3 PRESSURE COOKER COMFORT FOOD MEAL IDEAS!! QUICK & EASY!!
This week we are revisiting three of our favorite comfort food meal ideas all made in the pressure cooker! These all go together quick, are super easy to throw together and are all so delicious and comforting you and your family are going to love them! The beef and noodles is a favorite of my youngest and has slow cooked flavor like you worked hard all day tending to this tender beef stew! The creamy chicken and rice is a pantry pull blue ribbon winner! You can use canned chicken breast, rice and some cream of chicken or celery soup along with some seasonings to make this creamy and satisfying meal, serve with a side salad and steamed veggies and maybe even some cranberry sauce this is an amazing meal everyone will love! The Swiss steak is the perfect Sunday dinner with all those old fashioned flavors. Serve with mashed potatoes for full impact! These three are definitely going to be saved for future reference! BACHELOR STEW ONE POT PASTA DISH!! PANTRY COOKING RECIPE!!
Today I am sharing a pantry recipe that has been in my family since I was a kid. My stepdad brought this now family favorite to us and he called it "bachelor stew". It is a dish he would make when he was single. He made it once a week in a big batch and ate off of it all week long. We loved it as kids and I still love it now and so do my kids. Its full of good, simple ingredients that you may already have on your pantry shelf and in your freezer. Quick to throw together and so satisfying and delicious! Comfort food at its best!
This is really a simple, one pot pasta dish that relies on many pantry staples. It starts with some ground meat. I am using ground beef but you can use chicken, turkey or pork if you like. I am adding some chopped onion and garlic and do enjoy using some bell pepper but Micah is not a fan so I left it out this time. I browned the ground beef as you would for any dish of this type or even tacos. Just be sure to get some "brown" on there and not just cook it. I always say you want the pan to sizzle, not simmer, be sure all the water has cooked away before adding the vegetables.
I just add the onions and garlic along with some salt and seasonings of your choice. I used a good palm full of Italian seasoning here. If you like, put a Neopolitan twist on this by adding some black olives, capers and roasted red peppers if you keep those on your pantry shelf, chop those and toss them in with some canned mushrooms with their liquid.
Next you will want to add one pound of short cut pasta, such as rigatoni, rotini, penne or ziti. Radiatore, Orecchiette and Cavatappi will work here as well. Just not long pasta like spaghetti or angel hair. You really want a good hearty pasta to hold up to the cooking and the sauce.
Now you can add one large jar (45 ounces) or two smaller jars of your favorite pasta sauce. Our favorite has always been Ragu, super chunky mushroom, but you should use what your favorite is or whatever you have on hand. If you don't have a jar of pasta sauce, use some canned tomatoes and a can of tomato paste and season that up to your preference. Now add in a bit of water. I added 1 cup and give everything a good stir. Bring to a simmer and reduce to medium heat and put a lid on it. Allow to simmer gently for about 15 minutes or until the pasta is just perfect. I like mine al dente, but if you like yours a bit more done, then cook it longer.
Now you are ready to serve up a delicious, one pot pasta dinner! Top off with some parmesan cheese and you are good to go! Serve with some garlic bread and a nice salad or steamed green beans or whatever veggie you have for a complete meal. In the alternative, you can choose to add whatever vegetables you like right to the pot. Some diced zucchini or shredded carrots would be nice here and if you saute them with the meat before adding the sauce, your kids won't even realize they are in there. Points for mom!
This makes a lot. Enough to feed my family of four adults for two full dinners and a couple lunches. You can keep the leftovers in the fridge in an airtight container for up to a week. Or you can freeze them for up to three months. I recommend turning the leftover bachelor stew into a pasta bake! layer into a casserole. Add some ricotta and mozzarella cheese and freeze until ready to use. Then bake until browned and bubbly! Two dinners at one time! What could be better than one to eat and one to freezer bank?

