SWEET AND SOUR CHICKEN
RECIPE:c
2 Chicken breasts(cut in cubes)
1 medium capsicum(cubes)
1medium onion (cubes)
2 Carrots (chopped)
1 tsp garlic (crushed)
1 chicken cube
3 tbspn oil
2 tbspn cornflour in 3 tbspn water
Sauce Mix
4 tbspn ketchup
1 tbspn hot sauce
2 tbspn soy sauce
1 tbspn vinegar
1 tbspn sugar
1/2 tspn salt
1 tsp black pepper
1 tsp garlic powder
1 tsp chilli flakes
Mix them all, set aside
METHOD
Heat oil in a wok, put garlic and saute till fragnant, add
chicken,sprinkle a dash of salt and pepper, saute till color
changes, add capscium, onions, carrots, saute for 2-3
minutes. Add sauce mix and let it cook and simmer for
6-8 minutes, add cornflour mix to thicken the gravy, let it
simmer for another 5 minutes.
And its ready with some fried rice or boiled rice

Tandoori Chicken Biryani
" INGREDIENTS:
1 kg Chicken
4 cups basmati rice(wash & soak in water for 20 minute)
1 n half tbsp gingergarlic paste
Half pack Tandoori masala(I used shan)
Half pack Bombay Biryani masala( by shan)
1 tsp salt.
1 tsp red chilli powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp garam masala
2 tbsp imli chutney (optional, but gives a nice kick)
4 large tomatoes chopped
1 cup thick yogurt
3-10 green chillies(add accordingly)
1 cup oil
Yellow/orange food color
Fill a pot with water, bring it to boil, add rice and boil for
8-10 mins then drain the water and set them aside (1 boil
them 70% means they are not totally soft, later will cook
in damm)
In a pot add oil, chicken, gingergarlic paste saute, then
add all the mentioned spices and Half of the chillies imli
chutney.
Cook for 8 mins. Then add tomatoes and yogurt
remaining chillies ,cook for 7-8 mins then cover and cook
for 15 mins till tomatoes are soft. Stir occasionally.
Jncover and cook on medium heat till oil separates anc
gravy is ready.
Now Assemble
Add 2-3 tbsp oil from the gravy, add a layer of rice, then
add gravy, then another rice layer. Add food color in
between the layers
Repeat till the rice and gravy ends.
Top it with chillies, coriander, mint, lemon, fried onion
Cover the lid with a cloth give dum at lowest flame for
10-12 mins.
And that it.

Caramel Tres Leches (3 milk cake)
INGREDIENTS:

L cup oil
Half cup sugar
3 eggs
1 cup milk

Preheat oven at 180c degrees
Beat together oil and sugar, then add egg, beat welltill
pale, add milk, mix, then add flour,baking powder, mix, and

Grease an 8 inch square pan
Pour the batter. Bake for 35 min till the skewer comes out
clean
3 milk mixture
1 tin evaporated milk
1 cup milk
5 tbsp condensed milk
Mix these together and set aside
Caramel Sauce(or any topping of your choice)
1 cup brown sugar @redpathsugar
3 tbsp cream
2 tbsp butter
Half cup milk
In a pan, melt brown sugar at low heat. Keep stirring.
Once melted, immediately add cream, stir stir, then add
butter, keep stirring. Once everything is well incorporated,
remove from heat and add milk, mix till a nice thick
consistency.
Assemble:
Take out the cake once it's done. Let it cool. Then poke it
with a fork. Add the 3 milk mixture gradually in steps. Let
the cake soak the mixture.
Take some whipping cream. Spread generously. Then
pour the Caramel sauce at the end. Chill the cake before
serving. Enjoyyyy

MANGO CRUNCH
Ingredients: (makes 3-4 serving)
1 n half cups mangoes chopped
3 tbsp sugar(add less, if mangoes are already sweet)
Half cup water
3-10 Digestive biscuits crushed with 3 tbsp melted butte

For Whipping cream.: Chill the cream in freezer for

For Caramel Crunch
n a pan add sugar, cook at low heat, till it starts melting
give it a stir and wait for a boil and change of color into a
frothy dark brown. Keep stirring and
That's it.(whole process takes around 4 mixs)Remove it
from heat and pour it on a parchment paper.let it cool and
get hard, then break into pieces
Assemble:
Add biscuits layers, then whipping cream, then mangoe
puree, and then Caramel crunch
Top it with some more mangoes.. chill before serving

Chicken Samosas
Ingredients ( 12-14 Samosas)
250 gms chicken
Half tsp salt
Half tsp black pepper
Half tsp red chilli flakes

2 green chillies crushed

Apple Crumble Pie
Ingredients:
⁃ For crumble
1 cup flour
Half cup brown sugar @redpathsugar
Half cup walnuts chopped
150 gm butter(room temperature, soft, not melted)
Add everything in a bowl, use your hands to mix together
everything into a crumbly texture. Set aside
_ For filling
3 medium apples (peeled and sliced)
1/2 tsp cinammon powder
3 tbsp sugar
1 tsp lemon juice
Mix everything together.
Preheat oven at 180c
In an 8 inch pan, add a layer of crumble, then apple filling
and then a generous layer of crumble on top.
Bake for 35 minutes and then broil for 3-4 minutes at low
heat to give a nice brown colour on top.

