These sweet and spicy noodles are my addiction at the moment. It's super easy to make and so comforting and delicious to eat. Keto vegan and gluten-free of course! It's true soul food in my book.

INGREDIENTS
---------------------------
(Makes 3-4 portions)
Shirataki noodles
Firm tofu
Carrots
Onion
Mushrooms
Garlic
Ginger
Chilli paste ( Homemade chilli paste recipe: https://youtu.be/_qDvjdMxheE)
**Sweet and spicy noodle paste**
1 part soy sauce
1 part toasted sesame oil
2 parts nut butter ( I use peanut butter)
Ground white pepper
A pinch of sweetener of your choice (optional but recommended)
**Garnishing**
Grated cucumber
Spring onion
Fresh chilli
INSTRUCITONS
--------------------------
1. Rinse the shirataki noodle with cold water and drain. Sprinkle some salt, mix it and leave it aside till you are ready to cook them. The salt will remove the "fishy" odour.
2. Chop all the vegetables and tofu in small cubes (finely chop mushroom in "mince size"). Chop/grate garlic and ginger finely.
3. Mix all "Sweet and spicy noodle paste" ingredients together till smooth.
4. In medium heat, sauté tofu cubes till they turn gold brown. Add in the carrots and the remaining vegetable (in the order of cooking time required) and cook till all ingredients are nice and tender. Remember to add in garlic and ginger and chili paste.
5. Add in the "Sweet and spicy noodle paste" and sauté all ingredients together. Taste the mixture and adjust it to your liking.
6. Cook the shirataki noodles in a pot of hot water. Bring it to a boil and simmer for a few minutes. Drain the water and the noodles are ready to go!
7. Top the noodles with the Sweet and spicy mixture and garnish with grated cucumber, spring onion and optional fresh chilli pepper.

INGREDIENTS

(This recipe makes 6 scones)
250g firm tofu
4 tbsp oil ( I use olive oil)
1-2 tbsp plant milk (or water)
120g (1 cup) almond flour
2-3 tbsp ground flaxseeds
1/2 tsp baking powder
1 tsp instant yeast (optional)
1/4-1/2 tsp Cayenne pepper (or mustard powder/paste)
Salt to season
50g vegan cheese (I recommend smoked cheese or mature cheddar)
DIRECTIONS
—---------------
1. Blitz tofu, oil and plant milk in the food processor till it’s smooth and creamy.
2. Add in almond flour, ground flaxseeds, baking powder, yeast and cayenne pepper, plus salt. Pulse the food processor till the mixture forms into a soft dough. (don’t over-process it, you'll lose the airiness)
3. Add in the grated vegan cheese (reserve some for topping) and gently incorporate into the dough.
4. Divide the dough into 6 equal portions and lay them out on a greased baking tray. Brush with oil (including the sides) and sprinkle the remaining cheese on top. Sprinkle with sea salt (optional)
5. Bake in 180c/350F preheated oven for 40-45 minutes till golden brown.
6. Leave to rest for 10-15 minutes (for the excess moisture to escape) and you’ll end up with the most delicious cheese scones.

70g almond flour
PLUS 50g coconut flour

A pinch of salt
2 tsp xanthan gum
1/2 tsp baking powder
Sweetener of your choice (I use 1- 2 tbsp erythritol)
Wet:
1 tbsp olive oil
1 tsp vinegar (or lemon juice)
Vanilla extract
7-8 tbsp hot water (more water may be needed if you use coconut flour)
DIRECTIONS

1. Mix all DRY ingredients together in a mixing bowl.
2. Add in all WET ingredients till it forms a moist dough ball. (add water one tablespoon at a time)
3. Cover the dough and leave it to rest for 15 minutes.
Toast with a waffle maker and ENJOY!

