Easy Seafood Boil Recipe
Ingredients:
Water
1 tbsp. Cajun powder
1 tbsp. Old bay seasoning
1 pc. onion, chopped
1 juice of lemon
4 big potatoes, cut into big squares
4-6 ears corn on the cob, cut into 4 pieces each
1 lb. (500g) shrimp, peeled and deveined
2 lbs (454g) mixed seafoods (
13 oz (350g) kielbasa sausage or andouille sausage, cut into 1-2 inch thick pieces
Garlic Butter Sauce
1/2 cup melted butter
1/2 cup garlic, minced
1 tablespoon Old Bay seasoning
2 tbsp. Cajun powder
1 juice of lemon
Directions:
Fill a large pot with 10-12 cups of water. Stir in cajun powder, old bay seasoning and juice of lemon. Add the chopped onion and bring to a boil.
Add the potatoes and cook for 8 minutes or until potatoes are about nearing tender. Add corn and continue to cook 3-5 minutes.
Add seafood mixture, and cook for 5 minutes. Drain and set aside.
In a large pan, melt the butter in medium heat. Sauté garlic and cook until lightly brown. Stir in sausage, seafood mixture, potatoes and corn. Add cajun powder, old bay seasoning and juice of lemon. Mix until well combined.

Ham and Cheese Sliders Recipe
INGREDIENTS:
* 24 pcs. Hawaiian sweet rolls, sliced in half
* 1 package sliced ham
* 15 pcs. Sliced Swiss cheese
* 1/2 cup shredded cheddar cheese
* 1/2 cup butter, melted
* 1/2 cup cream cheese, melted
* 1 tbsp. Dried Parsely flakes
* 4 tbsp. Garlic, minced
Directions
* Preheat oven to 350°F.
* In a bowl combine butter, cream cheese, garlic and parsely. Mix well. Set aside.
* Using a bread knife, slice the Hawaiian rolls in half removing the top and placing the bottom of the rolls in a 9” x 13” baking pan. Set aside the top rolls.
* Layer on the swiss cheese, ham, shredded cheddar cheese and once again ham. Place the top layer of bread back on assembled slider
* Pour the butter mixture over the rolls and spread it evenly using a pastry basting brush.
* Loosely cover baking pan with foil and bake at 350˚ F for about 20 minutes.
* Remove the foil and continue to bake for an additional 10 minutes or until tops are just crispy.

Soft and Fluffy Cheesy Ensaymada Recipe
INGREDIENTS
* 2 1/4 cups All Purpose flour
* 1/4 cup sugar
* 1 teaspoon salt
* 2 teaspoons Active Dry yeast
* 1/2 cup milk
* 1 large egg
* 1/4 cup butter (softened at room temperature)
WATER ROUX:
* 1/4 cup All Purpose Flour
* 1/2 cup water
TOPPINGS:
* 1/2 cup unsalted butter, softened
* sugar
* sharp cheddar or mixed Mexican cheese, grated
INSTRUCTIONS
1. Brush bowl with melted butter and set aside.
2. Mix water roux ingredients and cook in slow heat until thick until you reach a paste-like consistency. Or microwave for 30 seconds then 10 seconds until thick. Set aside
3. Mix warm milk and the yeast. Set aside for 5- 10 minutes until bubbles form.
4. Mix flour, salt and white in the work bowl of an electric mixer. Add the proofed yeast and mix using a spatula.
5. Add the egg and mix until dough is incorporated. then add the water roux mixture and mix until dough is incorporated.
6. Add the butter then mix.
7. Knead the dough for 15 to 20 minutes or until smooth and elastic at medium speed using an electric mixer. You could also knead manually. Do the window pane test. Do the window pane test. The dough is slightly sticky, soft yet stretchy,and pulling away from the edge of the bowl.
8. Grease bowl with a little bit of oil. Then transfer the dough in and cover with cloth or plastic wrap and let rise in a warm place for an hour until it doubles its size.
9. When ready, punch the dough and work on it in a floured surface. Divide the dough into even pieces or depending on the size of ensaymada you want. For an evenly sized dough, use a kitchen scale.
10. Form each piece into a log and coil dough from one end to another end. Transfer the roll and put into a prepared pan and let it rise for 30 minutes or until it doubles in size.
11. Bake in a pre heated 350 F oven for 15-20 minutes. Let cool before frosting.
12. Soften butter and spread on top of the bread. sprinkle with sugar and cheese. You can also mix the butter and sugar first and frost into the Ensaymada and add the cheese.

