This Red Velvet Cake Recipe is so delicious! Your family and friends are going to think it is the best red velvet cake they have ever tasted!
NOW FOR THIS FAMILY RECIPE:
1 White Cake Mix
1/2 stick butter (1/4 cup room temp)
1 cup whole buttermilk
3 eggs
2 tbsp. vinegar
1 tsp. vanilla extract
3 tablespoons cocoa
1-3 oz. red food coloring
Sift the cake mix and cocoa together in a bowl. If it isn't lumpy you can whisk together with a wire whisk. Put butter in mixing bowl and beat until creamy. Add buttermilk, vinegar, eggs, vanilla and cake mix with cocoa and beat one minute. Add whole bottle of red food coloring. Spray 8" round cake pans with baking spray.Place batter in each pan with a cup scoop (makes 5 layers). Bake 2 or 3 at a time being sure to place them in center of rack. Bake 20 min. for 8" layers and 15 min. for 9" layers! Cool, wrap and freeze layers to prepare for icing.

Icing:
3/4 cup butter at room temperature
12 oz. cream cheese at room temperature
1 tsp. vanilla extract
2 lb. bag of powdered sugar
Cream cream cheese and butter together until smooth and creamy. Add vanilla. Add powdered sugar a little at time until all is blended. Whip at high speed a minute or two. Ice cake and garnish with toasted chopped pecans.
TOASTED CHOPPED PECANS:
1 1/2 cup chopped pecans, spread out of baking sheet and bake in 350 degree oven for 5 minutes. Take out and shake then cook 3 minutes longer. Cool before using for garnish!

Strawberry Coffeecake
1/2 CUP WHITE SUGAR
2 EGGS
3 TBSP. SALTED BUTTER (MELTED)
1 TSP. VANILLA
3/4 CUP BUTTERMILK OR MILK
1 1/2 CUP WHITE LILY SELF-RISING FLOUR
In a mixing bowl combine above ingredients in the order they are listed mixing after each ingredient. Set aside get your pan ready:
Pan size: 8x11 or 9x9 spray with cooking spray
STRAWBERRIES (FROZEN OR FRESH)
1/2 CUP CHOPPED PECANS
4 TBSP. MELTED SALTED BUTTER
1/3 CUP SUGAR
Place slices of strawberries, pecans, and butter in bottom of pan. Sprinkle sugar over fruit and nuts. You can mix up with spatula and make it look even. Pour cake batter over into the pan. Bake at 350 degrees until nice and golden brown. About 25-30 minutes. When done, take out and let cool 5 minutes then flip out (upside down) like you would a upside down cake. Enjoy your breakfast cake!

Orange Juice Cake
1 1/2 CUP SHORTENING (BEST TEXTURE WITH SHORTENING BUT CAN USE BUTTER)
1 3/4 CUPS SUGAR
1 CUP PACKED BROWN SUGAR
4 EGGS
1/2 TSP. BAKING SODA
USE 3 CUPS SELF RISING FLOUR WHITE LILY
1 TSP. VANILLA EXTRACT
1 TSP. ORANGE EXTRACT
1 CUP BUTTERMILK AT ROOM TEMP.
1 CUP ORANGE JUICE
Sift the flour and set aside.
In a stand mixer on medium speed beat shortening until creamy (about 1 ½ minutes) add both sugars and beat until fluffy. Add whole eggs one at a time beating in between each addition. Add flavorings, baking soda and orange juice, then begin adding flour 1 cup at a time. After adding half of flour add the cup of buttermilk then add remaining flour. Beat for 2 minutes on medium/low speed. (Do not mix over 2 minutes total after flour is added). Grease & flour four 8” round cake pans OR three 9” round cake pans. Bake cakes at 325 degrees for 30 minutes or until a toothpick comes out clean & the cake begins to pull away from the sides of the pan.
IMPORTANT: If you are baking this in a sheet cake pan or in deeper layers you will have to change the baking time. Check cake for doneness after 35 minutes. Bake until center has risen and bounces back when touched.
Ice with Orange Juice Icing!
ORANGE JUICE ICING
6 CUPS POWDERED SUGAR
1/2 CUP ORANGE JUICE CONCENTRATE
1 1/4 STICKS SALTED BUTTER OR MARGERINE
DASH OF SALT
1 TSP. VANILLA EXTRACT
1 TSP. ORANGE EXTRACT
FRESH ORANGE (FOR ZESTING)
Add powdered sugar to mixing bowl. Add a dash of salt.
Add orange juice concentrate to a liquid measuring cup. Add butter to same measuring cup. Put in microwave until it is boiling hot.
Add the liquid into mixer once boiling and mix on medium speed. Add extracts. (icing will thicken as it cools).
ZEST ORANGE OVER TOP OF ICED CAKE!
NOTE: Ice cake immediately.

