Crispy Fish Tails with Spicy Sauce

When it comes to fish, usually the “nasty” bits are the best bits - especially tails. Tails are usually cheaper with a good hunk of meat still attached and with a little technique it can be turned into an epic dish. Try this recipe, it’s got juicy meat and crispy skin with a tail like a potato chip - it’s gonna change your life.

INGREDIENTS
Fish Tails:
4 fish tails (I’ve used baby snapper)
100g corn starch
240g plain flour
6g baking powder
5g fine salt
10g ground coriander
1 lemon, juiced
1 lemon, zested
2 limes, zested
flake salt
white pepper
canola oil for frying
Spicy Dressing:
30g fish sauce
20g honey
30g lemon juice (1 lemon)
1 whole tomato (the older the better)
¼ clove garlic, minced
20g cayenne chilli, finely diced
5g mint, finely chopped
5g basil, finely chopped

METHOD
Fill a large pot no more than halfway with oil and heat to 190°C.
To make the fish tail dredge, whisk to combine the plain flour, corn starch, baking powder, salt, ground coriander and citrus zest.
Squeeze the lemon juice all over the fish tails then season all sides with salt and white pepper. Thoroughly rub the tails with the dredge and leave to sit for ten minutes.
To make the dressing, combine the fish sauce, honey and lemon juice in a bowl. Halve the tomato and squeeze its pulp through a strainer into the bowl, discarding the seeds. Finely dice the tomato flesh and add to the bowl along with the garlic, chilli, mint and basil.
Fry the fish tails until golden brown and crispy, 6-8 minutes. Transfer to a wire rack set over a tray and season with flake salt. Serve with dressing on the side.

Today join us as we fry up Fish (crappie) Fresh Shrimp, Hushpuppies made with our canned homegrown jalapenos and fresh grated cole slaw. This meal was SUPER DELICIOUS and so much better than eating out. We love our new heating element and plan on cooking outdoors more often!

Food | Cook | Cooking | Tasty - Disneyland s Slow-Cooked Beef Stew Bread Bowl (Recreated) ,
- 2 lb chuck roast, cubed
- 1/3 cup flour
- 1 Tbsp. seasoned salt
- 1 tsp pepper
- 3 garlic cloves
- 1 small onion, diced
- 4 red potatoes, peeled and diced
- 3 large carrots, chopped
- 3 stalks of celery, chopped
- 8 oz mushrooms, quartered
- 4 c beef broth
- 1 Tbsp. paprika
- 2 Tbsp. Worcestershire
- 1 bag frozen peas
Toss the beef in the flour, seasoned salt, and pepper, and brown in oil in a skillet on high heat. In the same pan, cook garlic and onions until the onions are clear. In the crockpot, layer the potatoes, carrots, celery, beef and onion mixture, and mushrooms. Pour in 4 cups of beef broth, 1 Tbsp. paprika, and 2 Tbsp. Worcestershire. Cover and cook on low for 7.5 hours. 10 minutes before serving, stir in a bag of frozen peas. Serve in a small, hollowed out sourdough roll. Enjoy!

Ingredients
1 tbsp olive oil
2 tbsp butter
2 pounds of ground beef
1 1/2 tsp ground cumin
1 medium onion, chopped
1 jalapeño, chopped (removed veins and seeds for less spice)
2 green onions
4 garlic cloves
3- 4oz can of hatch green chili (mild)
4 Tbsp chicken bouillon (adjust to taste)
1/2 tsp ground cinnamon
1 Tbsp onion powder
1 Tbsp garlic powder
Optional- 1 tbsp hatch chili powder
1/4 tsp ground clove
1 tsp black pepper
1 tbsp of sugar
1 tsp salt
1 tbsp Mexican oregano or marjoram
2 tbsp white vinegar
1 tbsp soy sauce
5 cups of water (for thicker chili use 3 1/2 cups)
2 tbsp instant corn masa (maseca) + 2 tbsp water
Optional for extra spice
Topping Oaxaca (melty cheese), white onion, cilantro, chiltepines (for spice), lime, and corn tortillas or corn chips
- My boys love when I add corn kernels to this chili.
Tip‼️
Have a lot of fun when making this recipe 😁
Remove bay leaves when you’re done cooking
Freeze for an easy meal, make sure to allow chili to cool before storing in the freezer

Best Ever Onion Rings
3/4 CUP MILK
HEAPING 1/8 CUP CORNSTARCH
3/4 CUP SELF-RISING FLOUR
1 TSP. ONION POWDER
1 TSP. ROASTED GARLIC POWDER (BADIA)
1/2 TSP. CAYENNE PEPPER
1 LARGE SWEET ONION (PEEL AND SLICE)
Whisk the above ingredients well (except for onion). Batter rings and place them in hot oil. Oil should be on a medium to medium/low temperature, so rings get golden brown on outside and soft on the inside. Fry a couple of minutes per side. Take out with a slotted spoon or tongs.

2 pounds trimmed, lean corned beef brisket
3 medium carrots, peeled and cut into 1-inch chunks
1 onion, cut into 4ths
1/4 cup chopped fresh parsley
2 bay leaves
1 medium head cabbage, cut into 6 wedges
Directions:
Place the corned beef brisket, carrots, onions, parsley, and bay leaves in the Instant pot and add 3 cups of water.
Cover and cook on high pressure 1 1/2 hours. Natural release then open.
Add the cabbage to the top, cover and cook on high pressure 3 minutes, quick release.
Remove meat and slice.

Beef Pot Pie
3 CARROTS (PEEL AND CHOP SMALL) 4 POTATOES (PEEL AND CHOPPED) 1 ONION (CHOPPED)
1 KNORR BEEF BOUILLON
3 CUPS HOT WATER Simmer vegetables in 4-5 cups water with bouillon until tender. Drain
1 LB. GROUND CHUCK
1/2 CUP ONION (CHOPPED)
1/2 BELL PEPPER (CHOPPED)
Place beef, onion and pepper in skillet cook on medium/high until brown drain. Put back in skillet.
MILK 3/4 CUP BROWN GRAVY MIX (MCCORMICK)
Place gravy mix in milk and mix well. Pour over meat in skillet, simmer until thick. Add drained vegetables and stir.
2 READY MADE PIE CRUSTS (REFRIGERATED SECTION NEAR BISCUITS)
Place pie crust in bottom of round baking dish (it will overlap sides) fill with beef mixture. Top with remaining crust. Cut slits in top of crust and bake at 375-degree F for 1 hour. Bottom crust should be brown! OPTION: USE CANNED MIXED VEGG

Swiss steak is a dish of meat, usually beef, that is swissed by rolling or pounding before being braised in a cooking pot of stewed vegetables and seasonings. It is often served with gravy. It is made either on a stove or in an oven, and does not get its name from Switzerland, as the name suggests, but the technique of tenderizing by pounding or rolling called "swissing".