Pork Menudo Recipe (Pang fiesta)
Ingredients
* 3 kls. pork, bite-size pieces
* 1 cup soy sauce
* 1 piece lemon
* 1 big onion, chopped
* 4 tbsp. garlic, minced
* 8 pieces bay leaves
* 3 to 4 cups water
* 16 oz. or 170g tomato paste
* 1 kls. pig liver, bite-size pieces
* 2 pcs. chorizo de bilbao, sliced
* 6 big potatoes, cut into cubes
* 3 big carrots, cut into cubes
* 1/2 kls. hotdog, sliced diagonally
* 3 bell peppers, red & green, squares
* cooking oil
* 3 tbsp. brown sugar
* 1 tbsp Salt
* 1 1/2 tsp. pepper
Instructions
* In a large bowl, combine pork, soysauce, and lemon. Marinate for at least 1 hour.
* In a large pan, heat oil. Sauté onion and garlic.
* Add the marinated pork stirring until all sides are no longer pink.
* Add water and bay leaves then mix.
* Pour in tomato paste and mix then add chorizo. Cover and simmer for 30-40 minutes or until the pork is tender. Add more water as needed.
* Add the liver and cook for a few minutes.
* Add potatoes, carrots, hotdogs, bell pepper, sugar, salt, and pepper. Cover and let it simmer, stirring from time to time, for 15-20 minutes or until vegetables are tender.

MONGOLIAN PORK WITH MUSHROOM AND BROCCOLI
INGREDIENTS
Marinade:
* 2.2 lbs or 1 kl pork butt, cut into bite-size
* 2 tbsp water
* 1/4 cup soy sauce
* 1 tbsp Shaoxing (Chinese) wine
* 2 tablespoons cornstarch
* 3 tbsp. Hoisin sauce
Sauce:
* 1/2 cup low sodium soy sauce
* 1/3 cup water
* 1/3 cup brown sugar
* 1 tbsp oyster sauce
* 3/4 tbsp ground white pepper
Stir Fry:
* Cooking oil, as needed
* 1 tbsp. sesame oil
* 1/4 cup garlic, minced
* 2 tbsp ginger, minced
* 1 Broccoli , cut into florets
* 3 cups Shiitake mushrooms or any type of mushrooms, sliced
* 4 green onion, sliced thinly
INSTRUCTIONS
* In a bowl, add the marinade ingredients together until well combined. Marinate and refrigerate the pork for 30 minutes.
* In a small bowl, mix together the sauce ingredients until well combined. Set aside.
* Heat pan first, then add cooking oil in medium heat. Fry the marinated pork in batches until they are just brown and cooked. Remove the pork and set aside, leaving some oil in the pan.
* Add the sesame oil in the pan with any remaining oil in medium heat, sauté the garlic and ginger until fragrant. Add the mushrooms and sauté for 30 seconds until cooked. Add the broccoli and stir fry until they are just tender.
* Add the pork back into the pan and mix. Pour the sauce over the pork and broccoli. Simmer in the sauce until the pork is cooked through.
* Add the green onions. Cook for a few minutes or until the sauce thickens.

The Best Homemade Baked Lasagna Recipe (Filipino style)
Ingredients
1 package lasagna noodles
1.5 lbs. ground beef
1 large onion, chopped
1 whole garlic, chopped
9 oz. or 255grams tomato paste
1 tbsp. Oregano
1 tbsp. Basil
6 tbsp. Brown sugar
3 beef bouillon cubes
Salt and pepper to taste
Olive oil for sautéing
Mozzarella Cheese, shredded
White Sauce:
1/4 cup butter
1/4 cup all purpose flour
3 cups whole milk or evaporated milk
Pinch of nutmeg (optional)
1 tsp. Onion powder
Salt and pepper to taste
Directions
1. Cook noodles according to package directions. Drain and set aside.
2. In large saucepan, heat oil over medium. Sauté onion and garlic until translucent. Add ground beef cook, stirring, until beef is no longer pink, about 5 minutes.
3. Add tomato paste, oregano, basil, beef bouillon cubes, salt and pepper and bring to boil. Add sugar. Mix well. Reduce heat to low and simmer, stirring often, until sauce thickens, and beef is already tender and cooked, about 20-30 minutes. Set aside.
4. Melt butter in a medium saucepan. Add the flour and constantly stir until the mixture is light brown in color. Gradually add milk stirring constantly. Add nutmeg, onion powder, salt and pepper. Cook over medium heat, stirring constantly until sauce thickens. Set aside.
5. Preheat oven to 375 F. In a 9 x 13 baking dish, spread a thin layer of the white sauce then layer 3 noodles on top. Spoon enough meat sauce to cover the noodles, then spread again with some white sauce, then sprinkle with shredded mozzarella cheese. Then continue to layer in the following order, the noodles, meat sauce, white sauce, shredded mozzarella.
6. Bake for approximately 30- 45 minutes or until lasagna is bubbling and top is browned and crisp around the edges. Cool for 10 mins. before serving.

