5g Agar powder
50g Ground coffee
Stevia (or regular sugar for non-keto)
½ cup Coconut cream
½ cup Coconut milk
2-3 tbsps almond yoghurt (or other kind of vegan yoghurt)
Vanilla extract
Some berries and toasted coconuts for topping

INGREDIENTS
This recipe makes 4 flatbreads (less than 1g carb per bread)
1/2 cup almond flour (68g)
2 - 3 Tbsp. psyllium seed husks
1 Tbsp. olive oil
1/2 tsp. baking soda (not baking powder!)
1/2 tsp. salt
1/2 cup warm water (start with 1/2 cup and add more if needed. Note: I added 1 cup in the video but almond flour varies with brands/type so start with a small amount and add gradually)

Vegan strawberry and banana oat bars - Free veg challenge
In this video I'm showing you how to make super delicious and healthy vegan oat bars with the freebie strawberries and banana given to me by my local green grocer :) New challenges awaits!
INGREDIENTS
----------------------
2 cups rolled oats
100g sugar
2 tablespoons chia seeds
1 tablespoon baking powder
3 mid-size bananas (mashed)
2 cups (roughly) strawberries
MAKING JAM
-------------------
1. Place the strawberries in a pot, add in 50g sugar and slowly cooked down in medium heat.
2. Once the berries are soft, add 2 tablespoons of chia seeds, stir constantly till it reaches the jam constancy.
3. Leave it to cool.
OAT FLOUR
-------------------
Place 1 cup of rolled oats in the food processor and blitz till it resembles fine flour. You can use readymade oat flour if you wish to skip this step. But fresh flour tastes so much better :)
MAKING OAT BARS
----------------------------
1. Add all ingredients (bar strawberry jam) into a mixing bowl and mixed till everything blend into soft batter.
2. Take â…” of the batter and spread evenly on a lined baking tray, then spread the jam on top of the batter. Finally, take the remaining batter and and spread it on top of the jam.
3. Use a fork to ‘disturb’ the surface of the top layer so some jam comes through the surface. This creates crunchy nuggets and textures on the oat bars.
4. Place the baking tray in the 190°C (375°F) preheated oven for 30 mins or till golden brown.
5. Once cooled, divide in desired portions.

INGREDIENTS

100g Okara
100g All purpose flour
50g Sugar
2 tablespoons olive oil
2 tablespoons soya or nut milk
Optional:
Unroasted almonds
Raisins
Chocolate chips
MAKING BISCUITS
-----------------------------
1. Mix all ingredients together till they form a ball.
2. Divide the dough into individual portions (approx 16 biscuits)
3. Line a baking tray with tin foil and grease lightly
4. Bake the dough in 170°C (325°F) for 25-30mins

Tomato and tofu donburi (rice bowl) | Just like mum used to make
In this video I’ll show you how to make delicious rice bowl (donburi) using fresh tomatoes and silken tofu, just like my mother used to make. This is based on a popular Taiwanese vegetarian dish my mother used to make for my family. I hope you enjoy it. x
INGREDIENTS
----------------------
6 - 8 fresh tomatoes
A large bunch of spring onion (scallions)
A block of silken tofu
Some soy sauce
Some salt and sugar to taste
Toasted sesame oil
Short grain rice (1-2 cups, for two people)
Tofu and tomato stew
-----------------------------
1. Cut tomatoes in chunks and chop spring onion in small slices.
2. Dice silken tofu in cubes
3. Sauté spring onion in mid-high heat with olive oil (and with a dash of toasted sesame oil) in a frying pan. Do not brown.
4. Add tomatoes to the frying pan, stir and simmer till tomatoes are tender.
5. Add a dash of soy sauce and season with salt and sugar. Adjust according to taste.
6. Turn off heat. Drizzle generously with toasted sesame oil before serving.
Steam rice
-----------------------------
Rice and water ratio: 1cup rice vs 1.5 cup water
1. Wash rice thoroughly till the water is clear.
2. Bring the measured water (based on the quantity of the rice) to a boil. Add rice and stir frequently to prevent rice sticking to the bottom of the pot.
3.Once the rice has come to a boil, reduce heat to low, put the lid on and allow to cook for 10-12 minus.
4. Turn off heat and 'fluff up' the cooked rice by turning it with a spatula. This allows excess moisture to escape.
5. Put the lid back on and leave it to steam in its own heat for 10 mins. Then serve.

Homemade almond cheese - Easy vegan cooking
This video shows you how to make the most delicious vegan almond cheese! Step by step instructions so you too can make it at home.

INGREDIENTS
----------------------------------------
160g almonds (unroasted)
2 ½ tablespoons lemon juice
1-2 cloves of garlic (based on preference)
3 tablespoons Extra virgin olive oil
1 ¼ teaspoons salt
160ml cold water
TOOLS
----------------------------------------
Food processor
A small colander
A bowl to catch liquid from colander
A piece of cheese cloth
HOW TO MAKE
----------------------------
1. Soak the almonds in water overnight (6 hours +)
2. Blitz the drained almonds and the rest of the ingredients in the food processor till very smooth.
3. Line the colander with cheese cloth and place the colander on top of the bowl for the liquid to drain.
4. Place it in the fridge overnight. This will remove the excess liquid from the cheese mixer.
5. Line a baking tray with tin foil and grease it lightly. Place the drained cheese on the tray and bake for - see baking options below.
Soft creamy cheese
165°C (325°F) for 20-30mins
Firm crumbly cheese
180°C (350°F) for 30-40mins
From my experience, this cheese is kept well in the fridge for up to a week. Enjoy!

Homemade vegan pesto sauce - this video will show you how to make delicious vegan pesto at home in a few quick simple steps.
INGREDIENTS

How to make tofu at home - the easy way

INGREDIENTS AND TOOLS YOU NEED
-------------------------------------------------------------
500g Soy beans (organic/non GM if humanly possible)
1.5 Tsp Nigari (to create bean curd)
Tofu press (I use a kit from Tofu Box)
Cheese cloth x 2 (one to squeeze out soy milk, the other one for lining tofu press)
A large pot (one that able to hold up to 3.5L)
MAKING SOYA MILK
-------------------------------------------------------------
1. Soak the soy beans overnight (6-8 hours)
2. Drain the soaked soy beans and add in 3.5L of fresh water
3. Pour both liquid and soy beans in a blender and blitz till smooth (may need to do in batches)
4. Line a medium bowl with cheese cloth and pour the raw soya milk into the bowl and squeeze the soya milk through the cheese cloth to remove the pulp. (keep the pulp in the freezer, don’t throw it away!)
5. Gently bring the raw soya milk to boil in the large pot. Keep stirring. Once boiling bring the heat down and simmer for 5-10 minutes. You now have soy milk.
MAKING TOFU
-------------------------------------------------------------
1. Leave the soya milk to cool for 10-15 minutes. In the meantime, add a small amount of cold water to Nigari, stir till it’s dissolved
2. Add the nigari liquid in the soya milk, stir gently for a few times and leave it it to curdle (10-15 minutes).
3. Transfer the curd to the tofu press following the video. Now you have your homemade tofu!
