Thai Peanut Chicken Ingredients: 1-1/2 lb Chicken Breast, cubed 1 red Bell Pepper, sliced 1 white Onion, sliced Pepper 1 tbsp Garlic, minced 1 tbsp Ginger, grated 2 tbsp Oil Peanut Sauce Ingredients: 1 cup Smooth Peanut Butter 8 oz Coconut Milk 2 tbsp Brown Sugar 1/4 tsp Cayenne 1/2 tsp Cumin 1/4 tsp Chili Peppers, crushed Juice of 1 Lime 3 tbsp Soy Sauce Roasted Peanuts & chopped Cilantro for garnish. Combine all the Peanut Sauce Ingredients and set aside. Heat the Vegetable Oil in large Skillet add the Chicken cubes, season with Pepper and cook until done, remove. In same Skillet sauté the Bell Pepper and Onion. Add the Garlic & Ginger, combine. Return the Chicken to Skillet and add the Peanut Sauce. Simmer for 5 - 7 Minutes. (Tip: if it is to thick for you add some Milk to thin it out) Sprinkle with Peanuts & Cilantro, serve. Enjoy!

Peanut Butter Cookies topped with Funfetti Morsels an idea I had, a different Recipe to try out. Soft Peanut Butter Cookies with little sweetness on top, great Dessert. Peanut Butter Cookies topped with Funfetti Morsels Ingredients: 1-1/2 cup Flour 1/4 tsp Salt 1 tsp Baking Soda 1/2 cup Butter, soft 1/3 cup Sugar 1/3 cup Brown Sugar 1 Egg 1 tsp Vanilla 3/4 cup Creamy Peanut Butter Coating: 40 gr Sugar 1 tsp Ground Nutmeg 1/2 tsp Ground Cloves Topping: Funfetti Morsels Combine Flour, Salt & Baking Soda. Cream together Butter, Sugar & Brown Sugar. Add Egg & Vanilla. Mix in Creamy Peanut Butter. Incorporate Flour Mixture, scrape down sides of bowl. Cover with Plastic Wrap. Refrigerate 1-2 Hours. Preheat Oven 375°F Line Cookie Sheet with Parchment Paper. To make Coating, combine Sugar, Nutmeg and Cloves, whisk well. Shape Dough in 10-11 gr. small Balls. Coat each Dough Ball in Sugar Mixture, place on Cookie Sheet. Refrigerate 20 Minutes. Bake 9-11 Minutes. Immediately top each Cookie with 3 Funfetti Morsels. Cool completely on Wire Rack. Enjoy!

Fake Guacamole is mainly made with Squash/Zucchini/Tomatillos...super easy and delicious, could also be named Green Sauce. Fake Guacamole (Green Sauce) Ingredients: 1 Mexican Squash (2 if you like it creamier) or Zucchini 4 Tomatillos 1/2 bundle Cilantro 1 Jalapeño (Serrano if you like it spicier) 1 Garlic Clove 1/4 White Onion 4 tbsp Oil 2 pinches Salt Cut ends of Squash and rub against it, remove bitterness with paper towel. Cut in 3 pieces and place in medium size pot. Remove husks from Tomatillos, wash and place in the same pot. Cover with hot Water and simmer until Squash is tender & Tomatillos change color. Remove, set aside to cool. Cut Onion and use one quarter, cut Jalapeño in half, peel Garlic Clove. Pour Oil in Skillet and heat on high temp. Add Onion, Jalapeño and Garlic, fry until they take on color. Remove, set aside to cool. Pour remaining Oil in small bowl, set aside to cool. Use Blender and add Squash, Tomatillos with Juice, Onion, Jalapeño, Garlic, Cilantro, Oil and Salt (as needed), blend until smooth. Enjoy!

This is our way of making easy individual Apple Strudels. You can serve them warm or at room temperature. Plain, dusted with Powdered Sugar or served with Vanilla Ice Cream. Apple Strudels Ingredients: Dough: 3 cups Flour 1 tbsp melted Butter 1 Egg Pinch of Salt Dash of Vinegar 1 tbsp Oil 2/3 cup warm Water Filling: 4 lrg Apples (peeled, cored & sliced) 1/4 cup Raisins 1 tsp Cinnamon 1/4 cup Sugar Topping: 1 cup Heavy Whipping Cream 1/2 tsp Cinnamon 2 tsp Sugar 2 tbsp Butter 9 × 13" Dish Combine all Dough Ingredients, knead until smooth. Place Dough in bowl, cover with a towel, set aside. Combine all Filling Ingredients, set aside. Coat the dish with 1 tbsp Butter. Melt 1 tbsp of Butter in small bowl, set aside. Preheat Oven 350° F Roll Dough in a log and divide in 8 equal portions. Roll out each portion in a square ( about 7 x 7") Brush each square with melted Butter. Place equal amount of Apple Mixture in the middle lengthwise. Fold the Dough over Apples and place in buttered Dish, seam up. Combine Topping Ingredients, whisk well. Pour around the Apple Strudels. Bake 45 - 50 Minutes, or until golden. Enjoy!