INGREDIENTS

(This recipe make 4-5 250ml pots)
1 tin(400ml) of coconut cream (or coconut milk)
1 level teaspoons agar agar powder (double the amount if you use agar flakes)
1 level tbsp psyllium husk powder
90-100g sugar-free dark chocolate (75% cacao or above recommended)
2-3 tbsp raw cacao powder
(Or simply use 5-6 tbsp raw cacao powder without the chocolate block)
Sweetener of your choice
1.5 - 2 cups almond milk (or any plant milk of your choice)
A pinch of salt
DIRECTIONS
—---------------
Melt the chocolate bar by placing it above a bowl of hot water. (Break in small pieces)
Scoop out the cream part of the coconut cream (you should get roughly a cup, if not, top it up with the plant milk to make a cup) and place it in a mixing bowl.
Pour the remaining coconut water in a pot (roughly a cup), then add additional 1.5 cup of plant milk to make up 2.5 cup of mixture in total. Add in agar agar powder and psyllium husk powder. Give it a quick mix.
Gently heat up the mixture over medium heat till it reaches a gentle simmer, whisk thoroughly in the meantime. It should start to thicken.
Add in the sweetener of your choice and the salt. Whisk well.
Remove the mixture from heat and mix in the coconut cream (that you scooped out in the beginning). Add in the melted chocolate and the cacao powder. Whisk thoroughly while incorporating air into the mixture. Check the sweetness.
Pour the mixture into individual containers to set. Chill in the fridge for minimum 3-4 hours or overnight. Once set, option to sprinkle grated chocolate on top for extra decadence :)

1-2 Portobello mushrooms (or a thick cut of tofu, or tempeh)
Teriyaki sauce mix:
1 part soy sauce
2 parts rice wine ( or any dry wine/liquor)
2 parts water
A small amount of sweetener of your choice
A couple of pinches of xanthan gum
DIRECTIONS

Fry Portobello mushrooms with oil in a frying pan till thoroughly cooked through on both sides. Pour in the Teriyaki sauce mix and reduce the liquid till it’s thickened.
That’s it!
CRUNCHY COLESLAW:
White cabbage
Carrots
Onion
Vegan mayo
Vinegar
Salt to taste
Slice/grate all veggies in thin strips and add in mayo, vinegar and salt. Mix all ingredients well.
That’s it!

2 courgettes (zucchinis)
Fresh basil
Firm tofu
Fresh tomatoes (optional)
Lasagna sauce:
1 onion
Dried oregano
1-2 tins plum tomatoes (or fresh tomatoes, chopped)
1 avocado (optional)
Salt and pepper
Keto breadcrumbs:
1 part psyllium husk powder
3 parts almond flour
Salt
Olive oil
DIRECTIONS
—----------------
1. Slice aubergines, courgette, onion, tofu and tomatoes.
2. Grill/fried aubergines and courgettes with olive oil till tender and golden brown on both sides. Sprinkle salt to taste.
3. Make lasagna sauce by frying the onion with olive oil in a pot till tender. Add a few pinches of dried oregano. Pour in 1-2 tins of plum tomatoes. Add salt and pepper to taste. Bring to a boil then simmer till the sauce thickens. Finally add in 1 mashed ripe avocado. Stir and simmer for a few minutes and the sauce is ready.
5. Assemble the lasagna by layering the ingredients in the order desired. Sandwich each layer with the lasagna sauce. Top with the bread crumbs (instructions below)
6. Bake in a preheated 200-220C/400-425F oven till it’s piping hot and the breadcrumbs are golden brown (approx 45 minutes)
Enjoy!
Keto breadcrumbs:
Combine all dry ingredients. Add oil and roughly mix with fingers till it forms a crumbly texture.

3 cups vegan milk or a mix of vegan milk and coconut cream/milk. (I use half and half of almond milk and coconut cream)
Sweetener of your choice (I use erythritol)
Vanilla extract
HOMEMADE NUTELLA (makes 350ml Nutella)

300g (2 cups) unroasted/unsalted hazelnuts
90g unsweetened dark chocolate (or 2-3 tbsp of raw cacao powder, add som oil of your choice while you blend till it reaches the desired consistency)
Sweetener of your choice ( I use icing erythritol)
Vanilla extract
A pinch of salt (roughly ¼ tsp)

INGREDIENTS (The filling)
1-2 onions
1 medium carrot
Some mushrooms
Garlic
Curry spice mix
DIRECTIONS (The filling)

1. Chop all vegetables in small cubes.
2. Sauté the vegetables with oil till softened. Add in the curry spices and mix well. Season with salt.
3. Leave to cool before use.
INGREDIENTS (The bread)

DRY:
200g coconut flour
40g psyllium husk powder
2.5 tsp baking powder
2 tbsp ground flaxseed
2 tsp instant yeast
1 tsp salt
Wet:
½ cup olive oil (or any oil of your choice)
3 cups hot water
3 tsp vinegar
DIRECTIONS (The bread)
—----------------
1. Place all DRY ingredients in a mixing bowl and mix well.
2. Add 3 tsp vinegar to the hot water (3 cups). Stir well.
3. Add the oil into the dry mix. Pour half of the hot liquid into the same bowl. Fold in the flour and work it into a dough, adding more water as you knead the dough (You may not need all the liquid). The dough should be moist and relatively smooth (not grainy).
4. Divide the dough into 6 equal portions. Refer to the video for demonstration on how to shape the bread. Cover and leave to rest for an hour.
5. Brush the surface of the bread dough with oil and sprinkle some psyllium husk powder for the crusty “breadcrumb” effect.
6. Bake in a 180C/350F preheated oven for 50-60 minutes, till the bread is golden brown.

