Easy Salmon Recipe Baked in the Oven INGREDIENTS: Half salmon sliced 1 garlic head 1 tablespoon capers 1 teaspoon chipotle seasoning 1 teaspoon onion powder 1 teaspoon all purpose seasoning 1 teaspoon ground pepper 1 sliced onion salt 3 tins peeled potatoes in water DIRECTIONS: Add oil in a baking dish, then add the salmon slices in. Add salt, onion powder, ground pepper and chipotle seasoning. Rub all the ingredients on the salmon pieces, making sure to cover both sides. You can now add the sliced onion, the garlic, the capers and all purpose seasoning. Bake in the oven at gas mark 7 for 1 hour, or until the salmon is cooked. Remove the salmon, the onion and the garlic from the baking dish, but make sure you leave the rest in the baking dish. Add the potatoes in water, add salt and bake in the oven until crispy golden in colour - around 30 minutes. Serve with salmon and a sprinkle of parsley. Bon Appétit! 2. Spicy Buffalo Pork Shoulder Steaks Ingredients: 4 pork shoulder steaks 3 tsp bicarbonate of soda Spicy buffalo seasoning Cold water Oil Potatoes Directions: Add the bicarbonate of soda in cold water, add in the pork shoulder steaks. This mix will help the meat remain soft and moist, even after baking. You can add even more bicarbonate of soda in the water and leave the meat in the water mix for at least 10 minutes. You can even leave it for longer, or overnight in the fridge. Make sure you fill the water to cover the meat. Mix well, so that the bicarbonate of soda will dissolve. When the meat is ready, you can transfer it into an oiled baking dish. Add on top the spicy buffalo seasoning, then rub the meat well on both sides. Cook in the oven for 1 hour, at gas mark 7. The meat is ready when is golden on each side. If you like your meat well done or crispier, leave it in the oven until it turns brown, like mine. Slice the potatoes for fries, then add the fries in hot oil and fry over medium heat, until golden brown. Serve the pork shoulder steaks with fries and a salad side! 3. Meatballs and Mashed Potatoes in Meatball Sauce MEATBALLS INGREDIENTS: 750 grams beek&pork mince 1 egg 1 diced or minced onion 1 diced or minced garlic head 2 teaspoons vegetable seasoning ( Polish Kucharek ) 1 teaspoon ground pepper 2 teaspoons salt 1 bunch of chopped parsley 1 slice of stale bread 1 teaspoon paprika 1 cup of oil + extra for frying Directions: In a bowl, add the minced meat, then all the rest of the ingredients apart from the slice of bread. Soak the bread in water and drain - you can squeeze the water out with your hands. Add the bread in the meat mix and mix everything well. You should taste if you dare :) to make sure the meatballs mix is well seasoned. With oiled hands, grab around 1 tablespoon of the meatballs mix and roll into round shape. Add oil in a frying pan and bring to heat. When the oil is hot, add the meatballs and fry on each side. The meatballs should be golden brown on each side when they are ready. Remove the meatballs from the frying pan, but keep the oil. MEATBALL SAUCE INGREDIENTS: 1 jar of pasta sauce 1 green bell pepper or any bell pepper of choice 1 large onion Salt Pepper Directions: On medium heat, in a pot, transfer oil from the frying pan to the pot. Allow the oil to heat, then add sliced onion and the sliced pepper and fry until the onion is golden in colour and the pepper is soft. Add in the pasta sauce, clean the jar of the remaining sauce with a quarter of water, mix and pour into the pot. Add salt and pepper to taste, into the sauce and allow to boil until it thickens. When it gets thicker, add in the meatballs and allow to cook for 5 more minutes. MASHED POTATOES INGREDIENTS: 4 potatoes 1 cup of milk 1 tablespoon of butter 1 bunch of parsley Salt Pepper Water Directions: In a pot, bring water to boil. The quantity of water depends on how many potatoes you use. The water needs to cover the potatoes once in the pot. Peel and cube the potatoes and get them into the boiling water. Boil until the potatoes are soft, you can check with a fork or even taste. Once the potatoes are boiled, drain the water and place the boiled potatoes into another pot or a bowl. Add milk, butter, salt and pepper and mash the potatoes with a potato masher. If you don't have a masher, you could use a fork as well. Mix well and if the mash is too thick, you can add