Fried Tofu Sticks Tutorial Video
Ingredients:
300g Tofu
100g Grated Coconut
8 Lemongrass Sticks
5 tbsp Oil (for frying)
Ground Spices:
30g Shallots
15g Garlic
5g Galangal
5g Candlenut (or 2 pieces)
5g Chillis
1 Lime Leaf
20g Brown Sugar
Half tsp Turmeric Powder
Half tsp Ground Coriander
1 tsp Mushroom Stock
One & a half tsp Salt
2 tbsp Oil
Preparation Time: 30 minutes
Cooking Time: 30 minutes
Total Time: 1 hour
Method:
1. Mash the tofu with a fork.
2. Blend all the herbs & spices together.
3. Heat the blended ingredients with a little water.
4. Thoroughly mix the heated spices together with the tofu & coconut.
5. Divide the mixture into 8 pieces & form them onto the lemongrass sticks.
6. Cook them in a covered pan with a little oil, turning them occasionally.
The texture should be moist & soft with an amazing aromatic flavour.
Storage:
Best to be eaten straight away or once they've cooled down.
Serving Suggestions:
Makes 8 pieces. Can be serve with sambal matah, salad, or as a side dish or with a dip of your choice. This is a traditional Balinese dish, but there are many local variations.

4. Campur rata bumbu yang sudah dipanaskan dengan tahu & kelapa.
5. Bagi adonan menjadi 8 bagian & bentuk ke batang serai.
6. Masak dalam wajan yang diberi sedikit minyak, sesekali dibalik.
Teksturnya empuk selagi panas & lembut dengan rasa aromatik yang luar biasa.
Penyimpanan:
Paling enak dimakan langsung atau setelah dingin.
Saran Penyajian:
Menghasilkan 8 buah. Dapat disajikan dengan sambal matah, salad, atau sebagai lauk atau dengan saus pilihan Anda. Ini adalah hidangan tradisional Bali tetapi ada banyak variasi lokal.

Ingredients:
450g self raising flour
half teaspoon baking powder
1 teaspoon salt
30g sugar
235g water
2 tablespoons oil
flour for dusting
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Total Time: 2 hours
Method:
1. Mix all the dry ingredients together in a bowl.
2. Slowly add the water, little by little.
3. Add the oil half way through mixing the water.
4. Knead well, then cover & leave for around 1 hour.
5. Divide the dough into 12 equal sized pieces & rest for another 10 minutes.
6. Then roll each one out to be fairly thin.
7. Using a dry frying pan, heat them for a few minutes each side.
8. Then place them directly on the flame, to make them puff up & brown on each side.
Storage:
They'll keep in the fridge for a couple of days or you can freeze them for when you need them.
Serving Suggestions:
Makes 12 wraps, serve or fill them with curries, Mexican chilli, salads, hummus, mushrooms, chips, etc...

5. Bagi adonan menjadi 12 bagian berukuran sama & istirahatkan lagi selama 10 menit.
6. Lalu pipihkan masing-masing hingga cukup tipis.
7. Dengan menggunakan wajan kering, panaskan selama beberapa menit di setiap sisinya.
8. Lalu letakkan langsung di atas api, agar mengembang & berwarna coklat di setiap sisinya.
Penyimpanan:
Dapat disimpan di lemari es selama beberapa hari atau Anda dapat membekukannya saat Anda membutuhkannya.
Saran Penyajian:
Buat 12 bungkus, sajikan atau isi dengan kari, cabai Meksiko, salad, hummus, jamur, keripik, dll...

Method:
1. Grind the spices in a pestle & mortar, until they're well mixed.
2. Add to the mashed tofu & combine well.
3. Heat the oil in a pan or wok.
4. Add a spoonful of the tofu mixture at a time, keeping them separated.
5. Turn them over half way through cooking.
6. Strain them from the pan once they're golden brown.
7. Serve as a snack, side dish or main meal.
Storage:
Best to eat straight away, but will keep for a couple of days in the fridge once they've cooled down.
Serving Suggestions:
Serves around four or five people. Can be served as a main or side dish, it's also great with a dip or sauce.

