Glazed Donuts
Ingredients:
Donut:
1 cup Milk (warm)
1 Egg
2 tbsp Sugar
2 tsp Instant Yeast
2-3/4 cups Flour (sifted)
1/2 tsp Salt
1/4 tsp Nutmeg
2 tbsp Butter (melted)
Vegetable Oil
Glaze:
1/4 cup Butter (melted)
1 tsp Vanilla
3 tbsp Milk
Pinch of Salt
2 cups Powdered Sugar (sifted)
Combine Milk, Egg, Sugar and Yeast, whisk and let bloom.
Add Flour, Salt, Nutmeg and Butter.
Use Dough Hooks and knead until Dough comes clean off the bowl, form a ball.
Oil a bowl, grease dough ball with oil from bowl.
Cover with a towel and proof for 2 hours in a warm place.
Punch down dough, roll and stretch. Cut equal pieces and form balls. Pat dough into a disc and cut hole in center. Use doughnut holes and make a donut.
Place donuts on greased Baking Sheet and cover with towel, proof for 10 Minutes.
Heat Vegetable Oil in deep skillet (check with wooden spoon, ready when bubbles around it)
Slide Donut in hot Oil, fry on both sides until golden. Remove and place on wire rack.
Make Glaze, combine Butter, Vanilla, Milk and pinch of Salt. Incorporate Powdered Sugar.
Dip Donuts halfway in the Glaze and rest on wire rack until set.

Slice Roll in half and toast it.

Melt Butter in Skillet and sauté Hot Dogs on both sides.
Place Ham and Cheese on top of Hot Dogs, cook until Cheese starts melting.
Top bottom slice of Roll with warm Refried Beans.
Layer Red Onion & Tomato Slices on top.
Place Hot Dog, Ham & Cheese on top.
Top with Cabbage & Egg Slices.
Drizzle with Spicy Sauce.
Top with other slice of Roll.

Baked Vegetable & Sausage Skewers
Ingredients:
6 Yellow Potatoes
1 Zucchini
2 Bell Peppers
1 lrg. Red Onion
1 Jalapeno Smoked Sausage
1 tbsp Italian Seasoning
1 tsp Paprika
2 tbsp EVO Oil
6 - 11" Skewers
Large Banking Sheet
Cut Potatoes in half.
Zucchini in 18 Pieces.
Bell Peppers in 18 Pieces.
Onion in large Petals.
Sausage in 24 Pieces.
Combine all cut Ingredients, season with Italian Seasoning & Paprika, coat with Oil.
Preheat Oven 400° F.
Line Baking Sheet with Parchment Paper.
Skewer Pieces by alternating between Potato, Sausage, Zucchini, Bell Pepper, Onion, Zucchini, Sausage, Bell Pepper, Onion, Sausage, Zucchini, Bell Pepper, Sausage, Onion & Potato for one Skewer.
Repeat and place Skewers equally apart on Baking Sheet.
Bake 20 Minutes.
Turn over Skewers and continue baking for 15-20 Minutes.

Ingredients:
2 ripe Plantains
1 tbsp Butter

Mayonnaise
Dry Cheese, crumbled
Cilantro or Parsley, chopped
Cut off ends of Plantains, slice in half lengthwise and peel.
Melt Butter in med sized Skillet on med/high heat.
Sprinkle with 1 tsp of Sugar and Cinnamon.
Top with halved Plantains, sprinkle with rest of Sugar and Cinnamon.
Sauté until golden, turn over & continue sautéing until golden.
To serve, top Plantains with Mayo and sprinkle with Dry Cheese & Cilantro or Parsley.

Ingredients:
1-3/4 cups Flour
1/2 cup Cocoa Powder

Combine all wet Ingredients, whisk well.
Pour wet Ingredients into the dry Ingredients and combine with wooden Spoon, do not over mix.

Bake 6 Minutes, reduce heat to 350° F and continue baking 14-15 Minutes.

Preheat Oven 350° F
Use a little of the melted Butter and grease the Casserole Dish, set aside.
Combine crushed Crackers with the rest of Butter, mix well and set aside
Combine Cream Cheese, Sour Cream, Cottage Cheese & Cream of Chicken Soup with a wooden Spoon.
Add Onion, Garlic & 3 tbsp of Parsley, incorporate Chicken.
Fill Casserole Dish with Mixture and spread out.
Top evenly with Ritz Cracker Mixture.
Bake uncovered 40-45 Minutes, until golden & bubbles.
(Tip: if it get's golden to fast, cover with foil)

Quesabirria Tacos
Ingredients:
3,5 lb Tri Tip Roast
2 Onions (chopped)
3 Garlic Cloves (smashed)
3 tbsp Chile Sauce
2 Bay Leaves
24 oz Monterey Jack Cheese (shredded)
Salt
2 tbsp Oil
Water
24 - 6" Yellow Corn Tortillas
Cut the Roast in large Pieces season with Salt.
Set Instant Pot to Sauté, add the Oil, heat and brown the Meat Pieces on all sides.
Add one Onion, Garlic, Chile Sauce and stir. Pour in enough Water to almost cover the Meat, add Bay Leaves and stir.
Close & secure the Lid.
Pressure Cook for 50 Minutes, then Quick Release after 10 Minutes.
Remove the Meat and use 2 Forks to shred.
Pour some of the Birria Consome in a Bowl and keep the rest warm.
Dip a Tortilla in the Consome, place on a hot Griddle.
Top with Cheese and shredded Meat on one half.
Fold the Taco over when Cheese is melted and press down. Fry Taco until both sides are crispy, repeat.
Place Tacos on a Baking Sheet, keep Quesabirrias warm in a 200°F Oven.
Chop Cilantro and Onion.
Fill Taco with Cilantro and Onions, serve with Birria Consome as Dipping Sauce.

