Grilled Ostrich Filet Steaks with Fig Port Wine Reduction Sauce
I grill a couple of Ostrich Filet steaks and serve it with mashed potatoes and Green Bean Almondine. I top the Ostrich with a nice Fig & Port Wine Sauce. This was amazing and very easy to make!

How To Make Turkey and Sausage Gumbo
Looking for a meal made for leftover Thanksgiving Turkey? Why not make a Turkey & Sausage Gumbo Recipe? I show you how easy and tasty a Turkey gumbo can be. I throw in some pork and pecan smoked sausage along with the turkey.
Turkey Gumbo Recipe
3 Tbsp Salted Butter
8oz Cajun Trinity (Onion, Bell Pepper, Celery)
3 Tbsp of jarred roux
4 Cloves Garlic (minced)
1 Sprig Fresh Thyme
8 Cups of water
3 tsp Salt
2 tsp Black Pepper
1/2 pound Sausage
1 Bay Leaf
1 pound cooked turkey cut into chunks
1 pound small cooked shrimp (optional)
Instructions:
1) Melt butter in a dutch oven.
2) Add Cajun Trinity to butter and cook over med-high heat for 4-5 minutes.
3) Stir in jarred roux and let heat for a minute.
4) Add minced garlic and the Thyme sprig and stir roux for another minute.
5) Begin adding your water a little at a time while stirring constantly to prevent lumps.
6) Continue adding water until you have used all 8 cups.
7) Bring gumbo up to a boil. Turn heat down to simmer, then add salt, pepper, and sausage.
8) Cover gumbo and let simmer 30 minutes.
9) Add 1 bay leaf and continue simmering another 30 minutes.
10) Remove bay leaf and skim fat off the top of the gumbo.
11) Add the turkey chunks and simmer another 30 minutes covered.
12) Add additional salt/pepper to taste. Remove the thyme sprig.
13) **Optional** Add frozen cooked shrimp and simmer another 20 minutes covered. Enjoy!!!

Grilled Smoked Mozzarella Prosciutto and Truffle Oil Recipe
This is a fabulous appetizer that is quick and easy to make. The grilled smoked Mozzarella matched with the Prosciutto Di Parma and White Truffle oil over a bed of Arugula will make you think you are in Italy.

Smoked Mozzarella and Prosciutto Appetizer
Ingredients:
1 block of Scamorza-Rella (Smoked Mozzarella) cheese
3 Tbsp White Truffle Oil
6-8 slices of Prosciutto Di Parma
2 Cups Fresh Arugula greens
Directions:
1. Heat the Truffle oil in a skillet over med-high heat.
2. Once the oil is hot, add the Scamorza to the center of the pan.
3. Lightly brown all sides of the cheese.
Serving the dish:
1. Lay out the Arugula onto a cutting board.
2. Wrap the Prosciutto slices around your finger to form a rose shape. Place shaped Prosciutto around the edges of the Arugula.
3. Place the grilled cheese onto the center of the Arugula.
4. Drizzle a little more Truffle oil over the completed dish.
5. This is best served warm. Enjoy!!!

How To Make Cranberry Sauce
This is how I make my homemade cranberry sauce for Thanksgiving and Christmas. Click "Show More" below for the recipe.
Cranberry Sauce Recipe
4 Cups Fresh Cranberries
1/3 Cup Water
1/4 tsp Allspice
1/4 tsp Ground Clove
1 Cinnamon Stick
Juice of 2 Mandarin Oranges (Approximately 1/2 Cup)
1 Cup Brown Sugar
Pinch of Salt
Add all ingredients into a pot. Bring to a boil.
Let boil for 1 minute, then reduce heat and simmer 10-15 mins.
Remove from heat and let cool.
Remove cinnamon stick and place into airtight container.
This sauce will keep in the fridge for a week. Enjoy!!!

Apple Cheese Stuffed Pork Roast on the Grill | Collab with Rockin Robin Cooks
I show you how to make a wonderful apple, onion, and cheese stuffing for a pork loin roast. I show you how to stuff and tie up your roast and also how to grill it on your grill. This roast was very tender and juicy.