INGREDIENTS

WET:
60g coconut oil (melted)
2 tbsp erythritol (Or any sweetener of your choice. Adjust the quantity accordingly)
vanilla extract
DRY:
120g almond flour
1 tsp xanthan gum
1/2 tsp baking powder
a small pinch of salt
2 tbsp cold water
Decoration/coating:
50-90g Sugar free dark chocolate ( I use 100% cacao chocolate)
Sweetener of your choice to sweeten the chocolate
DIRECTIONS
—----------------
Mix all the WET ingredients together, beat some air into the mixture with a whisk.
Mix all the DRY ingredients together.
Pour the wet mixture into the dry ingredients, add 2 tbsp of cold water and mix/knead till it forms into a dough ball. The texture of the dough should be reasonably smooth and not grainy.
Rest the dough in the fridge for 30 minutes.
Roll out the dough to the desired thickness and cut out with cookie cutters of your choice.
Place the cut out dough on a tray lined with a baking sheet. Prick the shortbread dough with a fork.
Bake in a 170-180C (325-350F) preheated oven for 15 minutes (or till light golden brown)
Once cooled completely, decorate with melted chocolate. Your imagination is the limit!

INGREDIENTS
---------------------
2 tins of 400ml coconut cream (chilled for a few hours or overnight)
100-200g of nut butter of your choice (adjust the quantity based on how rich you like your ice cream)
Sweetener of your choice
Vanilla extract
A pinch of salt
1/4 tsp xanthan gum
1-2 tbsp coconut oil (optional)
A dash of liquor (optional)
Sugar free dark chocolate (optional)
DIRECTIONS
------------------
1. Separate the coconut cream from the coconut water (at the bottom of the tin) and place the cream in a mixing bowl (or a pot). Add in the nut butter and a small pinch of salt.
2. Gently warm through the mixture with low heat over the hob (turn off heat if it gets too hot). Add in the sweetener (and optional coconut oil). Whisk thoroughly. Sprinkle ¼ tsp xanthan gum and whisk vigorously till the mixture is smooth and airy. Leave the mixture to cool.
3. Place the mixture (air-tight sealed) in the freezer for 1 hour, “churn” the chilled mixture by mixing and folding. Place it back in the freezer and repeat the churning one more time after 1 hour.
4. Transfer and mixture to a storage container. Again, make sure it’s air-tight. Option to wrap the container with a plastic bag before freezing (this blocks off moisture from entering). Freeze for minimum 3-4 hours before consuming.

Tips for softening ice cream: Leave the ice cream on the counter top (lid removed) for 20-30 minutes, or place in the fridge for an hour or so.

You can make this pasta with any one of the following flour:
100g lupin flour
100g defatted sunflower flour
100g hemp flour (hemp seed flour)
100g oat fibre
50g coconut flour (coconut flour only needs half the amount)

50g vital wheat gluten
1 tbsp konjac powder (or xanthan gum)
1/2 tsp salt
½ cup cold water (oat fibre and coconut flour may need more liquid)
DIRECTIONS
--------------------
1. Add all dry ingredients (bar water) in a mixing bowl and mix well.
2. Pour in ½ cup of cold water and mix/knead till it forms a smooth dough (add more water in the process if required)
3. Roll out the pasta dough with a rolling pin (or pasta machine) till it reaches desired thickness. Cut into desired width pasta.
COOKING THE PASTA
--------------------------------
Fresh pasta: Cook in boiling water for 20-30 SECONDS (don’t overcook!)
Dried pasta: Cook in boiling water for 4-8 minutes (or till desired firmness)
Drain and option to drizzle some olive oil to prevent the pasta from sticking. Serve with your favourite pasta sauce and enjoy x

Pie Crust:
200g ground almonds/almond flour (or 90g coconut flour)
80g lupin flour
4 tsp psyllium husk powder
2 tsp xanthan gum
1/2 tsp salt
3 tbsp oil (I use olive oil)
1 cup hot water (may need more if you’re using coconut flour)

