Sambal Chicken Bowl
Ingredients:
4 cups water2 cups Jazmine rice3 large peppers2 cups butternut squash1/2 red onion2 heads broccoli4 tbsp olive oil4 tbsp soy sauce1 tbsp sambal1 tbsp honey1lb diced chicken
Directions:
Preheat oven to 400°. In a large pot, boil water and pour in jazmine rice. In a large bowl, mix together peppers, butternut squash, onion, broccoli, and olive oil. Pour mixture onto a baking pan and bake in oven for 30 minutes (or until cooked and crispy.
In a small bowl, combine soy sauce, sambal and honey. Pour mixture over chicken and place in frying pan. Cook until chicken isn't pinky or transparent. Add all ingredients into a bowl and enjoy! Top off the bowl with more sambal for an added kick.

Cinnamon Toast Brunch
Ingredients:
1 c cornflakes
2 eggs
1/4 cup softened butter
1 1/2 TBSP cinnamon
1 TBSP stevia
1/2 c milk
2 sweet hawaiian hamburger buns (or texas toast slices of bread)
3 pieces maple bacon
3 mozzarella cheese sticks
2 slices Havarti cheese
Pour 1 cup cornflakes into sandwich bag and smash. Pour smashed cornflakes into shallow dish. In another shallow dish, crack 2 eggs, 1/4 cup butter, 1 tbsp cinnamon, 1 tbsp stevia and mix well. Dip top and bottom of hamburger bun, one at a time, into egg mixture. Dip both pieces of bread into cornflakes. Set aside.
In small saucepan, cook bacon lightly. Wrap bacon around mozzarella sticks. Set aside. In another saucepan, place bottom of hamburger bun in center.
Add 1 slice of mozzarella cheese and all 3 mozzarella sticks on top the bottom bun. Place other bun on top, followed by one more slice of cheese. Cover the saucepan to melt cheese with burner set to medium low heat.
Once the cheese has melted, remove from heat. When ready to serve, drizzle maple syrup on top.

Pulled Pork Wonton
Ingredients:
8 oz pkg of cream cheese, softened
2 cups BBQ pulled pork
3 cups shredded mozzarella
1/2 cup buffalo sauce
2 tbs garlic powder
2 tbs parsley
Oil for frying
2 pkgs of wonton wraps
Directions:Mix all of the ingredients above. Once blended, place on parchment paper and freeze. 1 hour should do the trick. Remove from freezer and cut up into small squares. Heat oil for frying. Place each piece in water basted wonton. Twist sides to completely cover pulled pork mixture. Fry in heated oil until slightly brown. Remove from heat and drain excess oil. Serve as appetizer with Ranch Dressing.

Churro Bison Burger
Ingredients:
4 3/4"-1" thick angel food cake slices
2 eggs + 1 egg for meat
1 cup crushed cornflakes + 1 TBSP cinnamon + 1 TBSP sugar
8 oz ground bison
4 slices bacon
1/2 cup sausage pieces, diced
1/4 cup mushrooms, diced
1 tbsp garlic
1/2 cup onion, sliced
2 tsp sugar or stevia + 1 TBSP
1 tsp chili powder
1/2 cup Parmesan, shaved or shredded
1/4 cup arugula
1/3 cup cranberry chipotle cheddar (or other specialty cheddar)
2 1/2" pineapple slices
2 tbsp heavy cream with 1 TBSP ranch
Directions:
Cut Angel Food Cake into 3/4"-1" slices. In bowl, mix 2 eggs well. In another bowl, combine crushed cornflakes, cinnamon and sugar and mix well. Dip cake slices first into egg mixture, then cornflakes, then place in medium low heat buttered saucepan. Repeat for 3 other slices. Watch closely til cornflakes turn golden brown. In same pan over low heat, place onion slices with 1 TBSP sugar or stevia to caramelize. In large bowl, mix bison, sausage, mushroom, garlic, stevia, chili powder, and egg. Make into 4 patties and pan fry over medium heat in saucepan. To build sandwhich, place cake slice, then cooked bison, parmesan cheese, arugula, cranberry chipotle cheddar (or other specialty cheese), slice of pineapple, ranch cream, carmelized onion and finally last angel cake slice. Enjoy!

