Easy Vegan Cauliflower Fritters
easy vegan cauliflower fritters
Made with a few simple ingredients, these vegan cauliflower fritters made a great easy lunch or snack idea.
Ingredients
1 medium head of cauliflower
1/4 cup of flax seed meal
1/4 cup of potato starch
1/4 cup of nutritional yeast
1 tsp of onion powder
1 tsp of parsley
1 tsp of paprika
Directions
1. Wash and trim cauliflower into small florets. Add to a steamer and cook for approximately 10 minutes, or until cauliflower is tender. Remove from heat and let cool.
2. Blend cauliflower into a puree. Add to a large bowl and add in flax seed meal, potato starch, nutritional yeast, onion powder, parsley, and paprika. Mix well and refrigerate for 10 minutes.
3. Head a large frying pan to medium heat and drizzle a small amount of oil into pan. Portion 1 tbsp of cauliflower into pan to make 1 fritter. Portion 4-5 fritters into pan (depending on space) and cook for approximately 5 minutes per side, or until each side is golden brown. Repeat until all cauliflower is used. Batter should yield approximately 8 fritters.
4. Let cauliflower fritters cool and serve with your favorite dipping sauce.

vegan saffron rice with roasted chickpeas
Topped with roasted chickpeas, this vegan saffron rice is a simple and satisfying dinner idea.
Ingredients
1 cup of cooked, dry chickpeas
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of paprika
Sunflower oil
3 cloves of garlic
2 shallots
1 cup of long grain rice
2 cups of vegetable broth
1/8 tsp of saffron strands
1 tsp of vegan butter
1 tsp of dried parsley
Directions
1. Preheat oven to 350 F.
2. Add chickpeas to a baking sheet and drizzle with sunflower oil. Sprinkle with onion powder, garlic powder and paprika. Mix well.
3. Bake chickpeas for 10 minutes. Remove from oven, toss and let cool.
4. Heat a medium sized frying pan to medium high heat and drizzle with sunflower oil. Dice shallots and mince garlic and add to pan. Saute for approximately 10 minutes, or until shallots have begin to brown.
5. Add rice, vegetable broth and saffron strands to pan. Mix well and bring to a boil. Reduce to low heat and cover. Cook for approximately 15 minutes, or until all excess liquid has evaporated.
6. Once fully cooked, add vegan butter and parsley to rice. Mix well and let cool.
7. When ready to serve, portion saffron rice into a bowl and top with chickpeas. Serve and enjoy!

Vegan Chicken Salad Recipe
Simple and satisfying, this vegan chicken salad recipe is perfect for a quick and easy lunch.
Ingredients
1/2 cup of dry chickpeas
2 stalks of celery
2 tbsp of diced red onion
2 tbsp of diced pepperoncini
1/4 cup of fresh parsley
2 vegan wraps
Homemade Chipotle Mayo
1/3 cup of sunflower oil
3 tbsp of unsweetened soy milk
2 chipotle peppers in adobo sauce
1/4 tsp of yellow mustard
1/2 tsp of maple syrup
Directions
1. Strain and rinse chickpeas. Add to a small pot and cover with water. Boil for 10 minutes, turn off heat and let rest for 10 minutes, or until chickpeas has become fully tender. Strain and let cool.
2. While chickpeas are cooking, slice celery and dice red onion and pepperoncini. Set aside.
3. To make homemade mayo, add sunflower oil, soy milk, chipotle peppers, yellow mustard and maple syrup to a large measuring cup or mason jar. Blend using an immersion blender until smooth and set aside.
4. Once chickpeas have fully cooled, add to a blender and pulse until chickpeas have a shredded texture.
5. Combine shredded chickpeas, celery, red onion, pepperonicini, parlsey and vegan mayo in a bowl. Mix well.
6. Portion chickpea salad between two wraps. Serve and enjoy!

1 cup of all purpose flour

2 tsp of vegan butter
Optional

Maple syrup
Directions
1. Add all purpose flour, coconut sugar, baking soda and almond milk to a bowl and mix well. Fold in fresh blueberries.
2. Heat a small frying pan to medium heat and melt 1/2 tsp of vegan butter.
3. Portion in 3 tbsp of pancake batter into frying pan and let cook for approximately 3-5 minutes per side, or until each side has browned. Repeat until all batter is used. Batter should yield 4 pancakes.
4. Once cooled, top with vegan butter and maple syrup to taste. Serve and enjoy!

