ZESTY GARLIC PEPPER SEASONING BLEND!! SPICE IT UP!!
Today I am sharing this quick but delicious seasoning blend! My zesty garlic pepper blend is a great way to use up what you have on your spice rack and rotate out for new stock! This will give new life to old spices and help you more efficiently use what you have on hand, making way for fresher spices in your jars! This garlic pepper blend is so savory and delicious with a hit of spice and a smoky back from smoked paprika! This is going to pair well with all things savory, from beef, chicken, pork, fish and seafood to using this as a sprinkle on just about anything you want to spice up a bit. You will even want to throw some on your pizza or your popcorn for a delicious change of pace!
This recipe uses a lot of commonly found spices that are already in your pantry or spice rack. I have used both granulate and minced dried garlic and onion as well as both course and fine ground black pepper. If you don't have both of those types of any of those seasonings, simply use what you have and double things up or halve the recipe to accomodate your needs.
I have also used both salt and sugar in this spice blend. If you have dietary restrictions, please adjust and either switch up to a low salt seasoning and a sweetener or leave them out completely. Leaving them out will give you more of a "Mrs. Dash" vibe and there is nothing wrong with that!
Don't like the heat? Leave out the red pepper flakes and sub out the smoked paprika for sweet. LIke it even spicier? Use double the pepper flakes and use some chipotle or ancho chili powder instead of the smoked paprika or in addition to it. You can make this the way you like it by making only a few simple changes, flips or substitutions!

Today, Rick and I are sharing tips and tricks to grilling your perfect steak. We are by no means, BBQ pit masters or master grillers. We will leave that up to the experts. We just know what we have learned over the years and now want to pass that information on to you. We are starting with a delicious rib eye steak or Delmonico steak that is marbled and delicious and straight from our Butcher Box. This steak tasted amazing with my buttery steak seasoning and we enjoyed every morsel for our lunch the day we made it! Temperature is the key and knowing when to pull your steak from the grill is imperative! Using a meat thermometer is the best way to know when your steak is done but Rick is sharing how you can tell by just using your hand with a little trick.

SUGAR FREE 3 BEAN SALAD!! AN UPDATED CLASSIC!!
Today we are revisiting a classic favorite! Over the years I have shared a couple bean salad recipes but in our house we always go back to the classic three bean that we know and love! This is a favorite of Rick and myself and truth be told, if he had his drothers, this would always be in the fridge for him to snack on! Dressed with a sweet and tangy dressing this salad is easy to eat and super easy to toss together! Perfect as a side for a sandwich or any meal really, this is even perfect to share and take to a gathering, barbecue or potluck supper! This is a nostalgic, classic salad that so many people love even if they forgot how much they did!
This salad starts off with a few canned items straight from the pantry shelf then adds in some fresh items from your garden or fridge. Canned green beans are easy to source and delicious. Canned wax beans may be a little more difficult to find, but they are usually available in better grocers or smaller independant stores. I can never get them at Walmart but always find them at my local Harris Teeter, which is a Kroger branded store. So look around and if you can find them use them. They are going to be about twice or even three times the price of the green beans, and if you are not wanting to spend the extra, simply use another can of regular green beans and make this a two bean salad. Next up are some dark red kidney beans that have been drained and rinsed. If you prefer another type of bean then swap these out for butter beans, lima beans or Cannellini beans if that is your preference! If you want to make this a five, six or 12 bean salad than go for it! Just be sure to add more dressing if you add more beans.
The dressing here is sweet and tangy. I used Splenda in place of sugar, but you can feel free to use granulated sugar, honey, agave or the sweetener of your choice to make this. Some apple cider vinegar, vegetable oil and a bunch of flavorful seasonings go in and turn themselves into a delicious dressing that you know and love!
The fresh veggies really make this salad and add the necessary crunch that you love. Bell peppers of all colors, some diced onion and celery round out the recipe. Toss everything together with the dressing and you have magic in a bowl! This will take you back to your grandmother's table. I know that my Nanny is where I got my love for this salad! She always had it in her fridge and we loved it next to just about everything, especially in the summer months.
This is a cool and refreshing, quick to make salad that relies on pantry staples that you will love. This comes together with fresh veggies from your garden or your grocer and you are going to fall in love with this all over again if it has been a while since you had some. If you have only had three bean salad out of a can or jar, then you are in for a real treat! I hope you give this a try sometime soon and I hope you love it!