You can make those Koftas on an Indoor Grill or a BBQ to get the amazing grill marks. We serve the Skewers with Mint Yogurt Dip, Turmeric Rice and a Salad. Koftas Ingredients: 32 oz Italian Sausage (or your choice of minced Meat) 1 White Onion, chopped 4 tbsp Mint, chopped 4 Garlic Cloves, minced 2 tsp Garam Masala 1 tsp Cinnamon 1/2 tsp Pepper 1/4 tsp Salt 6 Metal Skewers Indoor Grill or BBQ, optional Mint Yogurt Dip Ingredients: 1 cup Greek Yogurt 1/3 cup Mint, chopped 1 Garlic Clove, minced 1 tbsp Lime Juice Pinch of Salt Pinch of Pepper Combine all Ingredients, mix well, set aside. Combine all Koftas Ingredients and mix with your hand. Divide Meat Mixture in 6 (or 8 smaller) equal portions. Shape and place Mixture around each Skewer tightly. Cover the Skewers with plastic wrap and refrigerate for 2 hours. (helps to keep the Meat together by grilling) Heat and oil the Indoor Grill. Remove the plastic wrap and place Skewers on the Grill. After grilling on one side rotate the Koftas. Grill until cooked through or to your liking. (Grill time depends on thickness of Meat) Remove from Grill and serve with Mint Yogurt Dip. Enjoy!

Glazed Lemon Cake Ingredients: 1-1/2 cups Flour, sifted 3/4 cup Sugar 1/4 tsp Salt 1-1/2 tsp Baking Powder 1 tbsp Sour Cream 8 oz Cream Cheese, room temp 1/2 cup Butter, room temp 3 Eggs Zest of 1 Lemon 2-1/2 tsp Lemon Juice Lemon Glaze: 1 cup Powdered Sugar, sifted 2-1/2 tbsp Lemon Juice Preheat Oven 350° F Line 9" Springform with Parchment Paper Combine Flour, Salt and Baking Powder, set aside. Cream together Cream Cheese and Butter. Add Sugar and one Egg at a time. Scrape down sides of the bowl. Add Sour Cream, Lemon Zest and Lemon Juice, mix well. Incorporate Flour Mixture in two batches, combine well. Fill Springform with batter and bake 60 Minutes. Until golden and toothpick comes out clean. Rest on wire rack for 5 Minutes, then remove Springform and cool completely. Gradually combine Lemon Juice and Powdered Sugar, until thickness to your liking. Pour Glaze over Cake, cover top and pour down the side. Let Glaze set and serve. Enjoy!

Super delicious Peanut Butter Cookies, this is a great Recipe for a Dessert. Peanut Butter Cookies Ingredients: 1-1/3 cup Flour 1/4 tsp Salt 1/2 tsp Baking Soda 1/2 tsp Baking Powder 1/2 tsp Cinnamon 8 tbsp Butter (softened) 1/2 cup Sugar 1/2 cup Brown Sugar (packed) 1 Egg 1 tsp Vanilla 3/4 cup Peanut Butter (creamy) 1/2 cup Peanuts (roasted) Preheat Oven 350° F Line Baking Sheet with Parchment Paper Combine Flour, Salt, Baking Soda, Baking Powder and Cinnamon, set aside. Cream together Butter, Sugar and Brown Sugar, add Egg, Vanilla and Peanut Butter. Add Flour Mixture in two batches, incorporate Peanuts. Use one scoop (approx. 30 - 31 gr.) of Cookie Dough and shape into a ball. Place 12 Cookie balls about 2 inches apart on Baking Sheet. Flatten and criss cross the Dough with a fork. Bake 9 - 10 Minutes, Cookie will be slightly under baked, rest for 6 Minutes on Baking Sheet. Remove and cool the Peanut Butter Cookies completely on wire rack. Repeat with the rest of Dough, makes 28 Cookies. Enjoy!

