Brussel Sprouts without Oven | with Bacon for Thanksgiving
Brussel sprouts can be prepared without using oven and that is my favorite way anyway. They are a great side dish for thanksgiving dinner. Brussel sprouts go together with bacon very well. I like them fried in bacon grease on a nonstick pan. Make sure not to over cook them as they will lose their flavor and become mushy. They should be cooked so they are soft when you bite them but still preserve their texture. Sounds confusing? You just have to try the recipe for yourself and test it.

High Protein Meals | Shrimp with Peppers and Onions | High Protein Dinner
This high protein dinner: Shrimp with peppers and onions served over cheese grits is my to go comfort dish. It is a great low calorie and very high protein meal. Shrimp is a great source of protein that is low in calorie as well. Onions and peppers when cooked slowly add amazing sweetness to any dish. If you are not a fan of grits feel free to serve this dish over rice or any other grain that you like.
Ingredients
- 8 oz of shrimp
- 2 slices of bacon
- 4 oz of turkey sausage
- 1 red bell pepper
- 1 green bell pepper
- 1 large onion
- 4 garlic cloves
- 1 jalapeno
Sauce
- 100 g full fat greek yogurt
- 20 g sriracha
- 1 garlic clove
- dash of chili powder
Grits
- 2 cups of water
- 1/2 cup of old fashioned grits
- 1 oz of munster cheese

Simple Cheesecake Recipe - Easy and Quick
This is a very basic cheesecake recipe that's easy and quick. Very few ingredients. Best cheesecake recipe I have ever made. It is creamy and smooth. Perfect chocolaty crust complements the sweetness of the cheesecake, sour cream adds a bit tang to finish it up. A must try!
Ingredients
For cheesecake:
- 3 - 8 oz cream cheese
- 3/4 cup sugar (125 g)
- 5 eggs
- 1 tsp vanilla extract
Sour Cream Topping:
- 2 cups (16 oz) full fat sour cream
- 3 tbs sugar
- 1 tsp vanilla extract
Crust:
- one package of chocolate graham crackers (9 sheets)
- 3 tbs cocoa powder
- 6 tbs melted butter
Bake at 300 F for 60 minutes
Remove from the oven and add sour cream topping - put back into the oven for another 5 minutes. Remove and cool down.

Healthy Low Calorie Stir fry Ramen Noodles - Low Calorie Meals
My favorite recipes come from leftovers and so did this low calorie stir fry ramen noodles with chicken. It is a low calorie and healthy noodle meal. I had some chicken and vegetables (brussel sprouts and broccoli already cooked), threw in ramen noodles, special sauce and some other veggies. It was ready in minutes and so delicious! You can use any veggie you have your fridge and use this recipe.
Ingredients
- 3 oz chicken breast
- 3 oz brussel sprouts
- 5 oz broccoli
- 7 oz (200g) mushroom
- 1 egg
- 2 cloves of garlic
- one inch of ginger
- 2 stalks of green onion
- 1 tbs of chopped cilantro
For the sauce:
- 1 tbs dark soy sauce (or regular soy sauce)
- 1 tbs korean hot pepper paste
- 1 tbs sriracha
- water to thin it out
- sweet chili sauce - on the side optional

Crepes (Crêpes) with nutella and fruit is such a great treat. As a kid I grew up eating Naleśniki (Nalesniki) which what we called crepes in Poland. They were served usually as a second course after soup in my home.

Low Calorie Ground Chicken Chili with Red Kidney Beans and Cauliflower Mash
This ground chicken chili with red kidney beans recipe is a low calorie alternative to regular ground beef chili. By adding lots of vegetables I am adding lots of volume which helps make this chili low in calories and full of flavor. Serve it with mashed cauliflower (recipe in the video) to make it a low calorie meal.

Sauteed shrimp with citrus avocado and tomato salad served over cilantro rice. This is easy and quick shrimp recipe. Avocado and tomato with lime juice dressing add lots of flavor to do dish. For lighter version add more lettuce and skip rice.
Ingredients
- 1 lbs shrimp
- 2 garlic cloves
- sweet paprika
- cilantro
- salt and pepper to taste
- 1 lime
- 1 slice of bacon for frying (you can use your favorite oil or butter)
- 1 cup cooked rice - add cilantro (optional)
For the salad:
- tomatoes
- avocado
- red onion
- salt and pepper to taste
- 1 head of romain lettuce
Lime dressing
- 0.5 oz dijon mustard
- 2 limes juiced
- 1 oz olive oil (for LOW CALORIE dressing skip the oil - it is delicious without it as well)