1905 SALAD!! HERITAGE RECIPE!!
As promised today I bring you this delicious heritage recipe for 1905 salad! Hailing from the Columbia Restaurant in Ybor City, Tampa, Florida, this salad is full of delicious ingredients and definitely qualifies as what I (and Elaine) call a "Big Salad"! This will satisfy you even if you are starving and you will come away satisfied! Full of delicous smoked, ham, Swiss cheese, olives, artichokes, tomatoes and that lovely dressing we previously made, this salad emulates the flavors of another Cuban favorite, the Cuban sandwich! I know you are going to love this and when you make it for your family they are going to love it too!
This salad starts off with an entire head of crisp and cold, iceberg lettuce. I like to simply smack the head, core side down, on the counter then it will be easy to remove. Then I just start tearing. I prefer to tear the lettuce into bite sized pieces rather than cut with a knife, as tearing helps to stave of browning a bit while using a knife will speed up that process, for whatever reason.
To this crisp lettuce we add approximately one cup each of wedged slicing tomatoes or in my case heirloom grape and cherry tomatoes, Spanish olives stuffed with pimentos, chopped artichoke hearts, julianned Swiss cheese and smoked ham as well as grated parmesan or Romano cheese toss that all together with the 1905 garlic vinaigrette dressing we made and you are on your way to a delicious salad experience!
There are a lot of bold flavors in this salad but honestly they all work together in such a cohesive fashion it is just an enjoyable taste! You can sub out the ham for chicken or turkey, sub out the Swiss cheese for Monterey Jack or Muenster or whatever you prefer. The beauty of this salad is it's versatility. Don't stray too far from the original though or you might miss out on the intended experience.
Someday I hope to do a food tour of Tampa and Ybor city. There are so many delicious delicacies to be had that I have seein in videos of that region that I think it would be a shame not to at least try them once!
This salad can be served as a starter, a side or a main meal and it will satisfy even the hungriest at your table! I hope you give this 1905 Salad a try, sometime soon and I hope you love it!

SLOW COOKER PIEROGIE & SAUSAGE SUPPER! THE INTERNET MADE ME DO IT!!
So often I will see a recipe that goes "viral". One that everyone says you have to make. So I thought I would start a little series called "The Internet Made Me Do It!" Where we will try some of these recipes and see if they are all they are touted to be. First up is this frozen pierogie and smoked sausage supper that is made in the slow cooker. It starts with the pierogie and some sliced smoked sausage and some ingredients for a creamy sauce. Let's make this and Rick and I will give you our thoughts and you can decide if you want to make it or not. Keeping in mind everyone is different we may love it and you may think it looks gross. So everything being subjective is definitely a good thing.
This calls for 2 pounds of frozen pierogies. If you don't know or have never had them, Pierogie are little dumplings filled with mashed potatoes and cheese. I grew up eating them and my grandmother had a friend who made them from scratch every year and froze them. They always shared and yes, they were delicious. But like ravioli, some things are just as good when you buy them frozen as they are when you make them from scratch. In this case I will fight you. So grab your favorite frozen pierogies and let's get started.
This also has a link of smoked sausage sliced up as well as a brick (8 ounces) of cream cheese and a healthy handful of shredded cheddar or whatever you have on hand. As well as some chicken stock or water. I used only one box of pierogie so I only used half a box of stock. This initially called for cooking 4 hours on high however mine was done after two, so be sure to know your slow cooker and check accordingly so you don't end up ruining your supper. That cream cheese will turn on you and burn if it goes even the slightest bit too far.
I served this with an additional sprinkling of cheddar cheese. We had a salad on the side. Our honest opinion here is that the pierogie was very mushy and almost paste like consistency. The sausage was a bit over cooked. We enjoyed it for dinner the night it was made but do I think I will make this again? Probably not. I like my pirogies made my way and so does Rick.