Christmas Cookies Ingredients: 325 gr Flour 180 gr Sugar 250 gr Butter 9 gr Vanilla Sugar 1/2 tsp Salt Glaze: 3-4 tbsp Powdered Sugar 1 Lemon, juiced Red Food Coloring Cocoa Powder Decoration: Red Sanding Sugar Green Sanding Sugar White Sugar Pearls Chocolate Candies Cookie Cutters (Christmas Tree, Stocking, Santa Hat, Snowflake) Line Cookie Sheet with Baking Mat Cream together Butter and Sugar, add Egg, Vanilla Sugar & Salt. Add Flour and knead until Dough comes together. Wrap in Plastic and refrigerate 1 Hour. Preheat Oven 350° F Roll out half of Dough on floured Surface, cut out Shapes with Cookie Cutters. Place on Cookie Sheet and bake 10-12 Minutes. Transfer to Wire Rack and cool completely. Repeat with the Rest of Dough. Mix enough Powdered Sugar with Lemon Juice until the thickness of Glaze to your liking is achieved. Divide the Glaze (in 3 small bowls) and add 2-3 drops of Red Food Coloring to one, stir. Add 1/4 tsp of Cocoa to another and stir. Use the White, Red and Brown Glaze to decorate the Christmas Cookies topping with the Sanding Sugars, Sugar Pearl's and Chocolate Candies to your liking. If you have fresh Peaches and you need a deliciously easy Recipe, bake Glazed Peach Hand Pies, a great homemade Dessert. Glazed Peach Hand Pies Ingredients: makes 12 Hand Pies 2 Pie Crust (store bought) Filling: 5 Peaches (peeled & diced small) 1/2 cup Sugar 2 tbsp Cornstarch 1/4 tsp Nutmeg Pinch of Salt 1 tbsp Lemon Juice Zest of 1 Lemon 1/4 tsp Vanilla Egg Mixture: 1 Egg 1 tbsp Milk Icing: 3/4 cup Powdered Sugar (sifted) 1 tbsp Lemon Juice Combine Peaches with sugar, mix well cover with plastic wrap and set aside 1 hour. Strain Peaches and pour the juice in a saucepan add Cornstarch, Nutmeg and pinch of Salt. Cook over med heat, continuously stirring until it thickens. Remove from heat and add Peaches, Vanilla, Lemon Juice and Zest. Combine and set aside to cool. Whisk egg and Milk together, set aside. Preheat Oven 350°F and line Baking Sheet with Parchment Paper. Cut twelve 4"-5" rounds out of Pie Crust. Brush Egg Mixture over a round and place a heaping of Peach Filling in the middle. Pull Pastry over Filling, shape into a half moon and seal the Hand Pie. Press Edges together with the tines of a fork. Cut 2 slits in the top to vent. Place Hand Pies on Baking Sheet and refrigerate 30 Minutes. Brush Egg Mixture over Pies and bake 25-30 Minutes, until golden. Completely cool on wire rack. Mix Lemon Juice and enough Powdered Sugar until Icing is smooth and thickness to your liking. Toss Chocolate Chips with a little Flour, set aside. Cream Butter & Sugar together. Add one Egg at a time & Vanilla. Incorporate Flour Mixture. Mix in Chocolate Chips. Cover with Plastic Wrap, refrigerate for 30 Minutes. Line Cookie Sheet with Parchment Paper. Preheat Oven 350°F. Cover each Tablespoon full of Dough with Corn Flakes. Press lightly. Terrace Cookies Ingredients: 600 g Flour 500 g Butter 350 g Sugar 2 Eggs 2 pkg Vanilla Sugar 8 oz Berry Jam (or your choice of flavor) Powdered Sugar (for less Cookies just cut each Ingredient in half) Cream Butter and Sugar together, add Eggs and Vanilla Sugar. Incorporate Flour until the Dough comes together. Wrap Dough in Plastic and refrigerate 1 - 2 Hours. Preheat Oven 350° F Line Cookie Sheet with Baking Mat or Parchment Paper Use portion of Dough and roll out on floured surface. Cut out Star Shapes, half of them cut a small hole in the middle. Repeat with the rest of the Dough. Place on Cookie Sheet & bake 10-12 Minutes. Transfer to Wire Rack and cool completely. Place a little Jam on solid Cookie and top with the Cookie that has the hole. Dust all the Terrace Cookies with Powdered Sugar. Enjoy!

This Tuna Mushroom Noodle Casserole is a wonderful flavorful Dish served with a tossed Salad. Tuna Mushroom Noodle Casserole Ingredients: 1 Carrot (chopped) 1 Celery Rib (chopped) 1 small Onion (chopped) 8 oz Assorted Mushrooms (chopped) 3 tbsp Butter 12 oz Wide Egg Noodles (cooked) 10 oz can Tuna (drained) 10,5 oz can Condensed Cream of Mushroom Soup 1/2 cup Greek Yogurt 1/2 cup Milk 1 cup Peas Salt & Pepper 1 cup Monterey Jack Cheese (shredded & divided) 4 tbsp Bread Crumbs 1-1/2 tsp Parsley (dried) Grease Casserole Dish with 1 tbsp of Butter, set aside. Preheat Oven 400°F Combine Bread Crumbs and Parsley, set aside. Melt 1 tbsp Butter in large Skillet, sauté Carrot for 1 Minute. Add Celery and sauté another Minute. Add Onion and sauté one more Minute. Season with pinch of Salt and Pepper, stir. Add 1 tbsp Butter and Mushrooms, combine and sauté until tender, set aside. Cook Wide Egg Noodles according to pkg directions, drain and set aside. Combine Soup, Yogurt, Milk, Peas and Tuna, mix well. Add Mushroom Mixture and Pasta, combine. Incorporate 4 oz Cheese. Fill Casserole dish, top with rest of Cheese and sprinkle with Bread Crumb Mixture. Cover and bake for 40 Minutes or until bubbly & golden. Enjoy!

