INGREDIENTS

(Makes 25cm/10inch round pie)
Pie Crust:
200g ground almonds/almond flour (or 90g coconut flour)
80g lupin flour
4 tsp psyllium husk powder
2 tsp xanthan gum
1/2 tsp salt
3 tbsp oil (I use olive oil)
1 cup hot water (may need more if you’re using coconut flour)

Pie Filling Base:
150g unroasted walnuts (or cashew, or almonds)
1-2 cloves garlic
2-3 tsp English mustard… not French :))
1 tbsp lemon juice
Salt and pepper to taste
4-5 tbsp cold water
1/2 tsp xanthan gum
Vegetables (approx amount):
1 onion
400g Mushrooms
1 medium head broccoli
Cherry tomatoes
Chives (optional)
DIRECTIONS

Pie Crust:
1. Place all “Pie Crust” dry ingredients (leave out oil and water) in a mixing bowl, mix well. Add in oil and hot water, knead thoroughly till it forms into a smooth dough ball. Leave to rest for 15 minutes.
2. Roll out the dough roughly the same size (in diameter) as your pie tin. Spread the dough evenly to cover the pie tin, trim off the edges (optional). Use a fork to prick holes at the base. Brush the pie crust dough with a layer of oil.
3. Bake the pie crust dough in a 180C/350F preheated oven for 15 minutes. Leave to cool.
Pie Filling:
1. Cut the vegetables in desired sizes. Sauté them with oil and salt to season. Leave to cool.
2. Place all “Pie filling Base” ingredients in a food processor and blitz till smooth.
3. Combine the sautéed vegetables with the Pie Filling Base. Mix well.
4. Pour the pie filling mixture in the pie crust and spread evenly. Option to place a layer of cherry tomatoes (or any other vegetables) as toppings. Drizzle olive oil and sprinkle some salt to season.
5. Bake the pie in a 200C/400F preheated oven for 35-40 minutes, or till the pie is golden brown and piping hot. Option to sprinkle some chopped chives.