CLASSIC CORN CHOWDER!! MY AUNT DEBBIE'S RECIPE!!
Today I am sharing a recipe for a delicious corn chowder that comes straight from my aunt Debbie! She hosted my dad and my girls this summer for a few days when they went on a road trip to New Jersey and she made this chowder. The girls raved about it so much, I knew I had to get the recipe. This chowder is filling, satisfying and the perfect way to enjoy the summer corn harvest to its fullest! Pair this with a tossed salad and some bread or biscuits and you are in for a treat!
This recipe starts with corn as you might suspect. Six cobs of fresh corn makes a nice pot of chowder that served the four of us, my dad and had two pints left over. Aunt Debbie usually boils her corn. You can cook yours how you like. I pressure cooked mine with a bit more water than usual so I would have corn water left to use in the soup. If you don't have the corn stock, you can use veggie stock, chicken stock or just water. It will be great any way you do it. Another secret to a nice thick soup full of corn flavor is to scrape the cobbs after you have cut the kernels off. This will get all the extra corn goodness out of those cobbs and you can really infuse your chowder with that flavor.
This is a very simple soup! Corn, potatoes, some celery, onion, a bit of roasted red peppers and a can of tomatoes and green chilies top it off. You can make this to suit your taste as far as the spices go, but I think this combination is just right. Make it creamy with some half and half and season up with some paprika, salt and a pinch (and I mean a pinch) of Cayenne and you will be so happy you made this!
This soup is hearty, satisfying and soulful. You can adapt this to suit your needs. If you prefer vegetarian, use veggie stock or corn stock. Prefer it to be vegan, do the same but instead of half and half add 1 can of coconut cream and three cans of coconut milk or almond milk and almond cream. Your choice. In place of the butter you can use your favorite margarine or vegetable based spread. We love Melt brand spread if you haven't tried it, look for it!
This chowder goes together super fast and does not take a lot of work to put together. You can also use frozen corn, but it won't be as flavorful in the end. I recommend that if you use frozen corn that you add some creamed corn to richen the soup. You can also freeze this soup and enjoy later. If you make a batch you can store in an airtight container in the freezer for up to three months.

PINEAPPLE HAND PIES!! PI DAY SPECIAL!!
Today is PI Day! So Happy National PI Day! It's March 14 or 3.14. Get it? All the math nerds groaned. Not to worry! We can put a smile on their faces once again with this quick and delicious dessert that you can whip up in no time with nothing but a sheet of puff pastry and some filling. I am using my pantry pineapple pie filling and a sheet of refrigerated puff pastry from the grocery store. Make them larger or smaller, your choice! Don't like pineapple? Use your favorite pie filling or preserves or jam. Maybe you have a delicious homemade fruity jam recipe that you love. Put it in there! If you so desire, how about some chocolate chips for a delicious chocolatey version instead? The only limit is your imagination.
I have used a convenient sheet of refrigerated, not frozen puff pastry. I recently discovered this option when doing my online grocery order and could not be happier with this product. No waiting! Just roll it out and make what you like. As I mentioned in the video, I recently made some pigs in a blanket for a church function using this pastry and it is wonderful so if you are shopping look for it near the refrigerated roll out pie crust and refrigerated biscuits.
I am using my pantry pineapple pie filling in these because pineapple pie is amazing but if you don't like that and wish to use another favorite pie filling, then pop open the can of your choice and go to town! No rules here. Make them your own and enjoy!
Tips and tricks from my perspective are to cut them the size you like then don't over fill. But Don't underflll either, you still want a fruity center! Then use some water to run around the edge of the pastry and fold it over and seal well with a good press of your fingers, then take a fork and crimp those edges really well. You don't want these to bake open and release all their filling goodness!
Next be sure to brush your pastry with some egg wash. I used a whole beaten egg. You can use just the yolk or even some heavy cream if you like. Every thing you do different will give you a different resulting finish. I like the golden brown and shiny finish that the egg wash gives here. I also sprinkled mine with some coarse crystal sugar for a bit more crunch and sweetness.
Make sure your oven is well preheated to 425 for conventional ovens and 400 for convection ovens with the convection setting on. This will help to ensure that your pastry will get hit right away with that hot blast of heat and start to do it's thing the way you want it too!
These baked for just about 25 minutes. Be sure that they have browned all around. Top and bottom. You want to make sure that your puff pastry is not soggy on the bottom and a brown bottom will help you to know they are perfectly done.
These are delicious! Make them soon whether they are to celebrate Pi Day or not! I know you are going to love them!

