Low Sugar Candied Walnuts
Whole foods
Makes 5 cups
Ingredients
1 lb walnut halves and pieces (only walnut pieces will not work, poor results)
1 egg white - large or XL egg (room temp is best)
1 soup spoon water
White sugar (I used less than a 1/4 cup in video). If I don't use the dark sugar I might increase it to a rounded 1/4 cup of white sugar. I like adding some dark sugar because the end result has greater flavor dimension
Only Bob's red mill shredded unsweetened coconut. Other shredded coconut grind was either too big (it won't stick) or too small (too dry and not as appealing). Bob's had the right size grate
Salt - a couple pinches or a couple turns of your salt grinder
optional:
dark sugar - adds more depth 1 soup spoon or a heaping soup spoon (if you add more it will create a darker color and a crisper sheath. Very sensitive to cooking time and must be pulled at exactly the right moment)
POWDER stevia (two to 2.5 micro scoops of powder using the micro scoop in the container. Organic Trader Joes or KAL organic powder stevia. If you make these with stevia they need to fully cool and taste better the following day onwards. I always add a little bit of real sugar when I use stevia, for some reason the end result is way better, even if there is only a soup spoon of sugar for a big batch. My rule applies also for using coconut sugar rather than cane sugar. I have tried coconut sugar with this recipe and it doesn't come out as good as using cane sugar.
Do not use liquid or glycerite stevia - the texture result was chewy, soft and tasted "stale" because it doesn't crisp properly with liquid stevia.
Vanilla - add vanilla paste or liquid to the egg white when whisking into a foam
ginger, cinnamon, or other spices

I vary this recipe based on who I am making it for and that person's tastes. I would not make or give this to someone who eats fast food and likes twinkie type foods.
Directions:
Preheat oven to 250-260F
Mix sugar (white and dark if you want some dark sugar), couple shakes of salt, stevia (optional)
Add shredded coconut - mix well
Over stir and mix if you have added stevia - it MUST be evenly distributed. You can mix it with the white sugar first if you prefer, then add coconut and last dark sugar (dark sugar is "wetter" and stickier") for even distribution of the stevia powder
Separate one egg, whisk the egg white until bubbling
Add a soup spoon of water - continue whisking the egg white until totally foamy - you should her little or no "liquid" at the bottom of the bowl
Pour in the walnuts - stir until all the walnuts are coated with the egg white foam
Pour in the sugar coconut mixture into foamy egg white (and vanilla if you add vanilla) and STIR until all the dry is stuck to the walnuts with the eggwhite (which is acting like a glue)
Spread out on parchment paper (it will stick to the pan if you don't use the paper and the pan is a hassle to clean)
Bake for 45min at 250-260
If you want it a bit crunchier leave in another 5-10 minutes, but be careful there is a very small window where it goes from crispy perfect to crispy BURNED. You almost have to stand there and wait
Let cool.
It crisps up as it cools
Put in airtight containers. You will eat them before they go bad. Room Temperature storage is fine. If you don't finish them in two weeks time then put in fridge.

Lemon maple olive oil GF vegan salad dressing, dipping sauce with EZ-Gel Instant Food Thickener
I have been playing with this instant food thickener for a little over a year now and it is insanely fun.
I should have mentioned in the video.. this is the basis for "how to". You do NOT need maple for this to work. If you want a lemon pepper salad dressing/sauce/dip then remove maple, add pepper and use more olive oil and another twist of salt & Voila. A lemon pepper olive oil sauce or thicker dipping sauce would be great on salad, or for artichoke dipping or for chicken breast or even as a sauce over hard boiled or poached eggs. I share the concept in a variation that is more unusual to see. Once you understand the "concept" and principles then you should RUN WITH IT and have fun with it in your kitchen with whatever you love.
I can make a lemon curd without eggs, no need to cook and stir, as much or as little sugar as I want. This same base can be a relatively thin salad dressing, thicker sauce for topping crepes or a thick custard curd for filling tarts or just for fun.
My videos will be about concepts... of how to work with something then you should take it and run with it and make it your own. Recipes have a place, but there is nothing like being creatively free in the kitchen.

1p allspice

Leaving out the allspice and the nutmeg will make the spice less "harsh".

Toasted Honey Sesame seed Crunch - simple to make, no bake

honey
toasted sesame seeds (or other seeds)
Dash of Salt at the end when it sets to cool
Seed options (whatever your choice they need to be toasted): white sesame seeds, black sesame seeds, pumpkin seeds, chia seeds.
I don't think sunflower seeds will work because they are too oily and I don't think the honey will be able to grab on and stick to it.
I have also mixed different seeds together to get different varieties, textures, colors and flavors.