more milk and keep mashing and adding milk, until you get the consistency you want. Add the chopped parsley in and mix well. Serve the meatballs in sauce with the mashed potatoes. It's a delicious dessert enjoyed by the whole family. #fruitpie #fruitcocktailpie #grannyskitchenrecipes FRUIT COCKTAIL PIE RECIPE INGREDIENTS: 3 tins cans fruit cocktail 60 grams sugar 4 tablespoons cornstarch 4 teaspoon cinnamon 14 grams butter 2 eggs, lightly beaten 2 shortcrust pastry sheets 1 tablespoon cinnamon sugar 1 tablespoon vanilla sugar DIRECTIONS: Drain juice from fruit cocktail, reserving juice. Mix sugar, cornstarch , and cinnamon and add to juice. Add butter and cook over low heat until mixture thickens. Butter the pie plate or tin, then line pie plate with greaseproof baking paper and then add the bottom crust/ 1 sheet of pastry. Pierce with the fork in several places. Add the drained fruit and the thickened cooked juice. Top with the second crust/sheet. Whish the eggs and then brush with egg wash. Add the vanilla sugar and cinnamon sugar and then bake in a preheated oven, at 190°C for 50 minutes or until bubbly and brown. Bon Appétit! You can slice them in round slices or long slices. Line the slices up on a large plate and add salt over them. Let them rest for around 30 minutes, to allow the water to drain out of them. Salt will help the water drain out. Beat your eggs and add a sprinkle of salt to them and any other spices you like. Heat oil in a frying pan. Take a slice of zucchini, run it through the egg, to make sure is covered, then run it through the flour, to cover it evenly, run it again through the egg and then add the covered slice in the frying pan. Repeat the same process with the remaining slices. Fry the eggy zucchini until the slices are golden brown on each side. Learn how to make delicious chicken curry, a total success for dinner ideas. It's so easy to make, you'll keep on cooking it. It should take around 1 hour to cook .The ingredients should be prepared in advance to make sure it will be done in time. Ingredients: 500 grams yoghurt - for a creamier curry use Greek style yoghurt 4 tbsp ( tablespoons ) ginger and garlic paste 2 tbsp curry powder 2 tbsp garam masala powder 2 tbsp turmeric powder 2 tbsp fennel seeds 5 pieces star anise 5 pieces cardamoms 5 onions 2 tins of chopped tomatoes 500 grams diced chicken - ideally you should use chicken breast but you can also use any chicken pieces you have around 200 ml oil Salt to taste TIP : if you don't have garlic and ginger paste around you can substitute for ground ginger and garlic puree. Directions: Start off by dicing the onions . Use a wok or any other deep pan , add to medium heat then add 200 ml of oil. Leave the oil to heat then add the fennel seeds, fry until golden. Add the star anise, then the diced onions. Add the cardamom and allow the onion to fry stirring occasionally. Marinating the chicken: Start by adding the yoghurt to the chicken , next add in the curry powder, garam masala powder, turmeric powder . You can use a spoon to stir or your hands. Make sure all the pieces are evenly covered. Check your onion and make sure is soft and golden, add in the marinated chicken. TIP: the more you leave the chicken to marinate the tastier and tender will be. You can leave it overnight in the fridge if you'd like, otherwise even without sitting is still tasty. Keep stirring to make sure the chicken and onions are well mixed. Don't waste the leftover marinade from the bowl you put the chicken in, add 1 cup of water to the bowl and mix in making sure there's no leftover marinade on the sides, pour over the chicken. Allow to simmer over medium heat stirring occasionally to ensure there's nothing stuck to the bottom of the pan. Like I mentioned if you don't have garlic and ginger paste you can now add 1 tbsp of ground ginger and garlic puree , otherwise now would be the time to add the paste, stir in. Add the chopped tomatoes, add salt to taste - I would suggest 1 teaspoon should be enough but then again it depends on how you like it. Keep stirring. When the oil rises to the top it should be ready however double check the chicken is nice and cooked. Serve with fragranced rice and sprinkle of chopped coriander. In this video I will show you how to cook mackerel fish and sardines in the oven. Delicious, easy