INGREDIENTS
-----------------------
Plain cheese:
150g (1 cup) raw cashews Garlic
1 onion (chopped and caramelised)
1 small carrot
1/2 cup Nutritional Yeast
1/2 cup Coconut milk
1 juice of lemon (4-5 tablespoons)
1 tbsp tahini
Salt to season
2 tbsp olive oil (or oil of your choice)
1 cup water
2 tbsps + 1 tsp agar POWDER (or 3-4 tbsps agar FLAKES)
Smoked cheese:
1.5 tbsp Smoked paprika
Chopped nuts
Fresh chopped chives
DIRECTIONS
--------------------
Plain cheese:
Mix all ingredients for plain cheese (other than agar powder and water) in the food processor and blitz till very smooth. Season with salt.
Boil cold water and agar powder in a pot, simmer for 1 minute and turn off heat.
Pour the hot agar solution in the cheese mixture and blitz thoroughly.
Pour the mixture in a greased container and chill in the fridge for 4-5 hour or overnight.
Enjoy.
Smoke cheese:
Follow the steps till step 3. Grease the container and sprinkle a layer of chopped nuts at the bottom. Add smoked paprika in the cheese mixture and mix well. Pour the mixture in the container and chill in the fridge for 4-5 hour or overnight. Once of of the fridge, sprinkle chopped chives on top.

INGREDIENTS
-----------------------
(makes 4-5 burger patties)
300g mushrooms
400g courgettes (zucchini)
1 onion
A handful of toasted pine nuts (or any chopped nuts)
1 tbsp psyllium husk powder
1 tbsp Nutritional yeast (optional)
Salt and pepper to taste
DIRECTIONS
--------------------
1. Shred courgettes (zucchini) in thin strips using a food processor or cheese grater. Sprinkle some salt and mix well. Leave it to rest for 15mins. Gently squeeze out excess liquid. Discard liquid.
2. Chop the mushrooms and onions finely. Saute them till they no longer release liquid.
3. Add all vegetables and the remaining ingredients in a bowl and mix well. Season with salt and pepper. Leave to rest in the fridge for 15-20mins
4. Take a desired portion of the patty mixture and shape it into a ball. Fry with medium heat till it’s golden brown on both sides. Grease the pan thoroughly to prevent sticking.

INGREDIENTS

(Makes 4-6 muffins depends on size)
200g ground almonds (or 60g coconut flour)
40g ground chia seeds (or ground flaxseed)
20g baking powder
Sweetener of your choice
100g coconut oil
100g (or mil) nut milk (may need more for coconut flour version)
Vanilla extract
A small pinch of salt
1/2 cup Blueberries (and some for toppings)
DIRECTIONS
---------------------
1. Add all ingredients (except nut milk and blueberries) in a mixing bowl and mix well.
2. Incorporate the nut milk (small amount at a time) till the mixture reaches a firm batter state. Add in blueberries and fold gently together.
3. Fill the muffin cups with the mixture and bake in a 180C preheated oven for 35mins (the coconut flour version may need slightly longer baking time).
4. Leave to cool down to room temperature before eating.

INGREDIENTS
----------------------
(approx 20g net carbs for the recipe)
Dry Ingredients:
100g coconut flour
20g psyllium husk powder
1 tsp baking powder
1/2 baking soda
1 tbsp ground flaxseeds
1tsp instant yeast
1/2 to 1 tsp salt (to your taste)
Wet ingredients:
4 tbsps olive oil
2 cup hot water
2 tsp vinegar
Fresh rosemary
DIRECTIONS
----------------------
1. Place all Dry Ingredients in a mixing bowl. Mix well and place aside.
2. Combine 1 tsp vinegar with 2 cups of hot water. Stir well.
3. Add olive oil in the dry ingredients, then pour in a small amount (1/2 cup) of hot vinegar liquid and start mixing. Knead the dough thoroughly while continuing to add more liquid till you reach a smooth and moist dough. (You may need less of the 2 cup liquid so add cautiously). Cover the dough with a moist tea towel and leave to rest in a warm place for 1 hour.
4. Line a baking tray with baking sheet and grease the baking sheet. Spread the dough in the tray till it reaches the desired size/thickness. Use fingers to create “dimples” on the surface of the dough.
5. Brush the dough with a generous amount of olive oil and sprinkle rosemary and Madon salt.
6. Bake in a 170°C/350°F preheated oven for 50 - 60mins.