* 2 cups grated zucchini, drained
* 1 cup pecans, chopped
* 2 large beaten eggs
* 1/2 cup butter, softened
* 1 cup sour cream or plain yogurt
* 2 tsp vanilla extract
Instructions:
* Preheat oven to 400 degrees.
* In a large mixing bowl, combine flour, sugar, baking powder, baking soda, salt,cinnamon, nutmeg and ground ginger. Mix thoroughly. Set aside.
* Wash and pat dry zucchinis in a paper towel to remove excess water.
* Grate zucchinis using a cheese grater.
* In a larger mixing bowl, Add in butter, sour cream, and vanilla. Mix well until smooth.
* Add in egg and mix again.
* Add the dry ingredients to the wet ingredients. Then add the grated zucchini. Stir until just combined. Don't over mix.
* Stir in chopped pecans.
* Divide the batter equally amongst the muffin cups using an ice cream scooper or a spoon.
* Bake at 400 for 20-25 minutes or until golden brown and a fork comes out clean.

Ingredients:
1 1/2 cups riped bananas, mashed
1/2 cup Butter, softened
2 pcs. Eggs
1 cup Monkfruit Sugar
1 tsp. vanilla extract
1 tsp. Cinnamon powder
1 tsp. Baking Soda
1 tsp. Salt
3/4 cup Sour cream
1 1/2 cup All purpose flour, sifted
1 cup walnuts, chopped
Directions:
Preheat oven to 350 F.
Peel banana and mash it with a fork or potato masher. Set aside.
Mix butter, eggs, sugar and vanilla until well combined. Add bananas and cinnamon. Mix well. Add baking soda, salt, sour cream and flour. Mix well until smooth and creamy. Mix in walnuts.

Easy Pork & Shrimp Siomai /Japanese Siomai Recipe
Ingredients:
5lbs pork ground
2 lbs shrimp, chopped
250g shitake mushroom, chopped
1 1/4 cup carrots, chopped
3/4 cup water chestnuts or turnips, chopped
5 green onions finely minced
3/4 cup oyster sauce
2 1/2 tsp salt
5 tsps white pepper
5 tsps white sugar
5 tbsp rice wine (shaoxing)
5 tbsp sesame oil
5 eggs, beaten
1/2 cup cornstarch
Siomai wrapper
Oil for brushing dumplings
For Japanese siomai:
Crab sticks
Nori wrap
Dipping Saucecalamansi or lemon juice to tastesoy sauce to tastechili garlic to taste
Directions:
In a large bowl, combine all the filling ingredients and mix until incorporated.
For each siomai, spoon 1 tablespoon of the filling into the center of a wrapper. Using a butter knife, press the filling and the wrapper in toward the center. Repeat with remaining siomai mixture.
Brush steamer with oil and boil water. When the water gets to a rolling boil,
arrange the siomai in the steamer and steam for 40-50 minutes.
For Japanese Siomai:
Lay a Nori wrap on a flat surface. Spread the meat filling evenly, filling a
quarter of the wrap. Arrange crab sticks in the middle of the meat
lengthwise. Wrap like you would a sushi.
Using a steamer, Steam the japanese siomai for about 40-50 minutes.
Cut into 8 pieces each roll.
Serve with dipping sauce.