3 FAMILY FAVORITE CASSEROLES!! CLASSIC COMFORT!!
Today I am sharing three delicious, family favorite casseroles! These are tried and true, time tested and make everyone happy! Who doesn't love a comforting, creamy casserole? These are three of our famiy favorites! King Ranch Casserole is a delicious Tex-Mex casserole that is filled with creamy goodness, chicken, corn tortillas and cheese! My classic tuna noodle casserole is everything you would expect and served with our favorite side of stewed tomatoes mixed with green beans you have a seriously delicious and satisfying meal. Last but not least is my Amish style ham and noodle casserole! This gets its creamy base from sour cream and cream cheese. Add in some diced ham or even some chicken along with some frozen spinach and you have a wonderful spin on a noodle casserole. This one is topped with buttered bread crumbs for a crunchy spin! I hope you will give all of these casseroles a try sometime soon and I hope you love them!

EASY CHEATER ENCHILADAS!! QUICK WEEKNIGHT MEAL IDEA!!
Today I have a fantastic cheater meal for you. This one gets on the table in just about a half an hour and boy is it a delicious people pleaser! These cheater enchiladas could not be any easier! Frozen taquitos make this super fast and sort of "cheater". These bake up so good! Pair with your favorite side for one delicious and quick weeknight meal for those crazy busy days that never seem to end!
We used some beef and cheese and some chicken and cheese taquitos. I used some canned red enchilada sauce on the beef taquitos and some canned green enchilada sauce on the chicken taquitos. Topped the red sauce with a Mexican blend cheese and the green sauce with some shredded mozzarella. If you have access to queso blanco then use that but in a pinch the mozz is boss.
These bake up in about 20 to 25 minutes in a 350 degree oven. I paired mine with a guacamole salad like you sometimes get on a combination plate at your favorite Mexican restaurant. I used some bagged shredded lettuce and some deli guacamole topped with some diced garden tomatoes. I added a dollop of sour cream to the enchiladas when serving but you could also sprinkle on some cotija cheese or green onions or all of the above! You make these however you and yours will love them!
NOTE: this concept is also wonderful using good quality frozen burritos or chimichangas. Those might take a bit more sauce but they do come out as a delicious smothered burrito or chimichanga. I promise they won't disappoint!
No shame in using some quality convenince items from time to time and this is one of those times that it feels good to put a delicious hot meal on the table instead of spending big bucks on take out!

IRRESISTIBLE THANKSGIVING: 3 PERFECT NO-BAKE PIES
We all need to be planning our holiday meal. Nothing is better than a no bake pie to get things started! You can also assign this task to someone on the morning of Thanksgiving when you are busy doing the bird or prepping the dressing or something else. The easiest chocolate pie is also a great gateway learning recipe for children who want to be active in the process of contributing to the meal!
I thought that today's video should feature some quick and easy no bake pie recipes that are quick to whip up, can be made the morning of Thanksgiving, and are easy enough to task a teen with preparing while you may be busy with your bird! Classic, chocolate cream pie, jaunty, pumpkin cheesecake pie and my all time favorite ever, lemon supreme pie! These can all be made with either a graham cracker or cookie crust or with a blind baked pastry crust if you have a little more time, but these work either way and they will be delicious! So have at it, grab some of the ingredients off your pantry shelf and a few out of your fridge or freezer. I use home made whipped cream all the time for my pie recipes and toppings, but you should feel free to use a standard container of frozen/thawed cool whip if that is your preference. Whatever works for you is a great time saver and it will be just as delicious! I hope you give these no bake pies a try for Thanksgiving day and beyond!

ROCKY ROAD CLUSTERS!! SWEET HOLIDAY TREAT!!
Today I have a quick and easy sweet treat for you. This is a totally shareable an giftable treat for the holiday season. If you are a fan of quick and simple this is for you! This one really harkens back to the candies of yore. I mean this one is really delicious and a total throwback to my childhood! Remember the candy counter at the Sears Roebuck store? These were a favorite of my grandfather and he would get some of those and I would get Swedish fish. That is a happy memory!
These use only a few ingredients and it is also totally adaptable to a change up! Don't like marshmallows? Make straight up peanut clusters! Or use the nut of your choice! Pecan, walnut, almond or even shelled Brazil nuts will be delicious! Want to use some raisins or dried cherries? Perfection! Or you can mix this up and do a fruit and nut cluster with the nut and dried fruit of your choice. I don't think there are any wrong choices here!

