This is an easy Recipe for a delectable Pumpkin Pie with Graham Cracker Crust made in the Instant Pot. You can serve it plain or with a cloud of whipped Cream.
Pumpkin Pie (Instant Pot)
Ingredients:
Crust:
1-1/4 cup Graham Cracker Crumbs
3 tbsp Sugar
1 tsp Cinnamon
6 tbsp Butter, melted
Filling:
15 oz Pumpkin Puree
1 can Sweetened Condensed Milk (13,25 oz)
2 Eggs
2 tbsp Light Brown Sugar
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/2 tsp Ground Ginger
1/2 tsp Salt
7" Springform
Instant Pot
Trivet
1 cup hot Water
Line Springform with Parchment Paper, butter Form.
Combine Graham Cracker Crumbs, Sugar, Cinnamon & Butter.
Fill Springform with Crumb Mixture, press down and up on sides.
Freeze for 15 Minutes.
Combine Pumpkin Puree, Sweetened Condensed Milk, Eggs, Brown Sugar, Cinnamon, Nutmeg, Ginger & Salt, mix well.
Pour the filling into the prepared Springform. Place a trivet into Pot, add 1 cup of hot Water in Instant Pot.
Use a foil sling to lower the pie.
Secure the Lid.
Pressure Cook 30 Minutes open after 10 Minutes natural release.
Remove Pie & cool completely, (best after cooling refrigerate over night)
Carefully remove Springform, cut & serve with whipped Cream.

1/2 cup Sugar
1/2 cup Oil
2 Eggs, room temp
1 tsp Vanilla
1 tbsp Whole Milk
15 oz Pumpkin Puree
Cut White Chocolate in small Dice. (reserve 36 pieces, set aside.)
Preheat Oven 375° F.
Place 12 Paper Cups in Muffin Tin.
Combine Flour, Baking Powder, Salt, Pumpkin Pie Spice & Cinnamon, set aside.
Mix together Brown Sugar, Sugar & Oil.
Add one Egg at a time, continue mixing.
Add Vanilla & Milk.
Mix in Pumpkin Puree.
Incorporate Flour Mixture.
Fold in White Chocolate.
Fill each Paper Cup equally with Batter.
Top each with 3 White Chocolate Pieces.
Bake 25-30 Minutes (or until tester comes out clean).
Rest Muffins in Tin for 5 Minutes.
Cool completely on Wire Rack.

Sweet & Spicy Pepper Relish
Ingredients:
2 cups Sweet Peppers, diced
1 sm Red Onion, diced
2 Jalapeños, diced
10 Pequin Peppers, diced
2 Cayenne Peppers, diced
1 Serrano Pepper, diced
3 Garlic Cloves, minced
1 tsp Mustard Seeds
Black Pepper
Pink Salt
1/2 cup Sugar
1/2 cup Apple Cider Vinegar
Toast Mustard Seeds in a med sized Pot on med heat.
Add all diced Peppers, Red Onion and minced Garlic, stir.
Season with Black Pepper and a Pinch of Pink Salt.
Add Sugar & Apple Cider Vinegar, combine well.
Bring to a boil, reduce heat and simmer 20-30 Minutes, until Liquid is reduced.
Remove from heat and cool.

We make these delectable Apple Crumble Cookies with dried Apple Chips, a little different but a wonderful Dessert.
Apple Crumble Cookies
Ingredients:
100 gr Dried Apple Chips
1-1/2 cup Flour
1/2 cup Sugar
1 tsp Cinnamon
1-1/4 tsp Baking Powder
1/2 tsp Salt
7 tbsp Butter/cold
1 Egg
Use Food Processor and blitz Apple Chips.
Add Flour, Sugar, Cinnamon, Baking Powder, Salt & Butter, blitz until it resembles Crumbles.
Remove 1/4 cup of Crumbles and set aside.
Add Egg and continue mixing until Dough comes together.
Remove, cover with Plastic Wrap & refrigerate 30 Minutes.
Line Cookie Sheet with Parchment Paper.
Preheat Oven 400°F.
Shape Dough Balls, approx. 25gr each.
Place equally spaced 2" apart on Cookie Sheet.
Use 2 Fingers and press down slightly.
Top with reserved Crumble and press lightly.
Bake 8-10 Minutes.
Rest 5 Minutes on Cookie Sheet, cool completely on Wire Rack.