Preparation Time: 30 minutes

Method:
1. Mix the cut vegetables in a large bowl.
2. Gently rub in the ground spices.
3. Then slowly mix in the flour in several stages.
4. Then gradually add the ice water until it's the correct consistency.
Adding more water makes the fritters softer.
5. Heat the oil in a large wok or frying pan.
6. Place spoonfuls of batter into the hot oil & cook for around 20 mins.
7. Turn them over occasionally until they're golden brown.
Storage:
Eat whilst still hot.
Serving Suggestions:

4. Kemudian tambahkan air es sedikit demi sedikit sampai kekentalannya pas.
Menambahkan lebih banyak air membuat gorengan lebih lembut.

Dressing;

1 tbs palm sugar

3 tbs tamarind water
4 tbs sweet soy sauce
1 tbs water
Garnish;
2 tbs roasted peanuts

2 handfuls diced cabbage & carrot
Preparation Time: 35 minutes
Cooking Time: 10 minutes

Method:
1. Hand grind the dressing ingredients, excluding the liquids & shallots.
2. Once well ground, add the tamarind & continue to mix.
3. Then add the sweet soy sauce (& water if required) & mix in well.
4. Then add the shallots.
5. Generously drizzle the dressing over the tofu.
6. Finally, add generous amounts of diced cabbage, carrot, spring onion & roasted peanuts.
Storage:
Eat straight away.

Dough;
500g (low protein) flour
250g icing sugar
250g ground roasted peanuts
half tsp salt
half tsp vanilla powder
250ml vegetable oil
Toping;
3 egg yolks
3 tbs oil
40g sesame seeds
Preparation Time: 1 hour
Cooking Time: 35 minutes
Total Time: 1 hour 35 minutes
Method:
1. Mix the dry ingredients first (flour, icing sugar, salt & vanilla) in a large mixing bowl.
2. Then add the ground peanuts & combine the ingredients well, adding the oil gradually.
3. Flatten out a handful of dough onto your work surface to around 4 or 5mm thick.
You can use some clear plastic to stop the dough from sticking to your roller.
4. Use a shape cutter to cut them into your preferred shape(s).
5. Place them onto your baking tray.
6. Use the egg wash to cover the top of each biscuit.
7. Then sprinkle a few sesame seeds (or sliced almonds) on top.
8. Bake in a preheated oven (150C) for 35 minutes.
Storage:
Makes 1.3kg. Keep in an air tight container or biscuit tin.

Metode:
1. Campur bahan kering terlebih dahulu (tepung, gula halus, garam & vanila) dalam mangkuk besar.
2. Kemudian tambahkan kacang tanah & campurkan bahan-bahan dengan baik, tambahkan minyak secara bertahap.
3. Ratakan segenggam adonan ke permukaan kerja Anda hingga setebal 4 atau 5 mm.
Kamu bisa menggunakan plastik bening agar adonan tidak menempel di rol.
4. Gunakan pemotong bentuk untuk memotongnya menjadi bentuk pilihan Anda.
5. Letakkan di atas loyang Anda.
6. Gunakan olesan telur untuk menutupi bagian atas setiap biskuit.
7. Lalu taburkan sedikit biji wijen (atau irisan almond) di atasnya.
8. Panggang dalam oven yang sudah dipanaskan (150C) selama 35 menit.
Penyimpanan:
Simpan dalam wadah kedap udara atau kaleng biskuit.