Fast & Easy Bar Cakes – Cook Like Mama Did – Collard Valley Cooks - Recipe listed below
These Bar Cakes are So Simple to Make and they are so delicious! Add cream cheese to the pie filling for a richer bar cake. I added coconut to the pineapple one so if you want to add something go ahead and make it your own creation! These are pretty for any occasion!
Fast & Easy Bar Cakes
Bake the following per package directions:
WHITE CAKE MIX (must use white cake for pretty bars and better flavor) Bake in a 13x9 sheet cake pan. Remove, cool 5-10 min. then flip out on parchment paper
Cake: Cut sheet cake in to 3 wide sections crosswise or 2 long sections lengthwise.
Split each bar of cake into two layers. Stack pieces and trim off brown edges.
For cake bar filling:
1 CAN PIE FILLING (YOUR CHOICE OF FRUIT)
Option: Mix pie filling with 8 oz. room temperature cream cheese for a richer bar cake.
FRESH FRUIT: Wash, dry and slice if applicable.
Place bottom layer of bar on serving board or cake plate. Place filling on bottom layer and top with pieces of fruit. Now put the top layer on the cake. Place a thick layer of cool whip (or whipping cream). Swirl top and add pieces of fresh fruit or canned drained fruit for garnish.
LEMON: Can use lemon filling and grated lemon peel on top. (Do not get the white pulp into peel or it will taste bitter) Lightly zest outside of lemon.

I have made it so easy for you to learn how to cook like my granny and mama did with cooking tutorials and cookbooks with great family recipes. Oh and no difficult to find or crazy ingredients! Just simple ingredients and really good food.
NOW FOR THIS FAMILY RECIPE:
GOOEY BUTTER CAKE
1ST LAYER:
2 EGGS
1 STICK BUTTER (ROOM TEMP)
1 POUND CAKE MIX (or Make Homemade Recipe in our Vol. 1 Cookbook and use half of the batter!)
Mix the ingredients above (2 eggs, cake mix, and butter). The batter will be sticky and thick. Spray a 8x10 or 9x9 Brownie Pan with Baking Spray. Using a spatula spread dough evenly across the bottom of the pan.
2nd LAYER:
2 EGGS
8 OZ. CREAM CHEESE (ROOM TEMP)
1 tsp. VANILLA EXTRACT
1 LB. POWDERED SUGAR (Reserve an 1/8 cup for garnish)
Cream 2 eggs, vanilla, & cream cheese until blended well. Add powdered sugar reserving a little for top of cake to garnish. Mix until creamy. Pour over the bottom layer in the pan. The pan will look full and that is ok. Bake for 15 min. at 300 degrees. Sprinkle powdered sugar on top of cake and return to oven and bake 45 more minutes at 300 degrees! This will be a total cook time of 1 hour. Take out and eat warm or cold. Enjoy!