You don't need a Food Dehydrator to make delicious healthy Cinnamon Apple Chips, just use your Oven. A great Snack, you could also sprinkle them with Pumpkin Spice, Ginger, Nutmeg or leave them plain.
Cinnamon Apple Chips
Ingredients:
3 Cosmic Crisp Apples
1 tbsp Lemon Juice
3 cups Water, cold
Cinnamon
Add Lemon Juice to Water.
Use Mendoline, carefully slice Apples as thin as possible, remove Seeds.
Place Slices in Lemon Water to prevent oxidation.
Line Baking Sheets with Parchment Paper.
Preheat Oven 200° F
Dry Apple Slices with Kitchen or Paper Towel.
Sprinkle with Cinnamon on both sides.
Place in single layer, not touching on Baking Sheet.
Dry Apple Slices for 1 hour 15 min.
Flip Chips over, continue drying for another 1 hr. 15 min. or until crisp.
Chips will get firmer when cooled.
(Tip: Store in airtight Container, if you don't consume them the same day and Chips are not that crisp anymore, just place them shortly in the Oven on low temp)

Plain Pfannkuchen
Ingredients:
1 cup Flour
3/4 cup Milk
2 Eggs
1/4 tsp Salt
1/2 tsp Cinnamon
1 tsp Sugar
8 tsp Butter
Combine Flour, Sugar, Cinnamon & Salt whisk well.
Integrate Eggs and gradually add Milk until Batter is smooth and runny.
(you can add more or less Milk, depending on how thick you like your Pfannkuchen)
Rest Batter for 5 Minutes.
Melt 1 tsp of Butter in an 8" Skillet on med/high heat.
Pour 1 (Soup) Ladle of Batter in Skillet, distribute evenly in pan.
Cook until set about 2 Minutes.
Flip Pfannkuchen, continue cooking until golden.
Repeat with the Rest of Batter, makes approx. 8 Pfannkuchen.

Plantain Ricotta Pfannkuchen
Ingredients:
1-3/4 cups Flour
2 med Plantains
2 cups Milk
3 tbsp Ricotta Cheese
1/2 tsp Salt
1 tbsp Sugar

2 Eggs
16 tsp Butter
Peel and cut Plantains in 1" pieces.
Blend Plantains, Eggs, Ricotta, Salt, Nutmeg, Sugar & 1 cup of Milk until smooth.
Combine Flour & Plantain Mixture.
Incorporate more Milk (approx. 1 cup) whisk, until batter is smooth & runny.
For each Pfannkuchen melt 1 tsp Butter in 8" Skillet on med/high heat.
Pour one (soup) ladle of batter, swirl and tilt skillet, cook until set.
Flip & continue cooking until golden.
Repeat with rest of batter, makes 16 Plantain Ricotta Pfannkuchen.

Peanut Butter Banana Pfannkuchen
Ingredients:
1-1/4 cups Flour
2 Eggs
1 Banana
2 tbsp Peanut Butter
1/2 tsp Salt
1 tbsp Brown Sugar

10 tsp Butter
Blend together Banana, Eggs, Peanut Butter, Brown Sugar, Salt, Vanilla & Milk.
Whisk together Flour and Wet Mixture.
Rest Batter for 10 Minutes.
Melt 1 tsp of Butter in 8" Skillet on med/high heat.
Pour in 1 ladle of Batter, cook until set.
Flip and continue cooking until golden.
Repeat with the rest of Batter, makes 10 Peanut Butter Banana Pfannkuchen.
(Tip: keep cooked Pfannkuchen warm in the oven on lowest temperature until ready to serve.)