Ingredients:
Dough;
1kg (low protein) flour
375g margarine
375g butter
150g corn starch
150g full cream milk powder
220g icing sugar
6 egg yolks
3g vanilla powder
Filling;
750g pineapple jam
Egg Wash;
6 egg yolk
6 tbs vegetable oil
2 drops yellow food colouring
Preparation Time: 5 hours
Cooking Time: 50 minutes
Total Time: 6 hours
Method:
Dough;
1. In a large mixing bowl, soften & mix the butter & margarine.
2. Then add the icing sugar & continue to mix.
3. Then add the egg & vanilla & combine well.
4. Then add the milk powder followed by the corn starch.
5. Finally add the flour in in two or three batches.
6. Once its all combined well, cover & leave to rest for 15 minutes.
Tarts;
1. Take 2g of jam & roll it into a ball, repeat until all the jam is used up.
2. Take 5g (1 tsp) of dough & shape it into a cup shape.
3. Take a ball of jam & place it into the dough cup & roll it into a ball shape.
4. Place onto your baking tray with an even spacing between each ball.
Cooking;
1. Pre-heat your oven to 150C.
2. Bake for around 40 minutes, then take out & leave to cool down a while.
3. Brush (or dip) each ball with the egg wash.
4. Then cook for a further 15 to 20 minutes (150C).
Storage:
Keep in an air tight container or biscuit tin, but consume within 16 days.
Serving Suggestions:
Serve with a hot beverage of your choice. Makes just under 3kg in total. Traditionally these tarts had cloves stuck into each one, which adds a different taste. We have also made these with a chocolate wash, instead of the egg wash, which also tastes great. You could try other jam fillings as well, if you enjoy these tarts.

1. Siapkan mangkok besar, masukan margarin dan mentega aduk rata.
2. Lalu tambahkan gula halus & lanjutkan mengaduk.
3. Kemudian tambahkan telur & vanilla & aduk rata.
4. Kemudian tambahkan susu bubuk diikuti tepung maizena.
5. Terakhir tambahkan tepung dalam dua atau tiga tahap.
6. Setelah tercampur rata, tutup & diamkan selama 15 menit.
Kue tart;
1. Ambil 2g selai & gulung menjadi bola, ulangi sampai semua selai habis.
2. Ambil 5g (1 sdt) adonan & bentuk menjadi bulat lalu pipihkan.
3. taruh selai lalu bulatkan.
4. Letakkan di atas loyang Anda dengan jarak yang rata di antara tiap bulatan.
Memasak;
1. Panaskan oven terlebih dahulu dengan suhu 150C.
2. Panggang sekitar 40 menit, lalu keluarkan & biarkan hingga dingin sebentar.
3. Oles (atau celupkan) setiap bola dengan olesan telur.
4. Kemudian masak lagi selama 15 sampai 20 menit (150C).
Hasil:
Keseluruhan kurang lebih 3kg.
Penyimpanan:
Simpan dalam wadah kedap udara atau kaleng biskuit, tetapi konsumsilah dalam 16 hari, karena tanpa bahan pengawet.
Saran Penyajian:
Sajikan dengan minuman panas pilihan Anda. Secara tradisional, kue tar ini memiliki cengkih yang menempel di masing-masingnya, yang menambah rasa yang berbeda. Kami juga membuatnya dengan olesan cokelat, bukan olesan telur, yang rasanya juga enak. Anda juga bisa mencoba isian selai lainnya, jika Anda menikmati kue tar ini.

1. Place the nuts in a large pre heated pan.
2. Gently roast them on a medium heat for around 30 minutes, whilst stirring them.
They will start to crackle after a couple of minutes.
3. Then leave them to cool down.
4. De-husk them by rubbing them between your hands.

Can be used in a variety of different recipes, or eaten as a snack. 500g of peanuts makes approximately 450g of roasted, dehusked peanuts.

Ingredients:
500g peeled young jack fruit
130ml coconut milk
250ml water
2 lemon grass
2 salam leaf
3 kafir lime leaf
1 tsp coriander powder
2 tsp mushroom stock
1 cinnamon stick
quarter tsp aromatic ginger powder
2 cloves
1 star anise
1 tsp salt
4 tbs sweet sticky soy sauce
Blended Ingredients:
6 shallots
1 tomato
4 cloves garlic
2 tbs tamarind water
5cm turmeric root
2 slices galangal
2 slices ginger root
5 dried chillies
4 candlenut
Preparation Time: 30 minutes
Cooking Time: 1 hour
Total Time: 1.5 hours
Method:
1. Fry the jack fruit on a low heat until it starts to brown.
2. Blend the ingredients.
3. Put all the ingredients into a warm wok, except for the jack fruit & soy sauce.
4. Once it comes to the boil, add the jack fruit.
5. Stir slowly on a low heat.
6. Then gently simmer for 1 hour.
7. Add the soy sauce towards the end of the cooking time.
All the liquid should evaporate or turn slightly oily, but not become dry.
Storage:
Will keep in the fridge for around 5 days or you can freeze it.
Serving Suggestions:
Makes enough for 4 people. Serve on a bed of rice, or with bread. It can also be used as a burger filling with salad, mushroom, onion, etc....
Rendang is usually made with meat or chicken, but it works really well with jack fruit used as a meat substitute.