Glass Noodle Sesame Salad
Ingredients:
For the salad:
8 oz dried brown rice glass noodles
½ small red onion, cut in half, then sliced very thin
1 red pepper, seeded and sliced very thin
2 carrots, shredded
1 small baby bok choy, sliced very thin
2 collard green leaves, sliced very thin
1/4 cup of sesame seeds
Sea salt and pepper to taste
For the dressing:
3 tablespoons of sesame oil
3 tablespoons of fresh lime juice
1/3 cup of tamari sauce
1/3 cup of water
1 1/2 tablespoons of rice vinegar
3 teaspoons of miso
3 dates, pitted
4 garlic cloves
1 1/2 tablespoons of fresh ginger, chopped
Sea salt and pepper to taste
Directions:
1. Cook the noodles in hot water following the manufacturer's instructions. Once cooked, drain, and let them cool. Put all of the dressing ingredients in a high speed blender, and blend until very smooth. Put all of the salad ingredients in a large bowl, add the dressing, and mix well until the noodles are well coated. Serve into individual bowls and enjoy!

Shrimp Scampi
Ingredients:
1 stick butter
4 tbsp minced garlic
1lb shrimp
1 cup sweet white wine
salt and pepper
red pepper flakes
1/2 cup chicken broth
1/3 cup heavy whipping cream
1 spaghetti squash
Directions:
Melt butter in saucepan over medium heat. Add crushed garlic and sauté.
After 5 mins, add shrimp. Once shrimp starts to turn pink, add wine and chicken broth. Once brought to a boil, add heavy cream while stirring constantly. Add black pepper, salt and chili peppers. Simmer on stove top.
While sauce is simmering, cut knife into spaghetti squash in several places. Put in microwave for 5 minutes. Turn squash and leave in microwave for another 5 minutes. Squash should now be cooked depending on size. Cut squash in half and spoon out center seeds. Use a fork and penetrate squash leaving spaghetti like strands. Add squash to the shrimp mixture and serve immediately.

No Bake, 4 Ingredient Chocolate Pie
Ingredients:
3 cups of crushed oreos (mix original with mint) mixed with 1 stick of butter.
Stir and form into greased pie plate. Place in refrigerator while you make filling.
Pour 2 cups of heavy whipping cream into a sauce pan and heat on medium heat, stirring frequently. Once hot, remove from heat. Open 5 3.5oz chocolate bars (mix dark and milk) and break into pieces. Add the chocolate to the warm whipping cream, stirring constantly.
Pour the mixture into the pie shell and refrigerate for about an hour. Garnish with chocolate and berries.

Fully Loaded Avocado Toast
Ingredients:
3 oz cream cheese
1/4 c sour cream
1/8 c chives
2 1" garlic bread slices
2 TBSP sunflower seeds
small handful of alfalfa sprouts
2 TBSP garlic, minced
1 cucumber
fresh basil leaves
1/4 c tomatoes, diced
1/4 c feta cheese
1 avocado, in large diced chunks
3 TBSP balsamic vinegar
Directions:
In small pan over medium heat, toast both pieces of garlic bread. Remove from heat and set aside. In small bowl, mix cream cheese, sour cream and chives until smooth. Spread cream mixture over both pieces of toast. Add chunks of avocado, tomato, cucumber, alfalfa sprouts, feta cheese and sprinkle sunflower seeds. Then, spoon garlic and melted butter over both pieces. Add a dash of balsamic vinegar and fresh basil. Broil on low for 5 minutes or until cheese is melty. Enjoy!

Chicken Waffle Burrito
Ingredients:
1 1/2 cup waffle mix
2/3 cup water
1 egg
4 chicken tenderloins
1 egg
1/2 cup italian style bread crumbs
1 tortilla
1/2-1 cup french fries
diced tomatoes
4 slices bacon, cooked
1/2 cup mozzarella or other cheese
diced green onions
maple syrup
Directions:
Mix waffle mix, water and egg in medium bowl til well blended. Pour by 1/2 c into greased waffle iron. Once fully cooked, remove from iron and cut into strips. Set aside. Over medium heat in saucepan, pour oil into pan. Dip tenderloins, one at a time, into egg then italian style bread crumbs, and finally into saucepan. Cook all chicken fingers, turning to be sure they are golden brown and fully cooked. Warm up french fries, set aside. Cook bacon, set aside.
Build burrito by placing tortilla, chicken fingers in a line with waffle sticks next to them. Add various toppings such as bacon, french fries, tomatoes, green onions, cheese and top with maple syrup. Fold burrito up and dip in maple syrup. Enjoy!
