36oz Porterhouse Steak over Open Fire -- Lobel's of New York

This is how to cook a Lobel's 36oz USDA Prime Dry-Aged Porterhouse Steak on your Offset smoker. I am using Pecan wood on my Yoder Wichita. I smoke the steak for 30 mins to an internal temp of 115F, then I sear it directly over the Pecan wood in the firebox for 2 mins each side for a fantastic smoked flavored dry-aged steak. It truly doesn't get any better than Lobel's of New York steak!!