Apple Fritters
Ingredients:
3 Cosmic Crisp Apples (3-1/2 cups/diced)
1 tbsp fresh Lemon Juice
1-1/2 cups Flour
4 tbs Sugar
1-1/2 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Baking Powder
1/2 tsp Salt
2 Eggs, room temp

1/3 cup Whole Milk
2 tbsp Apple Sauce
Oil for frying
Glaze
Ingredients:
1 cup Powdered Sugar
1 tsp Vanilla
2-4 tsp Milk
Pell, core & dice Apples add Lemon Juice stir and set aside.
Combine Flour, Sugar, Cinnamon, Nutmeg, Baking Powder & Salt.
Whisk well, set aside.
Combine Eggs, Vanilla, Milk & Apple Sauce, whisk well.
Incorporate dry Ingredients.
Add diced Apples, don't overmix.
Place Paper Towel on Wire Rack.
In medium Pan with 1-1/2 -2" deep Oil heat to 375 degrees.
Or until bubbles show when you dip the wooden spoon handle inside.
Drop 3 large spoon full of Batter in hot Oil.
Cook until golden, approx. 2-3 Minutes.
Flip Apple Fritters, continue cooking until golden and cooked through. (approx. 2-3 Minutes)
Remove Fritters and cool on prepared Wire Rack.
Repeat with rest of Batter, makes 12 Fritters.
Sift Powdered Sugar, add Vanilla and Milk (enough until liked thickness) whisk well until smooth.
Drizzle Glaze over cooled Apple Fritters, let set.

It is so easy to make delicious Turmeric Rice at home, a wonderful side dish to enhance a Dinner.
Turmeric Rice
Ingredients:
1-3/4 cups Rice
1 sm White Onion, finely chopped
1 large Garlic Clove, minced
1-1/2 tsp Turmeric
1/2 tsp Salt
1/4 tsp Black Pepper
3-1/2 cups Chicken Broth
1/2 tbsp Parsley, chopped
2 tbsp Coconut Oil
Wash and dry Rice.
On med/high temp, heat the Coconut Oil.
Sauté Onions until soft.
Add Garlic and stir.
Incorporate Turmeric, Salt & Pepper, sauté shortly.
Add Rice stir and cook 5-6 Minutes on high heat until lightly toasted.
Add Chicken Broth, stir and bring to a boil.
Cover, lower heat and simmer 15-20 Minutes or until liquid is absorbed.
Remove from heat, rest for 5 Minutes.
Fluff the Turmeric Rice with a fork and sprinkle with the Parsley.

Kaiserschmarrn Ingredients:
1 cup Flour
3 Eggs
3/4 cup Whole Milk
4 tbsp Sugar, divided
1 tsp Vanilla
Pinch of Salt
1/4 cup Raisins
2-1/2 tbsp Rum
3 tbsp Butter, divided
Powdered Sugar
Soak Raisins in Rum for 10 Minutes drain & dry, set aside.
Separate Eggs.
Cream together Egg Yolks, Vanilla, Salt & 2 tbsp Sugar.
Incorporate alternately Flour & Milk, mix well, set aside.
In separate bowl beat Egg Whites until stiff.
Fold Egg Whites (in batches) into Flour Mixtures, do not over mix.
Melt 2 tbsp of Butter in 12" Skillet on med Heat.
Pour in Batter and cook for 3 Minutes.
Sprinkle with Raisins and continue cooking until bottom is golden, approx. 3 more Minutes.
Keep checking, when golden cut in quarters and flip.
Continue cooking until golden, then cut in bite sized pieces.
Add rest of Butter and sprinkle with remaining Sugar.
Stir and cook a few more Minutes.
Dust with Powdered Sugar before serving.

Ingredients:
4 Apples (Koru)
1-1/2 cups Flour

1 tsp Baking Powder
2 tbsp Vanilla Pudding Mix
1 tsp Cinnamon
1/2 cup Butter, softened
1 cup Sugar
2 Eggs
1 tsp Vanilla
2 tbsp Vanilla Yogurt
Peel and core Apples.
Dice 2-1/2 Apples.
Cut 12 Wedges out of 1-1/2 Apples, cut 2 shallow slices in back of each Wedge.
TIP: keep Apples in Lemon Water until needed to prevent oxidation.
Preheat Oven 350° F
Line 9" Springform with Parchment Paper, brush with Butter.
Whisk together Flour, Salt, Baking Powder, Pudding Mix & Cinnamon, set aside.
Cream together Butter & Sugar.
Add one Egg at a time, Vanilla & Yogurt.
Incorporate Flour in batches.
Mix in diced Apples.
Fill Springform evenly with Batter, top (in a circle) with Apple Wedges, slices up.

