Today I made one of Chris's favorites Homemade Banana Pudding with Meringue on top! It is super easy when I use my mama's shortcut of making the pudding in the microwave. YES for real, in the microwave y'all but you still have to get out those good ingredients and make a beautiful Meringue topping.

Banana Pudding
PUDDING: 1 BOX VANILLA WAFERS
1/2 CUP SUGAR 4 RIPE BANANAS
1/3 CUP FLOUR 2 1/4 CUPS WHOLE MILK
DASH SALT 4 EGG YELLOWS
1/4 STICK BUTTER 1 TSP. VANILLA
TOPPING: 4 EGG WHITES (ROOM TEMP)
1/4 CUP SUGAR 1/4 TSP. CREAM OF TARTER

🍎🍏Apple Pie Biscuits | Simple and Delicious Recipe | Cozy Comfort Food! 🍎🍏

Apple Pie Biscuits
8 frozen biscuits thawed and at room temperature
1 21 oz can of apple pie filling (or fruit filling of choice)
1 stick of unsalted butter, melted (do not use margarine)
2/3 cup brown sugar
1 teaspoon of cinnamon and nutmeg (or to taste)
Icing Ingredients:
1 cup powdered sugar
2-3 tablespoons of half & half (may use milk or whipping cream)
Instructions
Grease your cast iron skillet or casserole dish. Put frozen biscuits in your skillet/casserole and cover with a dish towel or plastic wrap and allow your biscuits to thaw.
Once your biscuits have thawed, preheat the oven to 350°F.
Melt the butter in a bowl and set aside.
In another bowl, stir together the brown sugar, cinnamon and nutmeg.
Dip each biscuit in the butter and dredge both sides of the biscuit in the brown sugar mixture and place the biscuit back in the skillet.
Cut canned apples into smaller pieces and arrange over biscuits.
Pour the remaining butter over biscuits and apples. Sprinkle remaining brown sugar mixture over the biscuits.
Bake uncovered for 45 minutes or until golden brown. Let cool for 5-10 minutes.
While the biscuits are baking, mix together the powdered sugar and half and half to desired consistency. Drizzle on top of biscuits.
Leftover biscuits can be stored on the countertop, tightly covered for 2-3 days.

NOW FOR THIS FAMILY RECIPE:
MILLIONAIRE PIE (MAKES 1 PIES)
4 OZ. CREAM CHEESE (ROOM TEMP)
1/2 CAN EAGLEBRAND SWEETENED CONDENSED MILK 14 OZ. (7 OZ. FOR RECIPE)
Blend first two ingredients well with hand mixer until nice and creamy.
1 8 OZ. CAN CRUSHED PINEAPPLE (DRAINED WELL)
1/3 CUP CHOPPED PECANS
1/3 CUP CHOPPED MARASCHINO CHERRIES (DRAINED)
8 OZ. COOL WHIP TOPPING
1/2 CUP FLAKED COCONUT (TOASTED)
JUICE OF 1/2 LARGE LEMON
Put the pineapple, pecans, cherries, lemon juice, and half of cool whip (save half for top of pie). Fold together well and put into a 9” graham cracker crust. Make a crust or buy one at the grocery store. Use a decorating bag and pipe the remaining cool whip onto the pie. Put the toasted coconut on the top and refrigerate for 4 hours minimum before serving. Pie must be refrigerated because it has cream cheese in it. Enjoy!

4 TBSP SALTED BUTTER

Melt butter in cast iron skillet, add brown sugar & sliced apples. Sprinkle with Cinnamon Sugar if desired.
For Cake Batter:

1 1/2 CUPS SELF-RISING FLOUR

Spray sides of skillet well with cooking spray. Add the cake batter over peaches. Bake for 35-45 minutes @ 350 degrees. Take out of oven. Place serving plate on top of skillet and invert immediately. Use a spatula and push fruit in place around sides and top of cake. ENJOY!