Stuffing Mixture
2 Tbsp Olive Oil
1 Cup Onion Chopped
2 Granny Smith Apples peeled and chopped
1 tsp fresh Thyme
1 tsp fresh Sage
2 tsp fresh Rosemary
1/2 Lemon juiced
Salt & Pepper to taste
2 Tbsp Salted Butter
2 Cups stale bread
6-8 oz of Chicken Broth
1 tsp Garlic powder
1 tsp Poultry seasoning
1/3 Cup Parmesan Cheese (use more if desired)
Pork Loin
3.5 pound pork loin roast (butterflied)
2/3 Cup brown sugar
1 Tbsp Garlic Powder
1 Tbsp Lawry's Seasoned Salt
2 tsp cracked black pepper
2 Tbsp Olive Oil
Add Olive oil, onion, and apples to a pan on med-high heat. Cook for 5 minutes. Add herbs, lemon juice, salt & pepper and cook another 2-3 minutes. Turn off heat and add butter.
Add stale bread to mixture. Stir in the bread, then add chicken broth. Add garlic powder, poultry seasoning, and parmesan cheese to mixture and stir in. Taste filling and adjust seasoning to taste if needed. Allow to cool completely before adding stuffing to pork loin.
Unroll your butterflied pork loin roast. Sprinkle on brown sugar leaving 1 inch around the edges of roast. Season your roast with garlic powder, seasoned salt, and pepper. Drizzle olive oil all over the roast and rub seasoning blend and sugar into the roast.
Add stuffing to the inside of the roast leaving 1 inch around the edges. Roll up the roast and tie with butcher's twine. Season outside of roast with more seasoned salt and black pepper.
Grill your pork roast indirectly over med-high heat for 20-30 minutes. Flip roast over and continue grilling another 20-30 minutes or until roast reads an internal temp of 145F or more. Pull off the roast and let rest tented in foil for 15-20 minutes before slicing. Enjoy!

How To Make Bourbon Beef Jerky on Weber Smokey Mountain
I show a homemade recipe for making bourbon marinated beef jerky and finish it off with some Mango Habanero Texas Rib Candy glaze. This was some wonderful tasting jerky!
Bourbon Beef Jerky Recipe:
2 1/2 pounds Eye of Round Roast sliced 1/4 inch thick
2 Cups Root Beer
1 Cup Bourbon
1 Cup Pineapple Juice
1/2 Cup Frank's Red Hot Sauce
1/2 Cup Dark Brown Sugar
1/3 Cup Honey
1/4 Cup Worchestershire Sauce
1 Tbsp Liquid Smoke
1 Tbsp Texas Pete Hot Sauce
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1/2 tsp Chili Powder
1/2 tsp Chipotle Powder
1/2 tsp Mexican Oregano
3 Tbsp Black Pepper
2 Tbsp Salt
**Note** I would add more salt or worchestershire sauce or perhaps some soy sauce for sodium. Also, If you don't want to add the Rib Candy glaze, add more Franks Sauce or Srirachi sauce for added heat.
Glaze used at end of cook: Texas Rib Candy Mango Habanero

Instructions:
Combine all ingredients into a large bowl and whisk until all ingredients are mixed well and combined. Add beef and cover with plastic film. Let marinate overnight or up to 24 hrs.
Cook jerky on your smoker or in your oven at 150F - 160F (or as low as your oven will go) for 4-6 hours or until done to your liking. I glazed the jerky with Texas Rib Candy the last hour (30 mins on each side).
Pull jerky off the heat and let cool for 30-45 mins. Enjoy!!!
**NOTE** The Texas Rib Candy has sugar in it, so the jerky will likely only last a few weeks if refrigerated. Of course, it probably won't last that long because you would have eaten it all before then!!