These gorgeously golden brown coconut balls are mini coconut explosions. They are keto, vegan and they are fantastic snacks. If you like coconuts you are in for a treat.

INGREDIENTS

(Makes 12-14 coconut balls)
60g coconut flour
2 tbsps desiccated coconut (and some more for coating)
70g melted coconut oil
Sweetener of your choice
Vanilla extract
A small pinch of salt
2 “Flax eggs”:
2 tbsps ground flaxseeds (or ground chia seeds)
6 tbsps warm water
DIRECTIONS
--------------------
1. Mix ground flaxseeds and warm water together, whisk well, and leave to rest for 10mins
2. Place all ingredients in the mixing bowl and mix thoroughly till it forms into a crumbly soft dough.
3. Divide the dough into 12-14 portions and shape each portion into a mini ball.
4. Coat the mini dough balls with melted coconut oil and cover them with the remaining desiccated coconut.
5. Place the dough balls on a greased baking tray and bake in a 180°C (350°F) preheated oven for 20-25mins.
6. Leave to cool before consuming for the best flavours and texture.

CAULIFLOWER FRITTERS
------------------------------------
(makes approx 10 fritters)
1 medium cauliflower (2 cups finely cooked/chopped cauliflower)
1 cup ground almonds
2 tbsps psyllium husk powder
2-3 spears of spring onions (coarsely chopped)
1-2 cloves of garlic (finely chopped)
Salt and pepper to season
1. Poach cauliflower till tender and chop finely (along with garlic)
2. Mix all ingredients together and add seasonings.
3. Divide mixture into approx 10 portions and shape them into individual patties.
4. Fry the patties with a generous amount of coconut oil in low/medium heat till golden brown on both sides. Rest for 5 mins before serving.
VEGAN TARTAR SAUCE
--------------------------------------
3-4 tbsps Coconut milk yoghurt
1 avocado (chopped)
5-6 gherkins (chopped)
1 tsp vinegar
Salt
Chives to garnish
Mix all ingredients together and garnish with chopped chives.

KETO VEGAN VEGGIE PANCAKES

Chopped mushroom and onions
Ground white pepper and some salt
INSTRUCTIONS:
1. Saute chopped onions and mushrooms in a frying pan till softened.
2. Season with salt and GENEROUS amount of ground white pepper. Leave to cool.
3. Wrap the cooled vegetable mixture with the bread dough and form into pancake shapes.
4. Fry the pancakes in a well-oiled frying pan in LOW LOW HEAT. Cover the frying pan with a lid and slow cook pancakes till they are golden brown on both sides.

INGREDIENTS

(This recipe makes 4 breads, approx 4-5 net carbs per bread)
2 cups (250g) ground almonds (almond meal)
7-8 tbsps (40g) tbsps psyllium husks (fine crumbs or powder)
2 tsps baking powder
2 tsps sweetener
Small pinches of salt
1 tsp quick action yeast (optional)
1 tbsp oil
2 cups hot water (Add a small amount at a time. You most likely won’t need the full amount!)
2 tsps vinegar
Sesame seeds (for sprinkling on top)
DIRECTIONS
------------------
1. Add all dry ingredients in a mixing bowl. Place aside.
2. In 2 cups of freshly boiled hot water, add in 2 tsps of vinegar, mix well.
3. Add oil in the dry ingredients, then pour in a small amount of the hot vinegar/water liquid and start kneading the dough. Add more liquid (1 tsp at a time!) as you go till you reach a smooth and glossy texture.
4. Preheat the oven in 180C (350F). Gather the dough into a large ball and leave it to rest for 10-15mins)
5. Divide the bread dough into four portions and shape each portion into a ball shape. Place the dough balls on a greased baking tray. Press the dough balls gently to create a bun shape. Coat the top of the bread dough with oil. Sprinkle some sesame seeds.
6. Bake the bread dough in a 180C (350F) preheated oven for 50-60mins till golden brown.