Have you ever had a delicious disk of compound butter on top of a perfectly grilled steak? It is definitely a treat and it takes that steak to a whole new level of flavor! Today I am sharing with you my own recipe for a butter steak seasoning blend that you can whip up and put on just about anything you like! Steak is a great place to start, but chicken, pork, fish, seafood or even popcorn would be wonderful ways to use this seasonining! I have used a couple different ingredients but don't worry, I will leave links to where you can procure them for yourself, not to mention the fact that they are great pantry staples to have on hand for lots of other recipes! So get that spice rack cleaned out and make some of this delicius seasoning blend for your next barbecue! I know you are going to love this!

HOW TO ROAST THE PERFECT CHICKEN!! LEARN TO COOK!! BACK TO BASICS!!
Today we are going back to basics! As you know we are concentrating on adding more content that focuses on learning to cook. This will make way and inspire new cooks to continue on in their journey and want to learn more in the future. Today we are sharing how to roast a perfect chicken. I think everyone should know how to roast a chicken! When you can do this you can do anything and this is so easy!
A whole chicken seasoned the way you like can be served as is and the leftovers can be used for casseroles, salads and even soups. Don't toss that carcass! Make bone broth with it!
Season this chicken with your favorite chicken rub mixxed with a bit of poultry seasoning and sprinkle away to your heart's content! Rub it in so it really will permeate the meat. I am roasting two chickens this time around becaus it takes just as much energy to roast two as it does to roast one. I am sharing one of these chickens with a family from church who just relocated and needed a good meal. But honestly I often roast two just for us! The cooked chicken can go a long way and you can freeze it. So even if you are single or a couple, this is something to consider.
I like to roast my birds at 450 for the first 30 minutes. This helps to crisp and set the skin and also helps to quickly render some of the fat from the skin. Then after 30 minutes I turn the temperature down to 350 and continue to roast until an instant read thermometer stuck into the thigh reads between 160 and 165. If you are closer to 160 you can remove your bird from the oven and tend with some foil and allow to rest for 30 minutes, You will want your chicken to rest for 30 minutes regarless before slicing and serving. This will allow the juices to redistribute and you will have a delicious, juicy and succulent meat to enjoy. Remember carry over cooking will happen after being removed from the oven. So that temperature will continue to rise for just a little while.
This really is a dish you cannot mess up as long as you follow these steps. I have been doing this for many years. This is my daughter Micah's favorite meal and she will be so happy to have this video as a reference to be able to roast one for herself!