High Protein Low calorie Egg Fried Rice with Leftover Rice and Veggies
This egg fried rice recipe is a high protein and low calorie version of a very popular takeout meal. This is the fastest and budget friendly way of reusing food that you would normally throw out. I had some veggies (cauliflower, butternut squash, some brussel sprouts) leftovers with roasted chicken and rice. Leftover meals are just amazing. Not only do you reuse food but also you create amazing flavors. And you also save tons of calories and your health by not ordering that take out.
This is a 'anything goes' recipe. So whatever leftovers you have in your fridge you can use.
Ingredients
- 2 slices of bacon
- 8 oz mushroom
- jalapeno
- half large onion
- 2 cloves of garlic
- leftover veggies (I had brussel sprouts, butternut squash and cauliflower - you can use whatever you have)
- 6 oz leftover roasted chicken - I used breast (any other protein you have is fine - even if it's breaded)
- 1 cup of rice
- 1 egg
- 1 tbs sriracha
- 2 tbs oyster sauce
- 2 tbs soy sauce
- 2 tbs cilantro
- green onion would be great as well, I didn't have any at home but if you do use it

Healthy Pumpkin Sheet Cake - Pumpkin Dessert Recipes
This dessert recipe for pumpkin sheet cake I have been perfecting for months. It originally started from a recipe that included butter, lots of sugar and regular flour. I transformed that into a low calorie dessert recipe. I use calabaza pumpkin because it has the best texture for the cake to come out moist and not mushy. I removed butter and replaced it with yogurt. Added minimum amount of sugar but if it is not sweet enough for you - add more, or make cream cheese frosting on top. Best of all - one serving of this sheet cake has only 88 calories and 5 grams of protein. Gluten free is a nice bonus:)
Ingredients
- 1 cup of garbanzo bean flour
- 150 g buckwheat flour
- 1.5 oz sugar
- 610 g roasted calabaza pumpkin (wrap in foil and roast for 35-45 minutes at 375 F)
- 3 - 4 very ripe bananas = 12 oz
- 4 eggs
- 150 g non fat greek yogurt
- 0.5 tsp salt
- 1 tsp baking soda
- 1.5 tsp baking powder
- 2 tsp cinnamon

How to Make Burrito Wrap with Ground Beef and Beans
Burrito wrap with ground beef and beans is a great option for lunch or dinner. In this video I will show you how to make it. My family loves the flavors. I added rice and cheese and lots of veggies. It goes great with avocado and tomato salad on the side or pico de gallo: https://youtu.be/Z8JupDndNK8
For a lighter version you can still use ground beef, I used 85/15 beef - just skip the oil. Ground beef has enough fat in it. If you use the ceramic nonstick pan I used it wont stick and it will release enough fat to cook your veggies in. Substitute regular tortilla for Xtreme, low calorie one and you have a low calorie option for about 500 calories.
Ingredients
- flour tortilla
- 2 slices of munster cheese per tortilla
For filling:
- 1 tbs avocado oil
- 9 oz ground beef
- 2 large red bell peppers
- half large onion
- 3 galic cloves
- 1 jalapeno
- 1 cup of black beans
- 260 g of canned tomatoes (or fresh)
- 1 cup cooked rice
- 2 tsp salt
- 1.5 tsp sweet paprika
- 1.5 tsp cumin
- 1.5 tsp chili powder
- pepper to taste
For side salad:
- avocado
- tomatoes (any kind you like - I used grape because that is what I had)
- onion
- cilantro
- jalapeno (optional)

Light and Creamy Vegetable Soup with Buttermilk Dumplings
This vegetable soup with dumplings is a perfect comfort dish. You can use chicken stock recipe: https://youtu.be/F9xmWIVuVtQ and re-use carrots and celery from the stock. I used mushroom, peas and cauliflower but you can use any vegetable you like to make this simple soup. You can also add chicken to the soup for more protein. That is what I did.

Simple and flavorful linguine pasta with bacon and grape tomatoes. Very few ingredients. Easy to make in no time. Good idea for a quick dinner. If you have grape tomatoes that are overripe this linguine pasta dish is perfect way to use them. I like to add bacon instead of using any oils and bacon adds so much flavor to any pasta dish.

Low Calorie Sweet Balsamic Vinaigrette Salad Dressing
This Balsamic Vinaigrette Salad Dressing is low in calorie yet sweet and delicious. You won't know the difference. I adjusted slightly the ratio of oil and balsamic and red wine vinegar to balance it just right. If you want to add more oil to this dressing you definitely can.
Ingredients:
- 2 oz olive oil
- 1.5 balsamic vinegar (Kirkland brand at Costco is the best)
- 3 oz red wine vinegar
- 0.5 oz dijon mustard
- 1 garlic clove
- salt, pepper and dried oregano to taste
Blend all ingredients well.
