Vegan Black Bean Avocado Quesadilla
Vegan Quesadillas with Black Beans and Avocado
Made with black beans and avocado, this easy vegan quesadilla recipe is a simple and satisfying lunch recipe.
Ingredients
2 whole wheat tortillas
8oz of canned black beans
1/2 tsp of paprika
1/2 tsp of chili powder
1/2 tsp of garlic powder
1/2 tsp of onion powder
1/2 cup of vegan shredded cheese
1 avocado
Directions
1. Add canned beans to a large bowl. Sprinkle with paprika, chili powder, garlic powder and onion powder. Mash until smooth.
2. Portion black beans between two tortillas. Sprinkle each tortilla with 1/4 cup of vegan cheese. Slice 1 avocado into small pieces and portion between each tortilla.
3. Fold tortillas in half and press. Add to a frying pan and toast each side on medium high heat for 5 minutes, or until each side has browned.
4. Remove from pan and let cool. Serve and enjoy!

Almond Thumbprint Cookies
Made with 7 simple ingredients, these almond thumbprint cookies are a super simple vegan dessert idea, ready in 30 minutes.
Ingredients
1 cup of almond flour
1/2 tsp of xanthan gum
1/4 tsp of baking soda
1/2 tsp of vanilla extract
1 tbsp of maple syrup
1/4 cup of almond milk
3 tsps of strawberry jam
Directions
1. Preheat oven to 350F.
2. In a large bowl combine almond flour, xanthan gum, baking soda, vanilla extract, maple syrup and almond milk. Mix well.
3. Line a baking sheet with parchment paper. Roll 1 tbsp of cookie dough in your hand to make a ball. Place on baking sheet and gently press with the palm of your hand to flatten. Slightly press your thumb in the center to create a small indent. Repeat until all dough is used. Dough should yield 6 cookies.
4. Bake for 20 minutes, or until cookies have browned.
5. Remove from oven and let cool completely.
6. Once cookies have cooled, portion 1/2 tbsp of strawberry jam into the center of each cookie.
7. Serve and enjoy!

Creamy with hints of spice, this coconut chickpea curry recipe is an easy and flavorful vegan dinner idea
Ingredients
1 cup of wild rice
1 cup of dried chickpeas
3 cloves of garlic
2 shallots
2 small peppers
1 green chili
1 and 1/2 cups of lite coconut milk
1 tsp of onion powder
1 tsp of garlic powder
1/2 tsp of turmeric
1/2 tsp of chili powder
1 tsp of red curry paste
Directions
1. Add wild rice to a medium sized pot and cover with water. Bring to a boil and cook for approximately 20 minutes, or until no excess water remains. Set aside.
2. Rinse dried chickpeas and add to a small pot. Cover with water and bring to a boil. Boil for 10 minutes and remove from heat and let sit for an additional 10 minutes. Strain and let cool.
3. Mince garlic and slice shallots and peppers. Add to a large frying pan and saute for 10 minutes.
4. Add coconut milk, onion powder, garlic powder, turmeric, chili powder and red curry paste to frying pan. Mix well.
5. Add in rice and mix well. Let sit for 10 minutes.
6. When ready to serve, portion into bowl and top with chickpeas. Serve and enjoy!

14 oz of extra firm tofu
2 tbsps of nutritional yeast
1 tsp of potato starch

Directions
1. Press tofu and let sit for 10 minutes to drain any excess liquid.
2. Add tofu to a bowl and crumble. Sprinkle in nutritional yeast, potato starch, garlic powder, onion powder and paprika. Mix well.
3. Heat a frying pan to medium heat and add a small amount of oil. Add tofu to pan and saute for 15 minutes, or until tofu has browned.
4. Remove from heat and let cool. When ready to serve, garnish with extra nutritional yeast and enjoy!

8oz of chickpea pasta
1 avocado
1 cup of parsley (loosely packed)
3 small mint leaves

2 lemons
1/4 cup of water
Directions
1. Bring a large pot of water to a boil and add in chickpea pasta. Cook for approximately 15 minutes, or until chickpea pasta is done to your liking. Set aside and let cool.
2. While pasta is cooling, add avocado, parsley, mint leaves, chives, juice of 2 lemons and 1/4 cup of water to a blender. Puree until smooth.
3. Add green goddess sauce to pasta and mix well.