and quick fish cooking recipe in the oven. #mackerelrecipe #sardinesrecipe INGREDIENTS: 3 mackerels and / or sardines ( I have both in my dish ) 1 garlic head 1 bell pepper 1 onion jalapeno peppers (optional) 3 tbsp capers in brine 3 roasted peppers all purpose seasoning ground pepper salt oil DIRECTIONS: Add oil in a baking dish. Make sure the fish is gutted. Add the fish in, add salt on the fish, all purpose seasoning and ground pepper. Rub the seasonings on the fish, then add the sliced bell pepper, add a few slices of onion inside the fish as well, add the chopped garlic, add roasted pepper, add the sliced jalapeno peppers ( depending on how spicy you like the dish, you can skip this otherwise), add the capers and bake in the oven at gas mark 7 until the fish is golden in colour. You can serve with pasta. I used 3 packets of pasta and sauce which I cooked according to the directions on the packs and I also added chipotle powder for a chilli kick to the pasta. Today I am bringing out the popular oat cake recipe from Tiktok. This chocolate oak cake is so delicious, moist and healthy and extremely easy to make. #oatcake #oatcaketiktok #grannyskitchenrecipes INGREDIENTS: 30 grams baking powder 2 tsp cocoa powder Pinch of salt 1 ripe banana 3 eggs 2 tbsp maple syrup 1 bowl rolled oats 1 bar dark chocolate cinnamon sugar vanilla sugar 200 ml milk DIRECTIONS: Add all ingredients in a food processor, apart from the chocolate. Crush the chocolate then add half the bar in the food processor with the rest of the ingredients. Blend on highest speed, add the milk in and finish blending until smooth. Line a baking tray with baking paper, grease the paper with butter, transfer the mix in the tray. Add the remaining chocolate, sprinkle vanilla sugar and cinnamon sugar. #doughnutsrecipe #doughnuts #chocolatedoughnuts #grannyskitchenrecipes HOMEMADE DOUGHNUTS RECIPE Ingredients: 1 kg of flour 500 ml of milk 150 grams of sugar 20 grams dry yeast 50 ml oil 5 eggs 1 tablespoon vanilla essence 1 tablespoon lemon essence or lemon zest Pinch of salt Filling: Nutella or chocolate spread Jam Directions: Add the flour in a food mixer bowl. Separately in a small bowl add the dry yeast and half of the milk, making sure the milk is lukewarm. Mix the dry yeast until you get a smooth paste, then make a dip in the flour and add the yeast mix. In the same food mixer bowl where you have the flour and yeast, add the eggs, sugar, oil, vanilla essence, lemon essence, the salt and the remaining mix. Mix all the ingredients with the food mixer until you get a smooth elastic consistency dough. Transfer the dough in an oiled large bowl, take clingfilm and brush it with oil and add it on top of the dough. Leave the dough to rise for 1-2 hours, until it triples in size. You can check if the dough is ready by piercing it with your finger. If the dough deflates, it's ready, if it springs back, you need to leave it for longer. Oil a work surface, then remove the dough from the bowl and separate into 3 equal pieces. You can use flour instead of oil, but I find when using oil, the dough doesn't stick to the work surface. Take one piece of the dough, knead it a bit by hand to get rid of the air bubbles, then roll it with a rolling pin to around 3cm in thickness. You can use any cookie cuter or even a glass to cut out shapes. In a deep frying pan add around 500 ml of oil, you will need this to deep fry the doughnuts. Make sure the oil is hot before adding doughnuts to fry. The doughnuts are ready when they are golden brown on each side. Repeat with the remaining dough.Transfer onto a plate with kitchen towel to absorb the oil. Allow to cool and then you can start filling them. I used Nutella to fill some of my doughnuts and I also used jam. You can use any filling you like. To fill your doughnuts you can either use a piping bag or a syringe. I also added icing sugar on top of mine and I did a few without filling, run through homemade cinnamon sugar. Bon appetit! Bon Appétit! Sweet Cheese and Dried Fruits Sponge Cake Recipe: Ingredients for the filling: 3 eggs at room temperature 950 grams soft cheese 200 grams sugar 200 grams dried fruits 1 spoon vanilla essence 1 teaspoon rum essence 100 grams semolina 1 lemon peel or 1 squeezed lemon juice Ingredients for the sponge: 250 grams of flour 8 eggs at room temperature 