3 EASY WEEKNIGHT SHEET PAN DINNERS!! FAST AND FLAVORFUL!!
Let's start the week off on the right foot with a few of my family's favorite sheet pan dinners! This is really a guideline as I have not provided any recipes. Sheet pan dinners are what you make them. Here I am sharing three that are simple inspirations! One with fish, one with chicken and one with pork chops! All roasted in the oven, all done with fresh veggies of your choice and all delicious!
Your imagination is your limit, you can turn just about anything into a sheet pan dinner. These three ideas are quick to make as long as you have thawed protien. Its a great way to clean out your produce drawer and if you are plum out of fresh veggies, raid your freezer from bags of frozen goodness that you can pop on to that sheet pan! No matter what you choose it is going to be delicious!

Today I have a delicious sweet summer treat for you! This delicious, no bake, pecan cream icebox pie! This will be the warm weather, alter ego to your favorite holiday pecan pie. This is rich and delicious and creamy and nutty and it fulfills all your sweet treat dreams for those warm summer evenings! I promise this so simple and whips up together fast. The only thing that takes a bit, is waiting for it to chill! I know this will soon become a favorite for summer entertaining or anytime!
While you can make this in a blind baked pastry crust, I opted to do the graham cracker crust to make this totally no bake and I am glad I did. The graham crackers compliment the rich nutty filling perfectly and they work together well. I like to use the larger 10 serving graham cracker pie shell to get a nicer looking pie with the amount of filling that this makes. You can also make individual tarts with this filling if you get the graham cracker tart shells.
This starts with whipping some heavy cream with some powdered sugar, vanilla and maple extract until stiff peaks form. Then you will set that aside and beat some cream cheese until it is soft, light and fluffy and add brown sugar and salt. Then you fold the whipped cream mixture into the cream cheese mixture and fold in some chopped pecans. Pour that into your pie shell and smooth out. Top with more chopped pecans and today I am using some salted caramel pecan halves as well. Put the lid on your pie crust and chill for at least 2 hours. It was perfectly set after chilling for 5 hours and it came out in a beautiful clean slice!

NO BAKE PINA COLADA SQUARES!! ICEBOX DESSERT!!
Today I am pulling a recipe from the vault. This was shared back in 2015 and it is a great dessert for hot summer nights! This pina colada ice box squares recipe is super simple to throw together and boy is it packed with flavor! It has simple ingredients that you may already have on hand and it is family friendly but delicious enough to serve to guests after a delicious grilled meal! Graham cracker crust studded with toasted coconut topped with a creamy mixture of cream cheese, sweetened condensed milk, crushed pineapple and coconut then topped with even more delicious toasty coconut! This one is definitely a winner for anyone who loves the tropical combination of pina colada!

Today I am sharing my contribution to Souptember! This is being hosted by Leanne at the Mennonite Farmhouse channel. I am doing a remake of my very old video for one of my favorite, belly warming, comforting soups, Pasta Fagioli. HEARTY BACON RANCH PASTA SALAD - A perfect pasta salad side dish or main dish
Today we are sharing a hearty pasta salad that is super customizeable to your taste. Ours is a hearty bacon, ranch pasta salad with lots of fresh veggies and homemade ranch dressing! Perfect for a side dish as we made it, or a light lunch. You can also bulk it up with more protien like some diced chicken, steak, salmon or tuna to make this a full on dinner. Filled with delicious fresh ingredients like bell peppers, green onions and sharp cheddar cheese not to mention the rich, smoky goodness of crumbled bacon, this salad is the perfect side dish for your grilled chicken dinner or the perfect light, packable lunch for the week. RUBEN DOG!! HOT DOGS OF SUMMER!!
Summer is in full swing and it's time to add to our Hot Dogs of Summer playlist with this beauty! We are taking your favorite, summer favorite hot dog and mashing it up with your favorite deli favorite, the Ruben sandwich! This one is a true keeper and when I say its delicious I am serious! I could not believe how amazing this combo was and I know you are going to love it!
I first boiled my dogs because they were frozen but if yours are thawed just toss them in the skillet with the amazing topping we make! That topping consists of some delicious, super thin corned beef from the deli that I just broke apart and shredded by hand. I tossed that in a hot skillet with some butter and allowed it to become warm. I am not trying to brown or crisp the meat. Then I tossed in my drained sauerkraut and mixed everything together and allowed that to sizzle so some of the moisture evaporated. I also tossed my hot dogs in the skillet and just pushed the topping over to one side of the pan. I like to brown my dogs in the butter just until they have a little color on them. This is not completely necessary. Just a personal preference. Now we build!
We used some delicious pretzel dogs but you can choose your favorite hot dog bun. If all you can find are pretzel burger buns, the split your dog down the middle so it's flat and build from there. I used some baby Swiss cheese and laid it on the bottom of the bun then nestled my hot dog in there and topped it with the frizzled corned beef and kraut. And because I believe that no self respecting Ruben would be caught dead without dressing, I drizzled on a generous portion of Thousand Island over the top!
This is a Ruben dog in all it's glory and I tell you that this is one of the most delicious things you will eat this summer should you choose to try it! I hope you do give this a try and i hope you love it!