4-5 medium tomatoes
A generous bunch of spring onions
A pack of silken tofu (or 1 avocado)
Soy sauce
Toasted sesame oil
INSTRUCTIONS
----------------------
Add oil to a frying pan, medium heat. Lightly sauté chopped spring onions to release flavours. Add in chopped tomatoes and stew for till the tomato mixture is thickened.
Add in chunks of tofu (or avocado) and warm it through for a couple of minutes.
This stew is great with cauliflower mash, keto rice or a nice bowl of salad.

*1 cups (175g) vital wheat gluten per cup
*1 cups (120g) super fine (extra fine) almond flour
*1/4 cup (30g) Ground flaxseeds
*1 tbsp sweetener (I used stevia)
*1 tsp salt
*1.5 tsps baking powder
4 tablespoons olive oil (or melted coconut oil)
2 tsps dry (fast action) yeast
1 cup warm water (may need less)
DIRECTIONS
--------------------
Add all dry ingredients (*) in a mixing bowl. Add in olive oil and yeast on the opposite side of the bowl. Pour in warm water little by little while mixing till it reaches a sticky yet firm texture.
Knead the mixture for 5-10mins till it forms into a dough ball. Place the dough ball in a bowl (greased or line with a tea towel) and proof for 1 hour (minimum).
Preheat the oven to 180C (350F) and bake the bread dough for 30-35mins (soft crust - hard crust).

1/2 cup (60g) ground almond flour
1 cup (90g) desiccated coconut
1/4 cup (45g) melted coconut oil
2 tbsps almond butter
1/2 tsp baking soda
2 tbsps stevia
Splash of vanilla
Almond flakes (optional)
1 cup (90g) chopped pecans (or walnuts)
3 flaxseed eggs:
3 tbsps ground flaxseeds
9 tbsps warm water
DIRECTIONS
-------------------
1. Make “flax eggs” by mixing ground flaxseeds and warm water together. Leave aside for 10--15mins to thicken.
2. Mix all remaining ingredients (bar almond flakes) in a bowl to form the cookie dough. Divide the dough into 12-16 desired cookie shapes. Place them on the baking tray lined with baking sheet (no greasing required). Sprinkle almond flakes on top of the cookies.
3. Bake the cookies in 180C (350F) preheated oven for about 20mins. Take them out and leave to cool for 15mins.

GREEN CURRY PASTE
------------------------------------
2 shallots (or white onions)
4-6 green and red chillies
Small chunk of ginger
2-3 garlic cloves
Small bunch of fresh coriander
2 lemongrass stalks
Juice of 1 lime
4 kaffir lime leaves (if not available, add additional juice of 1 lime)
1 tbsp coriander seeds
1 tbsp cumin seeds
THE CURRY
---------------------
A block of firm tofu
6-7 mushrooms
Handful of green beans
Handful of sugar snap peas
Small carrot
2-3 kaffir lime leaves
Coconut cream
Thai basil (or normal basil)
Soy sauce
DIRECTIONS
--------------------
1. In a food processor, add in coriander and cumin seeds and bliz to crush the species. Add in the rest of the ingredients for the “green curry paste” and bliz till smooth.
2. Cut tofu in cubes and saute on a frying pan till golden brown on all sides. Leave it aside.
3. Pan fry chopped mushrooms in medium heat and add in 1-2 tbsps of the green curry paste, saute briefly. Add in 2 tbsps of coconut cream and top it with some water till the sauce gets to the desired consistency. Add in torned kaffir lime leaves.
4. Season with soy sauce and salt and allow it to stew for a few minutes.
5. Add in green beans and sugar snap peas and cook for a few minutes (don’t overcook them!). Turn the heat off and sprinkles torned Thai basil on top of the curry.
6. Options to enjoy the curry with cauliflower mash or keto rice (links above). Enjoy!

