Vegan Pasta Salad Recipe
Made with 7 simple ingredients, this vegan pasta salad is an easy to make vegan dinner idea, ready in under 30 minutes.
Ingredients
8 oz of chickpea pasta
2 celery stalks
1 carrot
1 tsp of red onion
8 oz of vegan feta
1 lemon
1 tbsp of extra virgin olive oil
Directions
1. Bring a large pot of water to a boil. Add in chickpea pasta and reduce to medium high heat. Cook for approximately 15 minutes or until pasta is done to your liking.
2. While pasta is cooking, thinly slice a carrot and 2 celery stalks. Dice red onion. Cube vegan feta. Set aside.
3. When pasta is done, add to a large bowl. Add in carrot slices, celery, red onion and vegan feta. Add in juice of 1 lemon and olive oil. Mix well.
4. Let cool and serve and enjoy!

Vegan Lemon Garlic Pasta
Made with 6 simple ingredients, this vegan lemon garlic pasta is an easy to make vegan dinner idea, ready in under 30 minutes
Ingredients
8 oz of chickpea pasta
3 cloves of garlic
2 shallots
2 lemons
2 tbsp of extra virgin olive oil
Optional:
Red pepper flakes for garnish
Directions
1. Bring a large pot of water to a boil. Add in chickpea pasta and reduce to medium high heat. Cook for approximately 15 minutes or until pasta is done to your liking.
2. Slice shallots and mince garlic. Add to a frying pan and saute on medium heat for 10 minutes. Set aside.
3. When pasta is done, combine with sauteed shallots and garlic. Add in juice of 2 lemons and olive oil. Mix well.
4. Sprinkle with red pepper flakes to taste and let cool. Serve and enjoy!

Packed with chocolate and peanut butter flavor, these vegan peanut butter chocolate chip pancakes are a simple and sweet morning treat
Ingredients
1/2 cup of all purpose flour
1/4 cup of stevia
1/2 tsp of baking soda
1 tbsp of peanut butter
1/2 cup of unsweetened vanilla almond milk
1/2 cup of vegan chocolate chips
2 tsps of vegan butter
Directions
1. In a bowl, combine all purpose flour, stevia, baking soda, peanut butter and almond milk. Mix well.
2. Add in vegan chocolate chips and fold in.
3. Heat a small frying pan to medium heat and melt 1/2 tsp of vegan butter. Portion in 3 tbsps of pancake batter. Cook for approximately 3-5 minutes per side or until each side is browned and fully cooked through. Repeat until all batter is used. Batter should yield 4 pancakes.
4. Let cool and enjoy!

Vegan Tuscan Pasta Recipe
Ready in 30 minutes, this easy to make vegan Tuscan pasta is a creamy easy to make vegan dinner idea.
Ingredients
8 oz of chickpea pasta
1 tbsp of all purpose flour
1 tsp of vegan butter
1 cup of almond milk
1 tbsp of nutritional yeast
3 cloves of garlic
2 shallots
1 cup of baby spinach
1 tsp of dried basil
1 tsp of onion powder
1/4 cup of sun dried tomatoes
Directions
1. Bring a large pot of water to a boil. Add in chickpea pasta and reduce to medium high heat. Cook for approximately 15 minutes or until pasta is done to your liking.
2. In a sauce pan, melt vegan butter. Add in all purpose flour and mix well. Pour in almond milk and add in nutritional yeast. Bring to a boil and let simmer for 15 minutes. Stir frequently.
3. Mince garlic and dice shallots. Add to a large frying pan and saute for 10 minutes on medium heat.
4. Add in baby spinach and saute for an additional 2 minutes.
5. Pour sauce into frying pan and sprinkle in dried basil and onion powder. Add in sun dried tomatoes. Mix well.
6. Add in cooked pasta and mix well. Remove from heat and let cool.
7. Serve and enjoy!

28 oz of diced tomatoes
14 oz of navy beans
14 oz of pinto beans
3 cloves of garlic
1 yellow onion
3 small bell peppers
2 jalapenos
1 tbsp of onion powder
1 tsp of oregano
1 tbsp of paprika
1 tsp of chili powder
Directions
1. Slice onion, bell peppers and jalapenos. Mince garlic.
2. In a large pot, combine vegetable broth, diced tomatoes, navy beans, pinto beans, garlic, onion, bell peppers, jalapenos, onion powder, oregano, paprika, and chili powder. Mix well.
3. Bring to a boil and let simmer for 40 minutes, stirring occasionally.
4. Remove from heat, let cool and enjoy!

Drizzled with melted cheese, these crunchy smashed potatoes are an easy vegan side idea.
Ingredients
10 oz of small red potatoes
Sunflower oil
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of paprika
1 cup of vegan cheese
1/4 cup of almond milk
Directions
1. Preheat oven 400F.
2. Add red small red potatoes to a large pot. Cover with water and bring to a boil. Boil for approximately 20 minutes, or until potatoes have fully softened. Drain and let potatoes cool.
3. Once potatoes have cooled, add to potatoes to a baking sheet. Using a potato masher, smash each potato. Drizzle with sunflower oil and sprinkle with onion powder, garlic powder, and paprika.
4. Bake for 20 minutes or until potatoes have browned.
5. While potatoes are baking, add vegan cheese and almond milk to a small pot. Melt cheese on low for approximately 10 minutes. Set aside.
6. Remove potatoes from oven and drizzle with melted cheese. Let cool and serve and enjoy!

Packed with crunch and cheese, this easy vegan crunchwrap is a simple and savory dinner idea.
Ingredients
1 tbsp of sunflower oil
3/4 tsp of garlic powder
3/4 tsp of onion powder
5 tortillas
1 cup of cooked lentils
1 tbsp of nutritional yeast
2 tbsps of reduced sodium soy sauce
2 cups of vegan cheese
1/2 cup of almond milk
1/2 cup of shredded lettuce4 tomatoes
Directions
1. Preheat oven to 400F.
2. In a small bowl, combine 1 tbsp of sunflower oil, 1/4 tsp of garlic powder, and 1/4 tsp of onion powder. Mix well.
3. Drizzle a baking sheet with a small amount of sunflower oil. Add 1 tortilla to a baking pan and brush bowl sides with sunflower mixture. Bake for 10 minutes. Remove from oven and let cool.
4. Add lentils, 1/2 tsp of garlic powder, 1/2 tsp of onion powder, nutritional yeast and soy sauce to a pan. Saute for 10 minutes on medium heat.
5. Add vegan cheese and almond milk to a small pot. Melt on low heat for 10 minutes.
6. Once tortilla has cooled, crumble into small bits. Slice tomatoes and shred lettuce.
7. When ready to serve, add lentils to one side of a tortilla. Top with melted cheese, crumbled tortilla, shredded lettuce and tomato slices. Add to a frying pan and toast each side lightly.