NOW FOR THIS FAMILY RECIPE:
MISSISSIPPI MUD CAKE
1 CUP ROOM TEMPERATURE BUTTER (SALTED)
2 CUPS GRANULATED SUGAR
4 LARGE EGGS
1/3 CUP OF COCOA (HEAPING)
1 TSP. VANILLA EXTRACT
1 ½ CUPS SELF-RISING FLOUR (WHITE LILY)
1 CUP CHOPPED PECANS
1 CUP FLAKED COCONUT (OPTIONAL)
1 SMALL PACK OF MINIATURE MARSHMALLOWS OR 8 OZ. MARSHMALLOW CREAM
CHOCOLATE ICING (RECIPE BELOW)
Preheat the oven to 350 degrees.
Using an electric mixer cream butter and sugar and mix well. Now add eggs one at a time mixing well after each addition. Add cocoa and vanilla flavoring and mix well.
Add flour and mix for 2 minutes on medium speed. Mix in nuts.
Pour into well-greased and floured 13x9 sheet pan.
Bake until set about 40 minutes. Watch close at end and take out when toothpick comes out clean. When cake is done, take out of oven and sprinkle miniature marshmallows on top (if using marshmallow cream, spread it on top instead of using marshmallows.)
Very, very moist cake layers! Have chocolate icing made and ready when cake comes out of oven.
CHOCOLATE ICING:
Mix together:
½ stick of butter melted, 1/3 cup evaporated milk, 1/3 cup cocoa, and 1 lb. powdered sugar. Mix well then add 1 cup chopped pecans. Spread on top of cake over the marshmallows!

4 CUPS CHOPPED PECANS (TOAST AT 350 DEGREES FOR 8 MINUTES)
15 OZ. BOX GOLDEN RAISINS
10 OZ. PACKAGE OF MINIATURE MARSHMALLOWS
2 STICKS BUTTER (1 CUP)
12 OZ. JAR MARASCHINO CHERRIES
DRAIN AND CHOP CHERRIES AND RESERVE THE JUICE. CRUSH CRACKERS AND PLACE IN A MIXING BOWL. POUR JUICE INTO CRACKERS. IN A SAUCEPAN MELT BUTTER THEN ADD MARSHMALLOW AND COOK ON MEDIUM HEAT STIRRING CONTANTLY UNTIL MELTED TOGETHER. POUR MIXTURE INTO MIXING BOWL WITH CRACKERS. ADD PECANS, RAISINS AND CHOPPED CHERRIES. MIX WELL.
USE TWO LARGE PIECES OF PARCHEMENT AND ROLL MIXTURE UP INTO 2 LOGS AND PLACE INTO THE REFRIGERATOR. AFTER AT LEAST 4 HOURS, TAKE BARS OUT OF REFRIGERATOR AND SLICE INTO SERVING PIECES.

Fry in hot skillet in about ¼” canola oil. These are delicate. Pack them together when forming cakes. Flip them only once and be careful. Cook 3 minutes per side. (or until golden brown)
Make sure oil is hot before adding batter. Place a small piece in and when it starts to sizzle well then start adding cakes to fry. Fry on medium heat.
16 oz. can serve 8, half recipe for serving 4 people.

Fresh Peach Skillet Cake
4 TBSP SALTED BUTTER
2/3 CUP PACKED BROWN SUGAR
2 CUPS SLICED RIPE PEACHES
1/2 TSP CINNAMON WITH 1/4 CUP SUGAR
Melt butter in cast iron skillet, add brown sugar & sliced apples. Sprinkle with Cinnamon Sugar if desired.
For Cake Batter:
1/2 CUP SHORTENING
1/2 CUP PACKED BROWN SUGAR
1 CUP SUGAR
2 EGGS
1 1/2 CUPS SELF-RISING FLOUR
3/4 CUP BUTTERMILK
1 TSP VANILLA
Mix for 2 minutes.
Spray sides of skillet well with cooking spray. Add the cake batter over peaches. Bake for 35-45 minutes @ 350 degrees. Take out of oven. Place serving plate on top of skillet and invert immediately. Use a spatula and push fruit in place around sides and top of cake. ENJOY!