1 cup of coconut flour
1 cup of oat flour
1/4 tsp of baking soda
1/2 tsp of xanthan gum

Directions
1. Preheat oven 350F.
2. In a bowl, combine coconut flour, oat flour, baking soda, xanthan gum, vanilla extract and almond milk. Mix well.
3. Portion 1-2 tbsps of mixture into each muffin cup. Mixture should yield 6 muffins.
4. Bake for 35 minutes, or until muffins have browned. Remove from oven and let cool.

1 cup of rolled oats
3 cups of cold water

Vegan Chicken Pot Pie
Vegan Chicken Pot Pie
A plant-based twist on a classic, this vegan chicken pot pie uses jackfruit to create a savory flavor, perfect for a cold night.
Ingredients
1/2 cup of frozen green peas
3 small carrots
4 red potatoes
14 oz of canned jackfruit
1 tsp of old bay seasoning
2 tsp of onion powder
1 cup of vegetable broth
1 tsp of vegan butter
1 tsp of rosemary
1 tsp of thyme
For Homemade Crust
2 cups of all purpose flour
1 cup of millet flour
1 cup of water
Directions
1. Preheat oven to 400F.
2. Peel and slice carrots into small pieces. Add carrots and frozen peas to a small steamer and steam for approximately 5 minutes, or until carrots are tender. Remove from steamer and set aside to cool.
3. Slice potatoes into small wedges. Add to a large steamer and steam for approximately 10 minutes, or until potatoes are completely soft. Remove from steamer and place in a large shallow bowl. Let cool completely.
4. While potatoes and carrots are steaming, add canned jackfruit to a small frying pan. Pull apart to create a shredded texture and add in old bay seasoning and 1 tsp of onion powder. Saute on medium high heat for 10 minutes, or until jackfruit has browned. Set aside to cool.
5. To make homemade crust, all all purpose flour and millet flour to a large bowl. Slowly pour in water and mix into dough. Knead dough for approximately 3 minutes and form a ball. Divide dough into two equal parts. Using a rolling pin, roll each piece of dough out into a circular shape to fit pie dish. Note: To prevent sticking, add a small amount of flour to counter while rolling out the dough.
6. Grease a pie dish and add pie crust.
7. To make mashed potatoes, add vegetable broth, vegan butter, rosemary, thyme and 1 tsp of onion powder to steamed potatoes. Mash until smooth.
8. Add in veggies and jackfruit to mashed potatoes. Mix well and add to pie crust. Top with second sheet of pie crust. Using a fork, press along the rim of the pie dish to seal crust. Using a small knife, create a small x in the center of the pie.
9. Bake for 30 minutes or until crust has lightly browned. Remove from oven and let cool.
10. Slice chicken pot pie into 6 equal pieces. Serve and enjoy!

Simple and savory, this vegan shepherd's pie with lentils is the perfect easy vegan dinner for a cold night.
Ingredients
5 red potatoes
1 cup of dried lentils
10 oz of baby bella mushrooms
1 yellow onion
2 carrots
1 cup of vegetable broth
2 tsps of tomato paste
2 tsps of potato starch
1 cup of green peas
1/2 cup of almond milk
1 tsp of thyme
1 tsp of rosemary
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of vegan butter
Directions
1. Preheat oven to 400F.
2. Skin red potatoes and add to a steamer. Steam for approximately 15 minutes, or until potatoes are fully softened. Remove from steamer and let cool.
3. Rinse lentils and add to a small pot. Cover with water and boil for approximately 15 minutes, or until all excess water is gone. Set aside.
4. Slice mushrooms, onions and carrots. Add to a large frying pan and saute for 10 minutes on medium high heat.
5. Add vegetable broth, tomato paste and potato starch to frying pan and mix well. Mix in defrosted peas and set aside.
6. To make mashed potatoes, add potatoes to a large shallow bowl. Add in almond milk, thyme, rosemary, onion powder, garlic powder and vegan butter. Mash until smooth.
7. Add vegetable mixture to a square baking dish. Add in lentils and mix well. Top with mashed potatoes.
8. Bake for 15 minutes.
9. Remove from oven and let cool. Serve and enjoy!