1 bunga lawang
1 sdt garam
4 sdm kecap manis
Bahan Blender:
6 bawang merah
1 tomat
4 siung bawang putih
2 sdm air asam jawa
5 cm kunyit
2 iris lengkuas
2 ruas jahe
5 buah cabai kering
4 kemiri
Waktu Persiapan: 30 menit
Waktu Memasak: 1 jam
Total Waktu: 1,5 jam
Metode:
1. Goreng nangka dengan api kecil hingga mulai kecoklatan lalu tiriskan.
2. Haluskan bahan.
3. Masukkan semua bahan ke dalam wajan hangat, kecuali nangka & kecap manis.
4. Setelah mendidih masukkan nangka.
5. Aduk perlahan dengan api kecil.
6. Kemudian didihkan perlahan selama 1 jam.
7. Tambahkan kecap menjelang akhir waktu memasak.
Semua cairan akan menguap atau menjadi sedikit berminyak, tetapi tidak menjadi kering.
Penyimpanan:
Akan disimpan di lemari es selama sekitar 5 hari atau Anda dapat membekukannya.
Saran Penyajian:
Membuat cukup untuk 4 porsi. Sajikan di atas nasi, atau dengan roti. Dapat juga digunakan sebagai isian burger dengan salad, jamur, bawang, dll....
Rendang biasanya dibuat dengan daging atau ayam, akan tetapi dengan sayur nangka muda tidak kalah enaknya sebagai pengganti daging.

Ingredients:
250g ground roasted peanuts
450g (low protein) flour
300g margarine (or butter)
100g icing sugar
30g milk powder
2g vanilla powder
pinch of salt
150g icing sugar (for dusting)
Preparation Time: 2 hours
Cooking Time: 1 hour
Total Time: 3 hours
Method:
1. Soften the butter or margarine using a mixer.
2. Then add 100g icing sugar & the milk powder.
3. Then the vanilla & salt.
4. Then add the ground roasted peanuts.
5. Mix thoroughly using the mixer.
6. Then add the flour & mix it in with a spatchula & finally finish mixing the dough by hand.
7. Rest the dough for around 10 minutes.
8. Take half a tablespoon of the mixture & roll into a ball, then place it on your baking tray.
9. Repeat until all the dough is used up.
Makes approx 140 cookie snow balls.
10. Pre-heat your oven to 150° C.
11. Bake for around 40 to 50 minutes & then leave them to cool down.
12. Once they're cool enough, you can toss them in a bowl of 150g icing sugar.
Storage:
Keep in an air tight container or biscuit tin.
Serving Suggestions:
Makes approx 140 cookies, over 1kg. Eat with a hot beverage of your choice.

6. Kemudian tambahkan tepung terigu & campur dengan spatchula & terakhir selesaikan adonan dengan tangan.
7. Diamkan selama 10min sebelum di bulatkan.
8. Ambil setengah sendok makan adonan & bulatkan menjadi bola, lalu letakkan di atas loyang Anda.
9. Ulangi sampai semua adonan habis.
Membuat kira-kira 140 bola salju kue.
10. Panaskan oven Anda hingga 150° C.
11. Panggang sekitar 40 hingga 50 menit & biarkan hingga dingin.
12. Setelah cukup dingin, Anda bisa memasukkannya ke dalam semangkuk gula halus 150g.