Summer is coming and in our world nothing is better for dinner on a hot summer day than a loaded salad with delicious dressing! Today we are sharing what we consider three essential salad dressing recipes that are sure to please even the pickiest customer! Nothing is better on a hot summer evening than a cool, delicious salad. Nobody wants to heat up the kitchen and these three salads are not only quick to make but are low carb to boot! Starting off with my favorite deluxe bacon cheeseburger salad, this one has turned into a family favorite to be sure! Full of all the delicious flavors of your favorite fast food burger, complete with that ever popular "secret sauce", I promise you won't even miss the bun! Next up is my delicious spin on a classic! Southwestern Cobb salad combines grilled chicken, fresh greens, a delicious roasted corn and bean salsa as well as some of your favorite salad veggies and all topped off with a smoky delicious honey chipotle vinegarette. This one is such a departure from the norm, but a refreshing one at that! Last but not least our Cali-Club salad! This is like a chef salad on sterioids! Everything you would expect from a club sandwich but without the bread! Greens, veggies, ham, turkey, cheese and bacon then topped off with a drizzle of my creamy bacon dressing! SALT FREE GARLIC & HERB SEASONING!! MRS DASH DUPE!!
Today I am sharing a delicious seasoning blend that was requested by a viewer who said she had a hard time finding the Mrs. Dash Garlic and Herb seasoning. I actually use this seasoning often and we love it on just about everything! It's even a great pizza sprinkle! So since not everyone can find this I thought it was a great idea to add this to the channel. Not to mention this is a great way to use up the seasonings and spices you have on your spice rack to rotate them out for freshness. FREEZER READY FLAVORIZERS!! HOW TO FREEZE FRESH HERBS AND MORE!!
When I shared how to freeze fresh aromatics for quick use in recipes, the response was amazing! So many people started asking questions about other vegetables and even herbs that could possibly be frozen to be used the same way. Many suggested that they freeze cilantro whole and break off what they need from the frozen stems. I have never tried that, but if it works, that's great! Today I am sharing how I freeze tender herbs and as a bonus how to freeze that extra bit of tomato paste that inevitably ends up in the trash when it gets lost in the back of the fridge. These are tips I hope you find useful not only because they are easy, but because they save money and are just as important as having a great recipe!
Preserving herbs can be done in a number of ways. You can dehydrate or hang them to dry and crush them and jar them up. You can blend them with oil and keep them in your refrigerator or you can do what I am sharing today. Making fresh herb cubes that are frozen and easy to grab to add to recipes. This method preserves the natural color and flavor of the herbs and makes for a great way to have the fresh taste of your favorite flavorizers at your fingertips even when they are not fresh from your herb garden!
I know that many will be getting ready to plant their spring gardens and that will include herbs such as parsley, basil, cilantro, mint and more. Many of our favorites will be perfect for this method of preservation. I do recommend herbs that are tender such as those listed above. Oregano and even chives will be good choices as well. I do not, however recommend more woody herbs such as rosemary and thyme. Those are best left for drying or putting in flavored oils.
The process is simple. Start with a lot of fresh herbs. In this case I am demonstrating with two bunches of cilantro that I have washed and rolled in paper towel to dry. I am using about 1/2 cup of water for approximately one and a half bunches of cilantro. I want enough to fill up one standard ice cube tray. You may be tempted to add more water, but try and resist. This will dilute the flavors too much and you really want this to pack a punch flavor wise.
Place the water and the herbs in the blender. If you have a blender with a tamper even better. I have an old school Oster that works for me, and I am able to use a small silicone spatula to gently push the material down into the blades. This works very well. It takes a few minutes and you will have a wonderful puree of your favorite herbs in no time! When everything is well blended, simply pour into a clean ice cube tray and disperse evenly. Freeze for several hours or overnight then pop the cubes into a labeled freezer bag or air tight container to use whenever you need an herbacious addition to your favorite recipe!
I made up some cubes with fresh Italian parsely in advance so I could show you the finished product. These are great to add to soups, stews, any time you are browning ground beef or ground chicken or turkey, to add to a casserole or a taco filling. The cilantro can easily be used in your favorite salsa or any time you need a pop of flavor. The best part here is you can make custom blends! Cilantro, oregano, garlic and shallot. Basil, garlic and onion. You could even make some cubes up with fresh ginger, turmeric, garlic and lime. Your imagination is your only limit! You should use what you find yourself using most to make herb cubes that will be needed for your favorite recipes on a regular basis. These should last at least six months in your freezer when properly sealed.
I also shared how to freeze tomato paste in little portions that are perfect for all those times when you need it and open that little can but have some left. We have all done it. Then it ends up in the back of the fridge either dried out or moldy and it gets tossed. No need to toss it! Freeze it! Now you have no excuses!

