Chicken and Dressing – Cook Like Mama Did – Collard Valley Cooks
Today I am making Chicken and Dressing for our family Thanksgiving. I am making it ahead and putting it in a container in the refrigerator. You can freeze it too.
Chicken -N- Dressing
Tips:
Make this a day ahead of big event. You can leave it in a boiler with a lid on it in refrigerator. Get it out the next day warm it on the stove just to Lukewarm. You must mix it up before baking because the spices will float to the top in the refrigerator. I do recommend making it a day ahead, because it is a day long ordeal which you do not need on turkey day. If you make ahead do not put all the chicken in the dressing, save some to garnish the top of dressing before cooking, it is just prettier this way. Preferably the white meat placed into the dressing with about ¾” sticking up for browning. Do not make gravy a day ahead.
Fryer Chicken: (do not by a roasting chicken), boil chicken with
1/2 stick margarine or SALTED butter and
1/2 tsp. salt 1/4 tsp. pepper
1 Knorr chicken bouillon
Save broth for dressing and gravy, pick chicken off bones to place in dressing. Save white meat for garnishing dressing. If you are boiling the giblets for gravy, boil them in a separate pot.
Chicken N Dressing Cont’d
Cornbread: get up early about 7 am and make cornbread. Bake in cake 1/4 sheet pan. 13x9
1 1/2 recipes of White lily cornmeal cornbread (on side of bag.) Bake at 350 degrees.
Cook this until light brown and set. Do not brown too dark, it is not good in dressing dark.
1 FRIER CHICKEN (PREVIOUS PAGE)
3/4 of CORNBREAD (DIRECTIONS ABOVE)
10.5 OZ. CREAM OF CHICKEN SOUP
4-5 PIECES LOAF BREAD (Cut in cubes)
2 BOILED EGGS (CHOPPED)
1 CUP ONION (CHOPPED FINE)
1 CUP CELERY (CHOPPED FINE)
1/2 TSP. SALT
1/2 TSP. PEPPER
1/2-3/4 TSP. POULTRY SEASONING
4 1/2 CUPS CHICKEN BROTH FROM FRYER
4 SQUARE CHICKEN BOUILLONS OR 1 KNORR
2 CUPS MILK
2 RAW EGGS

Mix together until well blended. I use my hands. Mix should be runny.
Spray baking dish with Pam before adding dressing to baking pan to cook. Try to put in a dish that will make it about 3” thick, this way it will not be dry. Cook on 375 degrees until brown and firm. If in a deep pan it may take over an hour to set up completely. Make sure it is done! Dressing should crack in middle as well as on sides when completely done. Make sure you have 1.5 hours of bake time before time to serve.

2 tbsp. Cajun Seasoning (or more to taste)
6 cps. Chicken Stock
3 Bay Leaves
4 tbsps. chopped Parsley + more for serving
1 tbsps. Filé powder (or to taste)
Cooked White Rice (to serve)

NOW FOR THIS FAMILY RECIPE:
Fried Chicken Tenders
CHICKEN BREAST
WHOLE BUTTER MILK
Chicken is cheaper on bone. By it when it’s on sale and cut breast meat from bone. Cut into 1” strips. Soak strips in buttermilk 20-30 minutes prior to frying.
1 1/2 CUPS SELF-RISING FLOUR
1 TSP PEPPER
1 1/2 TSP SALT
2 TSP. PAPRIKA
1 1/2 TBSP HIDDEN VALLEY RANCH MIX
Mix dry ingredients well in a shallow dish or pie plate. After soaking chicken in buttermilk take each strip and coat well. Use your fingers and press it into flour well. Coat them all before frying them.
IRON SKILLET, WOK, OR LARGE SKILLET
COOKING OIL, (PEANUT, CANOLA, VEGETABLE OIL)
Put oil in skillet about 1” deep. Oil must be HOT. Put a small amount of crust in oil and once it floats and sizzles WELL, your grease is hot and ready! Fry tenders 3 minutes per side. Take out with tongs and place on paper towel covered platter/plate. Serve with honey mustard.

I purchased an Instant Pot a couple of years ago on Black Friday. At the time, the pots were about $100+, which just seemed outrageous for an appliance that I didn’t even know how to use. But on that day the price dropped as low as $59!
I try to cook at chicken at lease once in a week in my Instant Pot. It has become a weekly ritual that saves me so much time in the long run. I love to use this chicken for salads, enchiladas, sandwiches, and to just eat it with BBQ sauce.

NOW FOR THIS FAMILY RECIPE:
BABY BACK RIBS
CVC RIB RUB
CVC BBQ SAUCE
SMOKER AT 275 DEGREES
Rinse your ribs and trim with kitchen shears if needed.
Using a spoon to start, pull back the membrane from the back of the rib rack and grasp it with a paper towel and pull to remove from top to bottom of the rib rack.
Flip ribs over and sprinkle well with the rib rub. Place ribs in a preheated smoker at 275 degrees. Smoke for 6 hours. Enjoy with some homemade baked beans, deviled eggs, and potato salad.
C.v.c. Barbeque Sauce
In a saucepan mix:
1 1/2 CUP KETCHUP
2/3 CUP APPLE CIDER VINEGAR (I USE OFF BRAND BECAUSE IT IS NOT AS STRONG)
½ CUP DARK CANE SYRUP (OR MOLASSES)
1 CUP BROWN SUGAR
1 TSP SMOKED PAPRIKA
1 TSP COARSE BLACK PEPPER
1 CUP TOMATO SAUCE 1 TSP SALT
1 TSP ONION POWDER 1 CUP WATER
½ TSP CAYENNE PEPPER
½ TSP ROASTED GARLIC POWDER
1 TSP YELLOW MUSTARD
Bring to a boil and simmer for 20 min. Store in a mason jar in the refrigerator for up to 6 months.
Chris's Rib Rub Recipe
1/2 CUP GRANULATED SUGAR
1/2 CUP BROWN SUGAR
1/2 CUP KOSHER SALT
1/2 CUP LAWRY'S SEASONED PEPPER (COLORFUL COARSE BLEND)
2 TBSP. CAYENNE PEPPER 1/2 CUP PAPRIKA
2 TBSP. ONION POWDER
Blend spices well and scoop out the amount you need to use for rub!

In today's episode let's cook some fresh, in-season sardines Spanish-style, al horno! Fast and easy way to enjoy these flavor-packed fish using just a key ingredients!
INGREDIENTS:
- Fresh sardines
- Olive oil
- Oregano
- Peppercorns
- Red hot chilis
- Lemon
- Salt and black pepper
PROCEDURE:
1. Wash thoroughly and drain the fresh sardines. Rub with salt, crushed black pepper and oregano.
2. Drizzle olive oil on baking pan or dish. Lay down seasoned sardines. Add crushed garlic, sliced red chili pepper, black peppercorns, squeeze half lemon then put lemon wedges in between the sardines. Cover with plastic wrap and set aside to quickly marinate while waiting for the oven to reach cooking temperature.
3. Set and pre-heat oven to 250ºC. Remove plastic wrap and put it in the oven and cook for 10-15 minutes but always best to eyeball it. Enjoy it with steamed rice and cold beer!