Spring onion pancakes | 1carb keto flatbread recipes
This is another great recipe you can create with your 1carb keto flatbread. These keto vegan spring onion savoury pancakes are so scrumptious as a snack or a starter. Simple ingredients and super easy to make.

Fresh spring onions
Sea salt
Extra virgin olive oil
DIRECTIONS
-----------------
Chop spring onions in small pieces. Reserve a small portion on the side and place the remaining spring onions in the bowl. Add salt and olive oil. Mix well and leave aside to marinate.
Divide flatbread dough into 4 portions. Roll out each portion as thin as possible with a tortilla press or a rolling pin.
Spread the spring onion and oil mixture on top of one flatbread and layer another one on top of it. Sprinkle some fresh spring onion on top. Press down gently for the spring onions and two flatbreads to stick together. Repeat the process for the other two flatbreads. This recipe creates two pancakes.
With low heat, pan fry the pancakes with olive oil till they are golden brown on both sides. Remove from heat and spread the remaining Spring onion and oil mixture on top of the cooked pancakes.
Slice in portions desired and enjoy!

INGREDIENTS
----------------------
120g almond flour
2 tablespoons cocoa powder
100g vegan unsweetened dark chocolate (85% cacao or above)
70g melted coconut oil
75g granular stevia (or sweetener of your choice, quantity may vary)
1/2 teaspoon baking soda
50g vegan unsweetened chocolate drops
*2 Chia eggs*
2 tablespoons ground chia seeds
6 tablespoons warm water
DIRECTIONS
------------------
Preheat oven to 180C (350F) degree.
Create *chia eggs* by mixing warm water with the ground chia seed. Leave the mixture aside to form the gel like consistency.
Melt the dark chocolate and coconut oil together by placing a bowl of hot water underneath. Once melted, mix in the *chia eggs*. Blend till smooth with a whisker.
In a mixing bowl, add in almond flour, cocoa powder, sweetener and baking soda.
Pour in the melted chocolate, coconut oil and chia egg mixture into the dry ingredients. Mix till it forms a soft dough. Add in the chocolate drops.
Spread the dough mixture evenly onto a square tin.
Bake in the oven for 20-25mins. Leave to cool before cutting.
Devide the baked brownie into 9 squares (or any size desired)

INGREDIENTS & TOOLS:

500g dried soybeans
3.5 ltrs fresh water
Cheese cloth (or nut milk bag)
A blender
DIRECTIONS
---------------------------
1. Soak dried soybeans overnight (6-10hrs)
2. Drain and discard water. In a blender, blitz the soaked beans with some water (taken from 3.5 ltr of water) till smooth. Add in the remaining water.
3. Shift the soy bean mixture though cheese cloth, squeeze out the milk. Place the bean pulp (okara) in a container and freeze till later use.
4. Cook the raw milk in a large pot in medium heat till it comes to a boil. Turn down the heat to low setting and allow to simmer for 10mins. Stir constantly.
5. Enjoy the milk while pipping hot or chilled.

INGREDIENTS
---------------------
1 cup (125g) ground flax seeds
A handful of whole flax seeds (optional)
4tbsp Psyllium husks powder
2tbsp nutritional yeast
Sea salt
Cold water
DIRECTIONS
--------------------
1. Preheat oven to 180°C (350°F)
2 Add all of the dry ingredients (except salt) to a mixing bowl. Mix until fully combined into a dough ball. Leave it to rest for 5-10 minutes.
3. Roll out the dough to the thickness desired (cracker thin) and cut into bite size squares.
4. Sprinkle sea salt on to of cracker dough squares and press down gently for the salt to stick.
5. Bake in the oven for 10mins, flip all the crackers once and bake for further 5mins. Or till golden brown.
6. Option to leave the crackers in the oven to cool off for extra crunchiness. :)