Wireless bluetooth speaker (if you don't have one that is okay.. but the sound is limited and comes out of your phone or tablet if you don't have a speaker). If you connect a speaker to your phone it will be a wireless connection and the sound is good. My wireless bluetooth speaker is a "vanzen x5 pro". I bought one new on amazon and got my second one on ebay as an "open box" new condition for half the price. I preferred to plug it into the projector via a hard cable.

My boy Roo will work for treats and nothing motivates him more than Greenies. He loves them.... My girl cat Bear will not work for treats, but I have to give her some on the sly in the bowl. It is our little secret between girls. If I don't she will give me the side eye evil eye while also turning her back on me and listening to me (ears back listening)... as if she is trying to make sure nothing else deceptive is happening to her. She feels SO slighted if I don't give her some on the sly. She was a bottle fed orphan without siblings and she is very much trying to assess that everything is fair. Roo is after the prize, never assessing anything. Bear is always counting and making sure everyone is getting equal treatment.
Roo will sit outside on the patio staring at me in the morning.. screaming at me in silence... waiting and wanting me to create do a game so he can get his treats.

I threw in a whole new dimension in this treat hunting game. I decided to make it vertical rather than on a grounded surface. He was not as comfortable with it. I will explore the vertical games more, but this one really challenged him in new ways and it made him very uncomfortable. Part of the problem was that it swung from left to right. If I do this again it needs to be fixed and unmoving.. maybe later I can add the dimension of it moving and pendulum swinging.

My boy cat Roo loves games. I think he lives for games and his morning cuddle. A day without is a bad day for him.
Cats are super sensory in everyway. Any change is a big experience for them. such as using tissue paper rather than printer or packaging kraft paper. The feel is different, the smell is different, the appearance is too. The same goes for changing out the boxes - each box has a different quality, smell and feel. We just see a box of a different size, for them it is a whole new world to explore.
I also vary the experience by using air-filled bubble wrap too, though never unsupervised.

Cat Brain Games #4 - Mobilize pent up energy from bored frustrated house cats to make them satiated
I only ever use thunder acres wheat grass cat grass seeds. 99% seed viability and a real non green thumb success rate. Soak seeds 24 hours (not more of they go bad). Place the seeds on top of some soil (miracle grow is great), add some rocks or stones to keep the platter heavy for the yanking and pulling your cat will do when it eats and chews on the grass and use a well-draining dollar tree cake pan like in my video, a cat-it cat grass element, or even repurposing bulk size plastic food produce containers (the kind you find at Costco with grapes or kiwi's in them) which already have the drainage holes you need. Put it in a hot sunny window, if covered then no real need to water, or use a spray bottle to mist. Seeds will come up in a week or so. Thunder Acres seeds will keep for about 4-6 weeks. Depending your cat's cat eating style you may or may not need to cut it down with some scissors.
I do NOT work for thunder acres, they just sell amazingly high quality seed and I always support honest sellers with awesome products.

Brain games for cats #3 - Advanced cat games (one treat per brain game that he already knows)
I only do this series with brain games I know my boy has successfully accomplished and achieved. I usually put 4-5 treats in a new "game" as it encourages him to figure it out and be rewarded each time he gets it. He is most challenged with a new game. This time I use all his successful endeavors and only give him one treat per game.
He is very shy and pretty fearful of people so most people have never seen him. My mom is seeing him uncensored for the first time in these videos as he is with me in everyday life.

Brain Games for Cats #1 - keep your smart hunter cats engaged with games
My boy Roo is very bright. He needs a daily challenge and gets bored and frustrated easily. If he doesn't get stimulated both with play and a mental challenge for treats then he causes trouble. Trouble means that he will go beat up on my second cat Bear.
These games started some years ago when I bought a treat toy. It took a few days for him to get it then he knew what to do and how to get maximum payout asap. Then it got boring for him. I found another one and it was the same thing. So I started making games for him. He is extremely treat motivated, very bright and loves to wow me with his intelligence and dexterity. And above all he likes it too.
I once got a slow feeder for him, but he couldn't do it, not even after a week and he gave up. That wasn't good.
Each game has to be something that surprises him, challenges him, makes him work a bit more, but never impossible. Just enough, not too much. Big enough a challenge to matter, but small enough to manage.