Ingredients:
3 Cayenne Peppers
16 Pequin Peppers
1/2 White Onion
3 Garlic Cloves
2 Tomatoes
Salt
Black Pepper
1-1/2 tbsp EVO Oil
1/2 - 3/4 cup Water
Remove stems from Cayenne & Pequin Peppers.
Cut Onion in quarters.
Cut Tomatoes in half.
Heat 1 tbsp of Oil in med skillet on high temp.
Saute Garlic, Cayenne & Pequin Peppers until they take on color, remove & set aside.
Saute Onion, remove and set aside.
Add rest of Oil and saute Tomatoes.
Place Tomatoes, Onions, Peppers & Garlic in Blender.
Season with a pinch of Salt & Pepper, blend.
Add a little Water at a time, continue blending until thickness of your liking is acquired.
Add more Salt or Pepper if needed.

Cover a small spoon full of Dough with Corn Flakes, press lightly.

If you need a new idea for Breakfast, try these scrumptious Breakfast Sandwiches. You can use your favorite Bread or Croissants and serve them with hot sauces if you like a little spice.
Breakfast Sandwiches
Ingredients:
4 Wheat Bread Slices (or your favorite bread)
4 Eggs
4 oz Ham Steak
3 Sweet Peppers
1/2 sm White Onion
Butter
2 oz Mozzarella Cheese, shredded
1 Avocado
1 tbsp Parsley
Salt
Pepper
Toast Bread and cool.
Dice Ham Steak.
Chop Sweet Peppers, Onion & Parsley.
Slice Avocado, set aside.
Crack Eggs and season with Pinch of Salt & Pepper, beat until fluffy.
In medium Skillet on med/high heat melt 1/2 tbsp Butter.
Sauté Ham until warm.
Clear the middle of Skillet and add 1 tsp Butter, Sweet Peppers & Onions.
Season with Pepper. Stir and combine, cook until Onions n Peppers are tender.
Pour Egg Mixture over everything, cook & stir until almost done.
Over low heat incorporate Cheese, mix in Parsley and remove from heat.
Lightly butter each Slice of Bread.
Divide scrambled Eggs on 2 Slices.
Place Avocado over, top with other Bread Slices.

Try this light & delectable Almond Crescent Cookies Recipe, they melt in your mouth, a wonderful homemade dessert.
Almond Crescent Cookies
Ingredients:
1 cup Butter (softened)
1/3 cup Sugar
1 pkg Vanilla Sugar
1/4 tsp Salt
1-1/2 cups Flour (sifted)
2/3 cup Almonds (ground)
3/4 cup Powdered Sugar (sifted)
1 tsp Cinnamon
Line Baking Sheet with Parchment Paper.
Combine Powdered Sugar and Cinnamon, set aside.
Cream together Butter and Sugar.
Scrape down bowl and add Vanilla Sugar, Salt, Flour and Almonds. Mix until dough comes together. Scrape down bowl and form a ball.
Cover dough with plastic and chill for 1 hour.
Preheat Oven 350° F
Remove plastic and use 1 tbsp of dough, roll & form between your hands into a crescent shape, repeat and line Baking Sheet.
Bake 20 Minutes or until set.
Place cookies on wire rack.
Roll slightly warm Almond Crescent Cookies in Powdered Sugar Mix.

Homemade Buñuelos Jarochos (Donuts) Recipe
Looking for a new dessert, try homemade Buñuelos Jarochos (Donuts). So delicious served with homemade Sugar Cane Syrup.
Buñuelos Jarochos
Ingredients:
600 gr Flour, sifted
1 cup Milk, lukewarm
1/2 cup (divided) Water, lukewarm
150 gr cooked/mashed Potato
Good Pinch of Salt
1 Egg
4 tbsp Sugar
2 tbsp Butter, melted
1-1/2 tsp Yeast
30 oz Oil for frying
Topping:
3 tbsp Sugar
1 tsp Cinnamon
Whisk together Sugar, Yeast & 1/4 cup of Water, rest until bubbles form.
Add Potato, Egg, Vanilla & Butter, whisk well.
Add Flour, Salt & Milk use Dough Hooks and mix. Add rest of Water and continue mixing until everything comes together and Dough is smooth, elastic and not to sticky.
Could take 15 - 20 Minutes with a hand mixer.
Coat a large bowl with Oil, place Dough inside and cover with Kitchen Towel.
Rest for 1-1/2 hours in a warm place.
Combine Sugar & Cinnamon, whisk well and set aside for Topping.
Heat Oil in a med sized pot. (Submerge handle of wooden spoon, if bubbles form Oil is ready)
Coat your Hands lightly with cold Oil.
Pinch off a Golf Ball sized piece of Dough.
Stretch out the Dough & push a hole in the center forming a circle.
Place carefully in Oil, put wooden spoon handle in middle of Dough and spin in a circle until desired shape.
Fry one side, then flip until golden on both sides.
(about 1 minute on each side)
Remove, letting the extra Oil drip off.
Place on Paper Towel.
Repeat with rest of Dough.
Before serving sprinkle with Cinnamon Sugar.