INGREDIENTS
The mash
------------
1 head of cauliflower
Coconut oil
Olive oil
Sea salt
The pie fillings
-----------
2 onions
2 courgettes
2 carrots
100g Mushrooms
3-4 stalks of celery
4-5 tomatoes
Soy sauce (optional)
Black pepper
Chives to garnish
DIRECTIONS
1. Chop tomatoes in small cubes and cook with some oil till softened. Puree the cooked tomato with a blender or food processor.
2. Poach cauliflower florets in water till tender. Drain water. Mash the cauliflower with a handheld blender or food processor till smooth. Add in coconut oil (or oil of your choice) to make it extra creamy. Season with sea salt.
3. Cut all vegetables in similar size cubes. In a large frying pan, sauté onions till slightly translucent, then add in the rest of the vegetables. Once the vegetables are softened, add in tomato puree and allow to simmer. Season with black pepper and salt. Optionally add a dash of soy sauce.
4. Transfer the cooked vegetables into a pie tray. Spread the cauliflower mash on top. Us a fork to make marking on top. Drizzle with olive oil for extra flavour.
5. Bake in 200-220C (400-425F) preheated oven for 20-30mins till the mash is nice golden brown. Garnish with chopped chives.

INGREDIENTS

80g soy flour
30g almond flour
1/2 tsp baking powder
2tbsps stevia
30g coconut oil
Vanilla extract
Some nut milk or water
DIRECTIONS
-----------------------------------------------
1. Add all dry ingredients to a mixing bowl, pour in melted coconut oil and mix well.
2. Add small amount of liquid (nut milk or water) at a time till the mixture reach firmness that can be shaped into a dough ball.
3. Place the cookie dough in a food bag, mould and shape the dough into a block. Place the dough in the fridge and refrigerate for 30mins (or overnight).
4. Cut the chilled cookie dough into individual portions and bake in 180°C/350°F preheated oven for 15mins (or till golden brown). Flip the biscuits a couple of times in the process to ensure they are baked on all sides.
5. Leave to cool and enjoy!

INGREDIENTS

QUICHE CRUST:
10"(25x 4.2cm) diameter flan dish
Pie tin I used https://amzn.to/2mEjijn
1.5 cup (170g) ground almonds
1/2 cup {50g} ground flaxseed
1/2 tsp Salt
3-4 tbsps Nutritional yeast
1/4 cup 40g Melted Coconut Oil
Water
FILLING (base):
300g Silken tofu (or soft tofu)
1/2 cup ground almonds
1/4 cup nutritional yeast
1 -2 onion
250g Mushrooms
Salt and pepper
Additional filling/toppings
Chopped spring onions
1 large tomatoes
2 courgettes
DIRECTIONS
------------------
QUICHE CRUST:
1. Place all QUICHE CRUST ingredients (except water) in a mixing bowl and mix well.
2. Add cold water small amount at a time (few drops) till the mixture can be bind together into a dough ball.
3. Spread the mixture on an 10"(25x 4.2cm) diameter flan dish till it's fully covered.
4. Bake in 180C/350F pre-heated oven for 15mins
5. Leave to cool for 10min before removing the flan dish.
QUICHE FILLING:
1. Saute chopped onions till caramelised, and do the same with sliced mushrooms till nicely brown. Leave them aside too cool.
2. Mix silken tofu, ground almonds and nutritional yeast in a bowl till smooth. Season with salt and pepper.
3. Add in caramelised onion and mushrooms in the mixture and mix well.
4. Pour the mixture in the baked (and cooled) QUICHE CRUST and spread evenly.
5. Arrange sliced courgettes, tomatoes and basil leaves on the quiche filling as desired.
6. Bake in 180C/350F pre-heated oven for 40mins