CHOCOLATE CHIP COOKIE MIX!! GIFT IN A JAR!! HOMEMADE HOLIDAY!!
Nothing beats a gift from the kitchen or something handmade during the holidays! We all like to give and receive these welcomed items! In an effort to get a good jump on holiday gift giving ideas this year we are starting a bit early with this quick and easy, chocolate chip cookie mix in a jar! These go together fast and you can assembly line these in an afternoon and have a bunch of easy gifts ready to give all season long! I have prepared a sheet with four tags that you can print and cut and use to attach to the jars to help the recipient know how to make these delicious chocolate chip cookies!
I have received so many requests for gifts in a jar that I had to start this off with this chocolate chip cookie mix. So easy and budget friendly! Yes the person receiving has to make it up for themselves but who doesn't love a warm chocolate chip cookie, fresh from the oven? They will love you for thinking of them and they already have what they need to prepare the recipe which is butter, one egg and some vanilla. Everything else is in the jar!
Constructing these jars is easy but there are a few rules and tips to consider. First, you always want a jar that is large enough to fit the ingredients but you don't want one that is too large that the contents will just mix up. You want the separation to be seen, it is what gives this gift it's charm. Secondly you want to tamp. Each layer will need to be fully settled before adding the next otherwise you run the risk of running out of room in your jar. Tapping the jar on the counter several times can help as can a tamper to help things along.
The cookie mix starts with a blend of all purpose flour, baking soda and salt that is blended then poured into a one quart jar. Tamp that layer down well then add the chocolate chips on top. Tamp again and add the brown sugar, This is where you will want to really press that down with some sort of tamper. A bent spoon or a wooden tart tamper or even a small glass with a flat bottom will work. You will want to make sure you have enough room for the granulated sugar to sit on the top layer. Now all you need to do is tamp again and put a lid on it! Note, that the jar will be very full all the way to the top.
Filling the jar to the top helps to keep air out. If you have a vacuum sealer with a jar attachment you can use that with a standard canning flat lid and ring to ensure freshness. You can safely prepare these up to 8 weeks in advance of your gift giving. You will want to be sure to seal them accordingly and make sure the brown sugar does not harden making it difficult for the recipient to get the mix out of the jar.
Now for the fun part! Decorate that jar to your heart's content! I have prepared a sheet of tags that you can use to attach to the jars prior to giving. Just cut them apart and punch a hole then attach with a pretty ribbon. Or you can pop the jar in a cute small gift bag and give to your friends, family or coworkers.
I am aware that currently there is a problem in some parts of the country obtaining canning jars. Do not think that you must use a canning jar to give this mix! You can use recycled jars from your groceries that you have soaked the labels off of and washed and thoroughly dried. You can even spray pain the tops to coordinate with your theme. Alternatively you can build this mix in a cellophane bag that can be ordered online then tie with a bow and give with the instructions. If you really want to go all out, take that cello bag of cookie mix and pop it into a cute mixing bowl with a matching spatula, and a couple of wooden spoons. Pop into a shrinkable gift basket bag from the dollar store and use your hair dryer to shrink it down. Tie with a pretty ribbon and you have an impressive gift for anyone on your list!

EASY HOMEMADE CREAM CHEESE SPREADS!! CHIPOTLE RANCH & PINEAPPLE JALAPENO!!
Today we are using our homemade cream cheese in a couple of delicious spreads that are great on crackers, toast, bagels, sandwiches, wraps or whatever you enjoy cream cheese spread on! These are quick to make and they are seriously delicious! I made a chipotle ranch spread that is spicy, smoky and savory as well as a pineapple jalapeno spread that is light, tangy, sweet and just a little spicy. These are so good you are going to want to try them right away!
I am using my homemade cream cheese that we made in a previous video, but you can feel free to use a brick of store bought cream cheese, it will work just fine! I weighed out my cream cheese using a kitchen scale to be sure I had the right amount and got lucky that they both were exactly 8 ounces each!
You want to start off by whipping the cream cheese until light and fluffy then scrape down to be sure you get every morsel. You will see how soft and smooth it is. I made the chipotle version using some of my homemade ranch dressing mix, but you can use the ranch seasoning you buy from the store as well as some minced garlic and canned chipotle in adobo sauce. These were blended up using a hand mixer until well combined. Then just pop into an airtight storage container and store in the fridge for up to three weeks! Remember not to freeze these!
You can really make a fruity cream cheese spread using any type of your favorite jam or preserves you like. Be sure not to use jelly because that is just too liquid and runny. The chunks of fruit provided by jam or preserves really is the key. Think of some of your favorite combinations and come up with your own creation! It's really easy and in the end you have something delicious to share or snack on yourself!

