Cabbage - finely sliced and or chopped depending on your liking
medjool dates & coconut sugar
yogurt - depending on what yogurt you use and the types of cultures in it, the outcome will be different
dash of salt
optional - lemon juice
Each day it will culture more as the bacteria eat the sugar and kick off their "urine" which is acidic in nature. The process reduces the sweetness and tenderizes the cabbage.
Keeps for a very long time in the fridge because it is alive and a healthy culturing process