Ingredients:
200g cut, half roasted peanuts
150g glutinous rice flour
150g rice flour
50g corn starch
65ml coconut milk
450ml ice water
1 egg
1 litre cooking oil
6 pieces kafir lime leaf, finely sliced
1 tsp mushroom stock or powder
0.5 tsp aromatic ginger
1.5 tsp coriander powder
1.5 tsp salt
0.5 tsp turmeric powder
3 cloves candlenut
4 cloves garlic
Preparation Time: 1 hour
Cooking Time: 2 hours
Total Time: 3 hours
Method:
1. Cut the peanuts in half & gently half roast them on a low heat for around ten minutes, then leave them to cool.
2. Individually grind all the spices.
3. Beat the egg & put it in a large bowl.
4. Add all the other ingredients except for the oil & peanuts.
5. Mix the batter thoroughly.
6. Heat the oil in a large shallow wok.
7. Using a large spoon, drizzle the batter around the rim of the wok, adding a few peanuts to each spoonful.
8. Repeat three or four times until you've gone all the way around the edge of the wok.
9. Lightly drizzle the oil around the edges, making sure the batter is covered with oil.
10. As it fries, lightly pull it down from the sides of the wok, towards the centre.
11. They take around 5 or 6 minutes to cook.
12. Once done, strain from the wok & leave them on grease proof paper, or a draining rack.
They should be light & very crispy.
Storage:
Keep in a large air tight container.
Serving Suggestions:
Makes over 800g of crackers.
Rempeyek is commonly served in Indonesia with Nasi Pecel, but the peanut & lime flavour will go with a wide range of sauces, dips & chutneys, especially sweet chilli sauces.

Metode:
1. Potong kacang menjadi dua & panggang perlahan dengan api kecil selama sekitar 10 menit, lalu biarkan hingga dingin.
2. Haluskan semua bumbu menjadi satu.
3. Kocok telur & masukkan ke dalam mangkuk besar.
4. Tambahkan semua bahan lainnya kecuali minyak & kacang tanah.
5. Campur adonan dengan seksama.
6. Panaskan minyak dalam wajan .
7. Dengan menggunakan sendok takaran tambahkan kacang, lalu tuang adonan di sekitar tepi wajan.
8. Ulangi tiga atau empat kali sampai Anda melewati tepi wajan.
9. Gerimis sedikit minyak di sekitar tepinya, pastikan adonan terlapisi minyak.
10. Saat digoreng, tarik perlahan dari sisi wajan, ke arah tengah.
11. Mereka membutuhkan waktu sekitar 5 atau 6 menit untuk memasak.
12. Setelah matang angkat dan tiriskan & biarkan di atas kertas minyak, atau rak pengering. teksturnya ringan & sangat renyah.

Simpan dalam wadah besar kedap udara.
Saran Penyajian:
Hasil dari satu resep kurang lebih 800g rempeyek.

Ingredients:
1kg white flour
750ml water
2 tbs salt
Preparation Time: 4 hours 30 minutes
Cooking Time: 45 minutes
Total Time: 5 hrs 15 mins
Method:
1. Mix the flour with roughly 600ml of the water in a large bowl.
2. Once its well mixed, slowly add the remaining water little by little.
The mixture should become sticky & elasticated.
3. Cover with water to stop it from drying out & leave for 2 hours.
4. Sprinkle 1 tbs salt over the mixture & fold it into itself.
5. Start to strain & rinse the mixture as you fold it.
The water should become clearer.
6. Add the other tbs of salt, cover with water & rest for another hour.
7. Strain off the water & place the mixture on your work surface.
8. Cut it in half & twist it like a rope.
Stretch it a little as well.
9. Tie several knots into both pieces.
10. Put them into a medium sized saucepan with enough hot water to cover.
11. Heat for around 30 to 40 minutes.
Do not let the water bubble, simmer or boil.
12. Strain & leave them to cool down.
13. Once cool enough, untie the knots & tear into pieces.
It should be very fibrous.
Storage:
You can keep the meat in the fridge for up to a week, or put in an air tight container in the freezer.
Serving Suggestions:
Makes over 600g of vegan meat.
Can be used as a substitute for chicken in any recipe, or can be used in combination with vegetable dishes as well as in Stews, Curries, Burgers, Stir Fries, etc....