Old-Fashioned Apple Stack Cake
Layers:
1 1/4 CUP SHORTENING
2.5 CUP SUGAR 2 EGGS
1/2 CUP SORGHUM MOLASSES
1/2 CUP BUTTERMILK
1 TSP. EACH CINNAMON & GROUND GINGER
1/2 TSP. NUTMEG 1 TSP. VANILLA
5 CUPS WHITE LILY SELF-RISING FLOUR
Cream shortening and sugar until fluffy add eggs-mix. Add remaining ingredients in order listed above. Add flour 1 cup at a time mixing well after each addition. Place one cup of mix in well-greased 8” round cake pans or 1 ¼ cups if using 9” pans -bake 20 minutes at 350 degrees. Makes 5-7 layers depending on pan size.
Option: If using all-purpose add 1/8 cup baking powder and 2 tsp. salt.
Apples:
5 CUPS DRIED APPLES 3/4 TSP. CINNAMON
3/4 TSP. NUTMEG 1/2 TSP. ALLSPICE
1 1/2 STICK OF SALTED BUTTER
3/4 CUP BROWN SUGAR 3 CUPS WATER
Combine the above ingredients in a large pot and simmer on low until the apples are semitransparent and soft. Place filling in between each cake layer and on top of cake. Let it sit for at least 24-48 hours and allow to soak before serving in a cool dry area. Refrigerate after that but wrap airtight. Important: bring to room temperature before serving.

1 1/2 CUP CONVECTIONERS’ SUGAR
1 CUP PLAIN FLOUR
1 1/2 CUP EGG WHITES
1 1/2 TSP. CREAM OF TARTER

1 CUP GRANULATED SUGAR
Sift powdered (confectioners’) sugar and flour in a separate bowl. In a stand mixer combine egg whites, cream of tartar, extracts, salt. Beat on highest speed while gradually adding granulated sugar. Beat until stiff peaks form. In large mixing bowl place 1/3 stiff whites with 1/3 of sifted IWith large rubber spatula or spoon Gently fold flour into whites until no flour (powder) is left in bowl. Repeat layering until all Ingredients: are in bowl. When batter looks consistent, place in an ungreased tube cake pan. Bake at 375 for 40 minutes or until cake springs back when touching top. - Take cake out of oven. Flip upside down to cool on cooling rack. If tube pan has feet, invert it on counter to cool. When completely cool, take a flat knife or icing spatula and run between edge of cake and pan to loosen cake. Next loosen bottom and center tube the same way. Top with Strawberry topping and whip cream!

Coconut Condensed Milk Pound Cake, A White Lily Recipe that is AMAZING!
Coconut Condensed Milk Pd. Cake
1 LB SALTED BUTTER, SOFTENED (I USED SALTED BUTTER)
2 CUPS GRANULATED SUGAR
8 EGGS, SEPARATED
3 1/2 CUPS WHITE LILY ALL-PURPOSE FLOUR ( DO NOT USE SELF-RISING)
1 14OZ CAN SWEETENED CONDENSED MILK
MUST HAVE A 12 CUP BUNDT PAN! OR MAKE TWO CAKES.
1 TSP. VANILLA EXTRACT (USE 2 IF NOT USING ANOTHER FLAVOR OF EXTRACT)
2 TSP. COCONUT EXTRACT (OPTIONAL)
2 BAGS OF 6OZ. FROZEN FRESH COCONUT OR
USE 12 OZ. OF FLAKED SWEETENED COCONUT. (OPTIONAL)
1️) Heat oven to 325°F. Coat 10-inch tube pan with flour non-stick cooking spray.⠀
2) Beat together butter and sugar until light and fluffy. Then, add in egg yolks and beat until combined. Add extracts.
3) Add in condensed milk and flour in three additions, alternating each ingredient and beating well in between. Occasionally scrape down the sides of the bowl. Add coconut and mix well.
4) In a separate clean bowl, whip egg whites until they hold firm peaks, about 5-7 minutes depending on your mixer. Carefully fold eggs whites into batter and beat just until thoroughly distributed. Add batter to your prepared tube pan.
Must use a 12 cup Bundt pan and only fill it 3/4 full. You will have a little batter left. If you have a smaller Bundt pan, fill it 3/4" full and use another pan like a loaf pan and bake two cakes!
5) Bake 1 hour 30 minutes or until a toothpick inserted in center comes out clean. Let cool in pan for 20 minutes, then unmold.
Note: this cake gets its height from air beaten into the batter and needs no baking powder or soda. Do NOT USE self-rising flour.