Jelly Donuts
Ingredients:

1 pkg. Vanilla Sugar
1-1/2 tsp Dry Instant Yeast
2 Egg Yolks
2 tbsp Butter (melted)
2/3 cups Milk (warm)
Oil for frying (enough that the Donut can float)
Jelly (any flavor you like)
Combine Flour, Salt, Sugar, Vanilla Sugar and Yeast with Spoon.
Add Egg Yolks and Butter, use Mixer with Dough Hooks.
Incorporate Milk and mix until Dough comes together.
Coat the Dough with Oil, place into clean bowl and cover with Towel.
Let the Dough rise to double the size.
Cut Dough in equal sized pieces. (6) Shape each piece into a ball and place on oiled Baking Sheet.
Cover with Towel and let the Dough Balls rest for 30 Minutes.
Heat Oil until bubbles appear when wooden Spoon is placed inside.
Place Donut in Oil and cover with lid. Fry for 3 Minutes, remove lid and flip Donuts over and fry 3 more Minutes.
Remove when done and place on Paper Towel.
Fill squeeze bottle or piping bag with Jelly of your choice.
While still warm insert Jelly (as much as you like)
Dust top with Powdered Sugar.

Set Instant Pot to high Sauté, heat 2 tbsp of Oil.
Brown Pork Pieces in batches, adding more Oil when needed, set Meat aside
Sauté Onions a couple Minutes, add Garlic.
Sauté and scrape browned bits of bottom.
Return Pork and add 16 oz of Chicken Broth, stir & secure Lid
Set Instant Pot to 45 Minutes High Pressure Cook
Open after 15 Minutes natural release.
Set Instant Pot to low Sauté.
Add Mole Sauce, stir and simmer.
(Optional, if you like it sweeter add Chocolate.)
Integrate rest of Chicken Broth, warm through and serve.

Remove lid, reduce heat and simmer until Apples are soft and Liquid is reduced, stirring frequently.

4 Yellow Potatoes
1 sm Red Onion
1/2 tsp Salt
1/4 tsp Pepper
1 tsp Italian Seasoning
1 Egg
2 tbsp Flour
2 tbsp Coconut Oil
Wash and dry Potatoes.
Shred Potatoes and Onion.
Squeeze out the Liquid.
Add Salt, Pepper, Italian Seasoning, Egg and Flour.
Mix well and divide in 4 Portions.
Heat Oil (med/high heat) in large Skillet.
Cook each Potato Portion (shaped in Pancakes) until cooked through and golden on both sides.

Crispy Carnitas Recipe (Instant Pot)
This is an easy way to make homemade Crispy Carnitas with the help of the Instant Pot/Pressure Cooker. Crispy Carnitas are great as Tacos or with Mexican Rice and Refried Beans as a meal.
Crispy Carnitas (Instant Pot)
Ingredients:
3 lbs Pork Shoulder (cut in 2" pieces)
2 tbsp EVO Oil
1/3 cup fresh Lime Juice
1 cup fresh Orange Juice
1 cup dark Mex Beer
6 Garlic Cloves (chopped)
1 Jalapeno (chopped)
1 tsp ground Cumin
1 tsp Onion Powder
1 tsp Salt
1 tsp Oregano
1 tsp Pepper
Set Instant Pot to Sauté, add EVO Oil. When hot sear each piece, when brown on all sides place on Baking Sheet.
Pour Lime Juice in Pot and scrape bottom to remove the brown bits. Return the seared Meat and add Orange Juice, Beer, Garlic, Jalapeno, Cumin, Onion Powder, Salt, Oregano and Pepper.
Combine well, close and secure Lid. Set Instant Pot to Pressure Cook for 40 Minutes. Once cooking is completed use a natural release (15 Min) to depressurize.
Open Lid and remove Meat using a Spider, place on a Baking Sheet. Shred the Pork with 2 forks, spreading into a even layer. Cover shredded Pork with 5 tbsp of cooking liquid and broil 2-3 Minutes, until crispy.

Tuna Tostadas Recipe
This is an option to use Tuna in a different way, try the Tuna Tostadas. Easy and light Lunch or Dinner.
Tuna Tostadas
Ingredients:
2 cans (in Water) Tuna, drained
1/2 Red Onion, diced
1 Jalapeño, diced
1/2 Bell Pepper, diced (yellow or red)
1/4 Bunch Cilantro, chopped
2 cups Cabbage, finely chopped
1 Lime, juiced
1/2 cup Corn
1 cup Pickled Red Onions
Salt
Pepper
12 Corn Tostadas
Combine Tuna, Red Onions, Corn, Jalapeño, Cilantro.
Season with a Pinch of Salt and Pepper.
Add Lime Juice and mix gently.
Place a bed of Cabbage on each Tostada.
Spoon a good amount of Tuna Mixture on top and crown it with Pickled Red Onions.