Made with 7 ingredients, these carrot cake pancakes are a simple and sweet vegan breakfast treat.
Ingredients
1 cup of all purpose flour

1 small carrot
1 cup of almond milk
2 tsp of vegan butter

Directions

A spicy twist on a plant-based classic, these vegan cauliflower wings are made with red curry paste to add an extra kick to this snack recipe.

1 medium head of cauliflower
1/2 cup of all purpose flour
1/4 cup of flax seed meal
2 tbsps of potato starch
2 tbsps of red curry paste
1 cup of almond milk
Sauce
1 tbsp of red curry paste
1/4 cup of maple syrup
1 tsp of onion powder
Directions
1. Preheat oven to 400F.
2. Wash and trim cauliflower into small florets. Set aside.
3. Add all purpose flour, flax seed meal, potato starch, red curry paste and almond milk to a large bowl. Mix well.Mad
4. Coat cauliflower florets in batter and add to baking tray lined with parchment paper.
5. Bake for 40 minutes, flipping after 20 minutes. Remove from oven and let cool.
6. To make sauce, add red curry paste, maple syrup and onion powder to a small bowl. Mix well and set aside.
7. Once wings have cooled, lightly brush with sauce.
8. Serve and enjoy!

Made with 5 simple ingredients, this light and creamy vegan buffalo mac & cheese is a plant-based twist on a classic recipe.
Ingredients
8oz of elbow chickpea pasta
1 head of cauliflower
2 cups of shredded vegan cheese
3/4 cup of vegan buffalo sauce
Optional for garnish
Chives
Directions
1. Preheat oven to 400F.
2. Bring a large pot of water to a boil. Add in chickpea pasta and cook for approximately 15 minutes, or until pasta is done for your liking. Strain and set aside.
3. Wash and trim cauliflower into small florets. Add to a steamer and cook for approximately 10 minutes or until cauliflower is tender. Set aside to cool.
4. Once cauliflower has cooled, add cauliflower, vegan cheese, and vegan buffalo sauce to a blender. Puree until smooth.
5. Add pasta to a baking dish and pour in buffalo cheese sauce. Mix well.
6. Bake for 20 minutes. Remove from oven and let cool.
7. When ready to serve, top with fresh chives and enjoy!

Sunflower oil
3 cloves of garlic
2 shallots
3 small peppers
32 oz of cannellini beans
14 oz of coconut milk
2 tbsp of red curry paste
1 tsp of garlic powder
1 tsp of onion powder
2 tsps of paprika
1 tsp of chili powder
Optional for garnish
Fresh parsley
Directions
1. Add rice to a medium pot and cover with water. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess water has evaporated. Set aside and let cool.
2. While rice is cooking, mince garlic, finely dice shallots and slice peppers. Heat a large frying pan to medium high heat and drizzle with sunflower oil. Add in vegetables and saute for 5 minutes.
3. Strain and rinse cannellini beans and add into pan. Pour in coconut milk and add in red curry paste, garlic powder, onion powder, paprika and chili powder. Mix well and cook for an additional 5 minutes. Set aside to cool.
4. When ready to serve, portion brown rice into a bowl and top with white bean curry. Sprinkle with fresh parsley and enjoy!

2. Add sliced pumpkin to a baking sheet. Drizzle with sunflower oil and sprinkle with cinnamon and sage. Mix well.
3. Bake for 50 minutes, or until pumpkin is completely soft. Toss after 25 minutes.
4. Once pumpkin has cooled, add to a blender along with hemp milk and maple syrup. Blend until completely smooth.
5. Serve and enjoy!

Sweet and simple, this pumpkin pie overnight oats is an easy to make vegan fall breakfast idea.
Ingredients
1/2 cup of rolled oats
1/2 cup of pumpkin puree
1/2 cup of unsweetened vanilla almond milk
1/2 tsp of cinnamon
1 tbsp of maple syrup
Optional
Extra maple syrup to taste
Directions
1. Add rolled oats, pumpkin puree, almond milk, cinnamon, and maple syrup to a container and mix well.
2. Cover and refrigerate overnight.
3. Optional: When ready to serve, top with extra maple syrup to taste. Serve and enjoy!