Jamaican Jerk BBQ Pork Tenderloin Recipe
I show how-to marinate and grill a Jamaican Barbecue Jerk Pork Tenderloin. I use my Kamado Joe, but any grill will work for this simple and very tasty recipe!!
Jamaican Jerk Pork Tenderloin Recipe
2 Pork Tenderloins (2-3 pounds)
3 Tbsp Jerk Seasoning (use more if you like it spicy)
3 Tbsp Cilantro chopped
3 Stalks of Green Onion chopped
Juice from 2 Limes freshly squeezed
Place pork into a container suitable for marinating. Add Jerk seasoning, Cilantro, Green Onions, and Lime juice to pork. Marinate pork for 6 hours or overnight for more intense flavor.
There is no need to rinse off the marinade before grilling.
Grill pork at 400F until internal temp is 145F (30-40 mins) or done to your liking.
If you want to sauce the pork, do so the last 10 mins of the cook, basting each side for 5 mins with the sauce.
Rest the pork 10 mins before slicing. Enjoy!!!

Creamy Chicken Bacon Enchiladas Recipe with a Twist!!!
This is a Creamy Chicken Enchilada recipe that uses Collard Greens in the filling and it is garnished with radishes, jalapenos, and cilantro. The crispy garnish and the pickled jalapenos really add so much depth of flavor to this excellent recipe. This is a keeper!!!!
This recipe was inspired by the following Southern Living Magazine (Sept. 2016) recipe:

Ingredients:
2 tablespoons salted butter
1/2 cup chopped onion
1 garlic clove, minced
1 (16-oz.) pkg. fresh coarsely chopped collards (remove stems)
4 ounces cream cheese, cubed (about 1/2 cup)
1/2 cup whole milk
1 teaspoon granulated sugar
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 teaspoons Red Pepper Flakes (optional)
1 (16-oz.) block Monterey Jack cheese, shredded and divided
2 cups of shredded cooked chicken
1 cup crispy bacon (chopped)
16-oz can of Green Chile enchilada sauce
1/2 cup sour cream
12 (6-inch) corn tortillas
Toppings:
Sliced radishes, sliced pickled jalapeno chilies, cilantro leaves
Preparation:
1. Preheat oven to 375°F. Lightly coat a 13- x 9-inch baking dish with cooking spray; set aside. Melt butter in a large skillet over medium. Add collards, onion, and minced garlic. Cook, stirring often, until collards are cooked to desired degree of tenderness (10 to 15 minutes). Stir in cream cheese, milk, sugar, salt, pepper, and 1 cup of the cheese. Cook, stirring constantly, until heated through, about 4 minutes. Remove from heat and stir in chicken and chopped bacon.
2. Whisk together enchilada sauce and sour cream in a small bowl. Spoon 1 cup sauce mixture into prepared baking dish.
3. Wrap tortillas in damp paper towels, and tightly wrap with plastic wrap. Microwave at HIGH until tortillas are softened, about 1 minute.
4. Spoon about 1/3 cup collard green mixture just below the center of each tortilla. Fold opposite sides of tortilla over filling, and roll up. Place enchiladas, seam side down, on sauce mixture in baking dish. Top with remaining sauce mixture and remaining 1 cup cheese.
5. Bake in preheated oven until light brown and bubbly, 25 to 30 minutes. Let cool 10 mins before serving.
6. Garnish with sliced radishes and Jalapeños and cilantro leaves.

Ingredients
1 cup packed light brown sugar
1/2 cup granulated sugar
1/2 cup (4 oz.) salted butter, softened
1 large egg
3 tablespoons whole milk
1 1/2 teaspoons vanilla extract (we used Madagascar Bourbon Vanilla Extract)
2 cups (about 9 oz.) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon table salt
1/2 cup chopped pecans
1/2 cup toffee bits
3/4 cup pecan halves
3 tablespoons jarred caramel sauce
Sea salt
Preparation
1. Preheat oven to 325°F. Lightly coat a 10-inch cast-iron skillet with cooking spray. Beat brown sugar, granulated sugar, and butter with a heavy-duty electric stand mixer at medium speed until light and fluffy. Add egg, milk, and vanilla, beating until blended.
2. Whisk together flour, baking soda, and salt in a bowl. Add to butter mixture gradually, beating at low speed until combined.
3. Add chopped pecans and toffee bits; beat until combined.