BUTTER COOKIES
INGREDIENTS
2 cups flour
1 cup butter(250 gm) room temp
3/4th cup sugar
1 large egg
Preheat oven at 180c
Beat the butter till creamy, add sugar and beat till well
incorporated. Add egg and beat. Now add half of the
flour, mix it up with spatula, then add remaining half and
mix. The cookie dough is ready, put in fridge for 10
minutes. Now Simply take a small dough ball, flatten it
into cookie shape, and make design with a fork 0R Roll
out into a square by pressing with Greased hands/rolling
pin, cut out shapes with a cookie cutter.
_ine and grease a baking tray with parchment paper of
aluminium foil. Bake at 180c for 12-15 minutes. And its
doneeee. Let them Cool down completely then devour
with a mug of Milk / Coffee or Offcourse Chai. The
bottom would be beautifully browned and top would be
whitish.

SHINWARI CHICKEN KARAHI (Dhabba style)
INGREDIENTS:
800 gms Chicken
5-6 medium tomatoes (each one cut into 4 parts)
8 small green chillies chopped(adjust accordingly)
1n 1/2 tbsp gingergarlic paste
1 n 1/2 tsp salt
1 tsp red chilli
1 tbsp coriander powder
1 tbsp cumin powder
1 n 1/2 tsp black pepper
1 tsp garam masala
3/4th cup oil
Ginger for garnish
⁃ In a wok, add oil, put chicken and gingergarlic paste,
saute at medium heat till starts changing color,add half of
the green chillies, saute till aromatic
Add all the spices, except black pepper and garam
masala. Cook chicken for 6-7 minutes
⁃ then add tomatoes,remaining green chillies,cover and
cook till tomatoes are soft(takes approx 10-15 mins).
⁃ Uncover,Remove & discard tomatoe peel. Cook at
medium flame till oil separates
⁃ Now add black pepper and garam masala. Cook for 5
more minutes . And its done. Garnish with ginger and
devour with Naan.

Cheesy Chicken Parathas
INGREDIENTS: (makes 5-6)
400 gms chicken boiled and shredded
4 tbsp oil
2 tbsp soy sauce
1tsp salt
1tsp black pepper
1/2 tsp oregano

Atta dough(make two dough balls for each paratha)

Ingredients
3 large potatoes(boiled and mashed)
1 small grated carrot(optional)
2 tsp fresh Coriander chopped

-Shape the potato mixture into a kabab, dip in slurry and
coat in bread crumbs.
-Heat oil in a wok and fry them on medium heat for 5-6
minutes till nicely golden and crisp.
-Insert a skewer in each fried potato stick.
Serve it with a refreshing Cucumber dip( mix 4 tbsp
yogurt+half a grated cucumber, with pinch of salt n
pepper,)
TIPS:
You can easily freeze them and use them later.
You can bake them for 15 minutes instead of frying

Best CHICKEN SHAWARMA With authentic garlic sauce

500 gms chicken boneless cubes
1 cup.yogurt
1 tsp salt
1tsp cumin powder

2 small garlic(crushed)
1/2 tsp garlic powder
1/2 tsp black pepper
Pinch salt
Mix everything and its ready.
Assemble:
Take a pita bread, spread garlic sauce, put Pickled
veggies, add chicken pieces, add some mint, pour some

CHICKEN FILLING:

Puff pastry sheet OR Phyllo sheets
Instructions
Heat 2 tbsp butter, fry onion till soft then add chicken and
the spices with tamarind sauce,once chicken changes
colod add flour, then milk, cook till it thickens, mix in
chopped green chillies and coriander leaves, remove and
cool completely.
Take one phyllo sheet/puff pastry spread place the
chicken filling, put butter to seal the sheets and form
triangle shapes as shown. Fry on medium heat for 2
minutes each side til golden and crisp from outside. (Or
f using puff pastry bake at 180 for 10-12 minutes till
golden and done.

1 pack Tikka masala(used Shan)
4 tbsp soy sauce

Breadcrumbs(I used panko)
Oil for frying
Spicy mayo :3/4 cup mayo, 2 tbsp ketchup, 1 tbsp hot

n a bowl add chicken, tikka masala, soy sauce, oregand
chilli flakes, black pepper, salt, and eggs. Mix everything
well. Now coat chicken with breadcrumbs
(You can also freeze chicken at this stage and fry it
directly whenever needed)
Then Fry chicken for 12-13 minutes, keep changing sides
till golden and crisp.
Assemble by using slider bun,lettuce, crispy chicken,

INGREDIENTS

gradually add water to form a thick batter. It shouldnt be
runny, else it wont stay on Mirchi.
-Cut a slit on chillies,remove seeds, fill with potato
stuffing, coat in the pakora batter, and fry on medium to
high heat till golden and crisp