Sweet and savory, these tempeh wings are a quick and easy vegan snack idea.
Ingredients
1/2 cup of vegan bbq sauce
1 tsp of potato starch
2 tsps of flaxseed meal
8 oz of tempeh
Sunflower Oil
Directions
1. Preheat oven to 350F.
2. Slice tempeh into small rectangles and set aside.
3. In a large shallow bowl, add vegan bbq sauce and potato starch. Mix well. Add in flaxseed meal and mix in well.
4. Add in tempeh slices and coat each piece well.
5. Drizzle a baking sheet with sunflower oil. Place tempeh slices onto baking sheet.
6. Bake for 30 minutes at 350F, flipping after 15 minutes. When done, each side should be slightly browned. Remove from oven and let cool.
7. Serve and enjoy!

2. Slice shallots and mince garlic. Add to a frying pan and saute on medium heat for 10 minutes. Set aside.
3. When pasta is done, combine with sauteed shallots and garlic. Add in juice of 2 lemons and olive oil. Mix well.
4. Sprinkle with red pepper flakes to taste and let cool. Serve and enjoy!

Ingredients
4 red potatoes
2 shallots
1 red chili pepper
Sunflower oil
1 tsp of garlic powder
1 tsp of onion powder
1/2 tsp of chili powder
2 cups of vegan cheese (I'm using Violife colby jack)
2 tsps of almond milk
Directions
1. Preheat oven to 400F.
2. Slice red potatoes, shallots, and chili pepper. Add to a large bowl and drizzle with sunflower oil. Sprinkle with onion powder, garlic powder, and chili powder. Mix well.
3. Add potato nachos to a baking pan lined with parchment paper. Bake for 50 minutes, tossing after 25 minutes.
4. While potatoes are cooking, add vegan cheese and almond milk to a small pot. Melt on low. Set aside and let cool.
5. Remove potatoes from oven and drizzle with melted cheese. Bake for an additional 10 minutes.
6. Remove from oven and let cool. Serve and enjoy!

Vegan Cream of Mushroom Soup
Vegan Cream of Mushroom Soup
Ready in less than 30 minutes, this vegan cream of mushroom soup is a filling and satisfying easy soup recipe.
Ingredients
10 oz of mushrooms
3 potatoes
1/2 tsp of onion powder
1/2 tsp of black pepper
1/2 tsp of sage
1 tbsp of reduced sodium soy sauce
1 cup of almond milk
Directions
1. Peel and skin potatoes. Add to a steamer and cook for approximately 10 minutes, or until potatoes have fully softened. Set aside to cool.
2. Slice 10 oz of mushrooms and add to a large frying pan. Saute on medium high heat for 10 minutes. Set aside to cool.
3. Once cooled, add potatoes, half of the sauteed mushrooms, onion powder, black pepper, sage and soy sauce to a blender. Puree until smooth.
4. Serve and top with half of the sauteed mushrooms.

Vegan Banana Oatmeal Muffins
Vegan Banana Oatmeal Muffins
Made with oat flour, these vegan banana oatmeal muffins are an easy to make breakfast treat.
Ingredients
2 bananas
1 cup of oat flour
1/2 cup of rolled oats
1/4 tsp of xantham gum
1/4 tsp of baking soda
1/2 tsp of vanilla extract
2 tbsps of maple syrup
3/4 cup of almond milk
Directions
1. Preheat oven 350F.
2. Add bananas to a large shallow bowl and mash until smooth. Add in oat flour, rolled oats, xantham gum, baking soda, vanilla extract maple syrup and almond milk. Mix well.
3. Portion 1-2 tbsps of batter into muffin cups. Batter should yield approximately 8 muffins.
4. Bake for 30 minutes, or until muffins have browned.
5. Remove from oven and let cool. Serve and enjoy!