Pie Filling Base:
150g unroasted walnuts (or cashew, or almonds)
1-2 cloves garlic
2-3 tsp English mustard… not French :))
1 tbsp lemon juice
Salt and pepper to taste
4-5 tbsp cold water
1/2 tsp xanthan gum
Vegetables (approx amount):
1 onion
400g Mushrooms
1 medium head broccoli
Cherry tomatoes
Chives (optional)
DIRECTIONS
-------------------
Pie Crust:
1. Place all “Pie Crust” dry ingredients (leave out oil and water) in a mixing bowl, mix well. Add in oil and hot water, knead thoroughly till it forms into a smooth dough ball. Leave to rest for 15 minutes.
2. Roll out the dough roughly the same size (in diameter) as your pie tin. Spread the dough evenly to cover the pie tin, trim off the edges (optional). Use a fork to prick holes at the base. Brush the pie crust dough with a layer of oil.
3. Bake the pie crust dough in a 180C/350F preheated oven for 15 minutes. Leave to cool.
Pie Filling:
1. Cut the vegetables in desired sizes. Sauté them with oil and salt to season. Leave to cool.
2. Place all “Pie filling Base” ingredients in a food processor and blitz till smooth.
3. Combine the sautéed vegetables with the Pie Filling Base. Mix well.
4. Pour the pie filling mixture in the pie crust and spread evenly. Option to place a layer of cherry tomatoes (or any other vegetables) as toppings. Drizzle olive oil and sprinkle some salt to season.
5. Bake the pie in a 200C/400F preheated oven for 35-40 minutes, or till the pie is golden brown and piping hot. Option to sprinkle some chopped chives.

100 almond flour (3-4 tbsp water)

70g almond flour, 30g oat fibre (4-5 tbsp water)

70g lupin flour, 30g oat fibre (6-7 tbsp water)

40g coconut flour, 20g oat fibre (6-7 tbsp water)
The following ingredients are the same for all flour options:
1/2 tsp baking powder
1 tsp Xanthan gum
50g grated vegan cheese
A pinch of salt
2 tbsp oil (I use olive oil)
Cold water (see quantity above)
DIRECTIONS
------------------
1. Mix all dry ingredients (bar oil and water and cheese) together in a bowl.
2. Pour in oil and cold water and mix/knead till it forms a dough. Incorporate the grated cheese in the dough and mix well.
3. Roll out the cracker dough with a rolling pin or tortilla press (regular cracker thickness). Cut out with a cookie cutter or a knife. And lay the cracker dough on a greased baking tray.
4. Prick the crackers with a fork and brush a layer of oil on top.
5. Bake in a 170C/325F preheated oven for 10-15mins on the first side, flip over, and bake the 2nd side for 5-10mins. Till both sides of the crackers are lightly golden brown.
Leave to cool and enjoy x

This recipe makes 6 flatbreads
Net carb per flatbread varies depending on the flour you use. Check your product package. Almond flour flatbread works out approx 0.5 carb as the rest of the ingredients have close to 0 carb.
50g almond flour
(or 50g lupin)
(or 30g coconut flour)
50g oat fibre
20g psyllium husk
1 tsp baking powder
1/2 tsp xanthan gum
A pinch of salt
2 tbsp oil
10-12 tbsp hot water
DIRECTIONS
---------------------
1. Mix all dry ingredients (bar oil and water) in a bowl, mix well.
2. Add in 10-12 tbsp of hot water (adjust according to the flour you use)
3. Mix/knead the dough till moist and smooth. Cover the dough with a moist towel and leave to rest for 15 minutes.
4. Divide the dough into 6 equal portions (or the portion size desired). Roll out with a rolling pin or tortilla press.
5. Cook the rolled out flatbread dough in a greased frying pan till golden brown on both sides.

Sweetener of your choice (I use both powdered erythritol and keto maple syrup)
A pinch of salt
Vanilla extract
DIRECTIONS
--------------------
1. Mix the chia seed with the cold water, mix well and leave it to rest on the side.
2. Place all the dry ingredients (mix nuts and seeds) in a mixing bowl.
3. In a separate bowl, mix all the wet ingredients together (including the chia seed mixture)
4. Combine wet and the dry ingredients together and mix well.
5. Spread the granola mixture on a greased baking tray. Option to coat the surface with keto syrup to create a “sugary glaze” effect.
6. Bake in a 170-180C (325-350F) preheated oven for 25-30 minutes till golden brown.
