Tempeh Tacos | Easy Vegan Dinner Recipe For Beginners
Savory and spicy, these tempeh tacos are and easy to make vegan dinner or lunch idea, ready in under 30 minutes.
Ingredients
1/2 tsp of garlic powder
1/2 tsp of onion powder
1 tsp of paprika
1/2 tsp of liquid smoke
2 tbsps of reduced sodium soy sauce
8 oz of tempeh
4 vegan tortillas
2 avocados
1 cup of green leaf lettuce
2 tsps of red onion
8 grape tomatoes
1 lime
Directions
1. Add garlic powder, onion powder, paprika, liquid smoke and soy sauce in a large bowl. Mix well.
2. Crumble tempeh and add to bowl. Mix well.
3. Saute on medium heat for 15 minutes, or until tempeh has browned.
4. When ready to serve, add 1/4 cup of lettuce, 1/2 an avocado, 1/2 tsp of minced red onion, and 2 sliced tomatoes to each tortilla. Top with tempeh and drizzle with lime juice.
5. Serve and enjoy!

Baked Vegan Mac And Cheese
A plant-based twist on a classic recipe, this baked vegan mac and cheese is an easy to make cheesy plant-based dinner idea.
Ingredients
8 oz of chickpea macaroni pasta
2 cup of vegan cheese
1/2 cup of almond milk
1/2 tsp of onion powder
1/2 tsp of garlic powder
1/2 cup of panko
1/2 tsp of paprika
Directions
1. Preheat oven to 400 F.
2. Bring a large pot of water to a boil and add in chickpea pasta. Reduce to medium high heat and cook for approximately 20 minutes, or until pasta is done to your liking.
3. Add vegan cheese, almond milk, onion powder, and garlic powder to a small sauce pan. Heat on low for 15 minutes to melt cheese, stirring frequently.
4. Add to cooked pasta to a baking dish. Pour in cheese and mix well. Top with panko and paprika.
5. Bake for 20 minutes.
6. Remove from oven and let cool. Serve and enjoy!

Ingredients
2 tbsps of peanut butter
1 tbsp of maple syrup
1/2 tsp of vanilla extract
1/3 cup of almond milk
1/2 cup of rolled oats
Directions
1. In a large bowl, combine peanut butter, maple syrup, vanilla extract and almond milk. Mix well.
2. Add in rolled oats and mix well.
3. In a small baking pan, form 6 cookies out of dough. Freeze for 20 minutes.
4. Remove from freezer, serve and enjoy!

Creamy with a hint of heat, this vegan thai red curry recipe is a simple and savory plant-based dinner idea.
Ingredients
1/2 cup of wild rice
2 cloves of garlic
2 shallots
3 petite peppers
1 large carrot
1 cup of coconut milk
1 lime
1 tsp of chili powder
1/2 tsp of ginger
1 tsp of red curry paste
Directions
1. In a medium pan, add wild rice and cover with water. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess water has evaporated.
2. Dice shallots, peppers and carrots and mince garlic. Add to a large frying pan and saute on medium heat for 10 minutes.
3. Add in coconut milk, juice of 1 lime, chili powder, ginger, and red curry paste. Mix well.
4. Add in cooked rice and mix well and let cool.

A plant-based twist on a classic recipe, these fall off the bone vegan ribs are a simple and savory dinner idea.
Ingredients
1 cup of vital wheat gluten
1 tbsp of paprika
1 tsp of onion powder
1 tsp of chili powder
1/2 tsp of liquid smoke
1 cup of vegetable broth
28 oz of canned jackfruit
Optional:
Vegan bbq sauce
Directions
1. Preheat oven to 400 F.
2. Add jackfruit to a small bowl and crush to create a “pulled” texture.
3. In a large bowl, combine vital wheat gluten, paprika, onion powder, liquid smoke, vegetable broth and jackfruit. Mix well.
4. Add to a baking sheet and form a rectangle. Bake for 45 minutes.
5. Remove from oven and let cool. Top with your favorite vegan bbq sauce and cut horizontally to create rib shape.
6. Serve and enjoy!

2. Combine oat flour, paprika, black pepper, sage, cornstarch, vegetable broth, soy sauce and dijon mustard in a sauce pan and mix well. Simmer for 15 minutes, stirring frequently.
3. Add minced garlic, diced onion and sliced mushrooms to a large frying pan and saute for 15 minutes on medium high heat.
4. Once onions are translucent, add in cooked chickpea pasta and saute. Mix well and let cool.

Ingredients
10 oz of mushrooms
3 potatoes
1/2 tsp of onion powder
1/2 tsp of black pepper
1/2 tsp of sage
1 tbsp of reduced sodium soy sauce
1 cup of almond milk
Directions
1. Peel and skin potatoes. Add to a steamer and cook for approximately 10 minutes, or until potatoes have fully softened. Set aside to cool.

Vegan Chocolate Chip Muffins with Coconut Flour
Made with coconut flour, these vegan chocolate chip muffins are an easy to make sweet breakfast treat.
Ingredients
1 cup of coconut flour
1/4 cup of stevia
1/4 tsp of baking soda
1/2 tsp of xanthan gum
1 cup of almond milk
1/2 cup of vegan chocolate chips
Directions
1. Preheat oven to 350F. Grease a muffin tin and line with 6 cups.
2. In a bowl, combine coconut flour, stevia, baking soda, xanthan gum and almond milk. Mix well. Add in vegan chocolate chips and fold in.
3. Portion 1-2 tbsp of batter into each cup. Batter should yield 6 muffins.
4. Bake for 30 minutes at 350F or until muffins have browned on top.
5. Remove from oven and let cool. Serve and enjoy!

Easy Vegan Ramen Recipe
Ready in just 25 minutes, this easy vegan ramen recipe is perfect for a quick and simple weeknight dinner recipe.
Ingredients
6 cups of vegetable broth
4 cups of water
1 leek
3 stalks of bok choy
10 oz of bean sprouts
4 oz of ramen noodles
1 tbsp of paprika
1 tbsp of onion powder
1 tsp of turmeric
20 oz of mushrooms
Red pepper flakes for garnish
Directions
1. Add vegetable broth, water, 1 sliced leek, 3 sliced stalks of bok choy (set leaves aside), bean sprouts, ramen noodles, paprika, onion powder, and turmeric.
2. Bring to a boil and cook for 10 minutes. Once done, add in sliced bok choy leaves.
3. Add 20 oz of sliced mushrooms to a frying pan. Saute on medium high heat for 15 minutes, or until mushrooms are fully softened and browned.
4. Once fully cooked, add mushrooms to ramen.
5. Let cool and sprinkle with red pepper flakes. Serve and enjoy!

Vegan Broccoli Cheddar Soup
Light and cheesy, this broccoli cheddar soup is an easy to make vegan soup idea, perfect for a cold day.
Ingredients
2 potatoes
4 cups of vegetable broth
1 cup of vegan cheddar cheese
1 tsp of black pepper
1 tsp of onion powder
1 bunch of baby broccoli
Optional
Extra vegan cheddar cheese for garnish
Directions
1. Peel and slice 2 potatoes. Add to a steamer and cook for approximately 10 minutes, or until potatoes have fully softened.
2. Once fully cooled, add potatoes to a blender. Add in vegetable broth, vegan cheddar cheese, black pepper, and onion powder. Blend until smooth.
3. Pour soup into a sauce pan and keep warm on low heat.
4. Trim 1 bunch of baby broccoli florets. Add to a small frying pan and saute for 10 minutes, or until broccoli has fully softened.
5. Add cooked broccoli to soup. Let cool and serve and enjoy!
