Vegan Bacon Asparagus Risotto

A plant-based twist on a classic, this vegan bacon asparagus risotto is a creamy and easy to make dinner idea.

Ingredients
1 and 1/2 cups of arborio rice
4 cups of vegetable broth
1 tbsp of reduced sodium soy sauce
1 tsp of onion powder
1 tsp of rosemary
1 tsp of thyme
3 cloves of garlic
2 shallots
1 bunch of asparagus

Directions1. Preheat oven to 400F.

2. Mince garlic and slice shallots and asparagus. Set aside.

3. Rinse arborio rice and add to a casserole dish. Add in vegetable broth, soy sauce, onion powder, rosemary, thyme, garlic, shallots, and asparagus. Mix wel.

4. Cover and bake for 30 minutes. Remove lid and bake for an additional 30 minutes.

5. While risotto is baking, make carrot bacon. Once cooled, dice carrot bacon and set aside. (carrot bacon recipe: livegrowgreen.com/blog/vegan-carrot-bacon)

6. Remove risotto from oven and let cool.

7. When ready to serve, add carrot bacon to risotto and enjoy!