Today I am sharing a recipe straight from my mom's recipe box. Her creamy mushroom chicken is totally company worthy and it is so delicious people will be asking you for the recipe! This one takes a little bit of work on the front end but after that it's smooth sailing! This chicken is fall apart tender, flavorful and has a delicious creamy sauce that will seem like it came from a four star restaurant! I know you are going to love this one!

SMALL BATCH SEAFOOD SALAD DELUXE!! PERFECT LIGHT SUMMER SUPPER!!
Today we are revisiting a recipe that I made a video for about 8 years ago. My seafood salad deluxe for a crowd is such a delicious meal in itself but I don't know about you, but I certainly don't need to make 6 pounds of salad for myself! So today I have reworked and reformulated the recipe to be a bit smaller but just big enough that you can easily meal prep for the week and have this on hand to take for lunches for a planned sandwich night dinner!
This seafood salad is so delicous that all you really need are some crackers or even a bed of greens to make this a delicious, quick and easy, light summer meal. I hope that you give this a try and I hope you love it!

Today we are getting crafty in the kitchen with XTool! The good folks at XTool sent me this awesome machine to play with and give my honest review. This is not a sponsored video and I did not receive any compensation for my opinion. I only received the unit in exchange for a video giving my thoughts. This is the first of it's kind combination laser cutter, engraver, scoring and blade cutting machine in the industry. If you are a cottage crafter this will be of interest to you! Side hustle vibes are huge with this one!
As I said, if you are a crafter you are already familiar with blade cutting machines like the Cricut, Cameo, Silhouette and more that will cut vinyl, paper, fabric etc. You may also be familiar with a machine called the Glowforge which stormed onto the scene a few years back and changed the way people went from crafting in their homes to making a business of their crafts. Turning their homemades into handmade works of art that were sought after and given a hefty price. The XTool is a cottage crafters dream combination desktop version of those two tools combined! A laser cutting, and engraving machine as well as a blade cutting machine that you can use in your craft room or your work room. This is a great jumping off point if you are in the process of thinking about taking the plunge into cottage crafting and have not yet purchased your first piece of equipment.
Not going to lie, THIS IS AN INVESTMENT! I REPEAT! THIS IS AN INVESTMENT! An investment in your business, an investment in your future and an investment in you! If you truly want to take that next step and see where your amazing makes take you then I honestly cannot recommend this piece of equipment more. It takes up a small footprint. You only need a little space in your garage or spare room but make sure you have a window or that your garage has a door or is well ventilated because this needs to have the hose placed out and away from the machine. Off gasses and smoke from the laser process are not something we want to be inhaling. Other than that, this is a dream to use! the best and coolest part is the camera inside the unit is where you will design you piece inside of a design program much like that of the other programs you may already be familiar with! So it is super easy to get used to and you will already be comfortable with it!
Final thoughts, Do I think this is for everyone? Nope! Not by a longshot, but I do think it's for people who want to make a bit of a side hustle or who do a ton of crafting for gifts. I don't love the hose, but know it's necessary. I am not a huge fan of the blade cutter capabilities. Definitely not like my Cricut Maker, which I will not be abandoning anytime soon, but I am happy that this has the blade cutting option. I wish the unit came with more written instructions or simple step by step points. They do have a great playlist on their YouTube channel where you can learn how to do everything. We had a heck of a time figuring out how the WIFI worked on the machine but we figured it out from their video. Overall I am being nitpicky. I really love this machine and not because I got it for free. I am seriously excited about having it and using it. I will be making all my holiday gifts for family and friends this year. This is a true blessing due to the fact that I may be having surgery and won't be able to do as much as I usually do!
