Bacon Wrapped Candied Jalapeno BBQ Chicken Recipe
We are grilling bacon wrapped chicken thighs on the Kamado Joe over Mesquite lump charcoal and finishing it off with some candied jalapeno bbq sauce.

Wagyu Beef Brisket on Offset Smoker -- Lobel's Wagyu Brisket
I show you how to smoke the best beef brisket you've ever tasted!!! I smoke a Lobel's Wagyu Beef Brisket on the Yoder Wichita. I smoked the brisket at 225F for 14 hours and used a mix of Post Oak and Pecan wood for flavor. The rub was simple and the recipe is below.
My good friend Tom from Tom's Test Kitchen joined me for a final taste test. This was the best brisket that either of us have tasted!!!
Rub used:
1/3 Cup Kosher Salt
1/3 Cup Fresh Ground Black Pepper
1 Tbsp Ground Cayenne Pepper
Begin spritzing after 4-6 hours about every 30 minutes until done.
Spritz used:
1 Cup Apple Juice
1 Cup Dill Pickle Juice
1/4 Cup Frog Bone Hot Sauce

Today I show you how to cook BBQ Chicken on the Kamado Joe. We are cooking low & slow at 225F until the chicken reaches 150F internal, then we ramp up the Kamado Joe to 350F and crisp up the skin. How To Make Pizza Dough
This is the perfect pizza dough recipe for your homemade pizza. It is very easy to make with a few simple ingredients. This dough recipe is great for grilled pizza, baked pizza, or pizza on a pizza stone.

Pizza Dough Ingredients:
1 1/2 Cup Warm Water (divided)
2 1/4 tsp Active Dry Yeast (1 packet of yeast)
2 1/4 tsp Sugar
4 Cups Bread Flour
1 tsp Salt
1 tsp Garlic Powder (optional)
1/4 Cup Olive Oil
Instructions:
To a small bowl, add 1/2 Cup warm water, yeast, and sugar. Stir yeast mixture until well blended and sugar is dissolved. Let yeast bloom for at least 5 minutes.
While yeast is blooming, add 4 Cups Bread Flour, Salt, and Garlic Powder to a large mixing bowl. Stir together dry ingredients until blended.
Add yeast mixture to flour mixture.
Add Olive Oil
Add 1 Cup Warm Water
Mix everything on slow speed until dough ball is formed (usually 1-2 minutes)
Turn mixer up to a higher speed and mix dough for additional 5-8 minutes or until a smooth dough ball is formed.
Take dough out of mixing bowl, spray mixing bowl with non-stick olive oil or use real olive oil.
Form dough into a tight ball and place into mixing bowl. Coat outside of dough ball with olive oil to prevent a skin from forming on the ball.
Cover mixing bowl with a kitchen towel or plastic wrap and let the dough rise until double in size. (usually 1 hour)
After dough has doubled in size, punch the dough down, cover it once again and let it rise a 2nd time.
After the 2nd rising, your pizza dough is ready to be used to make pizza crust. Enjoy!!!

Lobel's Pork Ribs Smoked on the Kamado Joe
Today, a couple of my YouTube friends join me as we test a new BBQ Dry Rub and BBQ Sauce from Lobel's of New York. The Berkshire St. Louis cut Pork Ribs were also provided by Lobel's and we smoke the ribs on the Kamado Joe for 5 1/2 hours. The results were outstanding!! 36oz Porterhouse Steak over Open Fire -- Lobel's of New York
This is how to cook a Lobel's 36oz USDA Prime Dry-Aged Porterhouse Steak on your Offset smoker. I am using Pecan wood on my Yoder Wichita. I smoke the steak for 30 mins to an internal temp of 115F, then I sear it directly over the Pecan wood in the firebox for 2 mins each side for a fantastic smoked flavored dry-aged steak. It truly doesn't get any better than Lobel's of New York steak!!

Chocolate Banana Nut Bread -- Booger's Recipe
This is Booger's recipe for Chocolate Banana Bread with Chocolate chips. I added Pecans to the mix which turned out terrific.

Recipe:
Booger's Chocolate Banana Bread with Chocolate chips
Ingredients
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed ripe bananas (about 2 medium)
1/4 cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1/2 cup semi sweet chocolate chips
8 oz of Pecan pieces (optional)
1. In a bowl, cream butter and sugar. Add eggs, bananas, milk and vanilla. Combine the flour, cocoa, baking soda and salt; add to the banana mixture and mix just until combined. Fold in chocolate chips. Transfer to a greased 9-in. x 5-in. loaf pan.
2. Bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf.

Bacon Wrapped Pork Tenderloin with Herb Coating
This Pork Tenderloin is rubbed with olive oil, roasted garlic, and herbs, then wrapped in smoked bacon and grilled on my DCS gas grill. My wife is not a huge pork fan because it's usually dry, but she loved this pork tenderloin. I hope you give it a try also!!!
