Easy Coconut Rice Recipe

This is an easy Recipe for Coconut Rice. Great side Dish for Chicken Tikka Masala, Kebabs or Vegetable Skewers just to name a few.

Coconut Rice
Ingredients:
1-3/4 cups Rice (your choice of Rice)
1 cup Coconut Milk
2-1/2 cup Water
1 tsp Salt
2 tsp Sugar
1 tbsp Coconut Oil
6 Basil Leaves

Rinse, drain & dry the Rice.
On high heat melt Coconut Oil.
Add Rice and cook 4-5 Minutes until lightly toasted.
Add Coconut Milk, Water, Salt and Sugar, combine well.
Bring to a boil, cover and lower the heat.
Simmer 15 Minutes or until liquid is absorbed, remove from heat.
Cut Basil Leaves on the bias.
Use a fork to fluff the Rice, sprinkle with Basil.