The Best Beer Battered Fish and Chips Recipe
Ingredients:
Beer Batter
* 1/2 cup all-purpose flour
* 1/2 cup cornstarch
* 1 tbsp baking powder
* 1 tbsp. Garlic powder
* 1 tbsp. Paprika or old bay seasoning
* 2 tsp. salt, to taste
* 1 tsp. black pepper
* 1 cupdark beer, cold
* 1/3 cup sparkling water, cold
* 2.2 lbs. fish fillet (white fish)
* 1/4 cup all purpose flour
* Salt
* French Fries, store bought
* Oil for frying
Instructions:
Cut fish into even pieces. Pat dry with paper towel and season with salt and pepper.
In a large bowl, whisk together the flour, cornstarch, baking powder, garlic powder, paprika, salt and pepper. Add in the beer and sparkling water. Stir in the lightly beaten egg until the batter forms and is no longer lumpy. Place the batter in the fridge to rest for 30 mins.
Heat the oil in a large pot, deep fryer or electric skillet to 350 degrees F (175 degrees C).
Place 1/4 cup flour into a bowl. Toss each fish in the flour and shake off any excess. Dip the fish into the beer batter, coating it entirely.
Carefully lower each fillet into the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
Fry the french fries in hot oil until they are tender. Drain them on paper towels.

UBE CHEESE PANDESAL RECIPE
Yield 20-22pcs.
Ingredients:
Water roux (tanzhong)
3 tbsp. All purpose flour
1/4 cup water
Dough
1/2 cup warm water (105-110)
1 tbsp. Instant dry yeast
1 tbsp. White sugar
1/2 cup warm milk (105-110)
2 tbsp. Ube flavoring
3 cups all purpose flour
1 tsp. Salt
1/2 cup white sugar
1 egg, slightly beaten
2 tbsp. Soft cold butter or 2 tbsp oil
Cheddar cheese, 10-12g each
Breadcrumbs for coating
Oil for hands
DIRECTIONS:
In a small bowl, combine water roux ingredients (flour and water) and microwave for 30 seconds, until you reach a paste like consistency.
In another small bowl, combine warm milk and ube flavoring. Set aside.
In a medium bowl, combine warm water, white sugar and instant dry yeast. Stir until completely dissolve. Let it stand for 5 mins. until yeast begins to foam.
In a bowl of your stand mixer, combine flour, salt and white sugar. Mix well. Add in the yeast mixture, slightly beaten egg, butter or or oil, water roux and ube flavoring mixture.
Attach the dough hook and turn the stand mixer on to the lowest speed and beat for 2 minutes. Increase the speed to medium, and continue beating for 8 minutes. The dough will be quite sticky, don’t add flour.
Knead the dough until smooth and elastic or if the dough detaches from the sides of the bowl and forms a ball or if it is not sticking to your finger anymore. Do the window pane test.
Remove the dough from the bowl and spray oil on the sides of the bowl then form dough into a ball. Cover with plastic wrap and let it rise in a warm spot for 30 mins. or until it doubles in size.
Remove the plastic wrap. Oil your hands and punch the dough down.
Divide it into 2 equal parts using a knife or dough slicer.
Divide the dough into 20 to 22 portions and shape into a ball. Or use a food scale and divide the dough into 40-45g each.
Form each little dough into a ball, flatten them (about 3 inches in diameter) then put the cheese on top. Seal the edges by gathering the ends and pinching them to seal. Make sure to put the sealed side down at the bottom.
Arrange the pieces on a baking sheet living some gaps in between (at least
an inch). Cover with a plastic wrap or kitchen towel and let them rise again
for 45 minutes to 1 hour or until doubled in size.
Bake in a preheated oven at 350F for 15 minutes. Let the Pandesal rest for about 10 minutes before serving.

Eggplant Omelette Recipe
Ingredients:
6 pcs. Large eggplant
4 pcs. large tomatoes
1 large onion or 1 bunch green onions
1 tbsp. garlic powder
1 tbsp. onion powder
1 1/2 tsp. ground black pepper
2 tsps. salt
1/4 cup cornstarch
1/2 cup all purpose flour
4 large eggs
Instructions:
Slice the eggplant into quarters.
Cook eggplants in a large pot with boiling water until tender.Remove and drain excess water from eggplant. Set aside.
While waiting for the eggplant to cook, slice tomatoes into small cubes. Chop green onions.
Slice eggplants into small pieces, then chop It. Place chopped eggplants in a large bowl. Add tomatoes, green onions, garlic powder, onion powder, salt, pepper, eggs, cornstarch and all purpose flour. Combine ingredients and mix well. Add more flour if your eggplant mixture is too wet. Then adjust salt and pepper to your liking. Mix well.
In a medium non stick skillet on medium high, heat some cooking oil. Place eggplant mixture by rounded tablespoonful. Flip it over to cook the other side. Fry until it has turned a lovely golden brown.
Serve with ketchup or sweet chili sauce.