3 ROOM TEMP. EGGS
1 CUP PEANUT BUTTER (I USE 1/2 CRUNCHY AND 1/2 CREAMY)
2 CUPS SELF-RISING FLOUR
1 1/2 CUP WHOLE BUTTERMILK
1/2 CUP WATER
CREAM TOGETHER THE BUTTER AND SHORTENING, THEN ADD SUGAR AND BEAT UNTIL FLUFFY. SCRAPE YOUR BOWL IF NEEDED. ADD EGGS ONE AT A TIME WHILE MIXING UNTIL BLENDED WELL. ADD PEANUT BUTTER. ADD 1 CUP OF FLOUR, THEN ADD BUTTERMILK AND WATER. NOW ADD REMAINING FLOUR. MIX FOR 2 MINUTES. SPRAY A 1/4 SHEET PAN WITH BAKING SPRAY OR GREASE AND FLOUR THE PAN. POUR MIX INTO PAN AND BAKE AT 350 DEGREES UNTIL DONE. TAKE OUT WHEN TOOTHPICK COMES OUT CLEAN. Should take 35-40 minutes
PEANUT BUTTER BUTTERCREAM
1/2 CUP BUTTER (ROOM TEMP)
1/2 CUP SHORTENING (OR BUTTER)
1/4 CUP CREAMY PEANUT BUTTER
1 TSP. VANILLA EXTRACT
5 CUPS POWDERED SUGAR
6-8 TBSP. EVAPORATED MILK OR HEAVY CREAM
CREAM THE BUTTER AND PEANUT BUTTER UNTIL CREAMY. ADD VANILLA THEN ADD 1 1/2 CUPS POWDERED SUGAR. MIX UNTIL CREAMY. ADD MILK THEN REMAINING POWDERED SUGAR. ADD MORE MILK IF NECCESSARY FOR IT TO BE LIGHT, FLUFFY AND SPREADABLE.
1 LARGE JAR GRAPE JAM (I PREFER JAM OVER JELLY)
To Assemble Cake:
Spread the Jam On top of Cake nice and thick (about 1/4") Ice around the edges with buttercream. Next make a large tip with a pretty large round end and stripe the buttercream on top of cake as shown in the picture. Then with a large border pipe the buttercream around the perimeter.
You can use your imagination if you can not pipe borders. You can ice the cake with buttercream then coat with jam (although it will be hard to spread either on the top of the other without piping so you may have to make it look swirled together)
THIS CAKE IS AWESOME AND DOESN'T HAVE TO BE REFRIGERATED! SUPER MOIST CAKE LAYERS!

GREAT DEPRESSION CAKE
2 CUPS STRONG COFFEE
2 CUPS SUGAR
1 CUP GOLDEN RAISINS
1 CUP REGULAR RAISINS
1/2 CUP SHORTENING
1 FRESH APPLE CHOPPED FINE OR DRIED APPLES
2 CUPS SELF-RISING FLOUR
1/2 TSP CLOVES
1 TSP CINNAMON
1 TSP NUTMEG
1 CUP CHOPPED WALNUTS
THIS CAKE DOESN’T CONTAIN EGGS OR VANILLA
In a saucepan combine the coffee, sugar, shortening, raisins and apple. Simmer at a low boil for 10 minutes. Take off pour into your mixing bowl and let it cool for 10 minutes. Preheat oven to 350 degrees. Add Flour and spices and mix well. Add nuts and mix well. Pour into a WELL GREASED 13x9 sheet cake pan. Bake at 350 degrees for 40 minutes. Check and make sure a toothpick comes out clean and the cake is set (doesn’t giggle in the middle). Let cake cook then dust with powdered sugar and enjoy! Cake can be stored at room temperature up to 4 days.