150 grams of sugar 10 grams of baking powder 50 ml of oil 100 ml of milk pinch of salt Directions: For the filling: Place the soft cheese in a large bowl, add in the sugar, mix well, add the 3 eggs in, mix well, add the lemon peel or lemon juice, you can also replace it with lemon essence, add the vanilla essence, rum essence and the semolina. Mix very well and now it's time to add the dried fruits. You can skip this step if you prefer not to use dried fruits. Make sure you mix everything well. For the sponge: Place all the eggs in a food mixer with the whisk attachment on, add the sugar, salt and mix well until the eggs form soft peaks. It should be triple in volume when it's done. When the eggs are done, you can add the oil in, add flour bit by bit, making sure, with a spoon, you mix well, from the bottom upwards. Repeat this step until you have added all the flour in. You can add the milk in, mixing again, to make sure everything is well incorporated. Assembling and baking the cake: Use a non stick oven tray, preferably glass, line it with baking paper, add in half of the sponge mixture, spread the mixture in the tray, to make sure it's levelled. You can place the tray in the pre-heated oven at 180 degrees Celsius, for 20 minutes or until you get a golden sponge. You can test if the sponge is baked by inserting a toothpick in the middle. If it comes out clean, the sponge is ready. When the sponge is done, allow to cool for a little while, then you need to add the cheese filling on top of the sponge, spread it evenly on the whole surface. Add on top of the cheese filling the rest of the sponge mixture, level it across the whole surface, and place back in the pre-heated oven at 170 degrees Celsius, for 40 minutes. In this video I am making traditional Romanian stuffed vine leaves. There are a lot of variations out there, but this is how I make sarmale. You can use instead of vine leaves, white cabbage or pickled cabbage- you might know it as Sauerkraut- except the leaves are whole, not shredded, but the taste is very similar and it actually complements the meat. The vine leaves I used are pickled, however you can also use fresh vine leaves and par-boil them. If you do use white cabbage, you need to par-boil the cabbage before trying to stuff the leaves. #romanianstuffedvineleaves #stuffedvineleaves #recipes INGREDIENTS: yields approx. 80 stuffed vine leaves ( I never count them ) 1 kg of beef & pork minced meat 1 large onion diced 200 grams of rice 50 grams of salt 2 teaspoons of ground black pepper 1 bunch of parsley 1 bunch of dill 1 tablespoon of onion powder(optional) 1 tablespoon of Khucharek universal seasoning 2 teaspoons of smoked paprika seasoning 800 grams of tinned chopped tomatoes Smoked sausage or chorizo 200 ml oil Water 2 jars of vine leaves DIRECTIONS: Using a large bowl, add in the meat, diced onion, rice, salt, pepper, chopped parsley and dill (half of the quantity) , onion powder, Khucarek seasoning, smoked paprika and the oil and mix well. At this stage you will need to taste (if you dare) to make sure there's enough seasoning, typically salt. Mix all the ingredients well. Prepare your pot - add on the bottom, a layer of diced smoked sausage or chorizo, another layer of vine leaves ( pick the ones which are ripped and can't be stuffed - I ran out so couldn't do that, but I instead used extra parsley and dill for the bottom layer) . Now you can stuff your vine leaves with the meat mix from the bowl. Depending on how big a leaf is, around 1 tablespoon of mix will fit. Now it's time to roll the leaves. After you finished stuffing the leaves, add them in the pot, one next to each other to form layers. They will go layer on layer in a circle, up and up :) , until you finish placing all of them. After all of the stuffed vine leaves are in the pot, add the chopped tomatoes, water, enough to cover the stuffed leaves, salt, pepper, the remaining dill and parsley and if you have any meat left you can spread it in the pot. If you have any vine leaves left, you can cover the top layer with them. Allow to cook on low heat for around 1 hour or until the rice is cooked. You can serve them as they are, or you can serve them with bread, or you can serve them with sour cream on top, or bread and sour cream :) . You can even serve them with cooked polenta (Mămăligă).