Instructions
Marinate the salmon belly strips in soy sauce, oyster sauce, honey, chopped garlic, ginger, pepper, lemon juice, and
lemon zest for 1-2 hours.
In a large pan, melt butter and saute garlic for 2 mins. or until slightly brown.
Pan-fry the salmon, skin side down first, for about 1 min. Turn the salmon over and cook for 1 min.
Add the marinade and let it simmer for about 10 to 12 mins. or until the belly absorbs the flavor.
Add green onions and simmer for about 2 mins.
Garnish with more green onions.

Best Chocolate Chip Cookies Recipe
Ingredients
1 cup unsalted butter, softened
2 cups brown sugar
6 tablespoons sugar
2 large egg
4 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 teaspoons instant espresso (slightly crushed)
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups nuts (almond or walnuts)
Steps
Preheat oven to 300F.
In a mixing bowl, sift together flour, baking powder, baking soda, and salt. Mix well.
Place the butter, brown sugar, and granulated sugar in a bowl of an electric mixer fitted with a paddle attachment.
Beat on medium speed for about 30-60 secs. until the mixture is fluffy, scraping side of bowl occasionally.
Beat in the egg and vanilla until smooth.
Add in flour mixture, while beating on slow speed just until blended. Beat for about 15-30 seconds.
Stir in nuts, chocolate chips and espresso powder until well combined.
Prepare a cookie sheet lined with parchment paper. Drop dough by rounded tablespoonfuls about 2 inches apart.
Bake for about 20 minutes or until the cookies are nicely
browned around the edges. Bake for a little longer for crisper cookies.
Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

Japchae (Korean Glass Noodle Stir Fry)
Ingredients
1 kilo Korean sweet potato starch
noodles (dangmyeon)500 grams rib eye fillet, cut into strips2 cups carrots,sliced thinly4 cups baby spinach1 large red and yellow bell pepper, sliced thinly1 large yellow onion (105g), sliced thinly500 grams fresh shiitake mushroom , cleaned& sliced thinly
4 eggs, cooked and cut into thin strips
SPINACH SEASONING1 tsp fine sea salt1 tbsp minced garlic
1 tbsp sesame oil
BEEF MARINADE
4 tbsp soy sauce
4 tsp rice wine (mirin)2 tbsp minced garlic
1 tsp ground black pepper
1 tbsp sesame oil
SAUCE MIXTURE
1 cup soy sauce
4 tbsp honey
4 tbsp brown sugar
4 tbsp toasted sesame oil
1/2 tsp ground black pepper
GARNISH
* 2 tbsp toasted sesame seeds
* 2 large eggs, cooked and sliced thinly
Instructions:
In a medium bowl, add the beef and beef marinade. Mix using spoon and let it marinate for at least 30 minutes.
Combine the sauce mixture in a bowl. Mix well. Set aside.
Blanch the spinach in rolling boiling water (5 to 10 seconds). Drain
the water and quickly cool it down by running it under cold water. Squeeze the spinach to remove any excess water. Add the spinach seasoning. Mix well. Set aside.
Bring a pot of water to a boil. Cook the dried sweet potato noodles according to package instructions.
Meanwhile, beat the egg with a fork. Pour the egg mixture and cook both sides on low heat until firm. Slice the egg into thin strips. Set aside.
Cook the onion in a small amount of oil and add a pinch of salt over low to medium heat until tender. Set aside.
Cook mushroom in a small amount of oil. Add the soy sauce, sesame oil and minced garlic. Mix well. Set aside.
Cook carrots in a small amount of oil and add a pinch of salt. Cook until tender. Set aside.
Cook bell pepper in a small amount of oil and add a pinch of salt. Cook until tender. Set aside.
In a large pan, add some oil and pour in the marinated meat and stir fry until it is cooked over medium heat. Add the cooked sweet potato noodles mixing carefully. Turn off the heat. Add the cooked bell pepper, cooked carrots, cooked onions, mushrooms and spinach. Mix thoroughly. Add
the sliced egg and mix carefully.
Transfer to a serving dish. Garnish with egg strips. Sprinkle with sesame seeds and serve.