Old Fashioned Oatmeal Cake, Our Lazy Daisy Oatmeal Cake Recipe

If you want to use the monk fruit sugar it is just delicious in it. The icing did set up after it cooled and we are so glad we tried it.
NOW FOR THIS DELICIOUS RECIPE:
Lazy Daisy Oatmeal Cake
1 CUP 1 MINUTE OATMEAL
1 1/4 CUP BOILING WATER
1 CUP GRANULATED SUGAR
1 CUP LIGHT BROWN SUGAR
1 CUP BUTTER (ROOM TEMP)
2 EGGS 3/4 TSP. CINNAMON
1/4 TSP. NUTMEG (OPTIONAL)
1 TSP. VANILLA 1 TSP. BAKING SODA
1 1/2 TSP. BAKING POWDER
1/2 TSP. SALT
2 CUPS ALL-PURPOSE FLOUR
ALTERNATE: USE SELF-RISING FLOUR AND OMIT SALT, SODA AND BAKING POWDER.
Bring water to a boil and add oatmeal. Set aside. Combine butter and sugars in mixer until creamy. Add eggs and vanilla. Add Cinnamon, nutmeg, salt, soda, and baking powder. Mix well. Add soaked oatmeal. Add flour 1/2 cup at a time. Pour in well-greased 9x13 cake pan. Bake on 350 degrees for 40-50 minutes until golden brown and set (done) toothpick comes out clean.
Lazy Daisy Broiled Frosting!
3/4 CUP BUTTER
3/4 CUP PACKED BROWN SUGAR
1/3 CUP HALF & HALF OR
CANNED CREAM
1 1/2 TSP. VANILLA EXTRACT
1/2 CUP FLAKED COCONUT
1/2 CUP CHOPPED (TOASTED) PECANS
In a Saucepan melt butter on simmer. Add sugars and cream. Bring to a slow boil on medium/low. Do not rush sugar to melt. All granules must be melted before bringing to a full boil. Once sugar melts turn up heat and bring to a full boil. (cover with a lid for the first minute so sugar granules will not be left on the side of pan). Take off lid and using a clean dry spatula stir while boiling for 2 more minutes. Add vanilla then add pecans and coconut, mix well. Ice the cake (in the cake pan) immediately. Place the cake in oven on low broil until icing is bubbly and golden brown. Take out and enjoy!

Tea Cakes: Maw Maw’s
1 CUP SHORTENING
1 1/4 CUP SUGAR
3 LARGE EGGS
1 TSP. VANILLA EXTRACT
3 CUPS SELF-RISING FLOUR
Cream shortening and sugars, then add eggs and remaining ingredients. Mix for 2 minutes.
Spray baking sheet. Drop cookie dough on tray 1.5 inches apart. Bake for 13 minutes @ 375 degrees.
Cook these until nice and brown on bottom. They will be crunchy and taste just like the ones your granny made when you were a kid. You will still have a hard time keeping your hands out of the cookie jar…Tammy

I've had a lot of requests for easy Instant Pot desserts so I thought I would share some of my favorites with you! These 3 desserts are not only delicious but they are made in the Instant Pot so you can make them fast AND they taste delicious! Hope you like them as much as we do.

Peach Cobbler:
Ingredients:
2 cups sliced peaches (fresh or frozen)
1/3 cup brown sugar
1 teaspoon cinnamon
1 cup water
½ of a 15 ounce box yellow cake mix
1/4 cup butter
Directions:
In a large mixing bowl, mix together peaches, cinnamon, and brown sugar, until all the peaches are coated.
Place insert into the bottom of the Instant Pot and then place the trivet in the bottom of the insert. Pour the 1 cup of water around the trivet.
In an oven safe pan that fits in your Instant Pot (I used a deep 7 inch cake pan that fits perfectly in my 6 quart Instant Pot), add in the peaches.
Sprinkle yellow cake mix over peaches, covering all the peaches (make sure you are using the dry cake mix - don't follow the instructions on the box to make cake batter).
Slice the butter into small pieces and lay over the cake mix. The entire dry cake mix should be covered in sliced butter.
Top the pan tightly with a piece of aluminum foil to keep it from bubbling over the edge and keep extra moisture out of your cobbler.
Set the lid on top of the Instant Pot and turn the valve to SEALING. Press the MANUAL or PRESSURE COOK button and set the timer for 15 minutes on HIGH PRESSURE.
Once the cobbler is done cooking, let the pressure naturally release for 10 minutes, then move the valve to VENTING to release the remaining pressure.
Remove the lid and carefully remove the pan from the Instant Pot (you will want to use hot pads because that pan will be hot!).
Serve with a scoop of ice cream or freshly whipped cream.