Combine Flour, Oatmeal, Cinnamon, Ginger, Salt & Baking Powder. Cream together Butter & Brown Sugar. Add Egg and Vanilla. Incorporate Flour Mixture. Fold in Apricots. Cover with Plastic Wrap and refrigerate 1 hour. Line Cookie Sheet with Parchment Paper. Preheat Oven 350° F. Shape Dough in 30-31gr. Balls. Place equally apart on Cookie Sheet. Spaghetti Sauce Ingredients: 1 lb Italian Sausages 8 oz Pork Chorizo 1 Onion (chopped) 3 Garlic Cloves (minced) 1 pkg Spaghetti Seasoning 1 tbsp Italian Seasoning 29 oz Tomato Sauce 14.5 oz Italian diced Tomatoes (Basil, Garlic, Oregano) 14.5 Italian stewed Tomatoes (Onion, Garlic, Celery, Bell Pepper) 1 Bay Leaf Salt Remove casing from Sausages and cut one end of the Pork Chorizo casing off. Preheat pot, place Sausages in pot and let sit a little bit than break up Sausages while browning. Clear middle of pot and squeeze in Pork Chorizo, sauté and combine. Clear middle of pot and add Onions, sauté and combine. Add Garlic and stir. Add Spaghetti Seasoning and Italian Seasoning, incorporate well. Add Tomato Sauce, stewed Tomatoes, diced Tomatoes, Bay Leaf and combine. Cover and simmer for 30-40 Minutes, stirring occasionally. Taste Sauce and Salt as needed, simmer until desired thickness. Dumpling Soup Ingredients: 130 gr Semolina 80 gr Butter, softened 2 Eggs, slightly beaten Pinch of Salt Pinch of Nutmeg 3 Green Onions, chopped 5 cups Broth (Chicken, Beef or Vegetable your choice) Use a Mixer and cream the Butter. Add half of beaten Egg and mix. Add half of Semolina and incorporate. Add the rest of beaten Eggs and Semolina, combine well. Season with a good Pinch of Salt and a Pinch of Nutmeg, mix. Scrape down sides of the bowl and refrigerate Mixture for 15 Minutes. Bring broth to a low boil. Use 2 tablespoons and dip in warm water, shape Quenelles and place on a plate, makes approx.16. Drop Dumplings in the broth and cook for 20 Minutes, simmering. Dumplings will grow in size. Sprinkle each portion of Soup with Green Onions. Enjoy!

Recipe Mix 1 Loaf Sweet French Bread Combine Mayonnaise, Sour Cream, Spinach, Green Onions, Water Chestnuts, Artichokes, Onion Soup Mix and Veg Recipe Mix & mix well. Cover with Plastic Wrap, refrigerate 1 hour. Cut bread in bite sized pieces. Remove plastic and mix well, ready to serve. Enjoy!

No Bake Pumpkin Cheesecake Ingredients Crust: 2-1/4 cups Gingersnap Cookie Crumbs 6-7 tbsp Butter, melted 4 tbsp Brown Sugar 1-1/2 tsp Cinnamon Filling: 1 cup Heavy Whipping Cream 16 oz Cream Cheese, softened 1 cup Pumpkin Puree 3/4 cup Powdered Sugar, sifted 1/4 cup Brown Sugar, packed 1 tsp Vanilla 1/2 tsp Cinnamon 1/4 tsp Salt 2 tsp Pumpkin Pie Spice 9" Springform Parchment Paper Line Springform with Parchment Paper, butter Form. Crust: Combine Crumbs, Brown Sugar, Cinnamon & Butter, mix well. Place Crumb Mixture in Springform and press down. Place in Freezer while making the Filling. Filling: Beat Heavy Whipping Cream, set aside in Refrigerator. Beat Cream Cheeses until smooth. Add Pumpkin Puree, Powdered Sugar, Brown Sugar, Vanilla, Cinnamon, Salt & Pumpkin Pie Spice, mix well. Fold in Whipped Cream. Spread Filling into Crust, smoothing the top. Cover with Plastic Wrap and refrigerate 12 up to 18 hours, for best result. When ready to serve, remove Plastic Wrap and carefully loosen the Cake from the Springform, using a knife, remove the rim. Decorate to your liking.
