple ingredients, this vegan sausage recipe is an easy way to make your own at home.

14 oz of pressed tofu
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of red chili flakes
1 tbsp of nutritional yeast
2 tbsps of reduced sodium soy sauce
1 tsp of tomato paste
Directions
1. Preheat oven to 350F.
2. In a blender, combine tofu, onion powder, garlic powder, red chili flakes, nutritional yeast, soy sauce and tomato paste. Blend until smooth.
3. Lay out a large rectangular piece of aluminum foil onto a baking sheet. Pour tofu in a straight thin line approximately 1”-2” thick. Take the long edge of tin foil at the bottom and place the edge slightly above the top of the tofu. Roll the tofu so that it is tightly wrapped in foil and twist the edges, creating a sausage shape.
4. Bake for 30 minutes. Remove from oven and let cool completely (approximately 20 minutes). Once completely cooled, unwrap sausage.
5. Add to your favorite dishes and enjoy!

Creamy and light, this vegan green bean casserole is a simple vegan side dish, made with simple ingredients.
Ingredients
10 oz of green beans
Crispy Onions
1/2 cup of all purpose flour
1/2 cup of almond milk
1 tbsp of nutritional yeast
1/2 tsp of onion powder
1 tsp of cornstarch
1 yellow onion
Vegan Cream of Mushroom Soup
2 potatoes
1/3 cup of almond milk
1 tbsp of nutritional yeast
1/2 tsp of onion powder
1/2 tsp of garlic powder
1/2 tsp of black pepper
1/2 tsp of sage
10 oz of mushrooms
Directions
1. Preheat oven to 350F.
2. Skin 2 potatoes and slice into wedges. Steam for approximately 10 minutes, or until softened. Set aside and let cool.
3. Slice 10 oz of mushrooms and add to a large frying pan. Saute for 10 minutes on medium high heat or until mushrooms are fully browned. Set aside and let cool.
4. To make crispy onion bits, add all purpose flour, almond milk, nutritional yeast, onion powder, and cornstarch to a bowl. Mix well. Slice 1 yellow onion into thin slices. Add to bowl and coat well. Add to a frying pan and drizzle with a small amount of oil. Fry on medium high heat for 10 minutes, or until onions are golden brown. Set aside.
5. To make vegan cream of mushroom soup, add steamed potatoes, almond milk, nutritional yeast, onion powder, garlic powder, black pepper, sage and sauteed mushrooms to a blender. Blend until smooth.
6. Trim 10 oz of green beans and add to a large casserole dish. Pour cream of mushroom soup over green beans. Top with onion bits. Bake for 30 minutes.
7. Remove from oven, let cool and enjoy!

Cashew Ricotta:
1 cup of softened cashews
8 oz of mushrooms
1 cup of baby spinach
1/2 cup of nutritional yeast
1 tsp of onion powder
1/4 cup of almond milk
Directions
1. Add 2 cups of all purpose flour to a large bowl. Slowly add in warm water and knead dough for 2-3 minutes. Set aside. Note: You may need to adjust the amount of water slightly depending on your dough.
2. Add sliced mushrooms to a medium sized frying pan and saute on medium heat for 5 minutes. Add in baby spinach and saute for an additional 2-3 minutes, or until mushrooms have fully browned. Set aside and let cool.
3. Once cooled, add mushrooms and baby spinach to a blender. Add in softened cashews, nutritional yeast, onion powder and almond milk. Blend until smooth.
4. To make raviolis, split dough into two equal parts. Using a rolling pin, roll dough out into a long rectangle. You want to roll dough very thin.
5. To make each ravioli, portion 1 tbsp of cashew mixture on a dough sheet. Leave at least 1 and 1/2” of space between each tbsp of mixture. Cashew ricotta should yield 6 tbsps.
6. Cover with second sheet of dough. Press out any air in between raviolis and seal by pressing down gently using fingers. Using a knife, cut each ravioli into squares.
7. Bring a large pot of water to a boil. Add in raviolis and boil for approximately 2-3 minutes, or until all raviolis float. Strain and let cool.
8. Serve and enjoy!

Banana Walnut Muffins with Coconut Flour
Sweet and simple, these banana walnut muffins made with coconut flour are an easy to make vegan breakfast treat.
Ingredients
1 ripe banana
1 cup of coconut flour
1 cup of oat flour
1/4 cup of stevia
1 tsp of xanthan gum
1/2 tsp of baking soda
1/2 tsp of baking powder
1 tbsp of coconut oil
1/2 cup of walnut pieces
1 and 1/2 cups of almond milk
Directions
1. Preheat oven to 350F.
2. In a large bowl, add 1 banana and mash until creamy. Add in coconut flour, oat flour, stevia, xantahn gum, baking soda, baking powder, melted coconut oil. walnut pieces and almond milk. Mix well.
3. Portion 2-3 tbsp of mixture into each muffin tin. Batter should yield 12 muffins.
4. Bake for 30 minutes, or until muffins have browned.
5. Remove from oven and let cool completely. Serve and enjoy!