CLASSIC HOMEMADE MEATLOAF!! RETRO RECIPE!!
Today I am sharing with you one of my most requested recipes of all time! My classic meatloaf recipe! Yes, that's right, my most requested recipe is meatloaf. I cannot tell you how many times I have been asked to make meatloaf! It all comes today! This is a classic dish that everyone seems to love. It's about as retro as you can get and using my homemade meatloaf seasoning mix, you are going to be able to make meatloaf quick and easy and have a delicious dinner with leftovers to boot! This recipe will make two medium sized meatloaves. Enough for a family of four to eat twice with leftovers for sandwiches. You asked and today I deliver!
Meatloaf seems to be a love it or hate it kind of dish. I grew up hating it. I did not love meatloaf until I made it myself and figured out what I love and what I don't love about this ubiquitous, classic. I am not a fan of the ketchup glaze. My mom never used the glaze, but she did make meatloaf that could be used as a door stop. It was crunchy for the first inch or so around a nugget of tender meat inside. Now, my mom was a great cook but meatloaf was never her strong suit.
As an adult, I moved on to making meatloaf with a seasoning packet, but when we moved from Arizona and I could no longer get my favorite one, I stopped making it. Thus the reason it has taken me so long to actually share a meatloaf recipe with you. Since figuring out how to replicate the right flavor combinations I can now do just that. This recipe is very versatile. You can take this basic and take it anywhere you like. The possibilities are endless as are the flavor combinations.
I like to start with good quality 80/20 ground chuck combined with an equal amount of ground pork. 2 to 3 or even four pounds of meat depending on how many loaves you want to make. I am using 1.5 pounds of ground meat here. 1 pound of ground chuck and 1.5 pounds of ground pork. I usually use equal parts of each and find that this makes the best combination. You can also do 2/3 beef and 1/3 pork, but I find the pork addition to be important for a tender, moist meatloaf.
You can always use what you prefer, ground turkey, chicken, bison, elk, venison, whatever is your preference, however, note if using those meats, which are very low in fat, in order to obtain a moist meatloaf you will want to add fat back in such as bacon, ground sausage or even some olive oil to the blend.

I am using 1/4 cup per pound of meat of my seasoning blend, 1 egg per pound of meat and 1 cup each of both dry seasoned and fresh bread crumbs. I use a hamburger bun that has been frozen and while it is till frozen run it over the fine side of my box grater to get the fresh crumbs. You can always use a food processor to do this but since it is only one bun, why go to the trouble of dragging that out and having to wash it after the grater does a fine job.
I am also adding 1/2 cup of milk and 1/2 cup of ketchup to the meat mixture to give moisture and flavor. If you do not want to use ketchup you can leave it out but add back the same amount of milk, water, marinara, salsa or bbq sauce.
To make this magic happen, break the ground meat up into a large bowl and then toss in the rest of the ingredients. Gently blend with your hands until you see the mixture come together. then form into however many loaves as you like shaping them into oblong ovals and placing them on a baking sheet that has been lined with parchment paper. Today I made two. One for dinner and one for the freezer.
These baked at 350 degrees for between 45 minutes and an hour and were removed when the internal temperature read between 155 and 160 degrees. If you are glazing, remove 15 to 20 minutes before they are done baking and top with your glaze then return to the oven for the last bit of time. Remove from oven when done and allow to rest for at least 10 minutes before slicing and serving.
Now you know how to make a delicious, homemade classic meatloaf. Just like your mom may have made.