Cut Cucumbers in half moon slices.
Cut Red Onion in thin slices.
Chiffonade the Basil Leaves.
Mix together Yogurt, Lime Juice, Sugar, Salt, Pepper & Lime Zest, whisk well.
Combine Cucumbers, Onion & Basil.
Integrate Yogurt Mixture, sprinkle with Pepper.

Banana Walnut Bread
Ingredients:
2 cups Flour
1/2 tsp Salt
1 tsp Baking Soda
1/2 cup Butter, softened
3/4 cup (plus extra to top) Brown Sugar
2 Eggs
4 ripe Bananas, separated
1 cup Walnuts, chopped
8 Walnut Halves
Line Loaf Pan with Parchment Paper and coat with Butter.
Preheat Oven 350° F
Combine chopped Walnuts with a little Four, set aside.
Peel and mash 3 Bananas.
Peel and cut 1 Banana lengthwise, set aside.
Sift together Flour, Salt & Baking Soda, set aside.
Cream together Butter & Brown Sugar.
Add one Egg at a time, plus mashed Bananas.
Incorporate Flour Mixture in batches.
Mix in chopped Walnuts.
Fill prepared Loaf Pan and top with halved Banana & Walnut Halves (pushing down softly).
Sprinkle lightly with Brown Sugar.
Bake 60-65 Minutes or until tester comes out clean.
Rest 5 Minutes in Pan, remove and cool completely on Wire Rack.

Delectable Mini Margherita Pizzas are great for Brunch, Parties or Appetizers. They make a delicious Lunch or Dinner with a tossed Salad on the side.
Mini Margherita Pizzas
Ingredients:
4 Sourdough English Muffins
8 fresh thick Mozzarella Slices
3-4 Roma Tomatoes (16 Slices)
8 oz Tomato Sauce
24 sm Basil Leaves
(Or 10 lrg. Leaves chiffonaded)
1 large Garlic Clove, cut in half
Black Pepper
Line Baking Sheet with Parchment Paper.
Preheat Oven 450° F.
Cut Muffins in half, lightly toast.
Rub each Slice of bread with Garlic.
Top with a large Spoon full of Tomato Sauce, 1 Mozzarella Slice, 2 Tomato Slices and season with Pepper.
Place all Mini Pizzas on prepared Baking Sheet.
Bake until Cheese is melted.
Top each Mini Margherita Pizza with 3 small Basil Leaves (or sprinkle with chiffonade Basil)

Easy Coconut Rice Recipe
This is an easy Recipe for Coconut Rice. Great side Dish for Chicken Tikka Masala, Kebabs or Vegetable Skewers just to name a few.
Coconut Rice
Ingredients:
1-3/4 cups Rice (your choice of Rice)
1 cup Coconut Milk
2-1/2 cup Water
1 tsp Salt
2 tsp Sugar
1 tbsp Coconut Oil
6 Basil Leaves
Rinse, drain & dry the Rice.
On high heat melt Coconut Oil.
Add Rice and cook 4-5 Minutes until lightly toasted.
Add Coconut Milk, Water, Salt and Sugar, combine well.
Bring to a boil, cover and lower the heat.
Simmer 15 Minutes or until liquid is absorbed, remove from heat.
Cut Basil Leaves on the bias.
Use a fork to fluff the Rice, sprinkle with Basil.
